COCONUT CURRY SHRIMP

Satisfy your curry craving tonight with this mouthwatering  Coconut Curry Shrimp that contains a fusion of flavor. 

This Coconut Curry Shrimp is bursting with flavors from around the World.

As it contains two different types of curry flavors in it. 

Think Thailand meets Jamaica! 

And trust me it is super simple to make. 

If you have never tried Red Thai Curry before, I encourage you to give it a try. 

Some of the ingredients of RED THAI CURRY paste includes “Lemongrass”; “Galangal” , “Kaffir lime leaves” and Bird’s Eye Thai chilies. 

HOW TO MAKE COCONUT CURRY SHRIMP

  • Red Thai Curry Paste * see the picture below for my favorite brand
  • Jamaican Curry Powder
  • Thick Coconut milk * skip the watered down varieties
  • Shrimp
  • Cilantro
  • Green peppers
  • Onion
  • Limes
  • Rice

Our favoriteRED THAI CURRY PASTE

The shrimp is curried to perfection and has become one of our new households favorites. 

It is very similar to my Jamaican Curry Shrimp and if your interested in that recipe.

It is also a favorite in our household.

The difference between that recipe and this recipe is that here we are adding tomatoes and omitting the scotch bonnet peppers and replacing that with a bit of “Red Thai Curry” paste. 

Both recipes are amazing and I encourage you to try this one and that one separately. 

So if you like curry as much as me, then you are sure to love this recipe. We are infusing it also with salt and pepper, tomatoes and coconut milk that help to bring all those curry flavors alive.

Keep in mind you will want to use a good quality coconut milk, one that is not to watery. When it comes to the tomatoes you can choose fresh or canned.

COCONUT CURRY SHRIMP AND RICE

  • Start by making your rice
  • Bring a medium pot of water to a boil
  • Turn the heat down to medium and add in 2 cups of rice
  • Simmer on medium heat till the water is almost evaporated
  • Turn down to low and simmer till tender, keep an eye on the liquid you may need to add a bit more or remove some.

HOW TO MAKE COCONUT CURRY SHRIMP

This recipe is super easy to make. Trust me it is as easy as 1, 2, 3

First you want to cook some rice. I like to use Basmati rice for this dish, however any type works. 

  1. First you want to cook some rice. I like to use Basmati rice for this dish, however any type works. 
  2. Then in a large skillet you will want to add some coconut oil then the garlic and ginger powder along with the Jamaican curry powder and saute on medium heat till fragrant.
  3. Next add in your Red Thai Curry paste and saute 1 minute till fragrant.
  4. Add in remaining spices then the can of coconut milk.
  5. Simmer on medium heat and add in your chopped onion and green pepper. Simmer on medium – low till the veggies have become tender. 
  6. Lastly add in the shrimp and cook till no longer pink.
  7. Serve over rice with fresh limes. 

Keep in mind you can use fresh ginger and garlic if you so desire.

Notes: “Lemongrass”, “Galangal” and “Kaffir lime leaves” can be found in most Asian stores. “Thai Red Curry Paste” can be found in most Supermarkets, Thai Red Curry paste has all the above ingredients in it needed to make this dish.

Spicy Tuscan Salmon

This Spicy Tuscan Salmon is just bursting with so many amazing flavors that you’re sure to love it! 

WHAT IS TUSCAN SALMON

It is salmon fillets smothered in  a creamy sauce with spinach, sun dried tomatoes and parmesan!

So if you’re craving something different and a little fancy for dinner tonight.

Then this one pot dish is sure to impress!

Plus it definitely is one of my favorite way to make Tuscan Salmon, with a hint of spice.

The first time I tried Tuscan Salmon, was early last year.

I followed another bloggers recipe, over at Cafe Delites and immediately fell in love with it.

But I knew it needed a little bit more to really suit my taste.

So I made a few changes and came up with this recipe.

Which is also a lower fat version of the more traditional Tuscan Salmon.

I also like to add a bit more of those delicious sundried tomatoes and spinach, so do not skip on that.

HOW TO MAKE TUSCAN SALMON

My dish brings that extra element of heat and is less cream heavy than other varieties I have tried.

Rather, I like to use whole milk instead of cream and will double the amount of spinach making it  that much more healthier and tastier. 

So simple, yet so impressive that you could serve this to a crowd and call it fine dining. 

I like to serve this dish over a bed of Conchiglie/Shell pasta, it goes really good with this recipe.

However if your on a keto diet feel free to enjoy it as is, trust me it’s amazing either way.

If you are serving this over pasta, just make sure to cook the pasta separately before hand so it’s ready when the fish is. 

This dish is very satisfying, both as a lunch dish or to serve as main meal.

Be sure to sear the Salmon fillets directly in the oil that the sun-dried tomatoes come in. 

As it really adds a nice element to the fish”.

Also you can squeeze a little bit of fresh lemon juice over top for a little tang if desired.

MEAL PREP IDEA: Make enough to create a few meal preps bowls for the week ahead. Or have dinner for one with this recipe, and split the last Salmon fillet in half for two meal prep bowls.

To make the bowls, simply place some Conchiglie/Shell Pasta on the bottom of the bowls and top with the Creamy Salmon, spinach, parmesan sauce.

These Air Fryer Zucchini Chips are a healthy and delicious low carb snack that is super easy to make.

These Zucchini chips are seasoned with just a few ingredients, that being of olive oil, rosemary, salt and pepper, garlic powder and parmesan cheese. They will have you rethinking your snack craving and having you eating healthier.

HOW TO MAKE ZUCCHINI CHIPS KETO 

A lot of air fryer recipes will have you breading these chips prior with breadcrumbs and then dipping them in eggs before seasoning them.

I like to skip that whole process, which makes these keto.

ARE ZUCCHINI CHIPS HEALTHY

Depends on what your using to cook them, I use OLIVE OIL vs REGULAR cooking oil. And when making them this way, you really are using very little.

Then these chips are just simply seasoned with salt and pepper, rosemary, garlic powder and then are sprinkled with some parmesan cheese.

They are much better this way and lower in calories and really crisp up nice on their own, no breading needed! 

As you may know I have been on the fence for the past year about buying an air fryer.

Mainly because I do not eat a lot of deep fried foods and also because I could not fathom spending $150 + for ONE.    

So recently when I came across the Gotham air fryer, that does the exact same thing as an air fryer. I knew that I had to try it!

Then once I tried that, i took the leap and bought a T fal active fryer. I’m now an active air fryer lady, I love air frying now more than I ever could have thought. 

WHAT IS AIR FRYING?

Air frying is a healthy alternative to deep frying food.

And most air fryers have been marketed in a way to make you think that this cooking technique is best for those who make a lot of those at home.  

Well I am here to tell you that you do not need to just be a deep fried food lover to want to use this cooking method.

RATHER if you love to bake food, then this is also a great alternative. And in most cases is much healthier than traditional baking methods. 

Because air frying mimics deep fried foods but uses little to no oil. And if your cooking something fatty, the fat will drip away and off the food.

So you can enjoy all the same deep – fried or baked foods that we have all come to know and love again but in a healthy way.

HOW TO AIR FRY ZUCCHINI CHIPS 

Making air fryer Zucchini chips is easy, first you will need either a Tabletop Air Fryer or a Gotham Air Crisper Tray.

  • Start by slicing the Zucchini into 1/4 inch slices on a cutting board.

HOW TO AIR FRY ZUCCHINI WITHOUT BREADCRUMBS

  • Once the Zucchini is sliced, place them into a large bowl and toss with olive oil, parmesan cheese, garlic powder, salt and pepper along with fresh rosemary. 
  • Place the Zucchini chips in or on the Air Fryer making sure they are not crowded, then allow it to do the Cooking.
  • My T fal active fryer has them cooked in 15 – 20 minutes. 
  • Remove and allow to cool down 10 minutes prior to serving. 

AIR FRYER COOKING TIMES

I use the T-Fal air fryer and put them on for 15-20 minutes, please check with your air fryers cooking instructions. 

However, to convert an oven-cooked recipe to an air-fryer one, the general rule of thumb is to reduce the suggested temperature by 25°F or 3.889 C and then cut the cook time by about 20%

CAN I USE ANY KIND OF AIR FRYER?

YES! 

I currently have and use the T-fal ActiFry Fryer and the Gotham Air Crisper

Both tools work well for this recipe! Cooking times vary with each air fryer, so best to check your settings. 

HOW TO MAKE AIR FRY ZUCCHINI CHIPS ON THE GOTHAM AIR CRISPER TRAY?

SPREAD OUT AND AIR FRY FOR 30 MINUTES!

They are going to shrink down, just like this.

Then you will want to allow them to cool so that they become extra crispy! 

  • If your using the Gotham Air Crisper Tray I would advise to turn your oven to Conventional bake, which will make the chips more crispy.
  • Otherwise, if your oven does not have that setting you can simply place the crisper on the middle rack. 

The air hot air is what cooks the food not the oil. If you have some frozen foods on hand, feel free to throw out any deep fryer you may have because the air fryer can now do the same job. 

But it is not only frozen food that can be cooked this way, pretty much any food you can think of can. 

This is my forth AIR FRYER recipe that I have shared on this blog. And I hope you like it!

WHAT MAKES ZUCCHINI CRISPY?

The air flow that is create under and around the Zucchini. The more dryer they become the more crispy they will become.

Also the thinner the fries the easier it is for them to become crispy, I like to cut mine about 1/4 to 1/2 of a inch thick.

CAN I USE ANY KIND OF AIR FRYER? 

YES!  Air fryers promise that you can get that deep fried texture without all the grease. 

If you have a table top Air Fryer all these recipes will work the same. Because Air Fryers all use the same type of cooking techniques = AIR.

IS AIR FRYER FRIES HEALTHY? 

Yes, very. Since the hot air is doing all the frying, saving you from using oil. But also giving you a deep fried taste without all those trans fats.

The food ends up crispy on the outside and moist on the inside.

If you have never used an air fryer, now is the best time to start.

Because they are more affordable now than ever before. 

Plus if you use the Gotham Air Fryer it is super simple to clean, I am talking hard sticky food at the bottom of the tray just slides right off.

No scrubbing at all is needed, it couldn’t be more simpular that this guys.

Another reason I like the Gotham Air Fryer is because it cooks more food than the typical table top Air Fryers.

Because it has a lot of space on that large tray !

Smoked Salmon Poached Egg English Muffins

These Smoked Salmon and poached Gluten free Egg English Muffins are one of my favorite go to breakfast recipes.

 It’s not only inexpensive it’s also super simple to make, your sure to want to enjoy this breakfast time and time again.

This recipe is much healthier to say an eggs benedict recipe! The reason being is we are skipping the hollandaise sauce and highlighting the creamy egg and smoked salmon flavors.

Also if you want you can add a salmon fillet on top of the smoked salmon cream cheese, however this is an optional step as having it with just the smoked salmon cream cheese is amazing also! 

I do that often, however for this recipe I wanted to make it a little extra special. 

If cooking a salmon fillet be sure to allow it to cool down some before flaking it and then placing it onto the cream cheese. 

I like to use these Gluten Free English Muffins, however you can use your favorite brand in replace of course. 

In order to make the best eggs benedict you will want to cook the eggs just right. And to do that you will simply add 2 tbsp of white vinegar to a medium pot of boiling water.

And once it reaches a boil you will want to turn down the heat to medium – low.

When it reaches a medium – low heat, simply crack one egg into a small ramekin boil. And slowly place it into the pot, repeat with a maximum of 3 eggs per pot.

You do not want to overcrowd the eggs and allow them to cook at the bottom of the pot, once they reach a firm yet soft on the inside texture.

REMOVE them with a spatula and strain over the sink. And wulla you have poached your eggs! Those eggs are what you will use in the benedict.

I’m a breakfast person, however most days I don’t have time to make a full breakfast and will opt for a breakfast shake such as my Cherry Berry Magic Smoothie

On the days where I get to stay home in the mornings, I will make a full breakfast and this is the type of breakfast I will make. 

It’s is absolutely delicious and is one of me and my partners favorite breakfasts actually. We will make this in our house at least a couple times per month. 

Now don’t forget the fresh dill it really pulls this dish together!! 

If you have never poached an egg, I promise you it’s not at all hard. You will simply want to bring a pot of water to a boil and once it reaches a boil you will stir in 2 tbsp of vinegar and then reduce it to a medium boil.

Meanwhile crack one egg at a time into a small ramekin bowl. Then you will want to dip a large spatula with holes in it of some kind into the pot and slowly pour the egg overtop of the spatula to slowly sumerge the egg in the water. 

Holding the spatula in place you will allow each egg to simmer on a medium heat for about four minutes each till cooked. You are looking for a runny yolk, not to running and not to hard. That is it! Smoked Tofu Vegetable Stir Fry

This Smoked Tofu Vegetable Stir Fry is 100% Vegan and makes for an excellent meal prep and dinner option. 

Have you ever tried smoked tofu before? If not then you should try it! I have always liked tofu however my partner hates it. I coaxed him into trying this recipe and he said it wasn’t bad, then I saw him in the kitchen sneaking another bite of this. It’s that good 🙂 

If your not much of a tofu fan, then I encourage you to give it a try this recipe. It really is something special and has made me a fan of tofu even more!

 

This is the kind I like to use it’s tasty!

Tofu has tons of protein in it and is often used as a replacement to meat. So if your looking to add more vegan and plant based meals to your menu, this recipe is sure to help. 

Serve with some basmati rice and you will have yourself a healthy vegan meal in no time.

Portobello Mushroom Kale Risotto

This Creamy and Cheesy Portobello Mushroom Kale Risotto is quick and easy to make. Not to mention gluten free and vegetarian! 

Made with tender sauteed mushrooms along with kale and fresh parmesan cheese. Then it is simmered in a vegetable stock for extra flavor. 

Valentine’s day is just around the corner and like every other year I like to come up  with some new dishes for those who are looking to feast at home. 

I had some Portobello Mushrooms on hand and then came up with tasty recipe, I hope you give it a try because it is absolutely delicious! 

Orzo also known as Arborio rice is a grain that can be found in the rice isle and is very popular in Italian cuisine. Orzo is basically a short-cut pasta, shaped like a large grain of rice.

Of course this dish can be served just about anytime of the year and is served on the menu often in and around Italy!

You can always double up the recipes and make it into a few meal preps to enjoy throughout the week.

Just simply use my recipe adjuster above if you plan to make more than two dishes and it will calculate the ingredient ratio automatically for you. 

In order to make this dish low fat and more savory, I simmer this dish in a quality vegetable stock and then simply will season with salt and pepper to taste. 

However you could always add some cream to the stock as well, which will make it even more creamy if desired. 

Pretty simple one pot dish that is sure to impress!

Not a fan of Portabella Mushrooms? or have another kind on hand.

Go ahead and slice them up and prepare them the same way. Almost any type of mushroom will go well with this dish.

As for me I like it just like this, however will sometimes use brown mushrooms which work well too.  

Once it has been served, go ahead and sprinkle some fresh parmesan cheese on top and enjoy.. Bone appetit!

Easy Ground Beef Wellington recipe

This Easy Ground Beef Wellington recipe is spiced just right and is family favorite in our house. With the additions of mushrooms and is something that can be whipped up in less than an hour since we are using some pre made puff pastry.

Your family can enjoy this homemade recipe any time of the year.

But really makes the perfect addition to any Holiday meal.

FUN FACT: Beef Wellington get’s it’s name from a man named Arthur Wellesley who was the first Duke of Wellington. He had a victorious Battle on June 18 1815.

The Duke was given his title after defeating Napoleon Bonaparte the year before, and not long after he became Prime Minister. 

Traditional Beef Wellington was made with fillet steak inside. I have had that at a restaurant once and it was delicious.

However, I wanted to create something different. And mix the best of both worlds, beef and mushrooms. This recipe has now become popular on this blog, I hope you give it a try and let me know what you think. 

HOW TO MAKE HAMBURGER BEEF WELLINGTON

This recipe is made with lean ground beef, onions, mushrooms, eggs, panko bread crumbs, flour, red wine vinegar, worcestershire sauce and seasoned with fresh thyme and rosemary.

Be sure to use fresh thyme and rosemary in this recipe, it makes all the difference.

Also do not skip on the worcestershire and red wine vinegar it helps to merge all the flavors together. 

HOW TO MAKE PUFF PASTRY

I used a pre – made puff pastry to save time, (see below) The pre – made puff pastry I recommend is from Tenderflake. The box has 397 grams of puff pasty in it!

 

Simply remove it from the package, allow it to defrost for 1 hour and sprinkle with flour before rolling it out. 

Fill the pastry with the Beef and Mushroom mixture.

Brush with the egg wash.

And make impressions to the dough as so with a fork.

You may be more familiar the more traditional “Beef Wellington” type recipes. Which have you using Beef tenderloin or fillet instead of hamburger.

However, this recipe is just as good and if you use brown mushrooms alongside the hamburger it becomes absolutely amazing.

You will be able to serve 3 peoples for dinner easily with this. And if your wanting to serve more, I would recommending make 2 of them. Which is not hard to do at all!

Parmesan Rosemary Brussel Sprouts

These Parmesan Rosemary Brussel Sprouts are the perfect side dish to just about any holiday meal.

Made with just a few simple ingredients, such as olive oil, salt and pepper, minced garlic, rosemary and lemon juice. 

I just love Brussel Sprouts, but this wasn’t always so.
 
I actually hated them as a kid, along with broccoli, carrots and peas.
 
However today I love all of these veggies and that is because I have found the correct ways to prepare them.
 
 
There are many ways to prepare Brussel sprouts, you can bake them, fry them and even boil them.
 
My least favorite way, I must admit.
 
Baking them is truly the best, because something magical just happens to these veggies when you place them in the oven.
 
And trust me the kids will love them too!
 
 
Plus these delicious veggies are super healthy for you because there packed full of feel good fiber.
 
They take less less than 30 minutes to make from start to finish so really you can’t go wrong with this recipe.
 
First you will want to rinse then cut the ends off the brussels.
 
Then you will dice them in half and toss them in a bowl with olive oil and then bake in a preheated oven at 450 f for 15 minutes. 
 
 
Once the 15 minutes is up, season with salt and pepper.
 
Then add in the minced garlic, rosemary and parmesan cheese and return the dish to the oven to cook for the remaining 10 minutes.
 
That is it, then there ready to enjoy!
 
Oh wait you can also drizzle some fresh lemon juice overtop of them right before serving, this makes them taste extra delicious! 
 
 
Baked to a tender crisp, these brussels are something special. I’m confident you are going to love it too!
