This Wild Rice Tuna Casserole is something different from the average chicken and noodle casserole recipes you will find out there. This dish is very satisfying, both as a side or a main dish.
You can prepare this dish with chicken, turkey or hamburger as well or make vegetarian, all four ways are amazing.
However it’s best made with a good quality wild rice mixture.
The more natural the better since these types of rice blends contains many nutrients that other processed rice would not.
The panko crumbs and cheese topping give it that nice crunch so do not skip that combination. It makes this recipe divine!
I like to use my Dutch oven for this recipe, if you do not have a Dutch oven then feel free to use a sauteing pan and then a casserole dish once it ready to go into the oven.
Some people like to add grated cheese over top before baking, i don’t. And that is because i prefer the earthy taste of the dish, I encourage you to try it this way = delicious.

This Lemon Garlic Tortellini is super easy to make and can be on the dinner table in less than 30 minutes. It’s comfort food meets healthy food, and yes this is surely possible.
My mom used to make tortellini often for me as a kid and I typically order Tortellini whenever I go to those Italian restaurants, I just love it.
I’m fancying it up a bit today by adding asparagus and shrimp. This dish has become our all time favorite shrimp pasta recipe.

Super satisfying this is sure to hit the spot if your craving something fancy for dinner tonight and comforting at the same time. You can always add chicken if desired, however I like shrimp best for this recipe.
You can use just about any pasta for this recipe, however I really like the tortellini. You will want to start by cooking the tortellini first in a pot of boiling water.
Then saute the asparagus till slightly tender along with the shrimp beforeing bringing everything back together to merge in the pan. Season with salt and pepper, lemon juice and white cheddar cheese before serving! Bon Appetit!

This Simple Potato Salad Recipe has hints of lemon and paprika in it and is made with russet potatoes, eggs, garlic powder and is seasoned just right.
Let me tell you, this recipe is something special. Just cause I call it a Simple Potato Salad recipe does not mean it is not GREAT!
I can say that because I was never much of a fan of potato salad. Probably because the kind I was used to was to sweet and full of mayo. But this one is different and super tasty!
There is nothing like homemade potato salad, nothing. So if you’re looking for one that is a bit different than the average potato salad recipe out there than your going to want to try this one.
I came up with this recipe recently as I wanted to bring something a bit different to a potluck party I was attended. It turned out to be a major hit with everybody!
For this recipe I made a separate dressing on the side, then once the potatoes and eggs cooked and cooled I combined them all together by mashing with a potato masher.
Then poured the chilled dressing overtop to combine.
My dressing calls for full fat mayonnaise, so if your wanting a lower calories dressing. Then feel free to use a lighter variety or substube half of the mayo with plain yogurt.
You can use just about any type of potato to make this potato salad, however I like to use the russets because the skin just peels off very nicely once cooked.
And that is exactly what you will want to do. Simply bring a large pot of boiling water to a rapid bowl, then dump in the potatoes slowly and allow them to cook till fork tender.
Once cooked you will simply strain the water out and soak them in ice water till cooled. Once cooled all you will need to do is peel the potatoes with your hands. Easy enough eh!

This Tortellini Mushroom Recipe is absolutely delicious! Made with brown mushrooms, cheese tortellini.
This pasta dish is quick and easy to make and can be served any night of the week.
If you are looking for a vegetarian dish for tonight’s dinner and love mushrooms, then your in for a treat!
How to make Tortellini Mushroom Recipe
To make this dish you will simply start by cooking the pasta according to the package instructions.
While the tortellini is cooking, you can add 2 tbsp of butter to a non stick frying pan and add in the sliced mushrooms.
Sauté then with fresh rosemary and salt and pepper till browned and soft.
Now all you will have to do is add in the balsamic vinegar and bring to a simmer for 2 minutes before adding back in the cooked tortellini and parmesan cheese.
Toss everything together and enjoy your mushroom feast!
This recipe can be made vegan instead of just vegetarian if you want.
However you would want to replace the butter, parmesan cheese and cream with vegan options of course.
And of course you can use “gluten free” pasta if your on such a diet.
So really there is no excuse to not indulging once in a while in such an amazing dish.

These Bacon Brussel Sprouts are now my favorite side dish, I can’t believe I didn’t try them earlier. The first time I made them was last Christmas and everyone was asking me for the recipe.
Since then I have made them numerous times, because there just so darn good to only enjoy once a year. I like to eat them on their own most of the time as opposed to a side dish.
However they work very very well as a side dish, think Thanksgiving or Christmas dinner. Not only are they super delicious their also very filling. Those little brussels are packed full of fiber and the bacon has a significant amount of protein and fat. So go ahead and indulge!
They don’t take that long to make either, I like to cook them directly on the stove top this way they pick up all the flavor from the cooked bacon. Making this a true one pot dish, that anyone can prepare in less than 30 minutes.
Prep is pretty easy, simply wash and trim off the bad ends of the brussel sprouts. Then slice them in half, and set aside while you saute the bacon. Once the bacon is cooked, add in the brussel sprouts, seasonings and saute in the same pan till their done.
Be certain to purchase a good quality bacon, you don’t want a ton of fat in it. Because you will be frying the sprouts in the leftover bacon fat, now don’t frown now. My bacon gives off about 1 tbsp of fat, it’s that lean. This step really enhances the flavor of the whole dish, so I recommend you give it try before you knock it. However you can drain all the fat if desired, just be sure to still saute the brussels in the same pan as the bacon was cooked. I hope you enjoy!
Yum Brussel Sprouts never tasted so good!
Start by washing the Brussel Sprouts, cut off the rough ends then slice lengthwise and set aside.
Once the bacon has cooked, but not caramelized add in the Brussel sprouts and seasonings.
Add in the Red Wine Vinegar last
I tend to eat these for dinner frequently, however they really should be shared.

These Honey Roasted Brussel Sprouts make for an excellent side dish to just about any meal.
I like to serve these honey roasted brussels sprouts almost every other week in our home. And this recipe is one of those simple yet delicious recipes that even the kids will love.
Why? Because they are sweet of course. What kid does not like sweet food!
Sweetened with just the right amount of honey, these are sure to please just about everyone in the house. I did add some mustard as well which really brings these sprouts into their full flavor.

All you will need is half a pack of bacon, butter, garlic, parsley along with salt and pepper.

HOW LONG TO SEAR SCALLOPS
You do not want to over cook scallops as they will not be as soft and become rubbery. So the rule of thumb is 1 1/2 mins on each side. You want them translucent in the center yet slightly browned on the outside!
This recipe can be done with just one skillet and enjoyed for have the price of what you would be charged in the restaurants.
Serve with my suggested side below “Shredded Brussel Sprouts“ and you have yourself a romantic dinner for two.
While some people opt for Steak or Lobster, why not try something a bit different this time around? They are such a good choice and are sure to impress just the same.
Plus you would never get this many scallops at the restaurants anyway. So go all out that is what home cooking is all about right?
These scallops are defiantly good on their own, however if you wanting a meal then your going to want to pair it with something.
Plus if you choose to do as I have, and serve them with shredded brussel sprouts then you will only need one pack of bacon for this entire recipe.
So follow along and you can have this whole dinner on the table in under 1 hour, or if your just doing the scallops 20 minutes.
Start by saute the bacon, till near krispy, remove and set aside.
Dry the scallops then season with salt and pepper
Place in the frying pan and saute with a little red pepper flakes on each side for 5 minutes, flip.
Once the bacon and scallops have been cooked, set on a plate.
In the remaining bacon fat, add 1 tsp of butter, crushed garlic and parsley. Saute for 2 minutes till fragrant then add the cooked bacon back.
Turn off the heat, and toss back in the cooked scallops. Are you drooling yet?
