350 grams Gnocchi
2 cups Kale
1 tsp Butter
2 cloves Garlic minsed
3/4 cup Vegetable stock
7 pieces Dried Sun Dried tomatoes chopped
1/2 cup Sour Cream (Full fat)
1 tsp Garlic Powder
Sea Salt and Pepper to taste
2 tbsp Freshly grated parmesan cheese

Are you looking for a decadent gnocchi dish minus the excess calories? Then you have come to the right place. This Sun Dried Tomato Kale Gnocchi is made with no cream and is is absolutely delicious!

If you want to make it with cream and the the vegetable stock, you can as well. Just make sure your halving the vegetable stock so there is not to much liquid.

I have really started to appreciate Italian cuisines more so over the past few years, before I used to prefer Greek. I guess with time my tastes change and i’m so grateful to be able to dabble in all the amazing flavors that the World has to offer. I could just eat this type of food everyday, nothing really compares to pillowy soft gnocchi. And when it is tossed in a creamy sauce it’s to die for.

The nice thing about this recipe is that it can be whipped up in under 20 minutes. Which can make for a quick and tasty weeknight meal in no time. Go ahead indulge no guilt here!

Sun Dried Tomato Kale Gnocchi with parmesan cheese

This recipe would be perfect for a romantic dinner idea, think Valentines day or New Years. Also you can add some cooked shredded chicken to this or cooked bacon if desired.

As for me I like it just like this, I’m also a huge sun dried tomato lover SO I will add even more sun dried tomatoes to my dish. However for this recipe, I have cut them in half for my readers as I am sure most of you would prefer a balance of flavors. 

Sprinkle a little more of that fresh parmesan cheese overtop before serving and you will be in Gnocchi heaven... Bone appetit!

This recipe can be made vegan instead of just vegetarian as well. However you would want to replace the sour cream with a vegan options of course. I will leave that all up to you, I hope you give it a try either way!

Sun Dried Tomato Kale Gnocchi

Be sure to saute the sun dried tomatoes for a minimum of 2 minutes in vegetable stock, this really helps to bring out the flavors. Do this before adding back in the cooked gnocchi.

Ingredients

  • 350 grams Gnocchi
  • 2 cups Kale
  • 1 tsp Butter
  • 2 cloves Garlic
  • 1/2 cup Sour Cream Full fat
  • 3/4 cup Vegetable stock
  • 7 pieces Dried Sun Dried tomatoes
  • 2 tbsp Freshly grated parmesan cheese
  • 1 tsp Garlic Powder
  • Sea Salt and Pepper to taste

Instructions

  • Start by bringing a pot of salted water to a boil then add in the gnocchi and cook till it floats to the top of the pot and or according to package directions.
  • Then wash and chop the kale and remove the sun dried tomatoes from the packaging and chop finely as well.
  • Next in a medium frying pan melt 1 tsp of butter and saute the minced garlic, then add in the Vegetable stock, and then the chopped tomatoes. Saute for 2 minutes before adding in the sour cream then kale.
  • Add in the garlic powder, pepper and cooked till the kale has wilted. Add in the cooked gnocchi and season with salt to taste.
  • Serve with some fresh parmesan cheese on top, enjoy!

Note: Taste before adding in salt, you may not need any.
