My recipe here calls for coconut milk and no cream. Making this a very healthy curry option for those trying to watch their calories intake. 

Your family will not believe this dish is being served straight from your kitchen, it’s that good. 

I used to order this type of dish at our local East Indian restaurant, however now I make it often at home.

WHAT TYPE OF CURRY SHOULD I USE TO MAKE COCONUT CHICKEN CURRY

Curry powder is a blend of up to 20 different herbs and spices.

And there are many different type of curries available. Whenever I am making any Indian dish, I like to use a “mild indian curry” or for a hotter curry I will opt for “Madras Curry”.

Both can be found in the ethnic aisle in the Indian spice section!

HOW TO MAKE INDIAN CHICKEN CURRY WITH COCONUT MILK

Cooking methods:

  • Simmer on a low-medium heat for 30 minutes on the stovetop
  • Cook in the pressure cooker around 10 minutes or depending on your instructions
  • Cook in the slow cooker from 8-10 hours.

Today, I used my pressure cooker because I was in a hurry to have dinner on the table so I could watch my favorite recorded show on the PVR. 

However this type of dish can be made either way.

This delicious curry is made with boneless chicken breast and simmered in a rich tomato, yogurt, coconut sauce that you’re sure love time and time again.

WHAT IS INDIAN CHICKEN CURRY

Indian chicken curry is the ultimate comfort food for a lot of Indian people.

Typically it is served over a bed of Jasmine rice and is made with chicken, spices, tomatoes and some type of cream. 

As you may know if you have been to my blog before, I LOVE Curry.

So if you like curried foods as much as me then you are going to love this simple recipe too. 

Guaranteed! 

Plus it is a tad different than the average chicken curry recipes.

Feel free to add some cubed mini potatoes to this curry if you like, just omit the rice if you choose to do that. 

Either way this dish will turn out amazing!

SPICES USED IN COCONUT CHICKEN CURRY

  • 1 tbsp Garam masala
  • 1 tbsp Curry powder
  • 1 tbsp Turmeric powder
  • 1 tsp Coriander
  • 1 tsp Cumin
  • 1 tsp Sugar
  • 1 tsp Cayenne pepper powder
  • 1 tbsp or tsp of Salt, according to taste
  • 1 tbsp Kasoori Methi” = “Dried fenugreek” , optional

The green seasoning you see on top of this dish is called “Kasoori Methi” which is basically dried fenugreek” leaves.

It can be found in almost any international isle at your local grocery. See below!

If you cannot find “dried fenugreek” leaves you can just omit it. 

However I find it adds an extra element to the dish that is really nice.

I have shared a few other curry recipes here on my blog, however this is the first one with coconut milk vs cream/milk. So if your lactose intolerant than this dish may be right up your ally.

HOW TO MAKE CHICKEN PESTO RAVIOLI PASTA

  • To make this dish all you will need is one large cooking pan.
  • A chicken breast, a can of pesto and parmesan cheese. 
  • Oh and of course a package of pre-made ravioli

What can be easier than that? You can use just about any type of Ravioli as well for this recipe.

For this recipe, I used Olivier Spinach Ravioli however you can use any kind of pre-made ravioli that you like. 

WHAT IS CHICKEN PESTO PASTA

It is cooked chicken breasts and pasta that are seasoned with pesto!

Also, I like to use the Classico Pesto as seen below! 

I hope you can forgive me as I was in a hurry and did not want to make any Ravioli or Pesto from scratch. If you want to though then by all means go ahead.

Their are a ton of great recipes on the web for both of those ingredients.

However if your in a time crunch like me, then follow along.

The pesto gives the dish it’s  fantastic flavor, which has balance of flavors that is not at all overpowering but rather savory.

This Easy Cashew Chicken Recipe is my go to recipe for whenever I’m craving a good Cashew Chicken dinner.

I have experimented with a few Cashew Chicken recipes over the years and promise you your going to love this one.

I’m the type of lady that has to try every Cashew Chicken dish whenever we go out to eat. I do this to compare really. And this recipe really rises above the rest!

So go ahead and Skip the takeout tonight and learn to make this iconic dish in the comfort of your own home. Impress yourself, I know you can do it!

Cashew Chicken is one of my favorite Thai dishes, I will order it everytime I go to a Thai restaurant. Some prepare it so well and others not. Sometimes you will find it to sweet and others will not have enough cashews or will just crush them making it hard to notice. 

So when I find a restaurant that does it well, I definitely will leave them a good review on tripadvisor. 

I love making this dish at home though, and that is because I can really tweak it to my liking. 

My dish is made with fresh chicken breasts, crispy broccoli, sliced carrots, fresh garlic and ginger and sauteed in an amazing asian sauce that you’re sure to love. 

All the ingredients found in this dish can be located at pretty much any large grocery. 

Once you learn to make this simple Cashew Chicken at home, you will be making it more often Guaranteed!

WHERE WAS CASHEW CHICKEN INVENTED

This is somewhat of a complicated question, today it is known to come from Thailand and is a very popular street food expectaill in Bangkok. However, most Thai people will say it was brought over by the chinese. 

IS CASHEW CHICKEN GLUTEN FREE

No, Cashew Chicken is not Gluten free. Because of the Oyster sauce and other asian ingredients listed.

IS CASHEW CHICKEN HEALTHY

Yes, just look at all those vegetables and lean chicken meat in this dish. Also it is a great meal option for those on a Keto Diet. Because it is made with Skinless Chicken breasts and an array of vegetables. 

The hardest part about making homemade Cashew Chicken is “chopping those vegetables”. Once you have that part done, the rest comes together in a snap.

This whole meal can be pulled together in less than 30 minutes.

HOW TO MAKE CASHEW CHICKEN STIR FRY

You can use a wok or skillet, I used a wok because that is what I had available. 

  • First you will want to start by rinsing and slicing the chicken then again into medium bite size pieces.
  • Then add the chicken to the bowl and marinade with cornstarch, salt and shaoxing wine.
  • For a minimum of 30 minutes in the fridge. 
  • Meanwhile, wash and prepare the vegetables. By dicing the broccoli florets along with the carrots. 
  • Then bring a wok/pan of water to a bowl, turn down the heat and add the broccoli florets in flipping over and over for 30 seconds.
  • Remove with a strainer and set aside.
  • Do the same with the carrots.
  • Once the vegetables have been simmered, keep the water in the wok/pan.
  • Then add in the chicken, be careful not to stir too much as you don’t want to marinade to all come off.
  • Simmer in the water for roughly 5 minutes till the chicken has poached
  • Remove the chicken, strain and set up top of the vegetables. 
  • Dump the water, then and the sauce to the same wok/pan.
  • Add back in the chicken and saute for 2 minutes before adding back in the vegetables. 
  • Saute all together adding in the cornstarch/water mixture and saute till thick for another 2 minutes
  • Serve and enjoy!

HOW TO MAKE CASHEW CHICKEN SAUCE

Some people use Hoisin sauce in there sauce, I prefer Oyster which makes it less sweet.

  • Oyster Sauce – feel free to use Hoisin
  • Soy sauce
  • Cornstarch
  • Sesame oil
  • Shaoxing wine
  • Chicken stock or Vegetable
  • Sugar
  • White pepper

IS CASHEW CHICKEN SWEET

Cashew chicken should not be only sweet, however there are some places that make it sweet. Traditional Cashew Chicken should have a balance of flavors. Which make it sweet, spicy and savory!

WHAT TO SERVE WITH CASHEW CHICKEN

Basmati rice goes really well alongside this dish.

This Easy Green Thai Curry can be pulled together in less than 30 minutes! 

WHAT DOES GREEN THAI CURRY TASTE LIKE

Green Thai Curry has hints of spice, tang and sweet flavors. It really is something special and this recipe has all the same tastes that you would find at your local Thai restaurants too!

You may have thought that making Thai curry at home would be complicated, but I am here to tell you it is not. 

However I have found a healthy paste product that contains all those foreign ingredients that is out of this world amazing.

It will not only taste the exact same way as making it all from scratch, it will save you all the hassle of learning to do that and time.

What am I talking about? My favorite GREEN THAI CURRY PASTE! You can see that below!

Green Thai Curry is just a bit milder than Red Thai Curry, however both taste similar. There are plenty different ways to make Thai curry and that is because you can add just about any type of vegetable or meat protein to your dishes.

WHAT IS IN GREEN THAI CURRY

  • Thai Green Curry consists of some kind of protein, some kind of vegetable, lime juice, fish sauce, sugar and Coconut milk and Green Curry Paste.
  • Traditionally that paste is made in a mortar and is comprised of shallots, garlic, green chilies, galangal, lemongrass, kaffir lime leaves among some other ingredients and spices. 

This one here is made with Chicken breasts, Asparagus and Swiss Chard.

As you may know I love Thai food and make it a lot in our home. Actually I make it every week, because I crave it that much. With any of my Thai recipes, you will learn that you really only need a few ingredients in your fridge and pantry to make any of them easily.

And that is because, I have been making homemade Thai recipes for years. And have learned all the tricks to making it quickly and healthily for just about anyone who loves it.

Some people like to use one can of coconut for their Thai curries. I will do that at times too, however for this recipe I used two cans of light coconut milk which helps to make this dish go father and serves more people.

One can typically serves two people for dinner, two can’s can serve three. Being I adore Thai food, I will eat it all to myself if I can.

Another reason I like to use light coconut milk is because it’s healthier and being that I eat this dish almost every other week. It works well for me! 

However if your wanting a thicker sauce, you can use full fat coconut milk. Both work really good in this recipe and is something I do use at times.

  1. Marinate– You want to use the right amount of stock.
  2. Time – You do not want to bake them for more than 50 minutes.

This dish consist of fresh chicken breasts, fresh sage, lemon juice, onions, garlic and mini potatoes.

Oh and 1/2 cup of chicken stock which helps to create the most delicious potatoes.

If you follow those two tips alone you are sure to prepare the best grilled chicken breasts.

Also feel free to use bone in breasts as well, those work for this recipe well also. 

You can serve these baked lemon chicken breasts and potatoes alongside a bed of grilled asparagus, salad or some other vegetable of your if desired.

Best Chicken Tortellini Soup

This Best Chicken Tortellini Soup has fresh asparagus along with kale it it. It is one of those soups that you will want to make a big old pot of and enjoy over a few days

If your craving a soup to warm you up, but also want a hearty meal. Then this Soup is sure to hit the spot! Not only does it tastes good it is also very healthy for you.

WHAT IS CHICKEN TORTELLINI SOUP

The reason I call this tortellini soup the best, is because it is! Yes, I know it’s not traditional to put asparagus and kale in this type of soup. And i’m aware that most of these types of recipes call for carrots.

But for me I much prefer these veggies!! Don’t you?

You can also replace the kale with spinach if desired. What I like most about making this soup is that it can be enjoyed over a few days. Because it keeps very well in the fridge and even tastes better the second day!

CAN YOU FREEZE CHICKEN TORTELLINI SOUP

Yes, up to three months!

Absolutely delicious! 

I have always loved chicken noodle soup, however it is nice to try different versions of it now and again, right? 

This soup is allot like Chicken Noodle soup, but we are omitting the noodles and carrots and uses tortellini along with kale and asparagus instead. 

It’s pretty similar to allot of those other Chicken Tortellini soup recipes, however mine uses more vegetables and is more on the healthy side. 

What makes the soup creamy is the mixture of the chicken stock, cream and parmesan cheese. Some recipes will have you using all cream and of course that will make it ultra creamy. However for this soup I wanted it to be lower in fat and also stay true to a chicken noodle type soup base. 

Such a fantastic soup to have simmering on the stovetop when your not feeling so great or heck even when you are. 

I like to use better than bouillon chicken stock when making most of my soups. So I will mix just the right amount of that with water for the stock.

Plus using mostly stock vs cream really helps to make this soup super creamy without all the extra fat. Of course you can use whatever chicken stock you have on hand, just be sure it is not laddled with to much salt. 

Also, you will want to allow the asparagus to simmer for a least 15 minutes along with the chicken to ensure both are super tender prior to adding the tortellini and kale. 

If you are planning to enjoy this soup over a couple of days, then you will want to add one more cup of chicken stock as well, since the tortellini tends to soak it up overnight. 

I really like to use “Herb Chicken Tortellini” for this recipe. However you can use whatever brand you like most. Also if you want a little heat to this soup then I would recommend adding in a pinch of red pepper flakes.
