This Old Fashioned Chicken Curry recipe is ready in under 30 minutes from scratch and can be made mild or spicy. It is somewhat of a fusion dish as you can play around with the spices if desired.

Old Fashion Chicken Curry has elements of Indian and Caribbean flavors. The type of curry powder you use is up to you. If you want a more spicy curry I recommend using Madras curry powder or a Jamaican kind vs a regular Indian curry.
Also, I recommend using a minced scotch bonnet pepper or scotch bonnet sauce to add heat to this dish. However, if your not much into spice you can omit the extra spices all together as curry powder tends to have some heat to it.
Like spice, then add those spices. You can always use red chili powder or cayenne powder instead and that works too and will make it more of an Indian curry also vs Caribbean.
How to Make Old Fashioned Chicken Curry
- Start by dicing the chicken breasts then place them in a large bowl. Squeeze the juice of half a lime over the chicken and mix. Set aside for 10 minutes to allow the juice to tenderize the chicken.
- Drain the chicken and rinse with cold water.
- Next in a blender, blend the onion, scotch bonnet pepper, garlic, ginger and spices along with the chicken stock to form a paste.
- Now in a large pot add some cooking oil and fry the chicken till lighly browned and cooked.
- Add 1 more tbsp of cooking oil and all the spices, Fry with the chicken till fragrant roughly 5 more mins.
- Pour over the liquid paste from the blender and stir
- Season with salt and cover over low-medium heat for 30 minutes till cooked.
- Serve with Naan bread or basmati rice
Cooking methods:
- Simmer on a low-medium heat for 1 hour on the stovetop
- Cook in the pressure cooker around 10 minutes or depending on your instructions
- Cook in the slow cooker from 8-10 hours.

Old Fashioned Chicken Curry
You can use a scotch bonnet pepper or chili /cayenne powder either or works for this recipe!
Ingredients
- 3 large chicken breasts diced
- 1/2 lime
- 1/4 cup Greek yogurt
- 2 cups of chicken stock
- 1 large onion, diced
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 1/2 tsp of minced scotch bonnet pepper/ sauce or 1/2 tsp chili / cayenne powder
- 3 tbsp curry powder (your favorite)
- 1 tbsp teaspoon garam masala
- 4 tbsp fresh cilantro to serve

Notes
Simply add more scotch bonnet sauce or chili powder to make it more spicy!
