Italian Tuna Pasta Salad

This Healthy Italian Tuna Pasta Salad is the perfect summer salad and is made with Zesty Italian salad dressing.

Yes I said it “Summer” and it’s official. We are finally saying goodbye to winter and hello to SUMMER 🙂 

You can use just about any type of lettuce mixture for this salad, I choose a good mixture for mine as you can see and it was super delicious!

This salad can be thrown together in no time at all and is filled with 5 different types of salad mix, along with some bowtie pasta, tuna.

Then tossed in a healthy balsamic, garlic dressing that you are sure to love.

I went a little lighter on the pasta for this salad, I typically use three to four cups of pasta in my pasta salads.

However for this recipe I used two cups because I REALLY wanted to highlight this lettuce.

You can serve this for the main course or as a side dish.

Because it has two cans of tuna it can be a real filling dinner option, so do not let all the greens here fool you. 

This salad can be enjoyed pretty much any time of year, but I know it will be best enjoyed on those long summer nights out on the back patio!

Shredded Brussel Sprouts Recipe

These Shredded Brussel Sprouts recipe comes in a Bacon and Balsamic dressing and makes for an excellent side dish to just about any meal. 

SHREDDED BRUSEEL SPROUTS RECIPE

If you liked my other Bacon and Brussel Sprout recipe, then your sure to like this recipe for shredded Brussel Sprouts with Bacon and Balsamic.

Now, I don’t normally make claims like this, because everyone has different tastes right?

But seriously who doesn’t like bacon? Then adding it to brussels is just a match made in heaven, I could eat this all day everyday. And I’m sure most people could too!

Think Christmas and thanksgiving side dish with this recipe!

Not cooking for a crowd? Well then cut the recipe in half if you want, by why would you want too?

You can have this for lunch over the next few days, just store any leftovers in a sealable container and enjoy. It’s even good cold, but serving it warm is certainly best.

BENEFITS OF BRUSSEL SPROUTS

Did you know that Brussel Sprouts are packed full of nutrients?

Such as vitamin C and vitamin K, folate, manganese, vitamin B6, dietary fiber, choline, copper, vitamin B1, potassium, phosphorus and omega-3 fatty acids.

So don’t feel bad for adding bacon to them to enhance their flavor, after all the same amount of bacon in this recipe is similar to that of a large pizza.

You are allowed to indulge once in awhile right?

This a true one pot dish, that anyone can prepare in a cinch. 

CAN SHREDDED BRUSSLE SPROUTS BE FROZEN

Yes, just make sure you are you wash and dry them before freezing.

HOW SHRED BRUSSEL SPROUTS

The best way to shred Brussel sprouts is in a food processor. Set it to shave! 

Just make sure you pre wash them and trim off the bad ends before placing in the food processor.

WILL SHREDDED BRUSSEL SPROUTS TURN BROWN

No, not if your cooking them the day of.

Wash and trim the ends off the Brussels, then cut in half before placing in the food processor.

Thanks to my Hamilton Food Processor shredding these Brussels was a Breeze.

HOW TO MAKE SHREDDED BRUSSEL SPROUTS

  • Start by sauteing the chopped bacon, once it is cooked but not fully caramelized add in the garlic and sauté for 2 minutes till fragrant. Then add in the shredded brussels.

Season with salt and pepper and add in the balsamic vinegar, butter and saute till the brussels are cooked as you like.

Tortellini Mushroom Recipe

This Tortellini Mushroom Recipe is absolutely delicious! Made with brown mushrooms, cheese tortellini.

This pasta dish is quick and easy to make and can be served any night of the week.

If you are looking for a vegetarian dish for tonight’s dinner and love mushrooms, then your in for a treat!

How to make Tortellini Mushroom Recipe

  • To make this dish you will simply start by cooking the pasta according to the package instructions.  
  • While the tortellini is cooking, you can add 2 tbsp of butter to a non stick frying pan and add in the sliced mushrooms.
  • Sauté then with fresh rosemary and salt and pepper till browned and soft. 
  • Now all you will have to do is add in the balsamic vinegar and bring to a simmer for 2 minutes before adding back in the cooked tortellini and parmesan cheese.
  • Toss everything together and enjoy your mushroom feast!

This recipe can be made vegan instead of just vegetarian if you want.

However you would want to replace the butter, parmesan cheese and cream with vegan options of course.

And of course you can use “gluten free” pasta if your on such a diet.

So really there is no excuse to not indulging once in a while in such an amazing dish.

Dinner for 2 never looked so Tasty!

Squeeze the juice from a lemon overtop before serving and you will be in mushroom pasta heaven… Bone appetit!

This Mushroom Ravioli has a fantastic balance of flavors that is not at all overpowering but rather savory.

WHAT IS MUSHROOM RAVIOLI 

It is an Italian dish that is cooked on the stovetop.

Be sure to add the goat cheese, because it really blends with the vegetable stock.

Along with some butter and balsamic vinegar base to create the most delicious blend of flavor.

Start with a pre packaged ravioli like Olivieri mushroom

Roasted Beet Feta Salad

This healthy Roasted Beet Feta Salad is made with fresh Beets, spinach, walnuts and comes with a warm honey beet salad dressing recipe.

Roasted beet salad has always been a crowd pleasure in our home. And I’m more than certain it will be in yours too!

IS BEET SALAD HEALTHY

Yes very, beets contain lots of nutrients such as fiber folate (vitamin B9), manganese, potassium, iron, and vitamin C.

Also make sure that you don’t throw out the beet greens!!

The stems and leafs are even edible so nothing has to go to waist here!

WHAT I LOVE ABOUT BEETS

They are super nutritious for you because they are very low in cholesterol and saturated fat.

WHAT DRESSING FOR BEET SALAD

BALSAMIC VINAIGRETTE DRESSING

  1. Pour your Balsamic Vinegar into a bowl.
  2. Then warm up the honey in the microwave for a few seconds. Preferably use natural honey (most European markets sell the real stuff)
  3. Next smash in the roasted garlic into the honey and pour into a small bowl.
  4. Mix/Whisk well adding a pinch of salt & pepper.
  5. Pour over your finished salad.

HOW TO ROAST BEETS

  • Preheat the oven to 400 degrees F.
  • Then wrap the beets with the skin on in aluminum foil and place on the medium shelve in oven.
  • Do the same for the garlic, roast it in it’s skin.
  • Then bake for 40-45 minutes till fork tender.

HOW TO PREPARE BEET SALAD

  • Once they have baked remove the foil with an oven mitt (be careful there hot) and let it cool slightly enough so you can peel off the skin.
  • Peel off the beets in a clean sink, this way there will be little mess.
  • Tossing the skins once it is all done! 
  • Slice into 1/4-inch thick slices, and chop in quarters.
  • Top with toasted walnuts, feta cheese, salad mix and your pre – made dressing.
  • Serve warm and enjoy!

HOW TO TOAST WALNUTS

  • Toast the walnuts in a pan with a little olive oil till browned and fragrant for a couple mins. 
  • You can also toast them in the oven if you prefer.

Are you ready for a BURST OF FLAVORS!

ARE ROASTING BEETS GOOD FOR YOU

Raw is best, however if your roasting them in tinfoil you are still preserving the nutrients. Vs boiling them away!

Plus roasting beets brings out their flavor! When choosing beets to roast, look for the small to medium ones as they will roast quicker. 

CAN ROASTED BEETS BE FROZEN

Defiantly, and they taste just as good once thawed. Just do not reheat them as they become to mushy for this salad. 

ROASTED BEET FETA SALAD

Contains just a few fresh simple ingredients of freshly roasted beets, feta cheese, fresh spinach and chopped walnuts.

Then is served with a lovely balsamic dressing that your sure to love.

MAKING A BEET SALAD GREAT FOR DIABETICS 

Beets also contain a very good source of nutrients such as dietary fiber, folate, vitamin B and cooper, iron and magnesium, potassium and manganese and vitamin C. 

If that is not a reason to eat more beets, than I don’t know what is!

The best time of year to find fresh beets is end summer!

So if you have a local farmers market, be sure to check them out for some fresh beets.

CAN I USED FROZEN BEETS FOR BEET SALAD

Yes, you will want to start with raw beets and place them in the oven on a baking sheet or in tinfoil.

  • Baking them till fork tender, which ruffly takes 40 mins at 400f.
  • Then let them cool down before, slicing and freezing in appropriate freezer bags. 
  • Then once your ready to use them. Make sure to allow them to fully defrost on the counter or in the fridge for 24 hours.

Reheating them though can make them soggy!

So it is best you serve them with a hot dressing.

Is sure something special and can be served just about anytime of the year!

Once you start to learn to prepare and cook fresh beets.

Balsamic Rosemary Pork Tenderloin

This super simple to make Balsamic Rosemary Pork Tenderloin will save you from cooking in the kitchen all day. 

Wanting to serve this with some rice or potatoes? Feel free to add 1/2 cup of chicken stock to this recipe and that will create more of a broth at the end.

I saw a similar recipe done by Rachel Ray a while back and knew it was only a matter of time before I gave it a go!

Paired this delicious tenderloin with a bunch of brussel sprouts, they go great well with balsamic vinegar.

You can always try asparagus, carrots or potatoes as well. 

There really is not much too it, your basically seasoning the tenderloin and then stuffing it with some fresh garlic and rosemary.

Then drizzling more olive oil over top and balsamic vinegar which helps to caramelize the meat.

Then place into a oven safe dish and baking it along with your favorite vegetable of choice. 

Easy peezie weeknight dinner that can easily feed a family of 3.

Balsamic Portobello Pasta

This Balsamic Portobello Pasta is 100% vegan and can be pulled together in no time at all.

You can use just about any pasta for this recipe, I like to use fettuccine. You are sure to feel amazing after eating this and trust me you won’t miss the meat in this recipe.

Because those portobello mushrooms are packed with full of vitamins and minerals along with protein and are high in fiber.

This dish is tossed in a healthy olive oil, balsamic dressing. So if you looking for a quick and healthy vegan meal for tonight, you just found it!

Unstuffed Cabbage Roll Soup

This Unstuffed Cabbage Roll Soup is a family favorite in my house. I like to prepare a big pot of this soup and will enjoy it over a few days. 

WHAT IS CABBAGE ROLL SOUP

It has all the same ingredients that cabbage rolls would have with stock to make it a soup.

It basically a cabbage roll done the lazy way, meaning we are not rolling the ingredients into a pre cooked cabbage leaf.

Instead we are throwing all those ingredients into a soup rather than rolling them up neat and tidy.

CAN CABBAGE ROLL SOUP BE FROZEN

Yes, it stores well as leftovers and freezes very well!

Cabbage roll soup is one of those staple soups that everyone should have in there recipe books.

It can be very healthy for you depending on the quality of ingredients you choose to use.

WHAT IS IN CABBAGE ROLL SOUP

I like to use:

  • Organic grass fed beef
  • Beef Stock
  • Whole canned tomatoes
  • Cabbage
  • 1 fresh tomato
  • Tomato Juice
  • Rice
  • Spices

This soup can be done on the stove top as I did or if your pressed for time in your slow cooker. 

Whichever method you choose, I am sure this one will be something your family enjoys!

Also to save some times, feel free to use your food processor to chop the cabbage .

You can use the shred option which will give you more of  a shredded cabbage in the soup.
