Here is a recipe for the Best Chicken Stir fry it goes great alongside a warm bowl of Jasmine rice and makes for healthy meal. 

This quick and easy Chinese inspired takeout recipe can be enjoyed in less than 30 minutes. 

The chicken and vegetables are coated in a sweet and savory honey sauce that your family is sure to enjoy!

Vegetables of all kinds go well in this stir fry, you feel free to experiment with what you have on hand.

Best Chicken Stir fry recipe

I like to use a frozen vegetable mixture on those days where I am pressed for time.

So for this recipe, I have used one of my favorite frozen “Asian vegetable mixes” which has broccoli, carrots, green beans, water crescents in it. 

However you can use whatever vegetables you like. Fresh or frozen will work, just make sure that if your using frozen to defrost them prior to cooking.

Air Fryer Sweet Potato Fries

These Air Fryer Sweet Potato Fries are sweet with a hint of spice. I like to serve them alongside a spicy mayo! 

WHAT IS AIR FRYING?

Air frying is a healthy alternative to deep frying food. And most air fryers have been marketed in a way to make you think that this cooking technique is best for those who make a lot of those at home.  

Well I am here to tell you that you do not need to just be a deep fried food lover to want to use this cooking method. RATHER if you love to bake food, then this is also a great alternative. And in most cases is much healthier than traditional baking methods. 

Because air frying mimics deep fried foods but uses little to no oil. And if your cooking something fatty, the fat will drip away and off the food. So you can enjoy all the same deep – fried or baked foods that we have all come to know and love again but in a healthy way.

The air hot air is what cooks the food not the oil. If you have some frozen foods on hand, feel free to throw out any deep fryer you may have because the air fryer can now do the same job. 

But it is not only frozen food that can be cooked this way, pretty much any food you can think of can. 

Such as my Best Air Fryer French Friesthey are so tasty too! 

This is my second AIR FRYER recipe that I have shared on this blog. And I hope you like it!

As you may know I have been on the fence for the past year about buying an air fryer.

Mainly because I do not eat a lot of deep fried foods and also because I could not fathom spending $200 plus for ONE.    

So recently when I came across the Gotham air fryer, that does the exact same thing as an air fryer. I knew that I had to try it! So I’m now starting a Air Fryer collection of recipes on this blog because I have fallen in love with this NEW kitchen tool. 

HOW TO MAKE SWEET POTATO FRIES IN AN AIR FRYER?

  • Start by slicing the yam fries on a cutting board into 1/4 inch slices. 
  • Once the yam is sliced into slim fries, place them into a large bowl and submerge in water.
  • Soak for a minimum of 30 minutes on the counter.
  • Then drain and place the fries in another bowl and season with cornstarch and toss to coat.
  • Drizzle the olive oil over top of the fries and season away! 
  • Place the fries in or on the Air Fryer making sure they are not crowded, then allow it to do the Cooking.
  • Bake at 400 F for 30 minutes! 

HOW TO MAKE SWEET POTATO FRIES ON THE GOTHAM AIR CRISPER TRAY?

  • If your using the Gotham Steel Crisper I would advise to turn your oven to Conventional bake, which will make the fries more crispy.
  • Otherwise, if your oven does not have that setting you can simply place the crisper on the middle rack. 

WHAT MAKES FRIES CRISPY?

The air flow that is create under and around the sweet potato fries. The more dryer they become the more crispy they will become. Also the thinner the fries the easier it is for them to become crispy, I like to cut mine about 1/4 to 1/2 of a inch thick.

Also surprisingly soak them in water beforehand helps to remove the starch as it soaks into the water. The starch is what hinders the moisture from escaping. Which in turn prevents the fries from burning to a crisp and keeps them moist inside and crispy on the out. 

CAN I USE ANY KIND OF AIR FRYER? 

YES!  Air fryers promise that you can get that deep fried texture without all the grease. 

If you have a table top Air Fryer all these recipes will work the same. Because Air Fryers all use the same type of cooking techniques. 

IS AIR FRYER FRIES HEALTHY? 

Yes, very. Since the hot air is doing all the frying, saving you from using oil. But also giving you a deep fried taste without all those trans fats. The food ends up crispy on the outside and moist on the inside.

If you have never used an air fryer, now is the best time to start. Because they are more affordable now than ever before. 

Some people think that an Air Fryer is mostly for people who eat a lot of fried food. I admit I once was apart of that group, however I soon realised that if you like to bake foods too. Like I do, then the air fryer really cuts out a lot of the unnecessary fat.

Think of it, how do you typically eat fries? Deep fried of course. However with the air fryer it elevates the food and allows all that (FAT) to drip away, which creates a fat free crisp that you will love. 

Plus if you use the Gotham Air Fryer it is super simple to clean, I am talking hard sticky food at the bottom of the tray just slides right off. No scrubbing at all is needed, it couldn’t be more simpular that this guys.

Another reason I like the Gotham Air Fryer is because it cooks more food than the typical table top Air Fryers. Because it has a lot of space on that large tray !

Thai Red Curry Shrimp Recipe

Skip the takeout tonight with this Thai Red Curry Shrimp Recipe. This dish is super simple to make and is ready in less than 20 minutes.

I make this dish often, it’s one of our favorite Thai dishes.

WHAT DOES RED THAI CURRY TASTE LIKE

Red Thai Curry has hints of spice, tang and sweet flavors. It really is something special and this recipe has all the same tastes that you would find at your local Thai restaurants too!

WHAT’S IN RED THAI CURRY PASTE

  • Galangal – like ginger
  • Kaffir lime leaves – tastes similar to limes
  • Dried red chilies
  • Lemongrass
  • Garlic
  • Shallots
  • Cumin
  • Coriander seeds

HOW MUCH RED THAI CURRY PASTE TO USE

  • 2 tbsp per 400 grams of Coconut Milk

The ONLY brand I will use!!

WHERE TO BUY RED THAI CURRY PASTE

I buy mine from the REAL CANADIAN SUPERSTORE, it is by far the best curry paste out their. 

VEGETABLES THAT GO GREAT IN RED THAI CURRY

  • Kale
  • Spinach
  • Red, Green, Yellow or Orange peppers
  • Swiss chard 
  • Asparagus
  • Mushrooms

PROTEINS THAT GO GREAT IN RED THAI CURRY

  • Shrimp
  • Chicken
  • Tofu

Now there are plenty different ways to make Red Thai curry.

That is because you can add just about any type of vegetable or meat protein to this recipe.

Such as: spinach, mushrooms, bean sprouts, broccoli etc.

And the main ingredients are always the same. Such as Coconut milk,  “Lemongrass”, “Galangal”, “Kaffir lime leaves” OR replace that will pre – made “Red Thai curry paste”. Which has everything you pretty much need already in it!

Now if you are not familiar with all those ingredients, don’t fret.

You can find them all at your local Asian grocer or right in the international aisle which will sell Red Thai Curry paste in packages and or jars (see picture) above for the “Red Thai Curry paste” we use.

HOW TO MAKE THAI RED CURRY SHRIMP

  • You will want to start with some freshly chopped vegetables.
  • Then pull out all your ingredients; such as cooking oil; coconut milk, red Thai curry paste, fish sauce, brown sugar, kaffir lime leaves and a lime.
  • Next, cook some white rice on the side to serve. 
  • Then pull our your wok and get to cooking, you will find the easy steps to this recipe in the card below!

And the nice thing about cooking Thai food is that once you learn to prepare.

You will then have all the necessary ingredients and know how to prepare it again.

Before you know it you will be a TOP CHEF in your kitchen, cooking Thai dishes like a Pro.

IS RED THAI CURRY SPICY

Yes, however when you cook it down in the coconut milk and other ingredients it becomes more of a balance of flavors. That become, sweet, spicy and sour. 

WHAT IS IN RED THAI CURRY

  • Red Thai Curry consists of some kind of protein, some kind of vegetable, lime juice, fish sauce, sugar and Coconut milk and Green Curry Paste.
  • Traditionally that paste is made in a mortar and is comprised of shallots, garlic, dried red chilies, galangal, lemongrass, kaffir lime leaves among some other ingredients and spices. 

As you may know I love Thai food and make it a lot in our home.

Actually I make it every week, because I crave it that much.

With any of my Thai recipes, you will learn that you really only need a few ingredients in your fridge and pantry to make any of them easily.

Making homemade Thai curry at home is really easy once you have all the basic ingredients!

Notes: 

  • Keep in mind a good coconut milk, will be half solid not watery.
  • “Lemongrass”, “Galangal” and “Kaffir lime leaves” can be found in most Asian stores. “Thai Red Curry Paste” can be found in most Supermarkets, Thai Red Curry paste has all the above ingredients in it needed to make this dish.
  • Add in the lime last, you do not want to cook the lime because it will ruin the flavor.
  • Do not eat the “Lemongrass”, “Galangal” and “Kaffir lime leaves” there just for flavoring, if you’re going to use these instead of the Thai Red Curry paste, make sure to bruise each item before adding to the pot.
  • Want more heat, simply add in some Thai Bird’s eye chilies or Thai Chili Paste. Caution when preparing Bird’s Eye Chilies, these chilies are very hot and can burn the eyes.

COCONUT CURRY SHRIMP

Satisfy your curry craving tonight with this mouthwatering  Coconut Curry Shrimp that contains a fusion of flavor. 

This Coconut Curry Shrimp is bursting with flavors from around the World.

As it contains two different types of curry flavors in it. 

Think Thailand meets Jamaica! 

And trust me it is super simple to make. 

If you have never tried Red Thai Curry before, I encourage you to give it a try. 

Some of the ingredients of RED THAI CURRY paste includes “Lemongrass”; “Galangal” , “Kaffir lime leaves” and Bird’s Eye Thai chilies. 

HOW TO MAKE COCONUT CURRY SHRIMP

  • Red Thai Curry Paste * see the picture below for my favorite brand
  • Jamaican Curry Powder
  • Thick Coconut milk * skip the watered down varieties
  • Shrimp
  • Cilantro
  • Green peppers
  • Onion
  • Limes
  • Rice

Our favoriteRED THAI CURRY PASTE

The shrimp is curried to perfection and has become one of our new households favorites. 

It is very similar to my Jamaican Curry Shrimp and if your interested in that recipe.

It is also a favorite in our household.

The difference between that recipe and this recipe is that here we are adding tomatoes and omitting the scotch bonnet peppers and replacing that with a bit of “Red Thai Curry” paste. 

Both recipes are amazing and I encourage you to try this one and that one separately. 

So if you like curry as much as me, then you are sure to love this recipe. We are infusing it also with salt and pepper, tomatoes and coconut milk that help to bring all those curry flavors alive.

Keep in mind you will want to use a good quality coconut milk, one that is not to watery. When it comes to the tomatoes you can choose fresh or canned.

COCONUT CURRY SHRIMP AND RICE

  • Start by making your rice
  • Bring a medium pot of water to a boil
  • Turn the heat down to medium and add in 2 cups of rice
  • Simmer on medium heat till the water is almost evaporated
  • Turn down to low and simmer till tender, keep an eye on the liquid you may need to add a bit more or remove some.

HOW TO MAKE COCONUT CURRY SHRIMP

This recipe is super easy to make. Trust me it is as easy as 1, 2, 3

First you want to cook some rice. I like to use Basmati rice for this dish, however any type works.

  2. Then in a large skillet you will want to add some coconut oil then the garlic and ginger powder along with the Jamaican curry powder and saute on medium heat till fragrant.
  3. Next add in your Red Thai Curry paste and saute 1 minute till fragrant.
  4. Add in remaining spices then the can of coconut milk.
  5. Simmer on medium heat and add in your chopped onion and green pepper. Simmer on medium – low till the veggies have become tender. 
  6. Lastly add in the shrimp and cook till no longer pink.
  7. Serve over rice with fresh limes. 

Keep in mind you can use fresh ginger and garlic if you so desire.

Quick Carnitas Recipe (Pressure Cooker)

These Quick Carnitas Recipe is an inexpensive weeknight meal that can feed a crowd! 

I love making this recipe, you can either simmer it all day in your slow cooker or prepare it in less than 20 minutes in your pressure cooker. 

What kind of meat is use for Carnitas? 

Carnitas is the Mexican version of pulled pork. It’s traditionally made with pork shoulder or pork butt. This piece of meat contains more fat and helps it to stay juicy!

How to make Pork Carnitas in pressure cooker? 

You will start by searing the pork until it’s browned on all sides, then you will add all the ingredients listed here directly into the slow cooker.

Allowing it to cook throughout the day or you can cook it in under 20 minutes in the pressure cooker. 

Can’t get simpler than this, once it’s cooked you will take two forks and shred the pork on a cutting board before serving over rice or in a taco. 

Then you will be ready to have a feast fit for a Mexican Queen or King.

I love the ingredients in this recipe, because everything tastes so fresh. Adding fresh lime juice along with a fresh orange juice really makes the flavors pop, so be sure not to skip them.

Also the addition of the the raw onions surprisingly work so well here too, trust me or I should say the Mexicans!

Thai Carrot Soup

This Creamy Thai Carrot Soup is made with lots of carrots and has hints of thai flavors incorporated into it.

PLUS it is simple to make, trust me I have tested this recipe a few times. And have come up with the easiest way to make this from scratch. There is no peeling of the carrots here and everything is pretty much done in one pot.

Minus the blending of the carrots at the end. But it is so worth it because it turns into the most delicious creamy carrot soup ever!

Have you ever tried Red Thai Curry before? If you have then you will recognize some of those flavors here. This soup is not boring by any means, and it does not taste just like carrots.

Rather all the ingredients here only enhances the carrots. Which have linked with benefits for heart and eye health, improved digestion, as well as reduced risk of cancer.

Now there are plenty of ways to make this kind of soup, so I’m going to give you a few options here and let then you decide what works best for you.

I have experiment with a few carrot soups in my day, and I have found most of them bland to be honest. That is probably why people sometimes add potatoes and other elements to it. But not I! 

I prepare this soup the exact same way I would any “Red Thai Curry” minus the fish stock.

With the addition of 8 carrots. If you are not as much of a carrot fan, then you can also half the amount of carrots and add one sweet potato to the stock. “Cubed” of course, then you will want to blend that along with the carrots.  

IS CARROT SOUP HEALTHY

YES, carrots have been linked with plenty of benefits for heart and eye health, improved digestion, as well as reduced risk of cancer. Being that their is 8 whole carrots in this soup you are getting a whole lot of those benefits. 

WHY IS CARROT SOUP HEALTHY FOR YOU

  • Because it is packed full beta-carotene, fiber, vitamin K, potassium and antioxidants 
  • They are a weight loss friendly food and have been linked to lower cholesterol levels and improved eye health
  • The list goes on and on as to the benefits of carrots.

HOW TO MAKE THAI CARROT SOUP 

  • You will start by washing and chopping the carrots, do not remove the skin. It is very healthy for you as that is where most of the nutrients are stored. 
  • Then in a large pot you will want to saute the Red Thai Curry Paste in a little bit of oil for 2 minutes or until fragrant. 
  • Along with the fresh ginger. 
  • Then you will add the coconut milk along with the vegetable stock.
  • Add the cubed carrots, star anise and sugar.
  • Place the lid on the soup and simmer on medium heat for 20 minutes or until the carrots are fork tender.
  • With a ladle remove the carrots and place into a blender, along with 1 cup of the stock.
  • Blend until completely creamy and smooth.
  • Pour back into the pot, cover and simmer 5 more minutes. 
  • Serve into bowls, then crush up some cashews and parsley and garnish.
  • Squeeze half a lime over each bowl and enjoy!

  • Traditionally Red Thai Curry paste is made in a mortar and is comprised of shallots, garlic, green chilies, galangal, lemongrass, kaffir lime leaves among some other ingredients and spices. 
  • How the Red Thai Curry that I use and HIGHLY recommend has all that in it. (see below)

Also if you’re feeling under the weather, this is the perfect soup to make. 

Just simply go ahead and add more ginger to this soup as it carries a ton of antibacterial properties.

And has been proven to help people get better much faster. 

So you have two options when preparing this dish, either you can make the Red Thai Curry from scratch with the traditional Thai ingredients.

By crushing it all together in a mortar or you can buy the premade “Red Thai Curry Paste” which has all this in the paste, and is much easier. 

This is the method we highly recommend, as it’s much easier. We hope you give it a try,  and let us know how it turned out for you

CAN CARROT SOUP BE FROZEN

Definitely, just make sure you are placing it in a freezer friendly container. 

You really you cannot go wrong with making this soup, it’s healthy and also an excellent recipe to keep on hand when you have a ton of carrots.

Best Homemade Guacamole

This is my all time favorite way to make Guacamole, that is why I call it “The Best Homemade Guacamole“. 

There is a trick to making the best guacamole so follow along.

Your going to love this recipe!

Now, I know there are a ton of so called AMAZING Guacamole recipes out there. However most are mediocre if you ask me, as I have been making this stuff for years.

In my pursuit for the best recipe, I have also spoken to many Mexicans who have shared some of their recipe secrets with me. If that is not market research, then I don’t know what is. 

WHO INVENTED GUACAMOLE?

The Aztecs from the old world have been credited for inventing this delicious dip. The dip was called ahuaca-molli; molli was the Nahautl word for “something mashed or pureed.

HOW TO MAKE THE BEST GUACAMOLE?

  • I don’t know about you but I like my guacamole to be medium spicy, so I will add 1 serrano pepper to 3 avocados.
  • Also I like to make my guacamole in a traditional pestle, however it  will turn out the same way if you decide to make it in a bowl and then mash it with a fork. 
  • Be sure to not over mash the avocados, because you want to leave some small chunks in there. It just tastes better that way 🙂
  • Season well with salt and the right amount of citrus and you will have the best guacamole ever!

WHAT MAKES A GUACAMOLE AUTHENTIC?

  • It is in the ingredients, true Mexican guacamole uses:
  • Serrano Peppers not Jalapenos and White Onions not Yellow or Purple.

WHAT MAKES A GUACAMOLE AMAZING?

  • The ratio of ingredients that are used
  • The right amount of spices
  • The right ingredients 

How do I know how to make real Guacamole you ask? Well I have traveled to Mexico before along with have visited Old Town in San Diego and ate at every single Mexican restaurant I could find! Asking how it’s made, if that is not market research, then I don’t know what is. 

I’ve also spent a lot of time testing many of those recipes and came up with our favorite way to Mexican Guacamole at home. 

Real Mexican Guacamole highlights the avocados and does not allow any other ingredient to take over. That is why I do not add roma tomatoes anymore as they take from the avocados. 

In this house we eat guacamole every week, because we adore Guacamole. And whenever we go down to Mexico or the States we always order it as an appetizer.

Okay, I’m now ready to reveal the SECRET  ingredient.

Ready? It’s Fresh Squeezed Orange juice!

Along with fresh squeezed lime juice ~But that is not so secret!

Both of those fruits really help to enhances the avocados. I learned about this secret ingredient from one of my favorite mexican restaurants, however I won’t say which as I do not want anyone to get in trouble!

IS GUACAMOLE HEALTHY FOR YOU?

YES! Guacamole is very healthy for you because it contains fat to have in your diet, so eating this often would be a win win! Here are just a few benefits of The Avocado.

  • They contain Vitamins A, C, and E are all present in the flesh of tasty avocado.
  • They’re are immune-boosting, so forget an apple a day eat an avocado a day. 
  • They protect the eyes
  • They can curve hunger, eating just one and you will feel full. 
  • The antioxidants in avocados are good for fighting off cancer. 
  • They lower cholesterol and help fight diabetes and so much more. 

If that is not reason enough to eat more Guacamole, than I don’t know what is. I really encourage you to try a few Guacamole recipes to decide what is your favorite!

If you want it more spicy, simply chop more of the Serrano pepper.

Also you can add a diced roma tomato if you’d like. Also be sure to not over mash the avocados, because you want to leave some small chunks in there. It just tastes better that way 🙂 Want to store it in the fridge for a couple of days, be sure to place the pit from one avocado into the dip. This will allow it to store longer and not brown to fast.

Quick Chicken Pho Soup

Warm up to a BIG Bowl of “Chicken Pho Soup” it’s super simple to make guys. And is great for kicking or preventing the common cold? give it a try!

This Chicken Pho Soup is allot like basic chicken noodle soup, in the sense that it has chicken broth and chicken along with noodles in it. However it has a Vietnamese twist that your sure to love.

Anyone can make Vietnamese food and this soup is no different. The difference between this soup and those that come from the street vendors in Vietnam is the stock. In Vietnam they make the stock from scratch which I am not going to lie is delicious, but time consuming.

My recipe will have this soup on the table for you in under 30 minutes, so I encourage you to use your favorite chicken stock for this recipe. The better the stock the better the soup of course.

I like to spice my soup up by adding chili paste! If you don’t like spice just omit the chili paste.
