And the answer to that is found online and that is that Chinese people who helped build the railroads in the early 1700 also had a part in creating this dish which in English translates to Chinese Pie.

WHERE DOES PATE CHINOIS COME FROM

It is actually a French Canadian classic dish that originates out Quebec and has both French and Acadian origins.

White Chocolate Cranberry Shortbread Cookies

The Magic of Christmas is in the air with these White Chocolate Cranberry Shortbread cookies. Can you feel it?

Wanting another holiday cookie recipe? Try my White Chocolate Macadamia Nut Cookies

Shortbread always brings back memories of Christmas for me. Having grown up in a large family these where always sure to be there on the living room table for everyone to enjoy! Along with Ginger Snap Cookies and White Chocolate Macadamia Nut Cookies.

I miss those days honestly, when my Grandma and older folks where around and all of my family lived in one city.

Personally, I just love the Christmas Season because this is about the only time that I really start to embrace the colder months.

The nights get darker fast and everyone stays inside in most parts of Canada.

However, that does not stop people from celebrating as they decorate their houses with pretty lights that light almost every street.

Which creates a warm glow in the dark of night and creates a warmth only Christmas brings.

It is just so pretty when the snow hits these lights because it literally glistens.

Creating a magical joyful feeling that is hard to ignore, I have even seen many Ebenezer Scrooge’s change overnight with the help of someone’s offer of warm cookies.

What is Christmas without a little home baking?

And if you ask me shortbread is definitely something that can’t be skipped.

Nothing beats homemade shortbread, so I encourage you to try them this year. Once you try these cookies, I’m certain you’ll be requested to make them again.

And the nice thing is you can make these ahead of time and store them in an airtight container in the fridge for up to a month.

Where you can bring them along for others to enjoy wherever you may go this holiday season.

Having tried several shortbread recipes throughout the years, I’m now sharing one of my favorites with you.

The combination of the soft and flaky shortbread, along with the tartness from the cranberries and sweetness from the white chocolate make this cookie so lovely.

HOW TO MAKE CRANBERRY SHORTBREAD COOKIES

Wishing you and yours’s a Joyful and peaceful Christmas and New Year.

Notes: After cookies are completely cooled, place in airtight container or plastic freezer bag.  Keep the dough refrigerated if you are going to be making these in batches. Also keep in mind the dough is not meant to be sticky like other cookies this is shortbread after all.

Oven Roaster Turkey Recipe

This Oven Roaster Turkey Recipe is juicy and crispy all at the same time. Seasoned with just the right spices, it is sure to become a family favorite during your Christmas, Thanksgiving family dinner.

Serving this Turkey up for the holidays? Then you may want to add some other holiday favorites to the table such as my Homemade Cranberry sauce or my Tourtiere Pie

Making this oven roaster turkey recipe for a group? Then your going to want to serve it alongside some mashed potatoes. And I have just the right recipe for you with my Instant Pot Garlic Mashed Potatoes recipe!

Want anther tasty turkey recipe? Try my Baked Turkey Wings sometime as well.

I have included an easy homemade gravy recipes as well that utilizes the drippings from the bird right here. So whether your cooking for a large crowd or just a few you will be pleased with this recipe.

IS ROASTED TURKEY HEALTHY

Yes, it is packed full of nutrients and is considered a lean protein.

Here in Canada we have our Thanksgiving and Christmas holidays pretty far apart. So we tend to have Turkey twice per year.

I have made a few Turkey’s myself over the years and also have watched family and friends prepare it, so you can rest assured this recipe is a Winner!

By following some basic tips you too will achieve a super moist and crispy turkey this holiday season guaranteed.

How to make Oven Roaster Turkey Recipe

  • Allow the bird to fully defrost and then sit on the counter at least one hour prior to baking, this ensure that the skin doesn’t break and that the bird cooks properly thought out.
  • Butter the turkey all over with solid butter as well as liquid.
  • Place 1 cup of water into the bottom of the pan to prevent burning and aid in creating the gravy.
  • Bast the turkey every hour to ensure it stays moist.
  • Cover the legs and wings of the turkey with tinfoil and place the birds legs towards the back of the oven where it’s the hottest and where the bird needs most the cooking. “The breasts always cook the fastest.
  • Do not stuff the bird with stuffing, rather make the dressing on the side.

Note: If you notice the bird getting to BROWN during the last hour, you can put some aluminum foil around it. Or just cover the wings to prevent burning.

CAN ROASTED TURKEY BREAST BE FROZEN

Yes, as long as the Turkey was fresh not frozen in the first place. You can freeze any leftovers or make another recipe the very next day.

Now what is turkey without the stuffing? It’s really not a complete holiday meal now is it, so that part is definitely something you do not want to forget!

Personally I do not make my stuffing in the turkey, and I encourage you not to either. Even though I was raised to do so, I find my turkey comes out much better cooked without it in the bird.

My stuffing recipe is listed below, if you too choose to do the stuffing outside the bird. Otherwise you can do the same thing and just stuff the bird, keeping in mind you may need to cook it longer.

HOW LONG WILL ROASTED TURKEY KEEP IN THE FRIDGE

Ruffly 2 to 3 days once it has been cooked. Be sure to seal it in a container of sorts so that it does not dry out!

WHERE DID TOURTIERE ORIGINATE

Tourtiere originated from Quebec from as early as 1600.

And is traditional served during the Christmas holidays.

Yes, French Canadian.

WHEN IS TOURTIERE EATEN

Nothing beats this pie on the table on Christmas day, well next to some mashed potatoes and gravy of course. Or my popular Shredded Brussel Sprouts recipe!

  • 1 tbsp Savory
  • 1 tsp Ground cloves
  • 1 tsp Ground Cinnamon

  • 1 tsp Season with salt and pepper

Note: not everyone likes Cinnamon in there meat pies, so to each there own.

  • Then make the butter crust (see recipe card)
  • And the pie filling
  • Stuff the Tourtière and bake at 375 f for 45 minutes till golden brown.

CAN TOURTIERE BE FROZEN

Yes, as long as the meat that was used was fresh not frozen to begin with.

So how do I know how to make a traditional Tourtière you may be asking?

Well, I am Canadian, but not Acadian. And have strong French roots on one side of my family.

What is Acadian you may be asking? Acadian peoples originate from eastern Canada.

They actually are the ones who created this recipe to begin with. Then the French out there ran with it and it is now known as a French Canadian or Acadian dish.

This particular recipe for my best Tourtière Pie has been past down from my Great Grandma who was 100% French Canadian. And her ancestors are all from Newfoundland and Labrador territories.

I have been gifted with her original recipe which was hand written by her a few decades ago.

And, so I had to share it all with you here.

Growing up Canadian, I was influenced by many cultural groups and thus foods so it wasn’t like I stuck to just one type of food then or now.

However I’ve appreciated all that was taught to me along the way.

One fond memory I do have is that of my great grandma and grandma both in the kitchen together making Tourtière right before Christmas.

I must have been somewhere from 5-10 years old then. And I never knew how precious that memory would be for me as my great grandmother past shortly after.

I also remember enjoying this dish during Christmas dinner over the years as my aunts always carried the tradition of making it.

HOW MANY PEOPLE DOES A TOURTIERE MEAT PIE SERVE

One pie typically serves 8-10.

Over the years this recipe has been changed across the generations and each family does prepare it somewhat differently. In eastern Canada, most people there use pork or even rabbit in this pie.

Oh and be sure to serve this CANADIAN TOURTIÈRE with a dollop of Ketchup. The kids will love that addition too.

PS: don’t skip on the potatoes they really help to hold the pie together. I hope you give it a try this holidays season and let me know what you think.

Could you serve a traditional French Canadian meat pie this Christmas? Could your family like it more than the more traditional Turkey? I would love to know.

Wishing you and yours a Merry Christmas!

Let it Snow, Let it Snow, Let it Snow!

Olive Focaccia Bread Recipe

This Olive Focaccia Bread Recipe is made with fresh provolone cheese and marinated olives. You are going to love it!

This recipe is by far one of my favorite ways to make focaccia bread.

And you can do this, it’s not that difficult.

Just head over to your local Italian store on the way home and pick up “Real Sicilian Olives” marinated in spices and olive oil (you will be using this oil for the bread later)

Oh and don’t forget the Provolone cheese ~ it really makes this traditional. Can you taste it already? Focaccia bread can be served alongside any pasta dish or eaten alone.

Making this bread from scratch is going to blow your mind. This recipe for homemade focaccia bread doesn’t compare to anything store bought kinds.

Note: You can substitute the Provolone cheese for Fresh Parmesan Oregano if you like.

Bbq Baked Baby Back Ribs In the Oven

These Bbq Baby Back Ribs in the Oven are fall off the bone tender and are super bowl ready! But really, they can be enjoyed anytime of the year!

Oven baked bbq ribs are cooked at 400 f and has the oven doing all the cooking work for you! Looking for an awesome side dish to serve with these ribs? Try my Simple potato salad

Now, if you’re anything like me. You really do not want to wait that long for dinner! So this method of baking them in the oven is my favorite way to make them.

There really is 3 options when it comes to making ribs.

  1. You can start by boiling them
  2. Baking them (as we are)
  3. Putting them into your crock pot.

Bbq Baby Back Ribs In the Oven

Just make sure with either recipe you are removing the skin membrane so that they are not tough as seen in the picture below.

Following one of those methods will produce you with AMAZING tasting ribs. That will have your family and friends so impressed.

When purchasing your ribs, keep in mind you will want approx. 1  pound per person. So this recipe can serve 3 people, if you are cooking for a crowd. Simply double the recipe!

WHAT TEMPERATURE FOR OVEN BAKED RIBS

  • Preheat oven to 325° F.

HOW TO COOK Bbq Baby Back Ribs In Oven

  1. Now lay your ribs out on a sheet or board of some kind and remove any excess fat from ribs, this fat will just drain off and is not necessary.
  2. To ensure your ribs are as tender as possible, peel the thin skin back off the ribs, by using a sharp knife to lift it off the corner then peel back as much as you can get off, this takes a few minutes so be patient.
  3. Next slice a lemon in half and squeeze both halves all over the ribs.
  4. Put ribs in a tinfoil lined pan and season with seasoning salt & pepper.
  5. Place meat side down in the large baking pan and cover with tinfoil. “Shiny side” facing out to distribute the heat property.
  6. Bake in the oven for 2 hours, once baked remove and drain off any liquid that has accumulated.
  7. Now you can cover your ribs in your sauce, using a silicone basting brush.
  8. Marinade: Cover your ribs with your desired amount of BBQ SAUCE, repeat if you desire more sauce.

Finish by following the Grilling method or the Oven Baked method.

  • Grill: Once cleaned and pre cooked, place your now glazed ribs directly on the grill, turning a few times and recoat with your sauce twice. Do this for about 10 minutes till done.
  • Oven: Once cleaned and cooked, turn your broiler on and return ribs to oven, uncovered. Broil with the door open so you can watch to make sure there not burning, and broil for 6 minutes on each side.
  • Boil: Once cleaned up, boil your ribs for 45 mins on medium heat, then finish the oven or bbq method.

You can place tinfoil under your grill to prevent it from dripping and causing extra cleanup.

Also keep the oven or grill open a gar while broiling once the sauce is put on, this will allow you to keep and eye on them to prevent burning.

Lastly, keep in mind that pork bones splinter and are not recommended for dogs.

Best French Onion Soup Recipe

This Best French Onion Soup Recipe can be made on the stove top, in your instant pot or slow cooker.

Looking for more quick and tasty soup recipes, try my Healthy Leek Soup or my homemade Simple Mushroom Soup.

The secret to making the Best French Onion Soup Recipe is to cook those onions real well. Then of course you want a good solid beef stock and some gruyere cheese.

I’ve also shared another French Onion soup recipe with you all a few years back now. That recipe had scallops in it, yes scallops.

That recipe is a tad fancier and was done on the stovetop and then broiled in the oven. Takes a bit longer, but is also a goodie and a bit fancier.

If you want to take a look at that recipe. See here: French Onion Soup Broiled Scallops

BEST CHEESE FOR FRENCH ONION SOUP

Gruyere cheese is most popular however you can use Swiss, Mozzarella as well.

I was craving French onion soup as of late. And came up with this delicious recipe in my Instant Pot! Of course this can be made on the stove – top just the same.

FRENCH ONION SOUP BOWLS

Are important to have when completely this soup because your going to want to put this pre -made soup in them under the broiler for the last few mins to heat the soup and broil the cheese.

Image coming home to a warm bowl of French onion soup? But with it taking only half the time to prepare than the average French onion soup recipe, because you let the instant pot cook it?

Yup, you can have it all with this one.

BEST ONIONS FOR FRENCH ONION SOUP

Yellow onions are the best, however this soup can be made with any type of onion just not green of course. It just would not be the same!

FRENCH ONION SOUP BOWLS

Should be oven safe as you will want to place the pre-made soup in them along with the cheese and fresh scallops for baking.

ARE FRENCH ONION SOUP BOWLS OVEN SAFE

Some are some are, so if your going to use the oven vs the microwave be certain it is oven safe or it will smash.

INSTANT POT FRENCH ONION SOUP

Recipe, and let me tell you it is WINNER!

Since it all comes together in less than 30 minutes and tastes like you have been laboring all day in the kitchen to make.

WHAT DOES FRENCH ONION SOUP TASTE LIKE

If you have ever had caramelised onions, you will know it has a sweetness to them.

Then once they are simmered in a beef or vegetable broth with spices it becomes absolutely delicious.

So follow along!

WHAT KIND OF CHEESE IS ON FRENCH ONION SOUP

Gruyere Cheese, you can also substitute for provolone cheese or mix the two.

I just use gruyere here and sometimes will even use some mozza if that is all I have on hand.

WHAT ARE THE BEST ONIONS FOR FRENCH ONION SOUP

You can use yellow, white or even red onions for French onion soup.

BEST WINE FOR FRENCH ONION SOUP

A dry white or red wine works best.

FRENCH ONION SOUP RED OR WHITE WINE

Traditionally, in France. This soup is made with white wine and that is because it helps bring out the beef flavor.

SUBSTITUTE FOR RED OR WHITE WINE

You can always substitute Red or White wine with Red wine vinegar, grape, pomegranate, or cranberry juice and or chicken, beef, or vegetable stock.

HOW TO MAKE FRENCH ONION SOUP INSTANT POT

There are several ways to make French onion soup.

Some people do it on the stovetop then bring it to the oven to broil it.

While others make it in their instant pot (like in this recipe) and put it either in the microwave to melt the cheese or in the oven at the last minute.

It all comes down to personal preferences.

But one thing is for certain, you want to use lots of onion and a good quality beef stock for this soup!

  • Step one: You will want to slice your onions and then add your butter and olive oil to the instant pot.
  • And turn it on simmer, once the butter has melted you will add in the onions, salt and pepper and 1 package of Knorrs onion soup mix (my secret ingredient)

  • Step 2: Saute the onions till browned, turning often.

Now those onions are perfectly browned, baby!

Step 3: Add in the beef broth, white or wine, bay leaf and all remaining seasonings.

Step 4: Simmer in the instant pot on medium heat all together for 15 more minutes.

Step 5: Discard the bay leaf, then ladle the soup into bowls and top with Gruyere cheese or Swiss cheese.

Step 6:  Place each individual bowl in the microwave long enough to melt the cheese.

Step 7: You can also place in the oven near the top shelf and broil these bowls (as long as the bowls are oven safe) for 2 minutes.

Step 8: Top with fresh parsley or chives and enjoy!

If you want bread in this soup, feel free to add some croutons before the cheese.

HOW TO SERVE FRENCH ONION SOUP

Serve with croutons if desired.

This recipe will make a large pot of soup, so if you have any any leftovers “which is highly unlikely”.

Then you can enjoy it over the next few days or freeze it as a meal prep option for another time if desired.

CAN FRENCH ONION SOUP BE FROZEN

Yes and it even tastes better the next day. So go ahead and make a BIG old pot and save some for another day! Just make sure that you do not freeze it with croutons or the cheese.

Place those on it the day of serving it!

Notes: Keep in mind, as with all my recipes.

If you want to make more or less of this soup, simple adjust the serving size in the ingredients section above and the servings will automatically adjust for you.

And save yourself time and hassle, and let your food processor chop up your beets and cabbage up.

Also it gives a great consistency to the soup.

You are going to want to jot this recipe down, it is a keeper!

IS FRENCH ONION SOUP HEALTHY

Yes, it is packed with onions which are full of antioxidants and compounds that reduce cholesterol levels.
