Frozen Pumpkin No Bake Cheesecake

This Frozen Pumpkin No Bake Cheesecake is the perfect cheesecake recipe for those upcoming holiday get togethers such as Halloween, Thanksgiving or Christmas. Where you just want to serve something festive and different that the average pumpkin pie. 

This frozen spiced pumpkin cheesecake is just one of those recipes that everyone should have in their freezer around the holiday season.

Think Thanksgiving and Christmas or if you just love pumpkins and cheesecake then this recipe can really be enjoyed any time of the year.

Seriously it doesn’t get any more delicious than this dessert and trust me it’s pretty easy to make.

So go ahead and serve this to your guests and family and watch them beg for this recipe.

HOW TO MAKE A Frozen Pumpkin No Bake Cheesecake

TO MAKE THE FROZEN SPICED PUMPKIN CHEESECAKE CRUST:

  1. Start by making your base/crust, in a large bowl place your graham crackers, brown sugar and melted butter. Mix this together with a spoon and then use your hands to press it together so it sticks. Lightly oil your cheesecake pan and then place your graham cracker crust inside. Press firmly down to create your crust.

NO-BAKE GRAHAM CRACKER CRUST:

  1. Chill pie crust for at 30 minutes prior to filling. Prior to serving, rub the outside and bottom of the cheesecake pan with a wringed out hot cloth this helps to release the pan from the crust.
  2. Baked graham crust: Preheat oven to 325°. Bake crust for 10 minutes, cool completely before filling.
  3. Add 2 packages of cream cheese to a large bowl and with your hand held blender whisk in a can of condensed milk, whipped cream and vanilla extract. Blend till smooth, be careful to not over blend.
  4. Pour over your crust slowly then chill in the freezer anywhere from 6 to 24 hours.

FINISHING THE CHEESECAKE:

  1. Once your cake is absolutely cold, release the cheesecake from the pan slowly.
  2. Sprinkle some cinnamon sugar over top
  3. Cut and allow to defrost for roughly 20 minutes, enjoy!

What better way to celebrate fall in the kitchen than with a Spiced Pumpkin Cheesecake?

This Cheesecake will have you and those who get a chance to have a slice wanting more. And the nice thing is this 8″ inch cake can serve 12 people easily.

Since this is a no bake cake, you are going to want to prepare it the day ahead. Then allow it to set in the freezer for at least 6 hours prior to serving.

Tucker, you can serve it with a dollop of freshly whipped cream on the top prior to serving if desired.

However the rest of the Canadian Cooking Adventures team thinks it’s best with just a sprinkle of cinnamon on top, so we will leave that up to you.

This is the most creamy and tasty cheesecake, perfect for the holidays!

Also be sure to use “pumpkin puree” not “filling”, there is big difference here.

For this recipe, I used 1 1/2 cups of graham cracker crumbs, because I really like a thin crust however most recipes will call for 2 cups which makes a slightly thicker crust.

If you prefer a thicker crust then use the 2 cups.

Note: You can put a dollop of whipped cream on top. Place your cake back in the freezer or it will melt this cheesecake is best chilled frozen.

Wild Rice Tuna Casserole

This Wild Rice Tuna Casserole is something different from the average chicken and noodle casserole recipes you will find out there. This dish is very satisfying, both as a side or a main dish. 

You can prepare this dish with chicken, turkey or hamburger as well or make vegetarian, all four ways are amazing. 

However it’s best made with a good quality wild rice  mixture. 

The more natural the better since these types of rice blends contains many nutrients that other processed rice would not.

The panko crumbs and cheese topping give it that nice crunch so do not skip that combination. It makes this recipe divine! 

I like to use my Dutch oven for this recipe, if you do not have a Dutch oven then feel free to use a sauteing pan and then a casserole dish once it ready to go into the oven.  

Some people like to add grated cheese over top before baking, i don’t. And that is because i prefer the earthy taste of the dish, I encourage you to try it this way = delicious.

African Red Stew

This dish is also known as Red Tomato Stew or Nigerian Red Soup and it consists of a cooked then broiled protein of your choice which is then stewed fresh fried tomatoes, onions, garlic and red bell peppers. You can also add an array of meats such as beef, chicken or fish. My recipe here uses goat meat.

If your wanting a recipe that includes 3 types of meats your going to want to try this Mixed Meat Nigerian Stew as seen below.

Some people will also add tripe as well to this dish. Personally my favorite way to make it is with boneless goat meat as you see here.

You will notice that I placed this recipe under the “hard” to cook category. The reason for that is because it takes some time and a few steps to make. But besides that it truly is worth the effort.

This stew is so special that it is served as the main dish during the holidays in Nigeria. Yup you heard that right, so instead of our North American Turkey they serve this.

WHAT TO SERVE WITH AFRICAN RED STEW

You can serve with Rice or Pounded Yam. Pounded Yam typically is prepared with a mortar and large pot and is made from scratch, however do to advances in the food industry you can now buy it in a “powdered form” and make the same thing. Find that recipe here > How to make Pounded Yam

Red Goat Stew has been a favorite recipe of mine since I was a little girl. Yup my mom cooked African food for me along with many other cultural dishes and so this is where I developed my love for spicy foods.

Now some people like this stew to be super spicy, I prefer it mild – spicy and so that is what I’m sharing with you today. The intense “Red” color that you see in this recipe is from the blended mixture.

Some people like there red stew to be somewhat running, I prefer my more thick as you can see above. I find it makes it really easy this way to pick up with the pounded yam and tastes better in my opinion.

However if you prefer it more liquidly, as some people do like to make it. Simply add 1/2 cup of extra stock to the cooking process at the end.

I love eating with my hands, if you have not tried it before your in for a tasty experience. 

Notes: The type of curry powder you use here is important, you don’t want a masala type curry which is to mild. Ideally a Jamaican curry will work best here.

Authentic Jamaican Jerk Chicken recipe

This Authentic Jamaican Jerk Chicken recipe can be made in the oven or in your air fryer too if you prefer. I baked them today because I made an extra large batch! They can be made with store bought Jerk sauce but I highly recommend you try my authentic homemade sauce instead.

WHAT IS JERK CHICKEN

Jerk Chicken is a Marinade that is often marinated with Chicken overnight prior to grilling or baking or even Air Frying.

JERK CHICKEN MARINADE 

Consists of Scotch bonnet peppers, cilantro, olive oil, vinegar, soya sauce, onion, garlic, ginger, lime juice, thyme, cinnamon, allspice and salt. 

Some people even add orange juice, pineapple or mango to the marinade. Mine has some orange juice to balance the flavors.

MY HOMEMADE JERK SAUCE >  Jerk Sauce

JERK CHICKEN SIDES

Serve with fresh lime and orange slices for extra freshness!

How to Make Jerk Chicken Wings in the Oven

Start by Marinating the Chicken overnight in the fridge.

  • Rince the chicken the coat with fresh lemon juice and allow to sit in the fringe for 30 mins.
  • Then simply placing the JERK sauce in a ZIPLOCK bag along with the Chicken
  • Shake to coat and that is it.
  • The next day, take out of the fridge and place in your 400 f pre heated oven and bake for 45 mins.
  • Be sure to flip them half way through cooking!
  • Enjoy with Coconut rice or Jamaican rice and beans

Lamb Shanks in the Slow Cooker

These tender Lamb Shanks in the Slow Cooker are served alongside some soft lemon potatoes. It is super simple to make as everything is cooked together in either your oven or your slow cooker all at once.

Talk about an easy yet elegant dinner eh? I like to make this dinner pretty often actually, that is why I always keep some frozen lamb shanks in my freezer on hand at all times. 

I simply allow it to defrost in the fridge 24 hours prior to making this.

Then it really takes not much effort at all and is sure to please just about anyone who has the chance to dine with you.

If you love lamb, you are going to want to keep this recipe. It is a sure winner every time!

CAN LAMB SHANKS BE ROASTED

Yes, I prefer them roasted. They come out very tender this way!

CAN LAMB SHANKS BE GRILLED

Heck yes and they are really good this way as well.

HOW TO COOK LAMB SHANKS

Basically all you are doing here is seasoning the lamb shanks with salt and pepper, then dicing a few potatoes and onions then tossing it all in olive oil, garlic powder and fresh rosemary. 

Then you will want to place those potatoes into the bottom of a oven safe dish and then add those Lamb Shanks directly on top of the potatoes.

Drizzle the shanks with olive oil and lemon juice and bake covered in the oven at 350 degrees f for 60 minutes. 

WHERE DO LAMB SHANKS COME FROM 

The meat right beneath the the leg bone.

HOW MANY LAMB SHANKS PER PERSON

One is typically more than enough, when served alongside a side dish or two.

CAN DOGS EAT LAMB SHANKS

Preferably not, as the bones can splitter. However they do not splinter like chicken bones, so if you monitor your dog and know it won’t choke on it my swallowing it. Then that is up to you, we feed our dogs the bones afterwards. But monitor then eating it. 

CAN LAMB SHANKS BE COOKED FROM FROZEN

Yes, but it will take a double the time to cook, so keep that in mind. 

The shoulder is then placed into one oven safe pot and then is baked slowly for three hours.

Making it moist, tender and absolutely delicious!

This recipe is something special, if you have never tried lamb shoulder before.

Then this fool proof recipe is sure to impress.

I like to serve this meal with some mashed potatoes, gravy (which is made with the lamb sauce) and a salad. 

Yes, it takes some time to make. However the prep takes no time at all, we are talking minutes.

Then all their is to do is allow your oven to do the rest of the work.

While you do whatever else it is you need to do for the day/evening. 

But please for the love of GOD do not leave the house with the oven on.

This results in way to many house fires each year and I do not want to be responsible for that. 

HOW TO COOK LAMB SHOULDER IN THE OVEN

It is REAL easy, since everything is down in one pot. Basically all your going to have to do is spend less than 5 minutes seasoning it, then you will want to cover it with a oven safe lid. Or if you want you can use tinfoil as well, just make sure their is a gab to allow the air to circulate around the lamb 

HOW TO COOK LAMB SHANKS IN THE SLOW COOKER

Yes, you can make this exact recipe in the slow cooker if you’d like.  You will want to cook it longer, since it is really slow cooking in the crock pot. Anywhere from 8-10 hours would be ideal. 

WHAT TEMPERATURE FOR LAMB SHOULDER

Great Question: Lamb should be cooked to 145 °F (medium rare), 160 °F (medium), or 170 °F (well done). For approximate cooking times for use in meal planning, see the following chart compiled from various resources. Times are based on lamb at refrigerator temperature (40 °F). HOW MACARONI AND CHEESE IS MADE

I like to make my mac and cheese extra special by adding panko breadcrumbs on top along with fresh Parmigiano Reggiano, THIS is the stuff dreams are made of.

To make a very cheesy pasta ~ Boil one Box of Macaroni which is 375 grams typically  =8.82 ounces. To make a lighter less cheesy version, yet still very good pasta ~ Boil 450 grams of Macaroni.

We hope you enjoy it as well! Creamy with the right amount of crunch!

Also want to make two batches? Just double the recipe and use two baking pans. This freezes easily for another day, just let it cool and then seal it in a ziplock bag.

Transfer to a lightly oiled baking dish the day of baking and top with your breadcrumbs and bake.

BEER CAN CHICKEN

BEER CAN CHICKEN IN THE OVEN

You may be more failure with these type of recipe, where a whole can of beer is placed inside the cavity of a chicken and the chicken is sat upright and grilled over a grill till cooked. Or the same method is done but in the oven instead.

If you like those 2 types of recipe, trust me this recipe is better. Since the chicken is actually marinated in the beer and the recipes produces a beer broth that serves so well with potatoes.

Who doesn’t like beer and chicken? Merge the two together and you will have a delicious dinner that your sure to want to make time and time again. The beer creates a tasty sauce and creates a very moist chicken.

I like to bake my Portuguese Beer Chicken with diced mini potatoes as well. 

MARINATING CHICKEN IN BEER OVERNIGHT

Is the key to this recipe and you do not want to use a light beer. A full flavored beer is best!

Also you want to use LOTS I mean lots of garlic! 10 is perfect as it becomes roasted and sweet.

BEER MARINADE FOR CHICKEN

  • Consists of 1 can full flavor beer – the larger the can the more liquid / sauce for the potatoes! 
  • 1 bay leaf 

BEER CAN CHICKEN RUB

  • 10 sliced garlic cloves
  • Black pepper balls
  • Garlic salt
  • Cayenne pepper

BEER CHICKEN MARINADE

  1. Marinade over night in a bag then simply place in a Dutch oven the next day, alongside mini potatoes to make it a meal. 
  2. You can use garlic powder instead of the garlic salt if you prefer. 

  • You defiantly want to marinade this chicken overnight, and prior to doing so.
  • Be sure to cut the chicken directly in half, this helps the marinade to really soak in and also allows the chicken to crispy up perfectly on all sides when cooking.
  • Marinating the chicken in beer is the highlight, however do not skimp on the cooking oil either. This helps it to crispy up to perfection during the cooking process

HOW TO MAKE PORTUGUESE BEER CHICKEN 

I will place those mini potatoes on the bottom of the Dutch oven pot and then pour the liquid from the marinaded chicken overtop before placing the spatcock chicken overtop to cook. 

Be sure to not place a lid on this chicken, you want the crust of the chicken to be crispy!!

WHERE IS BEER CAN CHICKEN FROM

Most Beer Chicken recipes come from the States where people season a whole chicken then place a can of beer inside and grill it on an open grill. 

This recipe is even better if you ask me, as instead of grilling we are baking it in the oven along with potatoes that soak up all the chicken and marinade flavors.

How To Make Vegetarian Wellington

  • Start with a baking dish that is 9.5 x 1.6 deep.
  • Then make the butter crust (see recipe card)
  • And the pre-made vegetable lentil filling
  • Stuff the puff pastry and bake at 325 f for 25 minutes till golden brown.

How Many People Does A Vegetarian Wellington

One pie typically serves 5-6
