Honey Roasted Brussel Sprouts

These Honey Roasted Brussel Sprouts make for an excellent side dish to just about any meal. 

I like to serve these honey roasted brussels sprouts almost every other week in our home. And this recipe is one of those simple yet delicious recipes that even the kids will love.

Why? Because they are sweet of course. What kid does not like sweet food!

Sweetened with just the right amount of honey, these are sure to please just about everyone in the house. I did add some mustard as well which really brings these sprouts into their full flavor. 

I hope you give them a try and be sure to tweak the honey / mustard ratio according to your families taste.

This recipe also makes for an amazing side dish to just about any type of holiday meal.

Cajun Sausage Pasta

This Cajun Sausage Pasta is made with Cajun andouille  sausage, eggplant and gemelli pasta which helps to soak up all those delicious flavors.

Note you can use any type of sausage for this recipe, however the andouille has Cajun spices to it and make it extra special if you ask me. Don’t like spice, use Italian sausage instead. 

HOW TO MAKE CAJUN SAUSAGE PASTA

Cook the sausage first then simply add everything to 1 baking dish and bake at 375f for 40 mins.

 
BAKE AT 375 FOR 40 MINURUES AND THIS ONE POT DINNER IS READY TO ENJOY~

THE BEST CHEESE FOR CAJUN FOOD

You want to use a sharp cheddar or a Parmesan cheese for a bolder taste. And if you want a more mild flavor, you could try a Gruyere or a Swiss.

THE BEST PASTA FOR MAKING CAJUN SAUSAGE PASTA

Gemelli which helps soak up all the flavors or you can also try a macaroni or even pappardelle pasta.

WHAT IS CAJUN SAUSAGE

It is a popular sausage that is used in many southern United States homes and is also known as

Lemon and Garlic Roast Chicken is one of those no brainer, one pot recipes that can feed a family of four. By simply adding potatoes, carrots and onions to this baking dish. You can have a whole meal ready in under 1 hours time with very little effort.

Warm up to a big bowl of these Sausage and Potatoes in the oven and baked till tender and amazing.

Every time the weather starts to get colder here in Canada is when I think to make this recipe for Sausage and Potatoes in the oven. It is such a good recipe and is easy to make your going to love it!

HOW TO MAKE SAUSAGE AND POTATOES IN THE OVEN

First off you want a Dutch Oven or oven safe dish with a lid to prepare this recipe.

  • Start by placing 1/2 cup of cooking oil into a large Dutch oven and bring to sizzling hot
  • Add in the fresh sausage and sear over medium heat till browned and cooked
  • Remove the sausages and set aside
  • In the same pot add in 1 tbsp of butter and sauté the diced onion till golden brown then set that aside with the sausages. 
  • Now, peel and slice the potatoes 1/2 inch thick ideally
  • Open the can of tomatoes and empty that into the pot along with the remaining cooking oil
  • Bring to a medium boil then add in the beef stock, bay leaf Worcestershire sauce and seasonings
  • Add in the sausages and cooked onions 
  • Seal the lid and allow it to all cook together for 40 minutes in the oven at 350f to serve
  • Serve with more butter and bread if desired

Really it is up to you, both white and red work. Just be sure to peel the fully before slicing them.

You can also use mini potatoes if you have on hand.

French Onion Soup with Broiled Scallops

This Homemade French Onion soup with scallops is simmered in a red wine, beef and chicken broth. Then topped with toasted crusty bread, gruyere cheese and then some scallops.

FRENCH ONION SOUP BOWLS

Should be oven safe as you will want to place the pre-made soup in them along with the cheese and fresh scallops for baking.

Your going to want to get yourself a set of some good quality oven proof bowls and then you will be in business to make the best french onion soup ever.

Typically people caramelize there onions on the stove for a minimum of 45 minutes or more, turning them often.

However if your pressed for time then you can let the slow cooker do that work for you and save you that hassle.

Now I don’t know about you but cutting 6 large onions is a pain, so another way to make this job easier is to allow your food processor do most of that work.

Of course your going to still peel each onion and cut diagonally before placing in the processor to slice.

But I promise you, it can be done in half the time this way and each onion will be cut perfectly too.

As long as you are using a good food processor such as the one I use and recommend below.

Traditionally french onion soup is topped with Gruyere cheese, however you can substitute for swiss which is similar in taste.

I like to use Gruyere through which can be found in most European markets. This recipe will make roughly 5 large bowls of french onion soup, or 6 small to medium.

So if you have any any leftovers “which is highly unlikely” unless it’s just you, then you can enjoy it over the next few days or share with those lucky enough to be around the kitchen with you.

To make this soup you will want to have a slow cooker and food processor which will saves you a ton of time.

Otherwise you can caramelize the onions on the stove top anywhere from 45 minutes to an hour stirring often till they caramelize to get the job done.

And slicing the onions by hand, but I much prefer using the food processor and slow cooker to get these tasks done.

Adding scallops on top the toasted bread and cheese is an option, not a requirement. But trust me it makes each bowl even that more special, I use medium sized scallops you can use small, medium or large.

More or less, totally depends on you, after all this is your soup, right? Serve hot directly from the oven and you will be in French Onion Soup heaven in no time!

These Lamb Koftas are super simple to make and very traditional in Lebanese cuisine. They are made with ground lamb, fresh parsley, onions, olive oil and seasonings. Lamb Koftas in under 30 minutes!

When making this recipe you can either food process the parsley and onions or chop them finely on a cutting board which is the more traditional method to making Kofta.

I believe Lamb Koftas originated from the middle east, however as people have immigrated they are now very well known recipe in Greece. 

WHAT SPICES ARE IN LAMB KOFTA

Traditionally, cumin, coriander, paprika, ground cinnamon, cayenne pepper and salt and pepper

However, when I make them I use a pre-made Turkish seasoning that can be found at Superstore as seen below.

It does not all spice though so I do add that along with garlic powder as the only other addition. 

IS LAMB KOFTA SPICY

It can be depending on how much cayenne pepper is added.

Yes, traditionally they are grilled over charcoal on a grill. 

I do it on my stove-top on a grilling pan as I do not have an outdoor grill at this time.

It’s my birthday today and so I wanted to make one of my favorite pasta dishes called Ravioli Al Forno.

WHAT IS MUSHROOM RAVIOLI AL FORNO

It is an Italian dish that calls for the recipe to be baked once it has been prepped and cooked prior. 

Made with fresh mushrooms, mushroom stuffed ravioli, herbed cream cheese, butter, parmesan cheese and is seasoned perfectly with Rosemary, Garlic Powder and Italian seasonings.

What does Al Forno Mean

It is Italian for baked in the oven or from the stove. In Italy traditional dishes where baked in a wood-fired brick oven. Today traditional ovens work just as well.

  • Mushroom stuffed Ravioli
  • Cream
  • Herbed Cream Cheese (Optional) 
  • Parmesan Cheese
  • Butter
  • Garlic Powder
