If you’re looking for a excellent recipe that utilizes fresh or frozen cod fish, then you have just found it!

The first time I made “Cod au Gratin” was last week. Believe it or not! And I loved it! I served it alongside a salad. And thought to myself, wow corn would be really good in this.

So I create this the very next day! We basically have been eating “Cod Au Gratin” for the past few days. And no one is complaining! It is delicious and filling. 

It is finished off in the oven or under the broiler till it gets perfectly browned.

HOW TO MAKE NEWFOUNDLAND COD AU GRATIN?

  • You will want to start with some fresh cod or frozen that has been defrosted and patted dry.
  • Then you will want to set aside some shredded cheddar cheese and parmesan cheese.
  • You will start by heating some milk in a small saucepan till hot, once the milk has reached that hot consistency. Remove it from the heat and create the roux.
  • Create a roux by heating the butter first then flour then whisking the milk in with a whisk to create a smooth texture. 
  • Turn up the heat to medium heat before adding in the parmesan cheese and dijon mustard. Then remove from the heat and set aside.
  • Place the fish in the bottom of a shallow baking dish and toss with olive oil then season with onion powder and salt + pepper.
  • Once the fish has been seasoned, simply pour over the roux and season with fresh dill. 
  • In a small bowl, mix the panko bread crumbs with olive oil and 2 tbsp of water and place overtop of the fish/roux.
  • Cover with the shredded cheddar cheese and bake at 350 till done.

WHAT IS COD AU GRATIN

Cod Au Gratin is a dish that is topped with a white sauce, then cheese and or bread crumbs. 

It also is a dish that originates from the maritime provinces in Canada, Newfoundland to be exact. It is a dish consisting of fresh cod, flour, bread crumbs, lemon juice, cheese, and other seasonings and spices.

Some people use breadcrumbs and onions, while others don’t.

For this dish we used onion powder, panko bread crumbs and a little Dijon mustard. It is all about personal preference when it comes to making this or any dish. 

We ask our Direction of Operation what he thought, about the dishes original origins. He stated that it is a well known fact that Newfoundland has a deep connection to it’s Irish and English heritage.

However he thinks that the dish was introduced by the French. What do you think?

CAN I USE FROZEN COD FOR COD A GRATIN?

Yes, and that is what I used. Just be sure to defrost it and pat it dry prior to using. I find the best way to defrost fish is in a warm bath of water. Not hot and not cold, warm is perfect. 

WHAT GOES WITH COD AU GRATIN?

  • Salad
  • Corn on the cob, frozen corn or another vegetable of your liking

After doing some more research on it, I learned their are slightly different ways to make it. And so I used what skills I have in the kitchen and made my own variation.

CAN COD AU GRATIN BE FROZEN?

Yes, that is if you are using fresh cod to begin with. You will want to purchase the freshest cod possible, then you will make the dish exactly as stated.

However before freezing it, be sure to allow the roux to cool down completely before pouring over the fish and do not bake it. Safe that for the day you want to eat it. Remove from the freezer and simply bake at 350 for 45 minutes till done!

A classic recipe that can be made in half the time it would take to make from scratch.

CAN FROZEN POT PIES BE COOKED IN AN AIR FRYER

Yes, most defiantly. And if your using fresh chicken you can freeze these pot pies for up to 3 months. 

DO FROZEN POT PIES GO BAD

Check the expiry date on the shells and other ingredients. Otherwise if kept frozen they will last up to 3 months!

FROZEN POT PIE IN AIR FRYER

You can place these pot pies in the air fryer as well. It is best to have a large air fryer for this and one that has two racks.

If not cook them one at a time.

HOW TO COOK FROZEN POT PIES

  1. Start by cooking the ground chicken till lightly browned in a large pot, then add in your spices and stir.
  2. Next add in the frozen vegetables and cook till the vegetables are soft. Add in the canned mushroom soup then the chicken stock and stir. Add in the flour and stir.
  3. Simmer till it thickens you may want to add more flour if its to runny.
  4. Once cooked, pour into two of your frozen pie shells and bake at 375 on the middle rack for 20 minutes and serve once cooled.

Easy Tourtière Meat Pie

This Easy Tourtière Meat Pie is a French Canadian recipe that is often served around the Christmas holidays. 

Traditional Tourtière Meat Pie takes a while to make, since the crust is made from scratch. 

However, with this recipe we are using a pre – made crust. 

I made this exact recipe a few years back on this blog, except that recipe shows you how to make the crust from scratch.

Personally, I like to make this meat pie all year round.

And I will always have some frozen pie shells on hand for this exact recipes, as it makes for an effortless meat pie. 

The reason this recipe is easy is that it calls for a pre-made pie crust shell. (as seen below) which allows you to have this recipe done in a fraction of the time and will no real dough making skill at all. 

Producing the exact same pie as a traditional Tourtière that is traditional made from scratch.

Also be sure not to skip on the potatoes they really help to hold the pie together.

WHERE DID TOURTIERE ORIGINATE

Tourtière originated from Quebec from as early as 1600.

And is traditional served during the Christmas holidays.

WHEN IS TOURTIERE EATEN

Nothing beats this pie on the table on Christmas day, well next to some mashed potatoes and gravy of course.

Tourtiere spices

  • 1 tbsp Savory
  • 1 tsp Ground cloves
  • 1 tsp Ground Cinnamon
  • 1 tsp Sage
  • 1 tsp Thyme
  • 1 tsp Celery Salt
  • 1 tsp Season with salt and pepper

Note: not everyone likes Cinnamon in there meat pies, so to each there own. 

How To Make Canadian Tourtière 

  • Pull out the pre made pie crust, defrosting the top piece that you will then roll out for the top crust. Leave the frozen bottom crust in the freezer, to fill when your ready to bake. 
  • And the pie filling once cooked
  • Bake at 375 f for 45 minutes till golden brown.

CAN TOURTIERE BE FROZEN

Yes, as long as the meat that was used was fresh not frozen to begin with.

Turkey Wings Recipe

This Turkey Wings Recipe is fall off the bone tender and is baked in a turkey gravy that your going to want to make time and time again.

These wings can be made dry as well, check out this recipe for my Baked Turkey Wings

I love this Turkey Wings Recipe because it always comes out the same tender and delicious! 

Go ahead and serve them with a salad such as my Lemon and paprika potato salad or some mashed potatoes to make it a meal!

These are not chicken wings, there four times the size.

So this recipe can easily feed four people if served with a side. 

HOW LONG TO COOK SMOOTHERED TURKEY WINGS

Anywhere from 60 minutes to 1 1/2 hours. 

How To Cook Turkey Wings Recipe

You will want to bake them or air fry if you have that option, either way will produce excellent results. 

  • First, separate the Turkey wings into three pieces, the drumette, the wing (the middle part), and the tip. 
  • Then with a paper towel, dry the wings from excess moisture, to ensure a crispy wing. 
  • Then place the wings on either a baking sheet or in a oven safe dish.
  • Ensure they do not touch, otherwise they will stick.
  • Pre-heat the oven to 400 degrees F and bake covered with tinfoil for 30 minutes.
  • While there cooking, make up the gravy in a small bowl. Using chicken stock, flour, turkey gravy powder mix. 
  • Pour over the wings at the half way mark and cover them again with tinfoil. 
  • Flip the wings over and bake for another 30 minutes. 
  • Enjoy!

You can make a gravy on the side as well and pour that over these baked turkey wings near the last 15 minutes of cooking for another take on this delicious recipe!

Now these turkey wings might look a lot like chicken wings too you. But trust me they are much bigger and more filling!

How to Bake Turkey Wings

  • Turkey wings do take a little longer to bake than chicken, but trust me it is worth the wait.
  • You will want to pre season them first then place them in a shallow baking dish and cover with tinfoil
  • Bake at 375 f for one hour, turning over the last 15 minutes and uncovering the wings.
  • Enjoy!

Turkey is a lean meat and is very inexpensive, which makes for a great meal option if you ask me.

Turkey Wing Gravy

  • Once you have baked the turkey wings, simply remove them and set aside.
  • Then place the same baking dish on to the stovetop
  • In a small bowl , whisk 1 cup of salted chicken stock and 1 tbsp of flour till combined.
  • Pour into the baking dish and scrape all the turkey leftovers till combined
  • Turn on the element and over medium – low heat. 
  • Bring to a simmer and cook for 5 minutes.
  • Remove from heat and pour over the turkey wings!

This simple Lemon Pepper Fish is one of my all time favorite ways to make tilapia fish.

IS LEMON PEPPER FISH HEALTHY

Yes, it is healthy. As it is only cooked in a little bit of butter, fresh garlic and lemon juice.

This simple recipe can be made in under 30 minutes. 

HOW TO MAKE LEMON PEPPER FISH

  • Your going to want to bake this fish to produce the best results, however it can be fried as well.
  • In a shallow baking dish add a few sliced lemons
  • Pre-season the fish and then place the seasoned fish overtop the lemons
  • Add more lemons onto of the fish and chopped garlic
  • Pour melted butter all over top of the fish or solid if that is what you prefer. 
  • Bake at 350 f for 30 minutes. 

Note: You can also substitute the tilapia for another white fish such as halibut or cod.

These Maple Bacon Brussel Sprouts are baked in the oven and can be served as an amazing side dish or even the main course.

Maple Bacon Brussel Sprouts

Are made with maple syrup, balsamic vinegar, bacon and pepper. 

How to make Maple Bacon Brussel Sprouts

The bacon is cooked on it’s own at first, then the halved Brussel sprouts are then tossed into an oven safe baking dish.

Along with the chopped bacon and then dressed with maple syrup, balsamic vinegar, bacon and pepper.

You can also toss all the ingredients into your air fryer and let it do the work.

Not having to cook the bacon prior will save you some time with this recipe. 

I just love Brussel Sprouts, but this wasn’t always so.
 
I actually hated them as a kid, along with broccoli, carrots and peas.
 
However, today I love all of these veggies and that is because I have found the correct ways to prepare them.
 
Plus these delicious veggies are super healthy for you because there packed full of feel good fiber.
 
 
 
There are many ways to prepare Brussel sprouts, you can bake them,  air fry them and even boil them.
 
My least favorite way, I must admit.
 
Baking them is truly the best, because something magical just happens to these veggies when you place them in the oven.
 
And trust me the kids will love them too!

This Keto Eggplant Parmesan is made exactly how the Italians prepare it – the bread crumbs to make a great meal for those on a keto diet.

Italian eggplant, the most popular kind that can be found at almost any grocer.

WHERE IS EGGPLANT PARMESAN FROM

Funny enough i  arrived in Italy during the 15th century. It is said the Arabs are the ones whom brought it from India. So is it Italian or Arab, ill let you decide. 

CAN YOU BAKE EGGPLANT FOR EGGPLANT PARMESAN

Most defiantly! That is the traditional way to make eggplant parmesan. 

IS EGGPLANT PARMESAN ITALIAN

Yes and this recipe is exactly made how the Italian’s do it!

WHAT DOES EGGPLANT PARMESAN TASTE LIKE

If you have ever had Ratatouille, as seen below. It taste a lot like that – minus the zucchini. 

WHY IS MY EGGPLANT PARMESAN TOUGH

Because, you simply need to soak the eggplant prior in water and salt to tenderize it.

That way it will turn out just as delicious as the kind that is fried in oil.

HOW TO MAKE EGGPLANT PARMESAN EASY

  • You will want to start by soaking the eggplant in water and salt before hand to tenderize and remove any of the bitter taste. Don’t miss this step, it’s important.
  • Start by  slicing the eggplant into 1 inch slices, then place those slices into a large bowl.
  • Cover completely with water and 1 tsp of table salt.
  • Put a plate down on top of the eggplant to submerge every pieces
  • And allow it to soak for 30 to 40 minutes to ensure it tenderizes. 
  • Meanwhile shred your cheese and open your can of tomato sauce
  • Once the eggplant has soaked remove and pat dry with a tea towel
  • Now in a large baking dish add 1 cup of tomato sauce and spread even across the bottom
  • Layer the eggplant and season with your spices, next the cheese the repeat
  • Tomato sauce, eggplant, season and cheese.
  • Bake covered at 375 f for 40 minutes.

Some are and this one defiantly is since we are not using any breadcrumbs or pasta.

Some are some are not, this one is.
