Directions
This Chinese Eggplant with Minced Pork Recipe is just like something you would find at your favorite authentic Chinese restaurant.
With the addition of rice, which makes it into a stir fry that your going to love.
Whenever we order Chinese food, we order from restaurants that make it as authentic as possible.
So if you ever go to one of those restaurants you are sure to find this dish on the menu.
Typically it is made without the rice, but will be served on the side.
I like to make with the dish for the added flavor as opposed to serving just plain white rice on the side.
