Creamy Tuscan Gnocchi

This Creamy Tuscan Gnocchi is made with sun dried tomatoes, kale and parmesan cheese. 

This Creamy Tuscan Gnocchi recipe contains no cream, so is on the lighter side and is  absolutely delicious! So if you are looking for a decadent gnocchi dish minus the excess calories? Then you have come to the right place. 

If you want to make it with cream and the vegetable stock you can as well. However, just be sure to half the vegetable stock so there is not to much liquid.

Also, be sure to sauté the sun dried tomatoes for a minimum of 2 minutes in vegetable stock, this really helps to bring out the flavors. Do this before adding back in the cooked gnocchi.

I have really started to appreciate Italian cuisines more so over the past few years, before I used to prefer Greek. I guess with time my tastes change and I’m so grateful to be able to dabble in all the amazing flavors that the World has to offer.

I could just eat this type of food everyday, nothing really compares to pillowy soft gnocchi.

And when it is tossed in a creamy sauce it’s so good, it will have you craving it often.

The nice thing about this recipe is that it can be whipped up in under 20 minutes.

Which can make for a quick and tasty weeknight meal in no time. 

Go ahead indulge no guilt here!

This recipe would be perfect for a romantic dinner idea, think Valentines day or New Years.

Also you can add some cooked shredded chicken to this or cooked bacon if desired.

As for me I like it just like this, I’m also a huge sun dried tomato lover SO I will add even more sun dried tomatoes to my dish when making it just for myself.

This recipe can be made vegan instead of just vegetarian as well. 

However you would want to replace the sour cream with a vegan options of course.

I will leave that all up to you, I hope you give it a try either way!

Sprinkle some fresh parmesan cheese on top before serving and you will be in Gnocchi heaven…

Isn’t this dish very similar to Tuscan style dishes?

Yes, it is. Tuscan dishes use simple ingredients that are not covered in any heavy sauces.

So even though this dish is creamy, it does not use cream or butter and is rather light.

Also you can take this dish from mild to hot simply by choosing a hotter sausage. 

We are simply substituting that heavy cream for a more healthy olive oil and chicken stock. 

So hold onto your hats for this one ladies and gents, because this dish is far more healthier than most of those Tuscan recipes out there. 

Can I replace the Sausage for Chicken?

YES, you can use a chicken breast in replace of the sausage. 

To make this dish all you will need is one large cooking pot/pan. 

Start by cooking the gnocchi by boiling it in the pot/pan.

Once that is done you can prepare the remaining ingredients.

From there everything will come together in the same pot/pan in under 15 minutes! 

This recipe can be served as a romantic dinner for two or double the recipe and then you can serve a family of four or more.

Sausage Gnocchi Soup

This Sausage Gnocchi Soup recipe is similar to the Italian Gardens recipe for Zuppa Toscana! 

This Sausage Gnocchi Soup recipe is one of those soups that you will want to make a big old pot of and enjoy over a few days.

Zuppa Toscana is one of the Olive Garden’s most popular soups. This recipe is very similar other than instead of using spinach I used kale as that was what I had on hand. And trust me it is just as good if not better!

I really like to use “medium Italian sausage” for this recipe. However if your wanting a more spicy soup feel free to add a spicer sausage.

So if your craving a soup to warm you up, but also want a hearty meal. Then this Gnocchi Sausage Kale Soup will hit the spot!

I have always loved Italian type soups and have been testing out a few of these popular gnocchi soups for some time now.

I found that the key to making it more like a soup rather that just a pasta dish is to use “Mini Gnocchi for the soup, rather than regular sized gnocchi.

My soup utilizes Kale and makes for one healthy hearty meal! You can always use spinach instead if desired!

I decided to finally share my favorite version of it with you today! Mine is pretty similar to allot of those Italian Tortellini soup recipes you will find out there.

However mine has a few differences such as mine will use kale instead of spinach and celery instead of the carrots.

Not to sure why almost all Italian tortellini soups call for carrots these days, but to me that is so wrong.

Oh and mine also has a fair amount of parmesan cheese and absolutely “no cream”. The tomatoes and cheese will make it creamy enough!

I like to use sour cream vs heavy cream as it helps to make this soup super creamy without all the extra fat. That sour cream is mixed with chicken stock or vegetable whichever you prefer to use. 

If you are planning to enjoy this soup over a couple of days, then you will want to add one more cup of stock in the soup. Since the Gnocchi tends to soak it up overnight.  Believe it or not but this soup tastes even better on the second day.

Smoked Oyster Dip

This creamy Smoked Oyster dip is made with cream cheese and sour cream and it is the perfect appetizer for the holidays or any large gathering. Plus it is super easy to make guy’s as it takes less than 10 minutes from start to finish.

What is in this dip besides Smoked Oysters? Sour cream, cream cheese, capers, garlic, Worcestershire sauce, lemon juice along with some other seasonings. Make sure to add the juice from the smoked oysters this makes for an extra tasty and creamy dip.

If you are anything like me and love smoked oysters then you are going to love this dip.
I like to make this dip whenever I have guests coming over, typically around the busy holiday season and or around game day. 

HOLIDAY DIP RECIPE

You can eat this all to yourself or make a bowl for a group of guests. Think Christmas, Thanksgiving or even the Super Bowl Party!

The nice thing is it takes less than 10 minutes to prepare, doesn’t get any easier than that right?

CANNED SMOKED OYSTER DIP

HOW TO MAKE SMOKED OYSTER DIP

  • Combine all your ingredients in food processor and blend everything together.
  • Chill for one hour before serving.
  • Sprinkle a little seasoning salt over top and serve with some light crackers for dipping. Enjoy!

I’m aware that this is something not everyone has tried before, because they simply don’t sell this dip pre-made in the stores.

But trust me it is a WINNER! 

Feel free to omit placing a whole oyster on top before serving, so they know what is really in this dip. Not every one likes Oysters, but I am more than certain if they don’t and try this recipe.

They may have a change of taste!

 
Most people’s first reaction is what is that? And then well, the rest is history because everyone wants the recipe. It’s that good, and simple to make.
Which will allow you to focus all your attention on the main course.
 
Plus it’s makes for an interesting appetizer around the living room table. Simply chill in the fridge right before serving and let the snacking begin.
 
Serve with some light crackers and watch it disappear before your eyes.
 
This recipe serves around a group of 10 people, if your feeding less or just making it for yourself then you can cut the recipe in half.

Spicy Tuscan Salmon

This Spicy Tuscan Salmon is just bursting with so many amazing flavors that you’re sure to love it! 

WHAT IS TUSCAN SALMON

It is salmon fillets smothered in  a creamy sauce with spinach, sun dried tomatoes and parmesan!

So if you’re craving something different and a little fancy for dinner tonight.

Then this one pot dish is sure to impress!

Plus it definitely is one of my favorite way to make Tuscan Salmon, with a hint of spice.

The first time I tried Tuscan Salmon, was early last year.

I followed another bloggers recipe, over at Cafe Delites and immediately fell in love with it.

But I knew it needed a little bit more to really suit my taste.

So I made a few changes and came up with this recipe.

Which is also a lower fat version of the more traditional Tuscan Salmon.

I also like to add a bit more of those delicious sundried tomatoes and spinach, so do not skip on that.

HOW TO MAKE TUSCAN SALMON

My dish brings that extra element of heat and is less cream heavy than other varieties I have tried.

Rather, I like to use whole milk instead of cream and will double the amount of spinach making it  that much more healthier and tastier. 

So simple, yet so impressive that you could serve this to a crowd and call it fine dining. 

I like to serve this dish over a bed of Conchiglie/Shell pasta, it goes really good with this recipe.

However if your on a keto diet feel free to enjoy it as is, trust me it’s amazing either way.

If you are serving this over pasta, just make sure to cook the pasta separately before hand so it’s ready when the fish is. 

This dish is very satisfying, both as a lunch dish or to serve as main meal.

As it really adds a nice element to the fish”.

Also you can squeeze a little bit of fresh lemon juice over top for a little tang if desired.

MEAL PREP IDEA: Make enough to create a few meal preps bowls for the week ahead. Or have dinner for one with this recipe, and split the last Salmon fillet in half for two meal prep bowls.

To make the bowls, simply place some Conchiglie/Shell Pasta on the bottom of the bowls and top with the Creamy Salmon, spinach, parmesan sauce.

Crab Potato Salad

My Crab Potato salad is not only super unique! It is inexpensive and satisfying meal option for any type of gathering. 

This Crab Potato Salad is just like any other Potato Salad except it showcases our Canadian Snow Crab and is so delicious.

You can use real snow crab for this potato salad or imitation crab meat.

Both will work amazing in this recipe, so it really depends on your preference. 

This potato salad will leave your guests wanting seconds and most likely asking you for the recipe!

So if you’re looking for a unique summertime potato salad, then why not surprise everyone with this “Amazing Crab Potato Salad”.

Fresh crab works amazing in here, however you can always substitute for imitation crab which we did today and works just as good. 

This potato salad has just a hint of sweetness from the snow crab and red peppers, however it has a balance of flavors that also come from the old bay seasoning, salt, pepper and lemon juice.

I came up with this recipe a few years back and have been making every June long weekend every since for the family.

You can choose to add imitation crab meat or real crab.

Did you know that most of the Worlds snow crab comes from our Atlantic Provinces?

Yup it’s true, the best quality snow crab comes from the Gulf of St. Lawrence, and Newfoundland and Labrador

So it is only appropriate that it this potato salad be listed under Canadian cuisine, right?

Simple Swedish Meatballs

These Simple Swedish Meatballs are served over a bed of egg noodles in a creamy low fat sauce. A recipe that you and your family are sure to love. 

WHO SELLS SWEDISH MEATBALLS

Costco does but so does President’s Choice. 

So what does that mean? It means you can have creamy Swedish Meatballs on the table in less than 20 minutes! 

That is the reason I call these Simple Swedish Meatballs because really there is no fuss when it comes to making this popular recipe.

You can literally have this whole dinner on the table in less than 30 minutes! 

Making swedish meatballs this way becomes a weeknight meal savor if you ask me. Because instead of making these meatballs from scratch which take a fair bit of time and technique.

Your simply using some pre made meatballs that are fail proof and do not need to be baked. 

Your going to love this really inexpensive dinner option, trust me

This recipe serves a family of four or you can use my easy to use recipe adjuster and make it for more people if you like.

Your family will think you where slaving in the kitchen all day making meatballs when really you were doing other important things 😉

Keep in mind those pre made meatballs come in a package that has 907 grams. I only used 650 grams of those meatballs and that alone feeds four people. So taking that into consideration this recipe is also frugal!

The brand that I like to use is President’s Choice Swedish Meatballs. You can use your favorite pre made meatballs of course and even opt for a chicken or a vegan variety, totally up to you.

Swedish Meatballs are the ultimate comfort food and typically are served overtop a bed of large egg noodles, however you can serve them over mash potatoes as well if  desired. 

I like to saute the meatballs in butter and oil first which helps bring out the flavor more.

Then I will use that same butter and oil to make a roux for the sauce that turns into the most delicious gravy ever.

Also since I typically just cook for me and my partner, I often tend to make dinner for two, three or four people. This recipe will feed four people easily and get this.

Are you cooking for a larger crowd? or perhaps having to provide something for an upcoming potluck?

Then this recipe is sure to be a hit and everyone would be think that you spent a lot of time at it.

If you have a little more time and want to make your meatballs from scratch, I recommend following this recipe for making Classic Baked Swedish Meatballs.

Just be aware that it does take some time and technique, as sometimes they do fall apart while searing them. So cooking them in the oven is best if you are to make them from scratch.

Go ahead and indulge you deserve it!

Note: You can add 1/2 cup of cream to this dish around the time you add in the beef stock if desired.

Perogies with Bacon and Mushrooms (PIEROGI)

This Perogies with Bacon and Mushrooms are absolutely delicious and is one of my favorite comfort foods. 

There is no butter added to this dish, rather the mushrooms are sauteed in a little bacon fat and the perogies in olive oil.

I just love perogies, it is my ultimate comfort food. Some people like burgers or macaroni and cheese, I like perogies. 

Growing up my mom made perogies more often than potatoes and she always served them with a dollop of sour cream. 

But never did she make them like this, with mushrooms and bacon.

I believe it’s because she typically served them with a sausage on the side which gave us our protein.

Even though I really love perogies served with kielbasa and or farmers sausage. I also love them made this way too!

Go ahead and indulge in this big bowl of comfort tonight!

 Want this recipe on the table in under one hour?

Simply saute the bacon in one pan and boil the Perogies in another and merge everything together at the end.

 

Serve it up with some sour cream on the side if desired. If you are wanting to make more than three of these dishes tonight. 

Then you will want to use my simply ingredients adjust ABOVE and you can have leftovers too. I hope you enjoy!
