This Simple Bean Salad is absolutely delicious and is healthy because it is packed full of fiber and protein.
This recipe is also known as Mexican Bean Salad, however with a Mexican bean salad.
Most of those recipes call for avocado and cilantro, which I never added to this one.
Of course that goes great in this salad too. So I will leave those additions up to you!

My bean salad will last ruffly 3 days fresh. However if you add avocados or tomatoes etc to it. I would make sure it is eaten on the very day you make it!
WHAT GOES WITH BEAN SALAD

REALLY though this salad can be enjoyed alongside just about any meal, think chicken, pork even steak etc.
This bean salad is tossed in the most delicious citrus sauce that you are sure to love! You will find that recipe below in the recipe card.
The sweet corn and green peppers give this salad a nice crunch and flavor so be sure not to skimp on them.
I like to make this bean salad at least once per month. It will keep in my fridge for a few days and can serve a crowd easily.
HOW MAKE BEAN SALAD
- Simply empty two cans of strained beans into a large bowl
- Along with a chopped onion and green pepper
- Frozen Sweet Corn
- Then pour over the Vinaigrette dressing

- 1 can of black beans
- 1 can of kidney beans
- 2 green peppers
- 1 small white onion
- 1 cup of corn
- 5 tbsp of olive oil
- 5 tbsp of apple cider vinegar
- 1 lemon, squeezed
- 1 lime, squeezed
- 3 garlic cloves minced
- 1 tsp cumin
- 1 tsp salt
- 1 tsp pepper
- Empty both cans of beans into a strainer, rince and pat dry and place into a large salad bowl.
- Chop the onion, green pepper and add to the bowl
- Use only frozen sweet corn and add directly to the bowl (as is)
- In a small cup add all the vinergreet ingredients, whisk and toss into the salad.
- Place in the fridge for a minimum of 30 minutes before serving.
- Serve chilled, enjoy!
