Lemon Parmesan Garlic Spaghetti

This simple Lemon Parmesan Garlic Spaghetti is super flavorful and flavored with parmesan cheese and garlic that is coated in a lemon butter sauce that is really inexpensive and easy to make.  I like this recipe, for those times where I am just craving some good pasta.

HOW TO MAKE LEMON PARMESAN GARLIC SPAGHETTI

It is made with fresh parmesan cheese, garlic and parsley then it’s coated in a oily lemon sauce. 

It also has a hint of tang to it from the fresh lemon that you’re sure to love.

The great thing about this recipe is that you can have it on the table in less than 15 minutes to make.

Easy peasy right? All your basically doing is boiling some water, adding some pasta. 

Then seasoning it with fresh lemon juice, garlic and parmesan cheese. 

You cannot go wrong with this one! Feel free to add some cooked shrimp or chicken on top to if you’d like. 

Feel free to add some sliced chicken breasts or shrimp on top if desired.

IS PARMESAN GARLIC SPAGHETTI HEALTHY

In comparison to most spaghetti recipes, it is. However keep in mind that Spaghetti is not gluten free. 

With no heavy creams or sauces, this dish is actually one of the more healthy pasta dishes out their. So please do not feel guilty, everything in moderation right?

I like this recipe for those times where I am just craving some good pasta.  

Just make sure your using a good quality spaghetti as it will make a world of difference in how this plate tastes.

Also, you can go ahead and fancy this dish up a bit and serve it alongside a nice caesar salad and a glass of white wine.

Who said eating good had to be expensive? 

You can also add cooked chicken breasts or shrimp on top this pasta as well.

HOW TO MAKE GLUTEN FREE SPAGHETTI 

Simply find a package that is 100% gluten free and your good to go.

Who said those with Gluten allergies could not enjoy a good pasta dish too!

Sometimes I will add cherry tomatoes and spinach as well, so feel free to do that if you desire. 

Also be sure you are using a lot of fresh cheese and lemons and you will be eating like the Italians in AbruzzoOsseo apperito!

Best Pan Seared Scallops with Bacon

These sweet and succulent Pan Seared Scallops are made  with the addition of Bacon are sure to make for a memorable meal. 

With Valentine’s day right around the corner, this recipe will come as a surprise to anyone who has the chance to dine with you. 

This recipe is not only super simple to make it’s also quick because it can be served in less than 30 minutes. 

All you will need is half a pack of bacon, butter, garlic, parsley along with salt and pepper. 

Plus if you make this at home, you can make more than you would ever be served dining out on of the busiest days of the year = Valentines day. 

HOW LONG TO SEAR SCALLOPS

You do not want to over cook scallops as they will not be as soft and become rubbery. So the rule of thumb is 1 1/2 mins on each side. You want them translucent in the center yet slightly browned on the outside!

This recipe can be done with just one skillet and enjoyed for have the price of what you would be charged in the restaurants.

Serve with my suggested side below “Shredded Brussel Sprouts and you have yourself a romantic dinner for two. 

While some people opt for Steak  or Lobster, why not try something a bit different this time around? They are such a good choice and are sure to impress just the same. 

Plus you would never get this many scallops at the restaurants anyway. So go all out that is what home cooking is all about right?

These scallops are defiantly good on their own, however if you wanting a meal then your going to want to pair it with something.

Plus if you choose to do as I have, and serve them with shredded brussel sprouts then you will only need one pack of bacon for this entire recipe.

So follow along and you can have this whole dinner on the table in under 1 hour, or if your just doing the scallops 20 minutes.

Start by saute the bacon, till near krispy, remove and set aside.

Dry the scallops then season with salt and pepper

Place in the frying pan and saute with a little red pepper flakes on each side for 5 minutes, flip.

Once the bacon and scallops have been cooked, set on a plate.

In the remaining bacon fat, add 1 tsp of butter, crushed garlic and parsley. Saute for 2 minutes till fragrant then add the cooked bacon back. 

Turn off the heat, and toss back in the cooked scallops. Are you drooling yet? 

 

The bacon fat sears the scallops to perfection!

Baked Mini Potatoes

These super simple Baked Mini Potatoes are such a good snack idea. Plus their very tasty served by themselves or with dip!

HOW TO MAKE BAKED MINI POTATOES

  • These mini potatoes are simply made by washing then slicing them into haves.
  • Then tossing them all together in a bowl with olive oil, garlic powder, parsley and salt.
  • And baking them in a oven at 400 f on a single layer pan for 30 minutes. 
  • Or until crispy and brown.
  • Really there isn’t much to making them!

Each serving contains feel good fiber and when paired with my Greek Tzatziki also gives you a good amount of protein.

See my favorite recipe below for homemade Tzatziki. You will simply love it!

If Tzatziki is not your favorite dip, you can always try ranch dressings or ketchup instead.

This tasty little appetizer reminds me of a healthier potato chip, because they are baked not fried. 

There are a few ways to enjoy these mini potatoes, see below for a few more recipe ideas.

I hope you give these tasty little bite size potatoes a try! 

Also keep in mind that the smaller the mini potato the better the crisp will be! So be sure to seek out a quality small potatoes for this recipe. 

Looking for another Mini Potato Recipe Idea: 

  • Try “Salt and Vinegar potatoes” once the potatoes have cooked, toss them in a bowl with 2 tbsp of white vinegar and salt
  • Seasoning them with cayenne pepper and paprika
  • Seasoning with a dry package of ranch or chipotle.

The sky’s the limit with these guy’s, you can flavor them pretty much any way you want.

Chicken and Bacon in a Dijon Mustard Sauce

This Chicken and Bacon in a Dijon Mustard Sauce recipe is out of this world, you may think there is a lot of fattening ingredients in this one pan dish, but you would be wrong. 

If you know me, you know that I like to balance my cooking. So if I’m adding an indulging ingredient into my cooking such as bacon,. Then I will make sure not add too many other ingredient that could take away from such flavours.

This dish comes together beautiful in a mustard sauce that is not full of fat but rather flavour. Made with onions, Dijon mustard, lemon, apple cider vinegar and just the right seasonings that only enhance the dish not mask it.

I kid you not this recipe is pretty healthy for you, compared to other similar recipes out there which call for heavy cream, which I find ruins the dish. 

This recipe reminds me of a dish I tried many years ago, called Yassa Chicken (Poulet au Yassa) which is a very popular Senegalese dish.

So in this dish we are basically merging the flavors from that traditional dish with some other amazing dishes that are more popular in Europe to come up with this unique and out of this world recipe. 

So follow along below for the most mouth-watering dinner that you are your family are sure to love, it’s definitely become one of our family favorites.

You must try this dish over a bed of egg-noodles, it gives it that German snitches feel without all the heaviness, and goes so well with the sauce. 

On a gluten free diet?

No worries you can choose gluten free egg- noodles then you will have a completely gluten free meal.

Start by cooking your egg noodles first, because the rest takes less than 20 minutes to prepare and you want to be able to merge the two at the end. 

Next start with chopping the bacon and onions, and sauteing them together till cooked.

Be sure to remove the bacon and onions one cooked and set aside, before placing the chicken breasts back in the pan to saute the chicken.

Saute the chicken on medium heat in the bacon fat till cooked, approx 10 minutes or until they are lightly browned and cooked in the center.

Then remove the cooked chicken from the pan and finished off by making your dijon mustard sauce in the same pan. Merge everything back for one last time in the pan, allowing everything to simmer together before serving.

Garlic and Lemon Spaghetti (Aglio E Olio)

This simple Garlic and Lemon Spaghetti (Aglio E Olio), is made with fresh Parmigiano Reggiano cheese, herbs, garlic in a lemon sauce

And is elegant enough to serve at any large gathering, or on a special occasion for two. It pairs nice with a side a caesar salad, crusty bread, marinated olives, and white wine. 

This is definitely one of my favorite pasta dishes, and takes less than 30 minutes to prepare. You can add chicken breasts or shrimp to this meal as well, sometimes I will add cherry tomatoes.

Really the sky’s the limit but sometimes simple is best. And this dish really taste so good without anything extra.

Just make sure you are using a lot of fresh Parmigiano and you will be eating like the Italians in Abruzzo.

Roasted Fennel & Cheese

Once I discovered Roasted Carrots & Green Beans I knew right away I was going to start loving vegetables again. I’m not the type of person to claim to love vegetables, but I know how good they are for you so I find ways to get them into my diet. One way is to add them to my morning shakes, something I have every morning to help fuel my day. However since I started to roast my vegetables, I am now a HUGE fan. If you have never Roasted Fennel then you are going to be shocked at how delicious it is, not to mention fragrant. Fennel wasn’t something I grew up eating or ever came across at the restaurants. So it was another foreign food to me, but since I am in the business of food blogging I’ve made it a goal to cook just about every type of  healthy food possible to share with my readers. Well there are some things I will not try, but I’ll just leave it at that. If you’re not a huge vegetable fan, I encourage you to give this recipe a go. It’s now a favorite in our house, and is a nice alternative to the regulars.

 

In the Kitchen:

 

 

To make the Baked Fennel and Cheese:

  1. Start by washing off your fennel, and then place it on a large cutting board.
  2. Cut off the stalks and place them in a jar covering the stalks in water “these can be left in your fridge to use in any dishes that call for “celery” try something new.
  3. Cut the leftover Bulb in half and then in half again, creating four pieces.
  4. Place in the bottom of your baking dish and drizzle with olive oil and salt and pepper.
  5. Grate cheese over top with a fine cheese gator and bake in the oven at 450F for 30 minutes or until tender and slightly browned.
  6. Sprinkle with fresh parsley and serve as a side dish next to your main dish.
  7. Enjoy!

Cut off the stalks then half the fennel once, then twice to form four pieces for baking.

Season with olive oil and salt and pepper before grating cheese overtop. 

 

 

 

Note: This fennel side dish goes great with almost any fish or chicken dish.

Flax & Quinoa Dressing (Stuffing)

This Flax & Quinoa Dressing is vegan since we are using vegetable stock vs chicken and omitting the eggs. 

Did you know that a stuffing that is not stuffed into a bird is called dressing? Some people like to make a dressing outside the bird and some like to make it inside the bird. It is completely up to you, however keep in mind the cooking times will vary. 

Today, I’m making a dressing and on occasion I will make this same dressing and stuff it inside a bird when baking a Turkey. You may find the dressing a bit dry when baking outside the turkey and in that case you can prepare a gravy on the side and serve it alongside if desired. 

I will do this sometimes if I want to serve turkey, because I just use the turkey drippings to make a perfect gravy. I find my Turkey cooks better without it stuffed inside anyway.

This dressing is so tasty, I could eat it all to myself. Now take note the dryer the bread the more tastier it will be also using a bread with other things in it only adds extra flavor. That is why I like to use Flax & Quinoa bread, which gives it a nice nutty flavor. 

However you can use any type of bread of course, just make sure it’s dried out some before you tear it apart to ensure the stuffing is not soggy. You can also add less or more celery/onions as well, depending on your preference.

This recipe makes enough for roughly four servings, so if you want to serve more people just add a few more bread slices and adjust the other ingredients according to your taste, there really is not much to it. Enjoy!

It’s going to be so GOOD!

 

Note: You can add flax seeds, diced apples, cranberries or sunflower seeds to this stuffing if you desire to make it more hearty.
