Spicy Shrimp Tacos

These Spicy Shrimp Tacos are marinaded in a special seasoning then grilled in under 10 minutes. 

So if you’re looking for a quick meal idea that can be on the table in no time. You just found it!

Sever them with either a creamy avocado sauce or siracha sauce. Absolutely delicious!

This recipe can feed roughly 2 people, so if it’s just the two of you dining tonight then there certainly are going to enjoy!

If your wanting to feed more people, simply MAKE more by doubling the ingredients!

WHAT IS IN SHRIMP TACOS

Shrimp that is marinated in a bunch of spices

Slaw that is made up of Cilantro, Cabbage and Red Onions

ARE SHRIMP TACOS HEALTHY

Yes, depending on the type you make of course. 

These shrimp tacos are seasoned with spices that are good for you. Shrimp is packed with lean protein and the slaw that i serve alongside is just simply made up of cabbage, red onions and cilantro. Then drizzled in an avocado, lime, mayo sauce.

ARE SHRIMP TACOS MEXICAN

Originally yes, however everyone makes them now.

But really, everything here in moderation is good for you.

SPICY SHRIMP TACO SEASONING

  • 1 tsp Old Bay Seasoning
  • 2 tbsp Olive Oil
  • 1 tbsp of Chili powder
  • 1 tsp of Cayenne powder
  • 1 tsp of Smoky paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp of cumin powder
  • 1/2 tsp of seasoning salt

HOW TO MAKE SHRIMP TACOS

  • Start with fresh or frozen shrimp and make sure they are defrosted before you remove the shells. 
  • You can also substitute the shrimp for a white fish such as tilapia halibut or cod.
  • Then simply seasons the shrimp and marinade in the fridge prior for a minimum of 30 mins.
  • Add them to a hot pan and cook throughout, ruffly 5 minutes.
  • Make up your cabbage slaw and dressing
  • Heat up the tacos and place the slaw, shrimp then dressing overtop.
  • Enjoy!

WHAT TO SERVE WITH SHRIMP TACOS

  • Cabbage slaw with Sriracha Mayo ( recipe included in this recipe below)
  • Cabbage Pico De Gallo another favorite of mine.
  • Pico De Gallo
  • Cheese
  • Avocados
  • Cilantro 
  • Lime

If you decide to make “pico de gallo” just make sure you make it a few hours ahead of time. 

WHAT IS AVOCADO MAYO

Avocado mayo, is just that. Avocadoes placed in a blender along with mayonnaise, lime juice and jalapeno peppers. You can either by the store bought variety or make it at home from scratch. Store Bought Variety! 

HOW TO MAKE AVOCADO MAYO

FROM SCRATCH: INGREDIENTS 

  • 1/2 cup mayo
  • 1 large avocado 
  • 1 tbsp of lime juice
  • 1 tsp of garlic powder
  • 1 tsp diced Jalapeno pepper
  • Salt to taste

Spicy Avocado Hummus

This Spicy Avocado Hummus has a little kick and that is from the Amazing Serrano Pepper. This recipe is a cross between they every day normal garlic hummus to Mexican guacamole!

WHAT TO EAT WITH AVOCADO HUMMUS

  • Tortilla chips

  • You name it!

WILL AVOCADO HUMMUS TURN BROWN

Yes, unless you freeze it. You can expect the avocados to turn brown in less than a day!

CAN YOU FREEZE HUMMUS

Absolutely, I do it all the time. I will make a big batch and store some in the fridge for my family.

Which lasts us up to a week in an air tight container. 

Then I will section some off for the freezer, for movie nights, game nights and snacks. 

There is always hummus in our fridge or freezer.

HOW TO MAKE AVOCADO HUMMUS

  • Drain and rinse chickpeas, add to your blender or food processor with your avocado, olive oil, tahini, lime juice, cilantro and fresh garlic. Pulse for 1 minute or so until chickpeas and avocado are semi – smooth.
  • Next add in all your “dry spices” and pulse again until smooth this time, scraping down sides if needed and adding in more olive oil if you feel is needed.
  • Serve an hour or more after chilling in the fridge with your choice of tortilla chips ARRIBA!

Note: For best results chill it in an airtight container for up to 1 hour or more before serving. The longer it chills in the fridge the thicker it becomes and the flavors really set in. Also add the pit of one Avocado in the mixture helps to maintain its freshness.

Quinoa Salad with Avocado

Made this Quinoa Salad with Avocado the other day for my family. And we gobbled it all up in one sitting. 

It goes so well alongside almost any type of summer meal. And is made with just a few simple ingredients, such as quinoa, avocados, baby tomatoes, lime juice and a few seasonings.

It is  absolutely delicious and is healthy because it is packed full of fiber and protein. 

WHAT CAN GO WITH QUINOA SALAD

  • Salmon steaks, salmon burgers etc
  • Black beans, chickpeas

HOW LONG WILL QUINOA SALAD KEEP IN FRIDGE

My bean salad will last ruffly 3 days fresh. However if you add avocados or tomatoes etc to it. I would make sure it is eaten on the very day you make it!

HOW TO MAKE QUINOA SALAD WITH AVOCADO 

  • Start by cooking your quino by brining a pot of vegetable stock to a rapid boil
  • Add in the quiano and turn the burner down to medium – low and simmer for ruffly 15 minutes.
  • Strain the quino and place in the fridge allowing it to become cold
  • Meanwhile, dice your avocados, baby tomatoes and fresh cilantro and place in a large bowl.
  • Once the quiano has cooled, mix into the bowl and toss olive oil and seasonings along with the juice from 2 limes.

This Quinoa salad is tossed in olive oil, seasonings and lime juice. 

You are going to love it!

Mexican Pineapple Salsa

This Mexican Pineapple Salsa goes fantastic alongside some tortilla chips or in a taco, burrito etc. 

A sweet and spicy salsa that you can’t go wrong with!

There’s are a few different types of pineapple salsa recipes out their. 

Some will have you uses sweet peppers, red onions and other ingredients to make the salsa more sweet.

I like to make it a balance of sweet and savory, so I will use a white onion, green pepper, cilantro and lime juice.

Basically all you are going to need is some fresh peaches, fresh jalapenos along with a chopped onion, orange pepper, cilantro and salt to taste.

This salsa is on that list of my favorite homemade salsas and cannot be found in the stores. 

So if you love salsa as much as me, then you are going to want to give this one a try! This recipe has recently become very popular on this blog. As it was featured over on onebitevegan.com some months back.

Jalapeno Peach Salsa

WHAT DOES PINEAPPLE SALSA GO WITH

Not only does it go so well paired with your favorite nachos; it also goes well when paired alongside tacos and burritos etc. 

HOW TO MAKE PINEAPPLE SALSA

  • I like to add all my ingredients to a small food processor, which will chop it all together in a jiffy.
  • Just make sure it’s set to slow chop as your not wanting a puree. 
  • However if you don’t have a food processor, then feel free to use a knife just make sure you are chopping it all up as small as possible.

I also like to double up this recipe as it saves great in the fridge for the very next day. In which I will make either some pork chops or grilled chicken and serve this salsa right alongside.

Cilantro Lime Rice with Black Beans

Are you looking for a simple rice dish that can serve as a meal? Then look no further than this Cilantro Lime Rice with Black Beans.

This dish can be enjoyed on it’s own as it is packed full of protein and flavors that you’re sure to enjoy. 

Traditionally this recipe is served with some fresh squeeze lime juice, today I had lemons on hand.

I’ve tried both methods and honestly, I can hardly tell the difference.

So i encourage you to try both lemons and limes and decide what flavor suits you most. 

Also you want to make sure you are using “frozen corn” vs canned. 

Canned just does not work well for this dish.

However, you can use fresh corn on the cob if you have on hand. 

This dish can be served with just about any type of meal, Mexican or not.

Think pork, steak or fish type dishes.

Simple Bean Salad

This Simple Bean Salad is absolutely delicious and is healthy because it is packed full of fiber and protein. 

This recipe is also known as Mexican Bean Salad, however with a Mexican bean salad.

Most of those recipes call for avocado and cilantro, which I never added to this one.

Of course that goes great in this salad too. So I will leave those additions up to you!

WHAT CAN GO INTO A BEAN SALAD

  • Any type of bean
  • Cilantro
  • Avocado

HOW LONG WILL BEAN SALAD KEEP IN FRIDGE

WHAT GOES WITH BEAN SALAD

Today, I served this salad along with some homemade fried chicken. My recipe for the best homemade fried chicken can be found her: Air Fried Chicken

REALLY though this salad can be enjoyed alongside just about any meal, think chicken, pork even steak etc. 

This bean salad is tossed in the most delicious citrus sauce that you are sure to love! You will find that recipe below in the recipe card. 

The sweet corn and green peppers give this salad a nice crunch and flavor so be sure not to skimp on them.

I like to make this bean salad at least once per month. It will keep in my fridge for a few days and can serve a crowd easily.

HOW MAKE BEAN SALAD

  • Simply empty two cans of strained beans into a large bowl
  • Along with a chopped onion and green pepper
  • Frozen Sweet Corn
  • Then pour over the Vinaigrette dressing

Pulled Beef Recipe

This Pulled Beef Recipe is also know as Mexican Barbacoa Shredded Beef  and is flavored with adobo chipotles, green chilis along and seasonings that make this recipe authentic in taste and serves well over corn tortillas with some fresh salsa.

This beef was simmered slowly in my (Slow Cooker) for 8 to 12 hours. However you can also do this on the stove top or in your Instant pot if your wanting it on the table sooner.

This traditional recipe hails from Mexico and is one of my favorite things to make for a large crowd.

WHAT BEEF IS GOOD FOR PULLED BEEF

Chuck Roast is best and is the only kind I will use for this recipe. 

If you can get your hands on beef cheeks thought that would be just as good.

CAN YOU FREEZE BARBACOA BEEF

YES, as long as the beef was not previously frozen. 

Once the meat has simmered for the day in the slow cooker, it is then shredded with two forks and served on top of tacos, burritos and or a taco type salad. 

SIMPLE AS THAT FOLKS!

Of course it can also be served with beans, rice and anything you can really think of. 

Talk about a easy and delicious meal that can be enjoyed anytime of the week. 

WHERE DOES BARBACOA BEEF COME FROM

Barbacoa often comes from beef cheeks. However it can come the beef chuck as well and is what I used for this recipe. 

IS BEEF BARBACOA HEALTHY

Yes, however keep in mind that beef cheeks are a bit more fatty of a meat.  This recipe also can be 100% keto if not served on tacos. 

IS BEEF BARBACOA SPICY

Somewhat yes, as it utilizes adobo and green chilies. And when paired with some fresh cabbage pico de gallo, it becomes more mellow. 

WHAT’S BARBACOA BEEF 

Barbacoa beef hails from Mexico and can be made with beef, lamb or goat meat. It is slowly simmered with chilies and is slow cooked so it becomes very tender. Then it is shredded and used as a filling for many different types of Mexican dishes. 

PULLED BEEF RECIPE

  • Start with a good quality piece of beef, such as beef chuck. 

  • Chop into fours and in your “SLOW COOKER” add 2 tbsp of cooking oil and saute the beef on all sides till browned. 
  • Then you will want to have on hand one can of adobo chilies and green chilies. *See picture below, of what I like to use. 

 

  • Once the meat has browned you will want to add all the ingredients from the chilies, beef stock and seasonings to a blender and blend until smooth.
  • Pour over the saturated browned beef and top with two bay leaves, the chopped onion and garlic.

  • Set the slow cooker to your high setting and allow it to simmer for 8 to 12 hours. 
  • Once the meat has cooked, shred with two forks on a cutting board and place back in the pot along with the fresh squeezed lime juice and sauté along with the sauce for 2 minutes and serve as you’d like. 

Sauteing the shredded meat for 2 minutes at the end really helps to enhance the flavors in the meat.

WHAT SPICES FOR BARBACOA BEEF 

  • Adobo peppers
  • Green Chilies
  • Cumin
  • Oregano
  • Bay Leaves
  • Salt n pepper 

If your wanting to serve this meat with beans, you can try my “Cuban Black Bean” they would go very well served alongside with this recipe.

  • Tacos, Tortillas, Burritos
  • Cabbage Pico De Gallo
  • Limes
  • Cheese
  • Rice
  • Black beans
  • Avocados
  • Cilantro

If you decide to make “cabbage pico de gallo” just make sure you make it a few hours ahead of time.

Quick Carnitas Recipe (Pressure Cooker)

These Quick Carnitas Recipe is an inexpensive weeknight meal that can feed a crowd! 

I love making this recipe, you can either simmer it all day in your slow cooker or prepare it in less than 20 minutes in your pressure cooker. 

What kind of meat is use for Carnitas? 

Carnitas is the Mexican version of pulled pork. It’s traditionally made with pork shoulder or pork butt. This piece of meat contains more fat and helps it to stay juicy!

How to make Pork Carnitas in pressure cooker? 

You will start by searing the pork until it’s browned on all sides, then you will add all the ingredients listed here directly into the slow cooker.

Allowing it to cook throughout the day or you can cook it in under 20 minutes in the pressure cooker. 

Can’t get simpler than this, once it’s cooked you will take two forks and shred the pork on a cutting board before serving over rice or in a taco. 

Then you will be ready to have a feast fit for a Mexican Queen or King.

I love the ingredients in this recipe, because everything tastes so fresh. Adding fresh lime juice along with a fresh orange juice really makes the flavors pop, so be sure not to skip them.

Also the addition of the the raw onions surprisingly work so well here too, trust me or I should say the Mexicans!

So be sure not to skip on those very important ingredients. Serve this up with some avocados and you will have one great meal tonight. I hope you enjoy, ARRIBA MEXICO!
