Olive Focaccia Bread Recipe

This Olive Focaccia Bread Recipe is made with fresh provolone cheese and marinated olives. You are going to love it!

This recipe is by far one of my favorite ways to make focaccia bread. 

And you can do this, it’s not that difficult.

Just head over to your local Italian store on the way home and pick up “Real Sicilian Olives” marinated in spices and olive oil (you will be using this oil for the bread later) 

Oh and don’t forget the Provolone cheese ~ it really makes this traditional. Can you taste it already? Focaccia bread can be served alongside any pasta dish or eaten alone.

Making this bread from scratch is going to blow your mind. This recipe for homemade focaccia bread doesn’t compare to anything store bought kinds. 

Note: You can substitute the Provolone cheese for Fresh Parmesan Oregano if you like.

Easy One Pot Lasagna Soup

This Easy One Pot Lasagna Soup is ready in less than 30 minutes and is absolutely delicious! If you LOVE lasagna as much as me then you are going to love this soup!

Today, I made this Easy One Pot Lasagna Soup in my Instant Pot. You can however make this same soup on stovetop or slow cooker as well. 

This lasagna soup is similar to my other lasagna soup called Broiled Lasagna Soup however that one is finished in the oven and takes a bit more time.

WHAT IS LASAGNA SOUP

It has all the elements of what you would have in a solid baked lasagna however, it is all tossed into a beef stock instead. 

What goes with Lasagna Soup

Caesar or Garden salad works well alongside of this soup.

Crockpot Lasagna Soup 

Is made the same way, except you are letting it simmer for 4 hours instead

What Type of Cheese for Lasagna soup

Now the trick to making the best “Lasagna soup” is also using the right cheeses.

  • White cheddar cheese
  • Marble cheese 
  • Ricotta cheese

Can Lasagna Soup be Frozen

Yes, just make sure you put it into freezer safe bowls.

Is Lasagna Soup Healthy

Yes, it is high in calories though.

Notes: Feel free to freeze this soup it works great as leftovers, however keep in mind that broiling it from frozen doesn’t so much. Also make sure to break up those whole tomatoes with a wooden spoon while cooking, you do not want bites of whole tomatoes.

Creamy Tortellini Lemon Pasta

This Creamy Tortellini Lemon Pasta is made in a lemon garlic sauce that has a hint of creaminess from the cheese and chicken stock that you’re sure to love. 

If you like Lemon pastas then be sure to also try my Pasta with clams or my Cajun Garlic Scallops my other favorites!

I’ve served this up many times in our home and it’s one of our favorite pasta dishes by far. 

This recipe is made with fresh spinach, baby tomatoes and Monterey jack cheese this dish is sure to impress.

Feel free to use anytime of white cheese that you like, such as parmesan or mozzarella.

I used Monterey jack cheese in this recipe to give it a bit of kick.

This is by far one of my favorite ways to make Chicken Tortellini, it is super quick, delicious and an easy yet fancy weeknight meal that can be pulled off with little effort.

Feel free to add some pre cooked sliced chicken breasts on top if desired as well. 

However you really don’t need it as this dish is pretty filling as is.

Comfort food meets healthy food, yes it’s possible. 

Most creamy pasta dishes call for cream but my recipe calls for chicken stock, making it much healthier for you.

So go ahead and indulge with this one, everything in moderation right 🙂

If your family loves pasta as much as we do, then i’m more than certain this is a dish that will be adored in your household for a longtime.

You can fancy it up even more by adding some pre-cooked shrimp on top too, Jason loves when I do that.

Sometimes if there is leftovers I will eat this cold but it definitely tastes best served hot.

Before serving just make sure you are seasoning with salt to taste and then drizzling a bit more lemon juice on top.

Then it will absolutely PERFECT!

Creamy Tortellini Tomato Cheese Pasta

This Creamy Tortellini Tomato Cheese Pasta is a sure hit for all members of the family and is ready in no time!

You can either make this creamy tomato tortellini cheese pasta with a can of tomato soup or tomato sauce whichever you prefer. Like simple pasta recipes like this? Be sure to try my Tuna Pasta it is delicious also and is quick to make!

This dish can be put together in under 30 minutes ✌ 

Grab your favorite tortellini pasta and you will be in enjoying in no time.

I used a can of tomato soup to add some sweetness to this dish, also because my toddler was going to be eating it and he loves his food sweet.

However, you can use your favorite tomato sauce instead for a more refined taste and or add some red chili flakes to your dish for some added spice.

When making this Creamy Tortellini Cheese Pasta, you can make it several of ways.

Either with:

  • fresh tomatoes
  • canned tomatoes
  • tomato soup
  • tomato pasta sauce

You can use just about any type of pasta for this recipe, such as spaghetti or linguine. However, my 2 year old son really likes macaroni and truth be told so do I. He is not that picky when it comes to pasta, however this is his favorite type.

WHAT IS IN CREAMY TOMATO TORTELLINI PASTA

  1. Canned Tomato Soup or you can always use fresh tomatoes/pasta sauce
  2. Italian cheese which has 4 cheeses in it
  3. Garlic powder, Italian seasoning
  4. Tortellini 

Oh and you can also grate some parmesan cheese overtop! If you have kids, this is a must as you probably already know. Ha!

HOW TO MAKE CREAMY TOMATO TORTELLINI PASTA 

  • Then start by boiling a pot of salted water, then add in your tortellini pasta and cook the pasta according to the packages institutions. Strain and set aside.
  • Next add a can of tomato soup or tomato sauce and 1 cup of whole milk to a large pot and bring to medium heat.
  • Simmer for 5 minutes then add in the cooked tortellini, seasonings and cheeses.
  • Mix to combine then serve hot with some fresh parmesan cheese.
  • Enjoy!

You can always add ground hamburger as well to this dish just make sure it is cooked prior to cooking the tortellini then add it in last.

Traditional Bolognese Recipe

This Traditional Bolognese Recipe is a versatile sauce that can be served over any type of pasta.

Some Bolognese recipes call for the addition of chopped carrots or celery.

Personally, I do not use it! So this recipe omits that addition, however if you want to add it. Simply chop finely one carrot and 2 celery stocks and sauté them along with the onions.

WHEN WAS BOLOGNESE INVENTED 

Bolognese served with pasta comes from late 18th century near Bologna, from Alberto Alvisi.

HOW LONG WILL BOLOGNESE LAST IN THE FRIDGE

If it is stored in an air tight container up to 3 days.

WHAT IS BOLOGNESE

Bolognese Sauce is an rich meat based typically beef tomato sauce that originates from Italy.

It is made Beef (hamburger) or pork, onions, garlic, pureed tomatoes, red wine or beef broth, parmesan cheese and whole milk or whipping cream which makes for an delicious Bolognese sauce. 

I omitted the celery and carrots. Which is used in Authentic Bolognese, however something I do not prefer in mine.

WHAT PASTA FOR BOLOGONESE SAUCE

You can use just about any pasta for this sauce, I really like Pappardelle as it soaks up all the sauce very nicely.

Tortellini Mushroom Recipe

This Tortellini Mushroom Recipe is absolutely delicious! Made with brown mushrooms, cheese tortellini.

This pasta dish is quick and easy to make and can be served any night of the week.

If you are looking for a vegetarian dish for tonight’s dinner and love mushrooms, then your in for a treat!

How to make Tortellini Mushroom Recipe

  • To make this dish you will simply start by cooking the pasta according to the package instructions.  
  • While the tortellini is cooking, you can add 2 tbsp of butter to a non stick frying pan and add in the sliced mushrooms.
  • Sauté then with fresh rosemary and salt and pepper till browned and soft. 
  • Now all you will have to do is add in the balsamic vinegar and bring to a simmer for 2 minutes before adding back in the cooked tortellini and parmesan cheese.
  • Toss everything together and enjoy your mushroom feast!

This recipe can be made vegan instead of just vegetarian if you want.

However you would want to replace the butter, parmesan cheese and cream with vegan options of course.

And of course you can use “gluten free” pasta if your on such a diet.

So really there is no excuse to not indulging once in a while in such an amazing dish.

Dinner for 2 never looked so Tasty!

Squeeze the juice from a lemon overtop before serving and you will be in mushroom pasta heaven… Bone appetit!

If you’re looking for some comfort food tonight, look no further than this recipe for a Creamy Italian Sausage Tortellini.

I’ve prepare this dish in our home often. And I’ve been told it taste better than most of the dishes offered in those fancy Italian restaurants

This dish is ultimate comfort dish, which offers a place full of delicious Italian flavors.  

Believe it or not but this dish even tastes better the second day, it’s absolutely delicious! 

I have always loved Italian recipes, because tomatoes and cheese are often used and two of my favorite ingredients. 

This dish is similar it taste to a Italian Tortellini soup – the broth. I have that recipe here on the blog, that you can find below. 

Add a dash of fresh parmesan cheese on top to serve and you will be in Italian food heaven!

I also will use Classico Sun-Dried Tomato sauce for this recipe.

It makes it super creamy and adds a element of depth than just plain alfredo would do.

I really like to use “herbed Italian sausage” for this recipe. 

Then I will add a pinch of red pepper flakes which really helps to pick up the flavor.

Notes: Also keep in mind, as with all my recipes. If you want to make more or less, simple adjust the serving size in the ingredients section above and the servings will automatically adjust for you. This recipe can store in the fridge for up to 3 days and or freeze for up to 3 months.

HOW TO MAKE CREAMY TOMATO PASTA 

 

  • Then start by boiling a pot of salted water, then add in your pasta and cook the pasta according to the packages institutions. Strain and set aside.
  • Next either chop your tomatoes or add a canned of whole tomatoes to a pot and press into bite sized pieces with a wooden spatula to cook.
  • Simmer over medium heat for 5 minutes adding in the Italian seasoning and garlic powder.
  • Once the sauce is hot, add back in the pasta.
  • Toss and add in the Italian cheese, once melted.
  • Toss and serve with parsley and parmesan cheese. 
  • Enjoy!

You can always add some sliced chicken breasts to this pasta or ground hamburger as well if desired.
