Thankfully this recipe can feed a crowd or simple cut it in half and have enough to serve a family of four if preferred. 

Now, I don’t know about you but I love salads. I like to try different kinds often and this one is up there on my top 10 favorite’s salad lists.  dreaming away.

So what is Bocconcini anyway?

Well it’s a type of cheese that originates from Naples in sunny Italy. It tastes a lot like mozzarella however has a subtle yet distinct taste that works so well in this pasta salad.

This salad can be enjoyed pretty much any time of year, but I know it will be best enjoyed on those long summer nights out on the back patio! I can picture it now 🙂

You can use pretty much any type of tomatoes for this recipe, baby tomatoes work great too so just use what you have on hand.

Toss it all together in some healthy Ranch dressing and you will be enjoying a fresh pasta salad in not time at all. Also why not whip up some healthy raspberry sweet tea to enjoy alongside, see my recipe below for that!

Typically Bocconcini cheese, comes in 200 gram containers.

So if your wanting to recreate this exact recipe, it’s best to buy two of them or purchase a larger bag bocconcini if your grocery carries.

This is definitely a popular summer salad and adding your favorite creamy ranch dressing to it makes it all the better! Trust me, everyone is going to LOVE IT!

This Simple Butter Chicken Recipe is sure to impress as it is just as good if not better than what you will find in most restaurants.

Today I’m so very happy to show you this recipe for a Simple Butter Chicken Recipe that your sure to make time and time again.

Awww the infamous Butter Chicken, also known as (Murgh Makhani). Almost everyone that has tried this dish has loved this dish and if you have not tried it before at home your in for a treat!

HOW TO MAKE BUTTER CHICKEN SPICY

To make this Curry easy to make, try purchasing a pre-made Butter Chicken curry powder package like the one below. 

WHAT SPICES ARE USED IN BUTTER CHICKEN 

  • Salt, Red Chilli, Turmeric, Cumin, Black Pepper, Large Cardamom, Cinnamon, Green Cardamom, Clove, Ginger, Garlic, Star Aniseed, White Pepper

I always use a BUTTER CHICKEN SPICE blend as seen below as it has all of this in it already. Otherwise if your wanting to add in your own spices I highly recommend adding 1 tsp of chili powder, cumin, turmeric and fresh crushed garlic and onions. 

 

Below you will see the pre-marinaded and cooked chicken being added to the sauce for the final step in cooking this delicious dish.

The part where your simmering the sauce, you can switch from 1/2 tsp of chili powder to 1 tsp for that extra heat. I love to do that, personally. I will add 1 tsp every time for this recipe. 

WHO INVENTED BUTTER CHICKEN

It’s origins came from three  Punjabi restaurateurs, Kundan Lal Jaggi, Kundan Lal Gujral and Thakur Dass, who founded the world-renowned Moti Mahal restaurant in Delhi. 

WHATS BUTTER CHICKEN SAUCE MADE OF

  • Fresh Cream
  • Ghee or Butter
  • Oil
  • Cashews or Almonds if you do not have you can always use sugar for added sweetness 
  • Plain Yogurt
  • Tomatoes
  • Garlic and Onions

WHAT’S BUTTER CHICKEN

It is one of the most popular Indian curries Worldwide today.

It’s become so popular that the supermarkets are now selling various versions of it in pre- packaged bottles in hopes to win your business. 

But that stuff just won’t cut if for those of us who are familiar with traditional Butter Chicken. Because real butter chicken uses ghee butter you can use regular butter if desired. Then of course there is cream and some stronger curry flavors than most of those pre-made bottled types entail. 

Plus those bottles are expensive costing near 4x the price that it takes to make it from scratch, not to mention not nearly as tasty.

IS BUTTER CHICKEN SPICY

This popular dish hails from the Indian subcontinent and is noted for its creamy and smooth butter taste, you can make it more spicy by adding an extra 1 tsp of red chili powder if desired.

Otherwise this is a mild curry compared to other traditional Indian dishes.

In comparison we would rate the spice level of this dish to other Indian dish, a 4 out of 10. 

Such as Grama masla and Indian curry powder. All which can be found in almost any grocery store spice section. 

I think the reason people by those pre-made bottles is because they think making it from scratch is hard, but I assure you it’s not.

It’s all about having the right ingredients and nothing in this ingredients list is is foreign besides possibly the fenugreek leaves also known as kasuri methi. Also that can be found in almost all grocery stores today.

HOW LONG WILL BUTTER CHICKEN LAST IN THE FRIDGE

In a sealable container up to 3 days and if you want to freeze it for meal – preps you can do that and store in the freezer up to 3 months.

We don’t add as much cream to this Butter Chicken as most do, which will give it a more orange color.

If your wanting a more cream heavy type of Butter Chicken just add 1/2 cup of  cream opposed to the 1/4 cup that my recipe calls for.

COCONUT CURRY SHRIMP

Satisfy your curry craving tonight with this mouthwatering  Coconut Curry Shrimp that contains a fusion of flavor.

If you have never tried Red Thai Curry before, I encourage you to give it a try. 

Some of the ingredients of RED THAI CURRY paste includes “Lemongrass”; “Galangal” , “Kaffir lime leaves” and Bird’s Eye Thai chilies. 

HOW TO MAKE COCONUT CURRY SHRIMP

  • Red Thai Curry Paste * see the picture below for my favorite brand
  • Jamaican Curry Powder
  • Thick Coconut milk * skip the watered down varieties
  • Shrimp
  • Cilantro
  • Green peppers
  • Onion
  • Limes
  • Rice

Our favoriteRED THAI CURRY PASTE

The shrimp is curried to perfection and has become one of our new households favorites. 

It is very similar to my Jamaican Curry Shrimp and if your interested in that recipe.

It is also a favorite in our household.

The difference between that recipe and this recipe is that here we are adding tomatoes and omitting the scotch bonnet peppers and replacing that with a bit of “Red Thai Curry” paste. 

Both recipes are amazing and I encourage you to try this one and that one separately. 

So if you like curry as much as me, then you are sure to love this recipe. We are infusing it also with salt and pepper, tomatoes and coconut milk that help to bring all those curry flavors alive.

Keep in mind you will want to use a good quality coconut milk, one that is not to watery. When it comes to the tomatoes you can choose fresh or canned.

COCONUT CURRY SHRIMP AND RICE

  • Start by making your rice
  • Bring a medium pot of water to a boil
  • Turn the heat down to medium and add in 2 cups of rice
  • Simmer on medium heat till the water is almost evaporated
  • Turn down to low and simmer till tender, keep an eye on the liquid you may need to add a bit more or remove some.

HOW TO MAKE COCONUT CURRY SHRIMP

This recipe is super easy to make. Trust me it is as easy as 1, 2, 3

First you want to cook some rice. I like to use Basmati rice for this dish, however any type works. 

  1. First you want to cook some rice. I like to use Basmati rice for this dish, however any type works. 
  2. Then in a large skillet you will want to add some coconut oil then the garlic and ginger powder along with the Jamaican curry powder and saute on medium heat till fragrant.
  3. Next add in your Red Thai Curry paste and saute 1 minute till fragrant.
  4. Add in remaining spices then the can of coconut milk.
  5. Simmer on medium heat and add in your chopped onion and green pepper. Simmer on medium – low till the veggies have become tender. 
  6. Lastly add in the shrimp and cook till no longer pink.
  7. Serve over rice with fresh limes. 

Keep in mind you can use fresh ginger and garlic if you so desire.

Notes: “Lemongrass”, “Galangal” and “Kaffir lime leaves” can be found in most Asian stores. “Thai Red Curry Paste” can be found in most Supermarkets, Thai Red Curry paste has all the above ingredients in it needed to make this dish.

Cabbage Tomato Salad

This Cabbage Tomato Salad is packed full of amazing Mexican flavors! So simple yet so refreshing!

Have you ever tried fresh Mexican pico de gallo salsa on a taco, fajita or burrito and thought “WOW” this would be great as a salad?

Well I have and eat it often as a salad too so instead of chopping the cabbage super fine I will leave it a bit more chunky.

This salad is made from chopped roma tomatoes, onion, cilantro, jalapeños peppers, salt, and lime juice.

And has literally no calories so feel free to eat as much as you like. Buen provecho!

I could eat this all day everyday!

When making this salad make sure to drain most of the liquid out of your tomatoes otherwise it will become mushy to fast. I recommend using roma tomatoes, that way there is not to much liquid.

Bunny Chow

Spicy lamb Bunny Chow originated in South Africa, in Durmas area. And then spread throughout the region from there. Today it is served in many European Restaurants and in many homes of “Afrikaans” as a staple food. And I see why, it is absolutely delicious! 

What is Bunny Chow anyway? Well it’s a curry that is traditionally made with Lamb or Mutton or just Vegetables and then it is put inside a loaf of bread for serving.

History tells the tale of some Indian sugar plantation workers that started to take this food to work daily in a loaf of bread with (no plate) and from there it just took off as one of South Africans famous foods.

Today this recipe has become a hit in Europe and beyond. I prefer to make this recipe and then place it into “Crusty Bread” as opposed to the traditional “Bunny Bread” which is a plain soft white bread.

Of course this is my personally preferences, you can choose to prepare it either way! And do not be afraid to eat this one with your hands either, that is how it’s done.

Easy Pizza Ratatouille

This Easy Pizza Ratatouille with Mozzarella Cheese is so good you won’t believe it’s Vegetarian. 

I just love Ratatouille, it’s fresh, healthy and so good for you.

And is one of those excellent summer time recipes, since it utilizes all those fresh garden vegetables so well.

Not to mention very pretty, just look at the rainbow of colors.

Made with a few simple ingredients.

That being of eggplant, zucchini, tomatoes and mozzarella cheese it doesn’t get any fresher than this. Which is then smothered in a quality can of tomato based pizza sauce.

Your sure to impress anyone when serving this dish!

There are many recipes out there for this famous french dish called “Ratatouille” and plenty different ways to preparing it.

Traditional Ratatouille is made without cheese, however I like to add Mozzarella to mine, because it really enhances the recipe and makes it taste more like a pizza without the added carbs.

Lay upon layer of Tomato, Green Zucchini, Yellow Zucchini, Mozzarella Cheese and Eggplant!

Also be sure to cook it for a minimum of 2 hours as that sure helps to bring out all the vegetables flavors which happens through caramelization.

This recipe is sure to be a family favorite, and is gluten free.  I hope you like my version of this famous dish. “Bone Appetite”!

Slow Cooker Mexican Chipotle Fajitas

Are you looking for a authentic tasting Mexican recipe, that is sure to knock the socks off. Well look no further, we make this in our house pretty often and it’s absolutely AMAZING! Plus there really is nothing to it, you just need a few chicken breasts, some Mexican chilies in adobo sauce (see can picture below) and a few spices. Then you and whoever is lucky enough to be dining with you will be saying Sabroso = Tasty! And please don’t let the time frame scare you, this is all done in the crock pot so you’re just going to prep it and forget it until later. Now this is a spicy recipe, so if you can’t handle the heat then please get out of my kitchen! Sorry that is not very nice of me, but I do love spice and so I have to be honest with you. 

This recipe calls for 4 whole chicken breasts, so if you’re wanting to feed a larger crowd then simply add in more. Once cooked, shred the chicken, warm your tortillas and simply fill with rice and some guacamole or better yet make some cabbage pico de gallo, see my recipe here for Pico De Gallo and use this as a filling. I really hope you give it a go and let me know how you liked it. 

To make the Slow Cooker Mexican Chipotle Fajitas:

  1. In your food processor puree 1/2 can of your Chipotles in Adobo sauce.
  2. Then dice up 4 chicken breasts, and place in your crock pot and set to brown, add in 1 tsp of cooking oil and brown lightly.
  3. Once your chicken is browned lightly, add in your chopped tomatoes, onion, garlic and spices.
  4. Then add in your pureed Chipotles in Adobo sauce.
  5. Follow cooking instructions below.
  6. Once cooked, shred in your pot with a fork.
  7. Serve in warm tortilla shells and add in guacamole or better yet pico de gallo, see recipe above or below.
  8. Enjoy!

 

Cooking Instructions:

Pressure cooker: READ your units instructions mine says 10 mins for chicken.

Slow cooker: 5 hours on low

Stove Top: Simmer covered on low heat for 3 hours.

Note: If you want less sauce, remove the seeds from the tomatoes. Want more heat add the whole can of chiles in adobo sauce

Cheesy Tuna Casserole

I call this the works tuna casserole, because it has a bunch of healthy stuff in it like fresh parsley, tomatoes and red peppers. Then it’s smothered in cheese, YESSSS Cheese! 

Tuna casserole never tasted so good and your family will not believe this is made with tuna. I like to make this dish with eggless noodles, making this dish ready in under 30 minutes flat. 

Great for a quick and healthy weeknight meal or even excellent casserole to serve at your next family gathering. Just you? Make numerous small portions and freeze it for quick on the go meals. 

You can prepare this dish with chicken, turkey or hamburger meat as well or make vegetarian, all four ways are amazing. 

However I like to make it with tuna, because it’s just another way for me to get fish in my diet.  If you end up giving this a give it a try, I would love to know how you liked it. Bon Appetit!
