Rajma Recipe (Punjabi Curry)

This flavorful Rajma Recipe (Punjabi Curry) has a combination of beans, tomatoes, and spices simmered together to create a hearty and delicious vegetarian / vegan meal.

Indian cuisine is famously known for its unique flavors and spices, and one dish in particular is a classic example of the variety of flavors in Indian cooking: Rajma Curry.

WHAT IS RAJMA CURRY

It is a Vegetarian Curry made with Kidney beans and many different spices. 

INGREDIENTS NEEDED FOR RAJMA CURRY

  • Kidney beans
  • Red Onion
  • Garlic
  • Ginger
  • Tomatoes 
  • Spices

RAJMA IS RICH IN

Protein, fiber along with iron, copper, folate, manganese, potassium and Vitamin K1.

HOW TO MAKE RAJMA CURRY

You can prepare this dish all in one pot on the stove or in your slow cooker/pressure cooker if you like too.  I prepared this on the stovetop this time as I used canned kidney beans, so it was quick and easy for me. 

Inspired by one of my favorite Indian Chefs Vahchef.

This dish is %100 Vegetarian but you would not know it, because it’s soooo GOOD!! 

Once you try this recipe, you will be hooked. And if you have a meat eating man or kids in the house who swear that Vegetarian food can’t be good. Just wait till they try this recipe!

This dish has a wonderful depth of smells and flavor that you’re sure to remember, kidney beans never tasted so good!

I have experimented with plenty of curries for some time now, so you can trust me when I say this recipe is a sure winner.

Now you will want to go down the ethnic food aisle in your local grocery to pick up some “Masala Curry” which is the right kind of powder that is really needed for this recipe.

Then you will add just a few more traditional Indian spices that will make this dish absolutely amazing. Also if your not to familiar with dried fenugreek leaves, then I encourage you taking a stroll down your groceries ethnic for those as well.

They are sure to have it there somewhere, however if you cannot find them feel free to use cilantro instead.

Who said it takes a chef to make real Indian curry? Obviously never was in your kitchen. Cooking methods:

  • Simmer on a low-medium heat for 1 hour on the stovetop
  • Cook in the pressure cooker around 10 minutes or depending on your instructions
  • Cook in the slow cooker from 8-10 hours.

Vegetarian Black Bean Soup

This is a healthy Vegetarian Black Bean Soup is made from scratch and can feed a family of four for less than 10 dollars. You can make it as spicier or milder as you wish. 

Serve this with tortilla, cornbread, avocado and a dab of sour cream or plain yogurt.

Or if you have kids, top it with melted cheese!! Yum.

Another thing about this recipe is that you can make it on your stove-top or in your slow cooker making it versatile for either a weeknight meal or weekday meal.

It’s a super filling soup too because it is packed full of feel good fiber and vegetables.

BLACK BEAN SOUP IS IT HEALTHY

Depends on how you make it I guess. However, this recipe is very healthy

Black beans have tons of nutrience and are packed full of fiber. Add all the vegetables that I have to this soup and it becomes VERY HEALTHY!

BLACK BEAN SOUP WITH CANNED BEANS

Cuts down on the prep and cooking time by half

BLACK BEAN SOUP WITH DRIED BEANS

Be sure to soak the dried beans overnight in water

Then the day of cooking, cover the beans with water and boil on medium low for 35 minutes prior to adding to the soup.

If your serving this to adults, I recommend serving with a fresh sliced avocado as well.

If your serving this to kids, I recommend melting cheese overtop of this soup.

HOW TO MAKE BLACK BEAN SOUP

Start with all your vegetables and dice them finely, fine enough to make a soup

  1. Using a large pot or Dutch oven heat oil on low to medium heat. Add diced zucchini, onion, carrots and salt. Let the vegetables soften for about 15 minutes on low to medium heat. Stir often.
  2. Add the garlic and the spices (cumin and red pepper flakes, cilantro) and cook for another 2-3minutesstirring often.
  3. Add the vegetable broth and black beans and raise the temperature to medium/high heat.
  4. Once simmering reduce heat and continue cooking for another 30 minutes.
  5. Take about half of the finished soup (4 cups) and place in a blender and blend until smooth. Be
  6. careful as the soup is hot and you may want to let it cool down first before blending or take 4 cups out and let that
  7. portion cool down before blending. Add blended soup back to the rest of the pot and mix well.
  8. Serve with a squeeze of lime and your favorite garnish. Enjoy!

SPICES FOR BLACK BEAN SOUP

  1. Cumin
  2. Red pepper flakes (less if you want less heat)
  3. Salt and pepper to taste

Persian Stew (Ghorme Sabzi)

This Persian Stew (Ghorme Sabzi) is a very popular dish that hails from Iran. It is made with either beef or lamb, kidney beans and some other special ingredients

My friend shared a flat with an Iranian man during his University days and during this time the young man’s Mother would often come over and spend the whole day cooking for them (Spoiled)!

It has been many years since then, however Jason had not forgotten how good those meals where. And one of his favorite dishes was for this Persian Herb Stew. 

Recently, I was asked to try and prepare some traditional dishes in exchange for a few nights of fine dining somewhere, so I gladly took the challenge.

I must admit i was like a fish out of water, because i never cooked Iranian food before so i wasn’t sure what recipes or techniques to use.

However with some time a patience i learned the tricks to making this delicious dish. My first attempts failed, I was following the wrong recipes, and to my partner’s disappointment none of the dishes I prepared tasted at all like he remembered.

But I did not give up and set my focus on Ghorme sabzi  which is considered the Iranian national dish, and understandably so, it’s absolutely delicious not to mention very healthy.

I finally prepared this recipe here, and we both were instantly in Ghorme Sabzi Persian Heaven! Knowing we found the right recipe that is sure to please those who know it all to well and those trying it for the first time. Serve with basmati rice and enjoy!

Easy One Pot Lasagna Soup

This Easy One Pot Lasagna Soup is ready in less than 30 minutes and is absolutely delicious! If you LOVE lasagna as much as me then you are going to love this soup!

Today, I made this Easy One Pot Lasagna Soup in my Instant Pot. You can however make this same soup on stovetop or slow cooker as well. 

This lasagna soup is similar to my other lasagna soup called Broiled Lasagna Soup however that one is finished in the oven and takes a bit more time.

WHAT IS LASAGNA SOUP

It has all the elements of what you would have in a solid baked lasagna however, it is all tossed into a beef stock instead. 

What goes with Lasagna Soup

Caesar or Garden salad works well alongside of this soup.

Is made the same way, except you are letting it simmer for 4 hours instead

What Type of Cheese for Lasagna soup

Now the trick to making the best “Lasagna soup” is also using the right cheeses.

  • White cheddar cheese
  • Marble cheese 
  • Ricotta cheese

Can Lasagna Soup be Frozen

Yes, just make sure you put it into freezer safe bowls.

Is Lasagna Soup Healthy

Yes, it is high in calories though.

Notes: Feel free to freeze this soup it works great as leftovers, however keep in mind that broiling it from frozen doesn’t so much. Also make sure to break up those whole tomatoes with a wooden spoon while cooking, you do not want bites of whole tomatoes.

My Sausage Casserole Slow Cooker recipe is a easy one pot recipe that your whole family is going to love.

HOW TO MAKE SAUSAGES CASSEROLE SLOW COOKER

  • First your going to want to slice your onion into bite sized pieces, along with your carrots and potatoes.
  • Then you can either use frozen or fresh Brussel sprouts, I recommend the smaller variety however you can defiantly cut them in half to match the other veggies.
  • And place them all in your slow cooker along with 1 can of cream of chicken soup and a 1/2 cup of milk
  • Meanwhile, sauté your sausages till cooked on the stove-top you want them to be browned before adding them into the slow cooker.
  • Then toss in some pepper and let it slow cook all together anywhere from 6 hours to 8.

ENJOY!

HOW TO MAKE SAUSAGES IN THE OVEN

Same as above, except place everything in the oven.

The best part about this recipe is that it has 4 types of vegetables in it! And if your feeding picky kids in your home like me.

Then this dish is sure to be a hit and a good way to get those kiddos to eat their veggies!

Just be sure to make the sausages bite size for your littlest ones, chocking is no joke mama!

Easy 4 ingredient Potato Soup

This easy 4 ingredient Potato Soup is made with potatoes, side bacon, stock and Monterey Jack cheese. It can be made on the stove-top or in your slow cooker/instant pot.

WHERE IS POTATO SOUP FROM

Originally, this soup came from Peru in South America.

However, today this soup has been adopted by many in America where most now add bacon to the soup for extra flavor.

HOW TO MAKE POTATO SOUP

  • Start by peeling the potatoes, then over a large bowl filled with water. Take a sharp knife and slice the potatoes (not in perfect sizes) just bite size pieces works best up.
  • Then soak the potatoes in the water and set aside
  • Meanwhile, in a large stock pot add the bacon and sauté till crispy and then set aside
  • In the same pot add in 2 tbsp of butter and all your seasonings sauté 2 mins till fragrant then add in the Vegetable stock.
  • Lastly add in the diced potatoes and 1 cup of cream.
  • Simmer covered on low – medium heat till the potatoes are fall apart tender.
  • Serve hot and top with Monterey Jack cheese and the cooked bacon.
  • Stir it all in together and enjoy!

CAN POTATO SOUP BE FROZEN

Yes, you can store this soup in a freezer bag or container anywhere from 3-6 months.

This Best French Onion Soup Recipe can be made on the stove top, in your instant pot or slow cooker.

The secret to making the Best French Onion Soup Recipe is to cook those onions real well. Then of course you want a good solid beef stock and some gruyere cheese. 

I’ve also shared another French Onion soup recipe with you all a few years back now. That recipe had scallops in it, yes scallops. 

That recipe is a tad fancier and was done on the stovetop and then broiled in the oven. Takes a bit longer, but is also a goodie and a bit fancier.

BEST CHEESE FOR FRENCH ONION SOUP

Gruyere cheese is most popular however you can use Swiss, Mozzarella as well.

I was craving French onion soup as of late. And came up with this delicious recipe in my Instant Pot! Of course this can be made on the stove – top just the same.

FRENCH ONION SOUP BOWLS

Are important to have when completely this soup because your going to want to put this pre -made soup in them under the broiler for the last few mins to heat the soup and broil the cheese. 

Image coming home to a warm bowl of French onion soup? But with it taking only half the time to prepare than the average French onion soup recipe, because you let the instant pot cook it?

Yup, you can have it all with this one.

BEST ONIONS FOR FRENCH ONION SOUP

Yellow onions are the best, however this soup can be made with any type of onion just not green of course. It just would not be the same!

Should be oven safe as you will want to place the pre-made soup in them along with the cheese and fresh scallops for baking.

Some are some are, so if your going to use the oven vs the microwave be certain it is oven safe or it will smash.

Recipe, and let me tell you it is WINNER!

Since it all comes together in less than 30 minutes and tastes like you have been laboring all day in the kitchen to make.

WHAT DOES FRENCH ONION SOUP TASTE LIKE

If you have ever had caramelised onions, you will know it has a sweetness to them.

Then once they are simmered in a beef or vegetable broth with spices it becomes absolutely delicious. 

So follow along!

WHAT KIND OF CHEESE IS ON FRENCH ONION SOUP

Gruyere Cheese, you can also substitute for provolone cheese or mix the two.

I just use gruyere here and sometimes will even use some mozza if that is all I have on hand. 

WHAT ARE THE BEST ONIONS FOR FRENCH ONION SOUP

You can use yellow, white or even red onions for French onion soup. 

BEST WINE FOR FRENCH ONION SOUP

A dry white or red wine works best. 

FRENCH ONION SOUP RED OR WHITE WINE

Traditionally, in France. This soup is made with white wine and that is because it helps bring out the beef flavor. 

SUBSTITUTE FOR RED OR WHITE WINE

You can always substitute Red or White wine with Red wine vinegar, grape, pomegranate, or cranberry juice and or chicken, beef, or vegetable stock.

HOW TO MAKE FRENCH ONION SOUP INSTANT POT

There are several ways to make French onion soup.

Some people do it on the stovetop then bring it to the oven to broil it.

While others make it in their instant pot (like in this recipe) and put it either in the microwave to melt the cheese or in the oven at the last minute.

It all comes down to personal preferences.

But one thing is for certain, you want to use lots of onion and a good quality beef stock for this soup! 

  • Step one: You will want to slice your onions and then add your butter and olive oil to the instant pot.
  • And turn it on simmer, once the butter has melted you will add in the onions, salt and pepper and 1 package of Knorrs onion soup mix (my secret ingredient) 

  • Step 2: Saute the onions till browned, turning often.

Now those onions are perfectly browned, baby!

Step 3: Add in the beef broth, white or wine, bay leaf and all remaining seasonings. 

Step 4: Simmer in the instant pot on medium heat all together for 15 more minutes. 

Step 5: Discard the bay leaf, then ladle the soup into bowls and top with Gruyere cheese or Swiss cheese.

Step 6:  Place each individual bowl in the microwave long enough to melt the cheese.

Step 7: You can also place in the oven near the top shelf and broil these bowls (as long as the bowls are oven safe) for 2 minutes. 

Step 8: Top with fresh parsley or chives and enjoy!

If you want bread in this soup, feel free to add some croutons before the cheese. 

HOW TO SERVE FRENCH ONION SOUP

Serve with croutons if desired.

This recipe will make a large pot of soup, so if you have any any leftovers “which is highly unlikely”.

Then you can enjoy it over the next few days or freeze it as a meal prep option for another time if desired.

CAN FRENCH ONION SOUP BE FROZEN

Yes and it even tastes better the next day. So go ahead and make a BIG old pot and save some for another day! Just make sure that you do not freeze it with croutons or the cheese.

Place those on it the day of serving it!

Notes: Keep in mind, as with all my recipes.

If you want to make more or less of this soup, simple adjust the serving size in the ingredients section above and the servings will automatically adjust for you.

And save yourself time and hassle, and let your food processor chop up your beets and cabbage up.

Also it gives a great consistency to the soup.

You are going to want to jot this recipe down, it is a keeper!
