Some of the ingredients of RED THAI CURRY paste includes “Lemongrass”; “Galangal” , “Kaffir lime leaves” and Bird’s Eye Thai chilies. 

HOW TO MAKE COCONUT CURRY SHRIMP

  • Red Thai Curry Paste * see the picture below for my favorite brand
  • Jamaican Curry Powder
  • Thick Coconut milk * skip the watered down varieties
  • Shrimp
  • Cilantro
  • Green peppers
  • Onion
  • Limes
  • Rice

Our favoriteRED THAI CURRY PASTE

The shrimp is curried to perfection and has become one of our new households favorites. 

It is very similar to my Jamaican Curry Shrimp and if your interested in that recipe.

It is also a favorite in our household.

The difference between that recipe and this recipe is that here we are adding tomatoes and omitting the scotch bonnet peppers and replacing that with a bit of “Red Thai Curry” paste. 

Both recipes are amazing and I encourage you to try this one and that one separately. 

So if you like curry as much as me, then you are sure to love this recipe. We are infusing it also with salt and pepper, tomatoes and coconut milk that help to bring all those curry flavors alive.

Keep in mind you will want to use a good quality coconut milk, one that is not to watery. When it comes to the tomatoes you can choose fresh or canned.

COCONUT CURRY SHRIMP AND RICE

  • Start by making your rice
  • Bring a medium pot of water to a boil
  • Turn the heat down to medium and add in 2 cups of rice
  • Simmer on medium heat till the water is almost evaporated
  • Turn down to low and simmer till tender, keep an eye on the liquid you may need to add a bit more or remove some.

HOW TO MAKE COCONUT CURRY SHRIMP

This recipe is super easy to make. Trust me it is as easy as 1, 2, 3

First you want to cook some rice. I like to use Basmati rice for this dish, however any type works. 

  1. First you want to cook some rice. I like to use Basmati rice for this dish, however any type works. 
  2. Then in a large skillet you will want to add some coconut oil then the garlic and ginger powder along with the Jamaican curry powder and saute on medium heat till fragrant.
  3. Next add in your Red Thai Curry paste and saute 1 minute till fragrant.
  4. Add in remaining spices then the can of coconut milk.
  5. Simmer on medium heat and add in your chopped onion and green pepper. Simmer on medium – low till the veggies have become tender. 
  6. Lastly add in the shrimp and cook till no longer pink.
  7. Serve over rice with fresh limes. 

Keep in mind you can use fresh ginger and garlic if you so desire.

Notes: “Lemongrass”, “Galangal” and “Kaffir lime leaves” can be found in most Asian stores. “Thai Red Curry Paste” can be found in most Supermarkets, Thai Red Curry paste has all the above ingredients in it needed to make this dish.

WHAT DOES PANANG MEANS

To sit crossed legged, this recipe is an ancient dish that dates back to the 1800. 

WHAT IS BEEF PANANG CURRY

It is a poplar Thai dish that is sure to please everyone. Even if you don’t like peanut butter much, I’m sure this recipe will change all that for you.

IS BEEF PANANG CURRY HOT

It has some heat from the /…… but it is not considered a hot dish. Rather mellow and full of flavor!

WHAT IS MADE PANANG BEEF CURRY MADE WITH

Most traditional Panang Curry have: Red Thai Curry Paste, Fish sauce, Coconut Milk, Kaffir Lime Leaves, Palm Sugar and Red peppers in it.

However you can mix and match some of the ingredients to your liking. 

As you will see below (and that i did for this recipe)

  • Easy fry sliced beef or thinly sliced beef against the grain
  • Fresh spinach
  • Bean sprouts
  • Shredded red cabbage
  • Shredded carrots
  • Sliced Onion
  • Peanut Butter
  • Olive oil

HOW TO MAKE BEEF PANANG CURRY

You can use any Red Thai Curry Paste you’d like. The one that you see above is my favorite!!

  • Start by adding fish sauce and oil in a medium sized bowl and mix with a fork. Then add in the sliced beef and coat, marinade the beef for 20 minutes. 
  • Meanwhile, in a large wok add in the coconut milk and bring to a simmer. 
  • Add in the Red Curry Paste and cook on low heat for a few minutes, string as you go. 
  • Next add in the brown sugar and cook till the sugar is dissolved.
  • Add in the marinaded beef and cook till the beef is near done. 
  • If it is getting dry add some water, 2 tbsp at a time. 
  • Add in the spinach and simmer on low heat till wilted. 
  • Garnish with fresh carrots, red cabbage and bean sprouts. 
  • And a dollop of PEANUT SAUCE. (RECIPE IN THE CARD BELOW)

NOTE: Feel free to squeeze a bit of lime juice overtop or add in 3 Kaffir Lime leaves to the recipe and remove before serving. 

WHAT ARE KAFFIR LIME LEAVES

Kaffir lime leaves are an aromatic Asian leaf most often used in Thai, Indonesian and Cambodian recipes. They have a spiced-citrus flavour which is a lot lighter and zestier than a bay leaf or curry leaf. Perfect for lifting a coconut-based broth or fragrant fish curry. WHAT MEAT IS BEST WITH PANANG CURRY

Really, you can use chicken or pork as well. But I much prefer it with sliced beef as you will see in this recipe.

Easy Red Thai Curry

This Red Thai Curry is easy to make and authentic. Yup, you can make this in the comfort of your own home in less than 30 minutes.

WHERE TO BUY RED THAI CURRY PASTE

This is probably your first thought? Am I right! Well I got you covered. First off you want to buy the right Thai curry paste or it will not taste as authentic. 

Trust me, I have tried them all. And swear by only one brand, you will see that brand below. Here in Canada this can be found in almost every ethnic aisle at your local Superstore.

If you do not have a superstore, then you are going to have to shop around. Ideally, at a asian market. 

In Thailand this paste is made from scratch with Kaffir lime leaves, lemongrass and galangal, red thai chilies, anchovy paste and a bunch of spices.

Which is all grinded to a paste in a mortar. If you really want to make it from scratch here is an excellent recipe for Thai Red Curry Paste.

Easy Thai Red Curry Recipe

Looking for an Easy Thai Red Curry Recipe? Then you just found it!

I used scallops and shrimp in this recipe, however you can use one or the other or substitute the fish for chicken. 

And for the vegetables I used Bok Choy and Red Peppers. 

IS THAI RED CURRY HEALTHY 

Yes, so so healthy. It has lean protein and tons of fresh vegetables. 

If you know anything about me, you will no that Red Thai Curry is my favorite Thai recipe. 

Just search this blog and you will see I do make it with Chicken and other vegetables at times. Everytime it is made the same, however the process is always a bit different. 

HOW RED THAI CURRY

  • Start by adding the oil to a hot pan and from their saute the Red Thai Curry paste for 2 minutes till fragrant. 
  • Then add in the Coconut milk and stir till blended. 

  • Next add in the fish sauce, sugar and seasonings. Along with the fresh vegetables and simmer on medium heat till the vegetables are cooked. 
  • Lastly add in the fresh seafood and simmer on medium heat till that is cooked, ruffly 4 minutes. 
  • Serve over a bed of rice and squeeze the juice on a lime overtop the whole dish.

I buy mine from Superstore here in Canada, however I have seen this also at Walmart in the ethnic aisle.

Yes, so be careful how much your using. Taste as you go, so once you add the coconut milk and mix it well.

Taste it to see if you want more or less. 

CAN THAI RED CURRY BE FROZEN

Yes, you can freeze the curry once it is made. 

Some people like to use one can of coconut for their Thai curries.

I will do that at times too, however for this recipe I used two cans which helps to make this dish go father and serves more people. 

One can typically serves two people for dinner, two cans three to four.

Being I adore Thai food, I will eat it all to myself over a couple days if I can.

Healthy Seafood Soup

This Healthy Seafood Soup is something I came up with most recently. I never followed any recipes, rather just made it out of a craving for something. “Different”. 

Today, I’m sharing with you my recipe for this delicious “Seafood Soup” that is out of this World tasty!

HOW TO MAKE SEAFOOD SOUP?

My soup utilizes fresh shrimp, bok choy and mushrooms. Along with canned clams and chicken stock that helps to add depth of flavor along with red thai curry paste, soya and garlic/ginger spices.

You can always use spinach instead instead of the boy choy if desired!

If you love seafood you’re going to love this soup!

The brown pieces in this soup. That you see in the picture above. Is not meat, rather Chinese shiitake mushrooms. You can also omit those for cremini if you’d prefer. 

I made this soup now three times since, and trust me. This recipe is a keeper!

It is not like any seafood soup recipe out their. As there is no cream, milk or sugar added. Rather it utilized natural flavors and has depths of flavor that make it a true seafood soup.

I used just a hint of “Red Thai Curry Paste” to heat it up and add extra flavor. You can always use “Red Pepper Flakes ” instead however the flavor will be a bit different.

My recipe calls for “3 cans of clams”. However if your wanting to use fresh whole clams you can as well.  Also you can use either “Red Thai Curry Paste” in this soup.

Also there’s only one brand I would recommend and use, see the picture below. Or you can also use “Red Pepper flakes” instead if you’d like. I much prefer the paste as it adds just that extra layer of flavor. 

Also I used Thai Rice Noodles, see picture below for the brand I prefer.

 

Now, this may seem like an expensive soup to make. But in all honesty, one bowl costs under $5 dollars and that is because this recipe makes a fairly large pot of soup.

Enough to feed 5 or more people, or makes for a few bowls that can be enjoyed over the course of two days.

So if your craving a soup to warm you up, but also want a healthy meal. Then this Seafood soup is sure to hit the spot!

If you are planning to enjoy this soup over a couple of days, then your in for a treat. Because the flavors only develop further.

This Red Thai Curry with Jumbo Shrimp is super simple to make. You can use whatever vegetables you have on hand also. 

As you may know I love Thai food and make it a lot in our home. Actually I make it every week, because I crave it that much. With any of my Thai recipes, you will learn that you really only need a few ingredients in your fridge and pantry to make any of them easily.

TIP: Just make sure you are cooking it in at the very end. You only want to cook it to a crisp, not soggy and soft. Also you will want to cook the jumbo shrimp in the sauce as the shells of the shrimp help to add more depth of flavor to the dish.

However if your not into adding broccoli you can also use any of the vegetables I have listed below. Which all go very well in this thai dish too!

Then when it comes to eating the shrimp, simply suck off the juice and peel them with your hands.

Discarding the shells on top a paper napkin or dish.

Green Thai Curry is just a bit milder than Red Thai Curry, however both taste similar. There are plenty different ways to make Thai curry and that is because you can add just about any type of vegetable or meat protein to your dishes.

WHAT IS IN GREEN THAI CURRY

  • Thai Green Curry consists of some kind of protein, some kind of vegetable, lime juice, fish sauce, sugar and Coconut milk and Green Curry Paste.
  • Traditionally that paste is made in a mortar and is comprised of shallots, garlic, green chilies, galangal, lemongrass, kaffir lime leaves among some other ingredients and spices. 

This one here is made with Chicken breasts, Asparagus and Swiss Chard.

As you may know I love Thai food and make it a lot in our home. Actually I make it every week, because I crave it that much. With any of my Thai recipes, you will learn that you really only need a few ingredients in your fridge and pantry to make any of them easily.

And that is because, I have been making homemade Thai recipes for years. And have learned all the tricks to making it quickly and healthily for just about anyone who loves it. 

Making homemade Thai curry at home is really easy once you have all the basic ingredients! 

WHAT’S IN GREEN THAI CURRY PASTE

  • Fresh Green Chilli 
  • Lemongrass
  • Garlic
  • Shallots
  • Galangal
  • Cumin
  • Coriander seeds

HOW MUCH GREEN THAI CURRY PASTE TO USE

  • 2 tbsp per 400 grams of Coconut Milk

Some people like to use one can of coconut for their Thai curries. I will do that at times too, however for this recipe I used two cans as it really helps to cook those noodles.
