Hey everyone, I am back after a few months break. I just had a baby, ya me. A baby! 

I’ve been a dog mom my whole life and step mom too. But this new baby has been a huge transition for me.

As now, I’m juggling more than ever before. But i’m back and now as I have worked out my new schedule and I want to share with you today  one of my NEW favorite recipes.

It is for this Homemade egg roll in a bowl which is really easy to make once you have all the basic ingredients on hand. Making for a super quick and healthy weeknight or weekend meal for two. 

Double it up to make it for four people or to serve the next day for dinner.

WHAT IS EGG ROLL IN A BOWL

Basically it has all the ingredients that a typical Chinese egg roll would have in it.

Minus the deep fried pastry shell, it is a deconstructed egg roll.

Made healthier and is 100% keto!

DOES AN EGG ROLL HAVE AN EGG IN IT

Contrary to the name, no. There is no egg in it, unless you want there to be. It gets its name from the egg roll wrapper. However this recipes, omits the wrapper. 

Feel free to add some scrambled eggs to this bowl if desired for an extra punch of protein. 

VEGETABLES THAT GO GREAT IN KETO EGG ROLL IN A BOWL

  • Bean Sprouts
  • Lettuce
  • Mushrooms, chopped finely
  • Carrots
  • Cabbage – I like to use a pre mixed cabbage with carrots.

WHAT IS IN EGG ROLL IN A BOWL

There can be just about anything in a typical egg roll. Such as ground chicken, turkey, pork or beef.

Along with some ginger, garlic, soya sauce. hoisin sauce. Which is saute in some sesame oil and green onions for taste. 

Egg rolls have ground pork (or beef), cabbage, carrots, ginger, garlic, soy sauce, and sesame oil in them. We added some sriracha and green onions to the top for flavor.

PROTEINS THAT GO GREAT IN KETO EGG ROLL IN A BOWL

  • Shrimp
  • Ground Chicken, Turkey or Pork, Beef
  • Scrambled eggs

HOW TO MAKE KETO EGG ROLL IN A BOWL

  • Start with a package of ground chicken, turkey, beef or pork.ground chicken for egg roll in a bowl
  • Then fry the meat in a non stick skillet till browned, add in the minced garlic and ginger and saute for 1 more min till fragrant. 
  • Then toss in the coleslaw mixture, pre – made sauce (soya sauce, 1 tbsp water, ginger powder, hoisin sauce, sesame oil) and saute on low heat till the coleslaw is tender.coleslaw egg roll in a bowl
  • Next toss in the bean sprouts and simmer on low heat, covered till the sprouts are tender.bean sprouts to make egg roll in a bowl
  • Lastly, toss in the green onions and saute one more minute before serving over a bowl filled with fresh lettuce leaves.lettuce for egg roll in a bowl
  • Drizzle with siracha sauce if desired and enjoy!

No, the bean sprouts will taste off.

HOW LONG IS EGG ROLL IN A BOWL GOOD FOR

However, it does work well to be served the next day. Simply reheat in the microwave or in a pan over medium heat.

No, unless you are using gluten free soya sauce.

  • 1 lb (16 ounces) ground chicken, turkey, beef or pork
  • 6 Lettuce Leaves
  • 2 cups of bean sprouts
  • 14 ounces coleslaw mix
  • 3 tbsp low-sodium soy sauce
  • 1 tsp hoisin sauce
  • 1 tbsp sesame oil
  • 1 tsp minced garlic
  • 1 tsp ground ginger powder
  • 2 tbsp sliced green onions
  • 2 tsp sriracha
  • salt n pepper to taste

Instructions

  1. Start with a package of ground chicken, turkey,beef or pork.
