IS CHERRY WINE SLUSHIES HEALTHY

Red Wine in moderation is healthy.

And well we all know cherries are packed full of fiber and antioxidants so that is a given.

Did you know that one cherry has 3 grams of fiber, which aids in digestion, lowers cholesterol, controls blood sugar and can help with weight loss.

Also cherries are a good source of vitamin C, vitamin A, calcium, protein and iron so eating these often is a smart thing to do.

So why not pair them with some red wine too?

Red wine has flavonoids in it has  proven to be heart healthy so don’t let anyone tell you otherwise.

The type of red wine you use is all about personal preference.

So please go ahead and experiment with your favorites for this one!

Thai Chicken Noodle Soup

This Thai Chicken Noodle Soup is allot like basic chicken noodle soup, in the sense that it has chicken broth and shredded chicken along with noodles in it.

The main differences here are the addition of bean sprouts, spinach, lime juice, and chili paste that helps to spice it up! If you don’t like spice just omit the chili paste, simply enough.

Now there is a possibility that you were searching for a basic chicken noodle soup recipe and accidently stumbled upon this recipe.

And you may be thinking… “Thai Chicken Noodle” never heard of it? but that sounds good.

Well don’t let the name scare you, even if your not feeling so great this soup is sure to make you feel just as good as the traditional chicken noodle soups out there.

There are several ways to make a Thai chicken noodle soup, you can also make it with some red or green thai paste and coconut milk also if you’d like.

I have done that before and so you can find that recipe below! Otherwise if your looking for just a clear and more close to the original chicken broth soup you will want to follow this recipe.

I tend to make this soup more over the traditional chicken noodle these days. The elements of this soup are chicken broth, shredded chicken, rice noodles, green onions, bean sprouts, cilantro, chili paste and lime juice.

So if you like all those Thai flavors your sure to enjoy this soup.

I can literally eat this for days, it’s that good! So if you like Thai food as much as me then you are sure to enjoy this soup. Don’t forget the lime juice it just works, trust me.

Authentic Tabbouleh Bulgur Recipe

This Authentic Tabbouleh Bulgur Recipe is something you will want to make time and time again.

The secrets to a good Tabbouleh is using the most freshest of ingredients such as fresh parsley, tomatoes, cucumber, mint, onions and the right type of bulgar.

This tasty salad goes well alongside any type of dish and has been a typical side dish that has been served in the middle east for centuries.

Tabbouleh salad is something I have come to enjoy immensely over the years.

Actually I tried it for the first time at my local deli a few years back and liked it so much that returned to the market to find all the ingredients that night.

It took me some time to master the perfect combination and techniques to making the most tastiest of tabbouleh, but I’m sure i’ve done it now.

This salad has an a array of flavors that are sure to please even the pickiest of eaters. And tastes much better than any store bought variety, believe me.

You will want to start by using a “coarse Bulgur” variety, you can use  “fine coarse” Bulgur if you want, however I find the course works best because it gives more substance to the salad.

Also, I recommend using both lemons and limes for this recipe, however traditionally lemons are just used. Be sure to chop up all your fresh ingredients finely and mix  well before serving.

I hope you enjoy this version for my favorite tabbouleh salad.

Chickpea Avocado Feta Salad

This Chickpea Avocado Feta Salad is the perfect Summer Salad.

Spring has finally arrived and this is a time where my family starts to think about eating more high protein low carb foods to help the body get into shape.

This stuff tends to go the moment I make it, so you may want to double it up if your having guests over.

Now I am not on any specific diet, I just like to add more protein vs carbs into it around the warmer months.

So if your looking to slim down a bit as well this summer, then you are going to love this salad.

This salad is packed with good for you fiber, fats and proteinI was never a huge salad fan, that is not to say I don’t eat salad.

I’m just saying I never ordered it much or requested extras while at any type of gathering.

The reason for that is because most salads i’ve tried are not always that healthy and tend to be covered with some kind of unhealthy bottled dressing.

Today, however I love salad and that is because I learned how to make different and filling varieties such as with this Chickpea, Avocado & Feta Salad.

Which has lead to my love of salad forevermore, and creating different kinds of salad that are not only healthy but also filling feels so good.

By adding proteins and fresh ingredients you can now have a meal in a salad which I love to do often.

This salad is one of those hearty, healthy salads, that is packed with just enough protein and healthy fats to make it a meal or great side if you like. Filling, Healthy and Delicious I hope you enjoy!

Easy Tilapia Fish Tacos

These Easy Tilapia Fish Tacos are one of my all time favorite Mexican recipes.

Not only are they absolutely delicious! They take less than 15 minutes to make. I like to serve these tacos with all types of salsa, such as the one you see here for my Pico de gallo . Also you can serve it with my award winning Jalapeno Peach Salsa as seen below.

ARRIBA MEXICO!

It’s that good guys, amo los tacos mexicanos! We make this in our house at least once a week.

Just make sure you have some either high quality fresh fillets or frozen always on hand and you can too.

ARE FISH TACOS HEALTHY

Yes, white fish is a lean protein then the taco shell itself is low in calories as well as the added ingredients and spices.

HOW TO MAKE TILAPIA FISH TACOS

  • You can use a high quality frozen fish for this recipe. Otherwise fresh fillets are always my top choice.
  • This type of fish can also be served in burritos, hard tacos or over rice with beans.

TYPE OF FISH TACOS

  • You can also substitute the tilapia for another white fish such as halibut or cod.
  • Shrimp too is also a popular option.

WHERE DID FISH TACOS ORIGINATE

In Baja, California. Some say that the roots come from Japanese immigrants that made there way to Mexico in the 1950s – 1960 who brought them in.  Either way they this is a very MEXICAN recipe to most of us today!

TILAPIA FISH TACO SEASONING

  • Chili Powder
  • Cayenne pepper
  • Garlic Powder
  • Cumin Powder
  • Salt and pepper, to taste

These tasty tacos can be pulled together in less than 15 minutes.

Making for a super quick and tasty dinner option.

Just make sure to make the “pico de gallo” ahead of time.

But not to ahead of time as the tomatoes won’t be as fresh past a day!

WHAT TO SERVE WITH TILAPIA

  • Sour cream
  • Cheese
  • Avocado

WHAT IS PICO DE GALLO

These fish tacos are so darn delicious, pair them with fresh homemade “pico de gallo” and you can’t get a tastier or healthier fish tacos if you ask me.

It’s Mexican salsa y’all and it goes great with just about any type of Mexican food.

See below for the recipe!

Also don’t forget to squeeze some fresh lime juice over top the fish at the end.

This really helps the flavors to pop!

FISH TACOS FOR A CROWD

You can feed roughly 4 people with this recipe.

So if it’s just the two of you dining tonight then there certainly will be some leftovers.

If your wanting to feed more people, simply MAKE more by doubling the ingredients!

Super easy to prepare too, all you are doing is a little prep work that takes less than 15 minutes.

If your wanting to serve this with the same  “pico de gallo” salsa you see in the picture here.

Be sure to make the salsa one hour ahead of time, as it’s best to let the salsa marinate which enhances it’s flavors.

Check out my two favorite recipes for Pico De Gallo you will serious love them!

  1. Pico De Gallo this goes great with these tacos.
  2. Cabbage Pico De Gallo this also goes great with these tacos.

Pico De Gallo Salsa

I just realised that I have not yet shared my recipe for homemade Pico De Gallo Salsa with you guys yet. This is a must try recipe for those who love salsa dips!

Made from chopped tomatoes, onion, cilantro, jalapeños peppers, lime juice and seasoned with salt. Traditionally white onions are used, however red go well too.

Pico De Gallo, in Spanish means ‘beak of a rooster’ and is believed to originate from the resemblance of the way a rooster pecks in his food to make it edible.

And the chopping of the ingredients which also prepares a very colorful salsa which resemble the colors of a rooster’s feathers.

You can adjust it to your taste, some people like to load up on Cilantro while others prefer just a little bit of it in the salsa.

My recipe calls for a fair amount, along with 1/2 of a Jalapeno pepper which gives it just the right amount of heat.

This salsa is very fresh and tastes 10x times better than any store bought kind.

So there really is no comparing it to any other type of salsa you may have tried.

I make this allot, I mean allot. Pretty much any time I make a Mexican themed dish, I will whip this up on the side.

Takes less than 10 minutes to prepare and stores great for leftovers the next day!

Thank you MEXICO for sharing this amazing recipe with the us. Buen provecho!

When making this simple salsa, make sure to drain most of the liquid out of your tomatoes otherwise it will become mushy to fast.

I recommend using roma tomatoes, that way there is no liquid to drain.

You can serve this with your favorite tortilla chips for a healthy snack or use it as a side or filling for your tacos, fajitas, burritos etc.

Looking for a recipe to pair this with? Try my Pulled Pork Carnitas Mexican Tacos  or Slow Cooker Mexican Chipotle Fajitas.

Looking for another Pico De Gallo Recipe? Try my “Cabbage Pico De Gallo” here.

These are some of the best Salsa in the WORLD!! I kid you not.

Cabbage Pico De Gallo (Salsa Fresca)

This is my favorite way to make Cabbage Pico De Gallo. Why? Because it is shredded so fine like you see below.

What is Pico De Gallo

It is a popular Mexican salsa that is enjoyed in tacos and with tortillas.

Once you try this salsa you won’t ever want to go back to those store bought varieties.

That’s for sure.

I just love this salsa because it’s like nothing else.

And is very fresh tasting not to mention super healthy for you.

Snacking on this just feels good!

So go ahead and serve along with your favorite tortilla chips or use it as a side or filling for your tacos, fajitas, burritos etc.

Pico De Gallo is Mexican salsa also known as Salsa Fresca and made from chopped Roma tomatoes, onion, cilantro, jalapeños peppers, salt, and lime juice.

It’s name, in Spanish means ‘beak of a rooster’ and is believed to originate from the resemblance of the way a rooster pecks in his food to make it edible.

The chopping of the ingredients which also prepares a very colorful salsa which resemble the colors of a rooster’s feathers.

Thank you MEXICO for sharing this amazing recipe with the us. Buen provecho. This salsa is so fresh and tasty, I could eat it all day everyday!

I like to add finely shredded cabbage to mine, and to do that you will need a food processor.

However you can omit the cabbage for a more traditional Mexican Pico De Gallo if you prefer.

That recipe is listed below and is also on this blog, however this is my favorite version and really goes a long way and feeds more people when paired with other Mexican dishes.

This is the best Salsa in the WORLD!!

Green Thai Curry with Chicken, Shrimp and Snow Peas

Green Thai Curry is just a bit hotter than Red Thai Curry, however both taste similar. There are plenty different ways to make Thai curry, and that is because you can add just about any type of vegetable or meat protein to it.

However the techniques are always the same and the main ingredients always consists Coconut milk along with “Green Thai Curry Paste”, which already has the traditional ingredients of “Lemongrass”, “Galangal”, and“Kaffir lime leaves” and Bird’s Eye Thai chilies in it.

If you want more heat you can add more Bird’s eye thai chilies to the soup, however I recommend not to as it will be very hot. I just did in this dish for added color, and to make it pretty.

I like to also add a few frozen kaffir lime leaves to the curry, even though there is some in the paste I find it adds a nice touch. However if you prefer, you can squeeze the juice of half a lime in at the end instead.

So I will leave that up to you, frozen kaffir lime leaves can be purchased in bulk at many asian groceries. One bag typically lasts me well over 50 different curry meals, so it’s wise to pick up a frozen bag for whenever the thai curry craving hits.

Now if you are not familiar with all those ingredients, Bubba says don’t fret. You can simply find all these Thai ingredients at your local grocer right in the international aisle, typically sold in packages or jars (see picture) below for our favorite Green Thai Curry paste”.

Even though we use the premade “Green Thai Curry paste” in this recipe, which has crushed Kaffir lime leaves, I also like to add a few more kaffir leaves and I always keep them on hand in my freezer for whenever I am making anything Thai.

I find it really enhances the dish, however you do not have to since they are in the “Green thai curry paste” already and the lime squeezed in at the end adds that element of tang that is needed.

Once you get familiar with the basic ingredients of thai cooking, you will be shocked at how easy it is to prepare these Thai dishes at home. Literally you can have them on the table in under 30 minutes.

Feel free to add 1/2 a cup of chicken stock to create more of a broth if desired, otherwise just use the traditional coconut milk as listed in the directions/ingredients below.

Bubba recommends picking up this paste at your local grocer, it’s our favorite and goes a long way.

Keep in mind a good coconut milk, will be half solid a half watery. One that is all watery does not work as well for this dish, typically organic varieties have the best products.

To make Green Thai Curry Chicken, Shrimp and Snow Peas.

  1. Start by washing your vegetables and set aside.
  2. Wash the chicken breasts, and slice them into thin pieces and season with salt and pepper
  3. In pot, wok or pan, heat up the coconut oil on medium high and in your “GREEN THAI CURRY PASTE” saute for 2 minutes till blended.
  4. Next add in your can of coconut milk and cook for another 5 minutes on medium-high.
  5. Add in your ginger/garlic paste, and cook for 2 minutes all together.
  6. Then add in your fish sauce, kaffir lime leaves, sugar and simmer for another 10 minutes over low heat.
  7. Add your “Snow Peas” and “Shrimp” and cook around 3 minutes over medium heat.
  8. Lastly, add in the juice of a whole lime.
  9. Serve with rice if desired.

*Optional ~ for more sauce add 1/2 cup of chicken stock.

*Optional ~ for extra heat add 1/2 a Bird’s eye chili to step 6.

*Optional ~ add one chopped roma tomato to step 8

Notes:

  • Keep in mind a good coconut milk, will be half solid a half watery. One that is all watery does not work as well for this dish, typically organic varieties have the best products.
  • “Lemongrass”, “Galangal” and “Kaffir lime leaves” can be found in most Asian stores. “Thai Green Curry Paste” can be found in most Supermarkets, Thai Green Curry paste has all the above ingredients in it needed to make this dish.
  • Add in the lime last, you do not want to cook the lime because it will ruin the flavor.
  • Do not eat the “Lemongrass”, “Galangal” and “Kaffir lime leaves” there just for flavoring, if you’re going to use these for added flavor, make sure to bruise each item before adding to the pot.
  • Want more heat, simply add in some Thai Bird’s eye chilies or Thai Chili Paste. Caution when preparing Bird’s Eye Chilies, these chilies are very hot and can burn the eyes so proceed with caution.
