Grilled Chicken Breast Marinade

This Grilled Chicken Breast Marinade tenderizes the chicken that is then grilled to perfection and served with Jalapeno Peach Salsa that your sure to love.

If you like your chicken moist and juicy then you will love this recipe, added with just a hint of  sweet/spicy flavors then you can’t go wrong here.

HOW GRILLED CHICKEN BREASTS

  • In order to make the best grilled chicken you will want to start by Marinating it the night prior or for at least 2 hours prior. 
  • The trick to grilling the best chicken breasts is in the marinade and the length of time that you marinade the chicken.
  • Along with the temperature at which you grill it, you will not want to burn the chicken rather cooking it at a slow medium heat is best. 

HOW LONG TO GRILL CHICKEN BREAST

Till it is no longer pink inside, ideally 9-10 minutes.  Then you will have the most moist and juicy chicken breast ever!

If you follow those tips alone you are sure to prepare the best grilled chicken breasts. Also feel free to use bone in breasts as well, those work for this recipe well also. 

HOW TO MAKE THE BEST GRILLED CHICKEN

  1. Marinate– Overnight or for 6-8 hours. 
  2. Grill– you can grill the chicken inside or outside. I used a stove top grill for mine!

You can serve these chicken breasts alongside a bed of grilled asparagus, salad or some other vegetable of your liking. 

IS GRILLED CHICKEN BREAST HEALTHY 

YES, because you are using no fat to make it. Your just allowing the heat from the grill to cook it!

Come summer I like to get my hands on a basket of fresh peaches and then will make the best “Jalapeno Peach Salsa there really is just nothing like it.

I have yet to find any restaurant that has ever been able to compare with the homemade stuff!

This salsa is amazing and can be enjoyed with nachos and over grilled chicken or pork chops. 

If you have never tried it, I encourage you to give it a go.  

You will just love the way the hints of spice from the Jalapeno peppers along with the sweetness from the fresh peaches merge to create the best salsa ever. 

First you will want to prepare the salsa in advance and store it in the fridge for more than one hour.

This really helps the flavors to set into the peaches and makes for an excellent topping to these chicken breasts.

Basically all you are going to need is some fresh peaches, fresh jalapenos along with a chopped onion, orange pepper, cilantro and salt to taste.

This recipe has recently become very popular on this blog. As it was featured over on onebitevegan.com some months back.

This salsa is on that list of my favorite homemade salsas and cannot be found in the stores. 

So if you love salsa as much as me, then you are going to want to give this one a try!

WHAT DOES PEACH SALSA GO WITH

Not only does it go so well paired with your favorite nachos; it also goes well when paired alongside chicken and pork dishes.

So whenever I’m making this I will make a big enough batch, so that I can use it in a few different ways.

HOW TO MAKE PEACH SALSA

  • I like to add all my ingredients to a small food processor, which will chop it all together in a jiffy.
  • Just make sure it’s set to slow chop as your not wanting a puree. 
  • However if you don’t have a food processor, then feel free to use a knife just make sure you are chopping it all up as small as possible.

I also like to double up this recipe as it saves great in the fridge for the very next day. In which I will make either some pork chops or grilled chicken and serve this salsa right alongside.

Best Scallop Pasta Recipe

This is the Best Scallop Pasta Recipe ever! It contains a few simple ingredients also, that being butter, garlic, parmesan cheese and Italian seasonings. 

Who doesn’t like scallops? I have several recipes on this blog that contain scallops. You can find them all here. Scallops with bacon and Lemon garlic butter scallops.

You are going to want to use Sea Scallops for this recipe! Why? Because they are the larger variety and best kind if you ask me. But of course if you just have the smaller ones *bay scallops those will work well too.

WHAT IS NEEDED TO MAKE THIS SCALLOP PASTA 

  • Large Scallops
  • Fettucine pasta 
  • Fresh Garlic
  • Butter 
  • Garlic Powder
  • Italian seasoning 
  • pepper to taste

How to Make Best Scallop Pasta Recipe

  • Start by bringing a medium pot of water to a boil, then add in the pasta with a pinch of salt or oil.
  • Stir well and allow it to cook over a medium heat, stirring often. 
  • Once it is tender, strain and set aside. 
  • Next chop your garlic and get your spices ready
  • Add 1 tbsp of butter to a large sauce pan and turn up the heat to medium, cook the garlic till fragrant then remove and set aside
  • Defrost the scallops and pat dry with a paper towel.
  • In the same saucepan, add the remaining 4 tbsp of butter and 1 tbsp of olive.
  • And all the scallops sear on both sides for 2 minutes each.
  • Be sure to season before removing the cooked scallops and set aside.
  • In the same pan toss in the cooked strained pasta along with 1 tbsp of olive oil.
  • Toss with parmesan cheese and Italian seasoning.
  • Turn off the heat add back in the scallops, toss and squeeze lemon juice all over.
  • Serve immediately.

Strawberry Kefir Smoothie

This Strawberry Kefir Smoothie is a healthy summer drink that can be enjoyed as a breakfast smoothie or mid day snack. 

This Strawberry Kefir Smoothie is made with just 3 simple ingredients consisting of strawberry kefir, white grape juice and frozen strawberries. 

I made this while staying at my aunties place. She is vegetarian and so my typical breakfast foods where not in the fridge and so I whipped this up for us and we loved it.

I’m from Canada a more cold than warm place that requires me to purchase more scarves and toques than t-shirts and shorts. 

You have to be tough to get up and go to work, school and the store when temperature reach below -35. Where in most places your fingers and toes can freeze off in minutes if not seconds, if you’re not prepared. 

However this doesn’t last all year-long, thank God. So when summer rolls around, most of us are outside as much as possible, enjoying the warmth we do have.

And believe me it get just as hot as as some of the beaches down in Florida at times.

If you have been to Florida than you probably are familiar with the alcoholic  “Lava Flow” also known as the Miami vice. 

Speaking of other drinks, you may want to try this Kefir Smoothie For Weight Loss from a blogger named Ella!

This drink is my creation of the Lava Flow that hails from sunny Florida. However mine is a smoothie that can be enjoyed for breakfast or just a healthy refreshing snack. 

Rather than using alcohol we are using the super delicious and healthy Kefir yogurt to replicated the Lava Flow effect. Along with white wine grape juice and fresh strawberries. 

This recipe makes two large glasses, so whenever you’re craving a cool refreshment or a sweet yet healthy treat. I hope you think of this simple drink!

Whole Berry Cranberry Orange Sauce

This Whole Berry Cranberry Orange Sauce is a must have recipe at the dinner table come Thanksgiving and Christmas! 

Serving these potatoes up for the holidays? Then you may want to add some other holiday favorites to the table such as my Roasted Turkey or Tourtiere Pie.

  • Fresh Cranberries
  • Orange Juice (plup free) + Orange Zest
  • White Sugar
  • Pumpkin pie spice (my secret ingredient) 

This one is that very recipe that really enjoying making every year. 

Because it just is so simple, yet a staple come holiday time. 

Also is more versatile than one would think. 

Not only does it just work so well alongside Turkey, it also goes well with other foods.

Such as cream cheese, stuffing etc.

I will provide some other recipes on this website that utilizes this cranberry recipe. 

This is one of those recipes, that you will want to save in your cookbooks for sure.

Yes, you can use frozen cranberries as well. 

Cooks the exact same way. Just simply rince them off before adding them to the pot!

Simply allow the sauce to cool then you can freeze in sealable containers. Then defrost fully before heating on the stovetop to serve.

I like to make it a balance of sweet and savory, so I will use a white onion, green pepper, cilantro and lime juice.

Cherry Chocolate Chia Pudding

This Cherry Chocolate Chia Pudding is made with almond milk, cocoa powder, stevia, vanilla extract, chia seeds and fresh cherries.

If you’re looking for a quick and healthy breakfast option, or healthy dessert.

Then this recipe will do the trick!

IS CHIA SEED PUDDING HEALTHY

Yes, extremely. And low in fat and calories too!

Because the chia seeds are high in so many nutritionists, such as omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium.

IS CHIA SEED PUDDING GLUTEN FREE

Yes, it is also vegan and can be made dairy free. 

WHAT IS CHIA PUDDING

Chia pudding is basically made with those amazing chia seeds.

They expand when added to liquid and create a pudding almost some would say tapioca like texture.

I like to eat chia pudding 3x per week and so will make a batch typically on a Sunday night and have a few sitting in the fridge for the week ahead. 

CHIA PUDDING SEED RATIO

When I first made this I was experimenting with that ratio and came up with a 3/4 cup of liquid to 3 tbsp chia seeds is best.

Which will make one serving for someones breakfast!

CHIA PUDDING RECIPE

Once you see how easy this recipe is to make. Your breakfast time will be revolutionized! 

And trust me you do not need to be vegan to enjoy this. I eat this regularly, because it is not only super simple to make.

It also contains a ton of health benefits, due to their high antioxidants count that far outweigh even the blueberries.

HOW TO MAKE CHERRY CHOCOLATE CHIA PUDDING 

  • You will want to start with adding the cocoa powder to a large bowl and then with a whisk slowly add in the almond milk. Whisking to ensure the cocoa powder becomes fully dissolved.
  • Then you will whisk in the vanilla and stevia
  • And lastly the chia seeds
  • Stir to combine for several minutes to prevent lumps
  • Then pour into individual cups and place in the fridge overnight to set
  • Cover each bowl that is placed in the fridge longer than 24 hrs to preserve freshness. 
  • On the day of sering, top with fresh pitted cherries. 

CHERRY CHOCOLATE PUDDING WITH COCONUT MILK

  • Yes, you can use Coconut Milk instead of Almond if you prefer. 
  • Even cows milk will work, however that would not be a vegan option.

Homemade Fresh Cherry Pie

I’m baking up a delicious cherry pie today with a buttery flaky crust. I like to use the Dr. Oetker pie crust because it gives me a perfect crust every time. All you need is cold butter and water along with a rolling pin and you will be in business. 

One of my favorite summer desserts is cherry pie, I guess its to do with the fact that cherries are in the height of the season now and go so good in a pie.

My Galette cherry pie is very similar to this recipe in many ways, however the crusts are just different. I do not recommend using frozen cherries for this recipe as they hold way to much water and then you will end up with a watery pie.

Now I don’t know about you, but I was never a fan of the store bought cherry pie. Once I started making my own pies at home, I knew right away what i have been missing all along.

This pie has just the right amount of butter crust, cherries, lemon juice, egg, vanilla extract and powdered sugar to make anyone’s mouth water. I hope you give it a try, because it’s something special to be able to say I made this myself, enjoy! 

It’s ready to go into the oven, cant hardly wait!! 

Note: You can serve this along with ice cream or whip cream.
