This Vegan Matcha Chia Pudding is made with almond milk, stevia, vanilla extract, chia seeds and fresh bananas.

IS CHIA SEED PUDDING HEALTHY
Yes, extremely. And low in fat and calories too!
Because the chia seeds are high in so many nutritionists, such as omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium.
WHAT IS CHIA PUDDING
Chia pudding is basically made with those amazing chia seeds.
They expand when added to liquid and create a pudding almost some would say tapioca like texture.
I like to eat chia pudding 3x per week and so will make a batch typically on a Sunday night and have a few sitting in the fridge for the week ahead.
CHIA PUDDING SEED RATIO
When I first made this I was experimenting with that ratio and came up with a 3/4 cup of liquid to 3 tbsp chia seeds is best.
Which will make one serving for someones breakfast!
CHIA PUDDING RECIPE

And trust me you do not need to be vegan to enjoy this. I eat this regularly, because it is not only super simple to make.
It also contains a ton of health benefits, due to their high antioxidants count that far outweigh even the blueberries.
HOW TO MAKE MATCHA CHIA PUDDING
- You will want to start with adding the Match powder to a large bowl and then with a whisk slowly add in the almond milk. Whisking to ensure the matcha becomes fully dissolved.
- Then you will whisk in the vanilla and stevia
- And lastly the chia seeds
- Stir to combine for several minutes to prevent lumps
- Then pour into individual cups and place in the fridge overnight to set
- Cover each bowl that is placed in the fridge longer than 24 hrs to preserve freshness.
- On the day of sering, slice a few pieces of a banana on top and serve.
MATCHA CHIA PUDDING WITH COCONUT MILK
- Yes, you can use Coconut Milk instead of Almond if you prefer.
- Even cows milk will work, however that would not be a vegan option.
