African Red Stew

This dish is also known as Red Tomato Stew or Nigerian Red Soup and it consists of a cooked then broiled protein of your choice which is then stewed fresh fried tomatoes, onions, garlic and red bell peppers. You can also add an array of meats such as beef, chicken or fish. My recipe here uses goat meat.

If your wanting a recipe that includes 3 types of meats your going to want to try this Mixed Meat Nigerian Stew as seen below.

Some people will also add tripe as well to this dish. Personally my favorite way to make it is with boneless goat meat as you see here.

You will notice that I placed this recipe under the “hard” to cook category. The reason for that is because it takes some time and a few steps to make. But besides that it truly is worth the effort.

This stew is so special that it is served as the main dish during the holidays in Nigeria. Yup you heard that right, so instead of our North American Turkey they serve this.

WHAT TO SERVE WITH AFRICAN RED STEW

You can serve with Rice or Pounded Yam. Pounded Yam typically is prepared with a mortar and large pot and is made from scratch, however do to advances in the food industry you can now buy it in a “powdered form” and make the same thing. Find that recipe here > How to make Pounded Yam

Red Goat Stew has been a favorite recipe of mine since I was a little girl. Yup my mom cooked African food for me along with many other cultural dishes and so this is where I developed my love for spicy foods.

Now some people like this stew to be super spicy, I prefer it mild – spicy and so that is what I’m sharing with you today. The intense “Red” color that you see in this recipe is from the blended mixture.

Some people like there red stew to be somewhat running, I prefer my more thick as you can see above. I find it makes it really easy this way to pick up with the pounded yam and tastes better in my opinion.

However if you prefer it more liquidly, as some people do like to make it. Simply add 1/2 cup of extra stock to the cooking process at the end.

I love eating with my hands, if you have not tried it before your in for a tasty experience. 

Notes: The type of curry powder you use here is important, you don’t want a masala type curry which is to mild. Ideally a Jamaican curry will work best here.

WHAT IS PEPPER SHRIMP

Black Pepper Shrimp is a popular Chinese dish that is made with shrimp and a mixture of vegetables that is typically served with rice or on it’s own. It has a special sauce that it is made in, which makes it super tasty!

In which I will share with you below in the recipe card!

This dish is made in our home often and is definitely up there on our list of favorite Asian dishes.

You can make this in a large non stick skillet or wok, since the whole dish comes together in under 15 minutes you really can skip the take-out tonight with this one.

So what are you waiting for? By the time you dial up your local restaurant, you can have this delicious and authentic Black Pepper Shrimp stir fry on the table in no time. 

You can always add fresh calamari to this dish as well if you’d like. And if your really feeling bold, go ahead a throw a chicken breast in too. 

The only real difference from this dish and those served in the restaurants is that this typically arrives to the table on a hot sizzling hot plate.

And unlike my other black pepper recipe on this blog, we do not have to tenderize anything so that step is omitted here. 

We hardly ever order this dish from the restaurant anymore, because mine is better. That is unless we know the restaurant well and know they make it just as good.

Plus by eating this type of dish, you never have to feel guilty by overindulging. Because this is a super healthy meal that is packed full nutrients and contains should no msgs. Just make sure the soya sauce you use says that on the label and you will be in business. 

I like to serve this with jasmine rice on the side and will use a mini rice cooker to cook the rice. Just set it ahead of time and it will be ready when the dish is completed.

This Leftover Rotisserie Chicken Soup Recipe is something I like to make after making a whole chicken.

WHAT TO DO WITH ROTISSERIE CHICKEN LEFTOVER

Make this soup 🙂 This soup utilizes the bones of your leftover Rotisserie chicken to make a chicken bone broth for the most amazing soup. 

Whenever I or someone I love gets sick with a cold. The first thing I do is make a large batch of homemade chicken soup.

And the best way and cheapest way to make this soup too, is to use the meat and bones from a leftover rotisserie chicken from the night before.

Two meals in one. IT’S A WIN WIN!

ROTISSERIE CHICKEN SOUP WITHOUT NOODLES

There are a few versions of this kind of of soup out there, this one is a little different as it uses the leftover bones for the chicken broth. And has no noodles in it, of course you can add them if you’d like.

Just make sure your adding more stock or very little noodles to this particular recipe.

And as you may know bone broth is said to be nature’s pharmacy.

And so this soup has everything you need in it to ward off any type of cold or flu.

It defiantly will help your body rests and works to get better.

WHAT IS IN ROTISSERIE CHICKEN SOUP

This soup is packed with garlic, ginger, curry, turmeric, cinnamon, cayenne and paprika spices that are sure to make you feel better feel.

The benefits soon after sipping this warm soup will be felt all over.

Serve alongside with a lemon wedges if desired for an extra punch of vitamin C, I hope feel so good after sipping this warm bowl of soup!

This is real soup, not that over processed stuff that comes from a can.

How To Make Rotisserie Chicken Soup

  1. Start by shredding the cooked chicken breasts with two forks and set aside.
  2. Next chop 2 green onions into bite size pieces and set aside
  3. Mince the garlic from 3 garlic and set aside. 
  4. Mince the ginger and set aside. 
  5. Next remove all the meat left on your Rotisserie chicken and then place the chicken carcass into a large stock pot and add 8 cups of water along with your minced garlic and ginger.
  6. Simmer on low heat for 45 minutes turning a few times to allow the stock to develop.
  7. Once the stock has developed, discard the carcass and place the stock aside in a large bowl.
  8. In the same -pot add in all the spices, soya sauce and simmer on medium – low for 15 minutes.
  9. Season with salt and enjoy warm, allowing your body to heal itself.

You can add more vegetables you like, such as: 

  • KALE
  • SPINACH
  • CELERY

ROTISSERIE CHICKEN SOUP WITH RICE

Yes, go ahead and add rice or noodles during the cooking process if you’d like. 

Just make sure that you are following the directions on the package for the cooking times. And do not add more than 1/2 a cup otherwise the liquid will be all gone. 

I have plenty of soup of other soups on this site that would help anyone to feel better. One of which is my Vegetable Egg drop soup. It is absolutely delicious and healthy for you as well.

Mushroom Chow Mein

Skip the takeout and make your own Mushroom Chow Mein Noodles at home for a fraction of the cost.

Serve this alongside some Peppered Steak to make a whole Chinese inspired dinner experience. 

WHAT IS MUSHROOM CHOW MEIN

It is made with white or brown mushrooms and Chinese chow mein noodles.

If you follow my blog at all you will know that I love to make takeout inspired recipes often. I test and test them to ensure I am coming up with the healthiest and best version for my readers. 

I used to spend a lot of money on takeout, now I just make it at home. Pretty much every other day, depending on how I’m feeling. Asian cuisine has to be one of my favorites, however I do love Indian and other cuisines nearly as much.

What I like about making Chow Mein at home is that I can remove the msgs that are in most takeout dishes, while saving a ton of money cooking them at home. 

IS MUSHROOM CHOW MEIN VEGAN

Not if you put Oyster sauce in it, if you want you can use Hoisin instead then it would be.

However this recipe is 100% vegetarian as it is made with just Mushrooms and Chinese bok choy. 

Trust me, you won’t miss the meat with this one. It’s so satisfying, you’ll be craving it time and time again.

However if you want to add meat, go ahead and pick up some fast fry beef or chicken and saute that right along side the mushrooms. 

Once you learn to make this simple chow mein dish, you will be making it more often Guaranteed!

I’m the type of lady that has to try every chow mein dish whenever we go to the chinese restaurants. I do this to compare really, just kidding.

Well kinda, I mean some restaurants do it right and others so wrong. Right? It’s not always easy to find a good chow mein these days. 

But with my recipe it’s foolproof, if you follow it to a tea you will be in Chow Mein Heaven!

HOW TO MAKE MUSHROOM CHOW MEIN

  • Start by boiling the chow mein noodles, then strain and set aside. The brand I like to use can be seen below, it is very low in sodium!

  • Next, fry the chow mein noodles in a little bit of vegetable oil. 
  • In a separate pan, fry the mushrooms and bok choy till soft.
  • Make the sauce and add the mushrooms and bok choy to the noodles.
  • Pour in the sauce and add some sesame seed oil and saute for a few minutes till everything is combined and hot.
  • Serve and enjoy!

The broccoli is tossed together in the most delicious asian inspired sauce. And the chow mein noodles are fried just a bit to give it the perfect amount of cripsyness. 

The hardest part about making homemade chow mein is “chopping those vegetables”.

Once you have that part done, the rest comes together in a snap.

I have experimented with a few chow mein recipes over the years and promise you your going to love this one.

This Homemade Iced Latte recipe produces a rich and delicious drink! Not to mention it will save you a ton of money this summer, once you learn to make them in batches like this that will last you through the week.

If you’re in a hurry or just need a iced latte NOW, then you can follow this recipe for an “instant latte”

HOMEMADE ICE LATTE

  • Water
  • Ground Coffee
  • Flavored Coffee Creamer
  • Unsweetened Almond Milk
  • Ice Cubes

Anyone want an iced latte? Well I’m not going to the coffee shop for you. Because I won’t even for myself anymore. But I can show you how to make one in a fraction of the time at home. 

Plus at this rate, I won’t even be able to make it to the coffee shop anymore. Because my car won’t start, because this darn pandemic has me penny pinching at every corner now. 

And I’m not about to embarrass myself and ride a horse through the drive-thru to get one either. Do I look like like these guys to you? I think not. 

I’m gonna stay right here where it’s safe. And you will too, once you learn to make your own iced lattes at home.

Now if you’re anything like me, you’re a huge coffee addict!

It’s practically a past time to sip hot cups of coffee in the mornings for most people these days. Which really is like a warm hug on those chilly winter/fall/spring mornings up here in the great white north.

However even when summer comes around, most of us are still drinking our coffees hot around here.

And during the summer we are also drinking them cold, addicts I tell ya!

And it’s getting ridiculous cause most of us are spending absurd amounts of money doing this, since our local shops are now charging around $4 dollars a cup.

So what if I told you that you don’t have to do that anymore? No seriously it should be a crime, because if you start making them at home you can use that hard earned money elsewhere. This is my favorite way to make large batches of iced lattes, which last me throughout the week.

HOW TO MAKE ICED LATTE WITH INSTANT COFFEE?

If you’re in a hurry or just need a iced latte NOW, then you can follow this recipe for an “instant latte” recipeI will make one cup at a time and uses instant coffee mix. This recipe here will make 12 cups of coffee which = 3 liters. So follow along with me here if you want a larger batch to last throughout the week. Trust me your going to save a lot of money this way, I promise. 

ICED LATTE WITH ALMOND MILK

I like to use almond milk because it’s low in fat vs regular milk, then I feel less guilty using my regular “double double” sweetener. Obviously you can use whatever sweetener suits you best, if your on a calorie restricted diet I would recommend agave nectar, just make sure you dissolve it in the coffee brew while it’s hot.

Also, please keep in mind what type of container your allowing the coffee to cool down in. If you are using a glass container to store your brew like I do.

Then please make sure you allow the coffee to cool down first in an ice bath or on the counter prior to placing it in any glass container otherwise it may break.

Once your coffee has cooled enough, place it in your jar/container and leave it in the fridge to chill for 2 hours or overnight. Then when you’re in the mood for a refreshing iced latte, simply pour over a glass of ice, and then add your favorite milk + sweetener!

I hope you start to enjoy making your own batches at home, trust me your friends/family are gonna love you for it. Anyone want an iced latte? 

Note: You can pour your cooled coffee into ice cubes and use that instead of regular ice cubes. This creates a stronger latte.

This Iced Raspberry Hibiscus tea is a healthy and very refreshing summer drink. It is made with tea bags and has tons of healthy benefits.

You may have first heard of iced raspberry hibiscus tea from the oh so popular Starbucks commercials.

I tried that recipe too! And that is what had me seek out a way to make this recipe at home for less.

And let me tell you, I am saving a ton of cash doing it this way also.

I know know why the Hawaiian people love there Hibiscus tea so much, this flower is so very special. And full of health benefits!

To make this drink you will want to start by brewing some hibiscus tea, then simply set it aside to cool down and do it’s magic.

Traditionally hibiscus tea is sweetened with agave nectar or honey and though both those options are great. 

However ,today I’m sweetening mine with “white cranberry juice”, which I highly recommend you try.

I absolutely love this tea!

Packed full of Vitamin C hibiscus tea is a smart tea to be sipping on.

Best Cold Coffee Recipe

In need of a cold coffee fix? Then this Best Cold Coffee Recipe is sure to hit the spot! It is like hitting your local coffee shop every morning but in your own kitchen.

This Best Cold Coffee RECIPE saves me tons of money!

Now I don’t know about you guys but I’m a huge coffee addict. And during the Summer months I will switch from my hot brews to my cold. 

Every since the pandemic hit, long are the days, where I pulled up to the drive through to get my fix.

Now don’t get me wrong, I used to be one of those people in those long drive through lineups, saying… “can I order a large iced coffee please! 

So what’s the difference between an iced latte from your favorite coffee shop, vs an iced coffee? Well “latte” in Italian signifies “milk.” So that is the main difference between ordering an iced coffee vs the iced lattes.

Most people prefer the iced latte, for that reason. When I  have guests over I’ll prepare a BIG jug of iced coffee , then allow my guests to either have that or add milk to make it a latte. However when it’s just me, i’ll make this instant kind as its much quicker than brewing a huge pot. So if your in a hurry or just need a iced latte NOW, then you can make it like this too. 

HOW TO MAKE ICED COFFEE FAST?

Use INSTANT COFFEE = THERE IS NO BREWING! 

HOW TO MAKE ICED LATTE WITH INSTANT COFFEE?

  • Just add 1 tbsp of instant coffee mix to a glass of water and mix.
  • Then add 3/4 of ice cubes into your mason jar.
  • Then add your milk/soy/almond milk and fill almost to the top.
  • Finally add in 1 to 2 tbsp of creamier, depending on how sweet you like it and walla your done!

If you want a stronger tasting latte, you can add 1 more tsp of instant coffee or make coffee ice cubes and add them into your latte in replace of regular ice cubes.

To make the Instant Iced Latte

  1. Start by filling your glass up 3/4 of the way with ice cubes
  2. Then fill your 3/4 the way with your coffee/water mixture.
  3. Then add your milk of choice such as (rice, soy, coconut) to fill it nearly to the top
  4. Lastly add in your sweetener, i like to use COFFEE MATE.
  5. Enjoy!

Persian Stew (Ghorme Sabzi)

This Persian Stew (Ghorme Sabzi) is a very popular dish that hails from Iran. It is made with either beef or lamb, kidney beans and some other special ingredients

My friend shared a flat with an Iranian man during his University days and during this time the young man’s Mother would often come over and spend the whole day cooking for them (Spoiled)!

It has been many years since then, however Jason had not forgotten how good those meals where. And one of his favorite dishes was for this Persian Herb Stew. 

Recently, I was asked to try and prepare some traditional dishes in exchange for a few nights of fine dining somewhere, so I gladly took the challenge.

I must admit i was like a fish out of water, because i never cooked Iranian food before so i wasn’t sure what recipes or techniques to use.

However with some time a patience i learned the tricks to making this delicious dish. My first attempts failed, I was following the wrong recipes, and to my partner’s disappointment none of the dishes I prepared tasted at all like he remembered.

But I did not give up and set my focus on Ghorme sabzi  which is considered the Iranian national dish, and understandably so, it’s absolutely delicious not to mention very healthy.

I finally prepared this recipe here, and we both were instantly in Ghorme Sabzi Persian Heaven! Knowing we found the right recipe that is sure to please those who know it all to well and those trying it for the first time. Serve with basmati rice and enjoy!
