This Chicken Vermicelli recipe can be served with just about any type of vegetable you have on hand. Traditionally though it typically has julienned carrots, Bok choy and green onions.

Where do Singapore Noodles Originate

Despite it’s name it was not created in Singapore.

Singapore is known to be the hub of many cultures and many of their dishes today have been influenced by many different types of foreigners over the centuries.

Today you can find many different types of dishes eaten in Singapore. These noodles however are well known worldwide and are eaten by all types of people.

Some like them with meat such as shrimp, chicken, pork or beef.  And others like it purely vegetarian, which is good also.  

This dish is also very easy to prepare and can be ready to serve in under 30 minutes.

I used to order this often from my local Chinese restaurant, now I make it myself. 

Singapore noodles are made with vermicelli rice noodles, chicken breasts and seasoned with curry powder, and some other popular Asian ingredients. 

You will want to start with sauteing the chicken first, and meanwhile soaking the vermicelli noodles around the same time.

Preparing the vegetables ahead of time, and setting aside when you’re ready to make the dish.

The fantastic flavors of this dish is what has made it so popular all across singapore and now internationally.

The balance of flavors is so good here, and even though we are adding minced red chili paste for a little heat.

You will hardly notice it since the balance of the other flavors mellows it out nicely, so don’t be afraid to add that heat.

Feel like adding shrimp, go ahead it’s your dinner after all! 

I don’t know about you but this vegetable mixture is perfect, some people like to add red peppers but that is so wrong if you ask me.

The varieties of vermicelli rice noodles are endless, so choose your favorite brand and let’s get to cooking this delicious recipe!

You may want to add more soya sauce near the end, stir everything together well and taste before adjusting the flavor.

Looking for some added heat? Simply add in more of the minced chili paste, but be careful you only want a little more, it’s hot stuff.

Creamy Beetroot Hummus

Once you try this homemade Creamy Beetroot hummus, you will be hooked. 

It’s absolutely delicious and very healthy for you. Not to mention it’s that much better tasting than the store bought kind, which is always to sweet. 

If that is not enough motivation enough for you to give it a Go, then check out the health benefits; Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas). 

Beets also contain the B vitamin folate, which helps reduce the risk of birth defects. Not to mention with powerful phytonutrients that give beets their deep crimson color may help to ward off cancer. If that is not reason enough to prepare this then i don’t know what is!

Hummus never tasted so good, serve with a warm pita and enjoy!

Make sure to peel your beets while there warm, otherwise there too hard to peel when there cold.
 
Also don’t throw out the beet greens as they are packed with nutrients that may strengthen your immune system, support brain and bone health, and more. Cook them up with some butter, salt and pepper and serve as a side dish to any meal.

Thai Chicken Noodle Soup with Mushrooms

This Thai Chicken Noodle Soup with Mushrooms is absolutely delicious. I tend to make this soup more over the traditional chicken noodle these days. So if you like all those Thai flavors too then your sure to like this soup.

There is a possibility you where searching for a basic chicken noodle soup recipe and accidently stumbled upon this recipe.

Now you may be thinking… “Thai Chicken Noodle” never heard of it? but that sounds good.

Well don’t let the name scare you, even if your not feeling so great this soup is sure to make you feel just as good as the traditional chicken noodle soups out there.

Because it has all the same elements of any chicken noodle soup, with the addition of coconut milk, red Thai curry paste (see below my favorite kind) and a few other elements.

Packed with immune boosting ingredients this soup will leave you feeling good and craving more.

 
I can literally eat this for days, it’s that good! So if you like Thai food as much as me then you are sure to enjoy this soup. Don’t forget those limes it just works, trust me.

JAMAICAN RICE AND PEAS

This Jamaican Rice and Peas is comfort food for most people who live and love the island life. It is also super simple to make and real tasty! 

Serve with some Jamaican Jerk Chicken and you will have a meal fit for a King & Queen.

WHICH BEANS FOR JAMAICAN RICE AND PEAS

Traditional Jamaican rice and peas calls for dried red kidney beans.

If your in a hurry you can use canned instead.

However like to use the dry, simply soak them in water overnight and they will be ready to go!

HOW TO MAKE JAMAICAN COCONUT RICE AND PEAS

This recipe is a tried and true recipe: I have made it several times in the past year. 

You will want to have on hand:

  1. Kidney beans, the dry variety must be soaked for a min of 8 hours. I prefer to use the canned as it makes for a quicker side dish.
  2. Fresh Coconut Milk, the less liquidly variety is best. 
  3. Scotch Bonnet pepper, I prefer to use the sauce as it saves my hands and eyes from burning. 
  4. Long grain rice
  5. Onions, garlic and spices.

Also, when you are shopping for coconut milk.

Look for a cream vs a milk.

The milks tend to be more liquidly and you can test this by shaking the can. 

Jamaican rice and peas/beans is not only healthy for you it’s very versatile dish.

COCONUT RICE AND PEAS INSTANT POT

Yes, you can also prepare this in the instant pot. 

Because traditionally for this recipe calls for the kidney beans to be soaked overnight in water and then boiled up the next day.

But doing this in the instant pot can help to tenderize them faster. 

HOW TO COOK JAMACIAN RICE AND PEAS IN THE INSTANT POT

  • You will simply start by sauteing the onion till soft in oil and then adding in the garlic.
  • Then add in the rinsed and strained rice, coconut milk/cream, water and spices. 
  • Stir till combined then and the beans on-top and do not stir. Rather close the lid and pressure cook the whole pot for 7 minutes. 
  • Once it has cooked, allow the steam to remove safety and serve with lemon wedges.
