Lemon and Garlic Roast Chicken

I have an easy Lemon and Garlic Roast Chicken recipe that can be pulled of in no time and serves as a meal for four. 

Lemon and Garlic Roast Chicken is one of those no brainer, one pot recipes that can feed a family of four. By simply adding potatoes, carrots and onions to this baking dish. You can have a whole meal ready in under 1 hours time with very little effort.

This super simple, one pan recipe is sure to have your family requesting for more. Now if you are wanting to feed more than 4 people then you simply just have to bake two chickens.

These Easy Baked Lemon Chicken and Potatoes are cooked to perfection and smothered in a lemon, garlic sauce that is sure to impress.

I really like to use mini potatoes when I can for this recipe.

I find they really go well with this type of dish and make it look kind of fancy, don’t you?

Plus they are baked so soft that you can simply mash them with a fork which allows those mini potatoes to soak up all those delicious flavors.

In order to make the best baked lemon chicken you will want to start by adding the right ingredients though. 

How to make the best baked chicken and potatoes

  1. Marinate– You want to use the right amount of stock.
  2. Time – You do not want to bake them for more than 50 minutes.

This dish consist of fresh chicken breasts, fresh sage, lemon juice, onions, garlic and mini potatoes.

Oh and 1/2 cup of chicken stock which helps to create the most delicious potatoes.

If you follow those two tips alone you are sure to prepare the best grilled chicken breasts.

Also feel free to use bone in breasts as well, those work for this recipe well also. 

You can serve these baked lemon chicken breasts and potatoes alongside a bed of grilled asparagus, salad or some other vegetable of your if desired.

This Salmon and Kale pasta salad ? can be thrown together in no time at all. 

With just a few simple ingredients such as rotini pasta, organic kale, canned salmon and green onions. You are sure to feel amazing after eating this.  

This salad is tossed in a simple healthy dressing that you can make in seconds. 

So if you looking for a healthy salad that can store easily in the fridge for a couple of days without wilting, you just found it!

Go ahead and make some meal preps if you want with this type of salad. 

Sometimes I will double the recipe and pack a few for the weeks ahead.

What can be easier than this salad?

The salmon is pre cooked, the kale is fresh and raw the only thing that takes a bit of time is cooking the pasta and during that time you can prepare the fresh greens.

This Salad goes well as a side dish or served as the main course.

I recommended looking for an bunch of organic kale for this recipe. 

I find it tastes best in raw type salads a good place to find organic kale this time of year is at your local farmers market.

This is my favorite way to use a can of salmon and it goes so well with raw kale.

This salad can be enjoyed pretty much any time of year, but I know it will be best enjoyed on those long summer nights out on the back patio!

Lemon Rosemary Baked Chicken

This simple Lemon Rosemary Baked Chicken is absolutely mouthwatering and is up there on my list of favorite chicken recipes.

Flavoured with just four simple ingredients of lemon, butter, rosemary and garlic.

Oh and of course some great seasonings that make for a memorable meal.

I tend to pick up 2 roasting chickens everytime I go do a big shop and when I do this is one of my go to recipes.

Because it goes well with everything and is pretty darn healthy too! 

This bird can be served in under 45 minutes with most of the time spend on baking in the oven.

Crispy, moist and succulent is how I would describe it. 

Feel free to add some potatoes and carrots around the bird it if desired or serve that separate on the side.

If your wanting to feed more than 3 people then you can bake two birds.

Totally up to you just make sure to set your oven to conventional bake in that case.

Oh and don’t forget to keep the carcass/bones to make a chicken stock with and some homemade chicken noodle soup.
