Simple Butter Chicken Recipe

This Simple Butter Chicken Recipe is sure to impress as it is just as good if not better than what you will find in most restaurants.

Make some Homemade Garlic Naan Bread to go alongside.

Today I’m so very happy to show you this recipe for a Simple Butter Chicken Recipe that your sure to make time and time again.

Awww the infamous Butter Chicken, also known as (Murgh Makhani). Almost everyone that has tried this dish has loved this dish and if you have not tried it before at home your in for a treat!

Love Indian food as much as me? Then your going to want to try my “Creamy Coconut Chicken Curryand my “Eggplant Curry” or my “Chickpea Curry” as well.

Oh and don’t forget the NAAN BREAD 🙂

HOW TO MAKE BUTTER CHICKEN SPICY

To make this Curry easy to make, try purchasing a pre-made Butter Chicken curry powder package like the one below.

WHAT SPICES ARE USED IN BUTTER CHICKEN

  • Salt, Red Chilli, Turmeric, Cumin, Black Pepper, Large Cardamom, Cinnamon, Green Cardamom, Clove, Ginger, Garlic, Star Aniseed, White Pepper

I always use a BUTTER CHICKEN SPICE blend as seen below as it has all of this in it already. Otherwise if your wanting to add in your own spices I highly recommend adding 1 tsp of chili powder, cumin, turmeric and fresh crushed garlic and onions.

Below you will see the pre-marinaded and cooked chicken being added to the sauce for the final step in cooking this delicious dish.

The part where your simmering the sauce, you can switch from 1/2 tsp of chili powder to 1 tsp for that extra heat. I love to do that, personally. I will add 1 tsp every time for this recipe.

WHO INVENTED BUTTER CHICKEN

It’s origins came from three  Punjabi restaurateurs, Kundan Lal Jaggi, Kundan Lal Gujral and Thakur Dass, who founded the world-renowned Moti Mahal restaurant in Delhi.

WHATS BUTTER CHICKEN SAUCE MADE OF

  • Fresh Cream
  • Ghee or Butter
  • Oil
  • Cashews or Almonds if you do not have you can always use sugar for added sweetness
  • Plain Yogurt
  • Tomatoes
  • Garlic and Onions

WHAT’S BUTTER CHICKEN

It is one of the most popular Indian curries Worldwide today.

It’s become so popular that the supermarkets are now selling various versions of it in pre- packaged bottles in hopes to win your business.

But that stuff just won’t cut if for those of us who are familiar with traditional Butter Chicken. Because real butter chicken uses ghee butter you can use regular butter if desired. Then of course there is cream and some stronger curry flavors than most of those pre-made bottled types entail.

Plus those bottles are expensive costing near 4x the price that it takes to make it from scratch, not to mention not nearly as tasty.

IS BUTTER CHICKEN SPICY

This popular dish hails from the Indian subcontinent and is noted for its creamy and smooth butter taste, you can make it more spicy by adding an extra 1 tsp of red chili powder if desired.

Otherwise this is a mild curry compared to other traditional Indian dishes.

In comparison we would rate the spice level of this dish to other Indian dish, a 4 out of 10.

Such as Grama masla and Indian curry powder. All which can be found in almost any grocery store spice section.

I think the reason people by those pre-made bottles is because they think making it from scratch is hard, but I assure you it’s not.

It’s all about having the right ingredients and nothing in this ingredients list is is foreign besides possibly the fenugreek leaves also known as kasuri methi. Also that can be found in almost all grocery stores today.

HOW LONG WILL BUTTER CHICKEN LAST IN THE FRIDGE

In a sealable container up to 3 days and if you want to freeze it for meal – preps you can do that and store in the freezer up to 3 months.

We hope you enjoy this tasty dish as much as we do! Serve it alongside some naan bread and enjoy!

We don’t add as much cream to this Butter Chicken as most do, which will give it a more orange color.

If your wanting a more cream heavy type of Butter Chicken just add 1/2 cup of  cream opposed to the 1/4 cup that my recipe calls for.

If your a CURRY lover like me. Then you will want to try these dishes below!

Note: If you want a more creamy butter chicken add 1/2 cup of cream instead of the 1/4 cup that I used in this recipe.

Looking for another Jamaican recipe? Try my Jamaican Pepper Shrimp

If you prefer to make this recipe with Shrimp try my Jamaican Curry Shrimp made with coconut milk.

YOU CAN FIND THE POWDER I USED IN THE LINK BELOW ALONG WITH THE SCOTCH BONNET SAUCE

IS JAMAICAN CURRY CHICKEN SPICY

Yes, it has hints of spice for sure. Because you are cooking it in curry spice and scotch bonnet peppers.

This recipe is definitely one of my favorite Jamaican dishes.

Well that is next to curry goat, both are prepared the pretty much the exact same way too.

It is sooo good, I could eat it each and every day. And sometimes will make enough so that I can enjoy it over a few days.

WHAT DOES JAMAICAN CURRY CHICKEN TASTE LIKE

I would describe it has having tender pieces of chicken that are simmered in creamy curry flavors.

I was lucky enough to spend some time in Negril, Ocho Rio and Montego Bay a few years back during one of our frigid Canadian winters.

And hope to go back again sometimes soon, the people, landscapes and culture was really amazing.

Not to mention the food, which is way too good to even explain. So as soon as I had the chance to prepare it myself, I did.

I hope you like this dish as much as we do.

HOW MAKE JAMAICAN CURRY CHICKEN

You can cook it several ways:

  • Pressure Cooker: Cook for approx. 10 minutes – after following the initial steps.
  • Stove Top: Cook covered on low for 60 minutes. – after following the initial steps.
  • Slow Cooker: Cook covered on low for 8 hours. – after following the initial steps.
  • FOR THE MARINADE: In a resealable container, mix together the lemon juice, cardamom, cumin, turmeric, curry, thyme, black pepper. Add the diced chicken and toss to coat then marinate in the refrigerator for a minimum of 1 hour.
  • FOR THE CURRY: Heat the oil in a large skillet over medium heat or pressure cooker on brown setting. Then add the onions, and cook till fragrant about 3 minutes.
  • Find the remaining steps (below) in the recipe card.

Another recipe, I remember eating was Salty Shrimp.

Which is often served directly from the ladies who sell it daily on the streets in and around many Jamaican towns.

Oh, and of course. I cannot forget their delicious Roti’s. Which have either Chicken or Goat meat in it!

I never forgot these amazing foods. “As most Jamaicans would say, Di chicken eat good!! = “The chicken tastes good”. So please give it a try for yourself!

You are sure to become a fan!

All over the island you are sure to find similar chicken curry dishes to the recipe here.

Just make sure you purchase the correct curry for this recipe, as it’s the most important part when making a Caribbean curry like this.

This is the sauce I like to use instead of the bonnet pepper. Of course you can use fresh scotch bonnet peppers instead.

Just be careful as those peppers are fire hot and you can burn your eyes if your not careful.

Notes: Do not pressure cook chicken with the bones on as this may create lose bones in the curry. Rather use Chicken Breasts instead.

Chicken Karahi

This is a traditional recipe for Chicken Karahi which is a popular dish that hails from India and Pakistan. Karahi basically means “pot” in which this is slow cooked in.

However with today’s cooking tools. You can prepare this recipe very quickly using an INSTANT POT!

And making a great curry doesn’t have to be that hard at all. You just need to make a right on cumin avenue, and then a left on ginger street right through to the fenugreek walk way and then soon after you end up in Chicken Karahi heaven.

WHAT IS CHICKEN KARAHI

It is a Chicken dish that traditionally was simmered over an open fire in a cast iron pot.

If you are not familiar with making these types of curries but have liked many other Indian curry type recipes in the past, then you are sure to love Chicken Karahi.

Made with fresh chicken breasts, tomato paste, onion, “ghee” (Indian butter) and a bunch of Indian spices. You are sure to love it as much as we do!

I encourage you to try it, because once you do you will be hooked just like me.

WHAT DOES CHICKEN KARAHI TASTE LIKE

Like heaven in a bowl, no kidding. It has a rich creamy tomatoes taste with hints green chili peppers, cilantro, and  ginger flavors.

Chicken Karahi is also noted for its spicy notes. You can downplay that if you like as well!

I use red chili powder traditional Chicken Karahi calls for kashmiri red chilli powder.

But that spice tends to be hard to find in Canada, so I will leave that up to you.

Then I also use green chilies, if you want something milder you can use green bell pepper as a substitute.

It can also be prepared with goat or lamb meat instead of chicken, totally up to you.

Personally I prefer the chicken kind though, it’s one of my favorites.

HOW TO MAKE CHICKEN KARAHI

Traditionally, Chicken Karahi recipes used a whole chicken. However in today’s restaurants many use chicken breasts. And that is what I am using for this recipe! I will leave that up to you.

You can always use chicken legs, thighs etc. Whatever you have on hand for this dish!

We hope you give this creamy curry a try, and enjoy it as much as we do. Serve it alongside some naan bread, or rice and you have yourself the most amazing meal.

Simply purchase the basic ingredients and then the next time your in the mood for some Karahi, you will simply have everything you need in stock to make it every time.

And I’m sure that time will soon, because this curry is unbelievably tasty!

Here at CCA we buy all our curry ingredients roughly every 6 months or so to keep things fresh. This allows us to prepare endless curry meals throughout the year.

WHAT TO SERVE WITH CHICKEN KARAHI

Basmati rice or NAAN BREAD of course!

Green Thai Curry with Chicken, Peppers and Bok Choy

Today I’m sharing with you a recipe for an excellent Green Thai Curry, which has chicken, pepper and bok choy in it.

I could eat Green Thai curry each and every day, I’m not kidding I love it that much.

And the good thing is it’s also very healthy and quick to make.

Today I’m sharing with you a recipe for this chicken, pepper and bok choy curry.

For this soup you will want skinless chicken breasts, red and yellow peppers and fresh bok choy.

And of course the green thai curry paste which has the traditional ingredient of “Lemongrass”, “Galangal” and “Kaffir lime leaves” in it.

I like to also add a few frozen kaffir lime leaves to the curry, even though there is some in the paste I find it adds a nice touch. However if you prefer, you can squeeze the juice of half a lime in at the end instead.

So I will leave that up to you, frozen kaffir lime leaves can be purchased in bulk at many asian groceries.

One bag typically lasts me well over 50 different curry meals, so it’s wise to pick up a frozen bag for whenever the thai curry craving hits.

Now there are plenty different ways to make Thai curry, and that is because you can add just about any type of vegetable or meat protein to it.

However the techniques are always the same and the main ingredients always consists Coconut milk along with “Green Thai Curry Paste”, which already has the traditional ingredients of “Lemongrass”, “Galangal”, and“Kaffir lime leaves” and Bird’s Eye Thai chilies in it.

If you want more heat you can add more Bird’s eye thai chilies to the soup, however I recommend not to as it will be very hot. I just did in this dish for added color, and to make it pretty.

Now if you are not familiar with all those ingredients, Bubba says don’t fret, you can find them all at your local asian grocer or right in the international aisle at your local grocer which will sell it in packages and or jars (see picture) below for our favorite Green Thai Curry paste”.

Even though we use the premade “Green Thai Curry paste” in this recipe, which has crushed Kaffir lime leaves, I also like to add a few more kaffir leaves and I always keep them on hand in my freezer for whenever I am making anything Thai.

I find it really enhances the dish, however you do not have to since they are in the “Green thai curry paste” already and the lime squeezed in at the end adds that element of tang that is needed.

Once you get familiar with the basic ingredients of thai cooking, you will be shocked at how easy it is to prepare these Thai dishes at home. Literally you can have them on the table in under 30 minutes.

Bubba recommends picking up this paste at your local grocer, it’s our favorite and goes a long way.

Keep in mind a good coconut milk, will be half solid a half watery.

One that is all watery does not work as well for this dish, typically organic varieties or thai have the best products.

Optional ~ for extra heat add 1/2 a Bird’s eye chili to step 6.

WHAT IS IN GREEN THAI CURRY

  • Keep in mind a good coconut milk, will be half solid a half watery. One that is all watery does not work as well for this dish, typically organic or traditional thai milk varieties have the best products.
  • “Lemongrass”, “Galangal” and “Kaffir lime leaves” can be found in most Asian stores. “Thai Green Curry Paste” can be found in most Supermarkets, Thai Green Curry paste has all the above ingredients in it needed to make this dish.
  • Add in the lime last, you do not want to cook the lime because it will ruin the flavor.
  • Do not eat the “Lemongrass”, “Galangal” and “Kaffir lime leaves” there just for flavoring, if you’re going to use these for added flavor, make sure to bruise each item before adding to the pot.
  • Want more heat, simply add in some Thai Bird’s eye chilies or Thai Chili Paste. Caution when preparing Bird’s Eye Chilies, these chilies are very hot and can burn the eyes so proceed with caution.

Cheese Butter Masala (Paneer Makhani)

Craving curry but looking for an alternative to the typical “meat curry” options? Why not try the vegetarian alternative to Chicken Tikka Masala with this Cheese Butter Masala aka (Paneer Makhani). Indie’s favorite curry by the way, she just can’t get enough of the creamy, cheesy flavors!

From the research Bubba gathered on this dish, he concluded that this Cheese Butter Masala (Paneer Makhani) is a very popular dish in North India.

And is eaten often by the Hindu communities, who are mostly vegetarians. Bubba, Hunter and Indie wish they could be vegetarians like the Hindus, but insist they’re just not ready yet. But with dishes like this they sure could try to be more often.

This cheese can be found in pretty much any major grocer and is a nice change to meat. We hope you like it as much as we do!

So creamy and cheesy!

Note: You can add 1 tbsp of fried onions to the  butter mixture of desired. And top with dried fenugreek leaves or parsley.

Indie says, when Panner is in the air everyone is sure to want some.

Orange Chicken (tso’s)

Orange Chicken has a combination between sour and sweet flavors. The rice vinegar gives it the tang, while the honey gives it the sweetness.

Orange Chicken tso’s has some heat to it from the addition of the red chilies, typically we make the spicer version of this dish since we like a like a little heat. You probably have tried this before as its pretty popular in many Asian restaurants across North America.

Typically in the restaurants it’s made with boneless chicken breasts and mixed with onions, red peppers or other vegetables.  Today I’m making it with boneless chicken thighs, since this is what we have on hand.

Keep in mind Orange Chicken tso’s is slightly spicier than regular Orange Chicken. If you prefer no spice to this dish, simply omit the chilies.

Notes: You can use fresh oranges if you prefer that to orange juice in this recipe.

OR if you want to buy the Orange Sauce, which is not as healthy but just as good. I would recommend this brand, LEE KUM KEE it tastes most authentic!
