Best Greek Tzatziki Sauce recipe

This is the Best Greek Tzatziki Sauce recipe ever. It is fresh, homemade and has dill & mint in it which gives it such depth of flavor.

This is my go to tzatziki recipe, it does not compare to anything you could buy in the store. 

Kind like spinach dip, you do not want the store bought you want homemade. Same goes for tzatziki, it just tastes fresh homemade and real. 

So please forget the store bought kind because this stuff is in a whole other caliber. 

YUM!

Tzatziki is a greek sauce that is made from thick Greek yogurt, fresh english cucumbers, fresh garlic, olive oil, and dill. Some people also add mint. 

I add both!! Why not? It is sooooo good. 

This tzatziki is sure to be one of the best varieties you have ever tasted.

TRUST ME!

It goes great with just about any Greek meal and it’s a very very easy to make!!

 

Simply add in your grated and chopped vegetables, stir and you’re ready to eat it!

Serve it with chicken, lamb or just about any other type of Greek Main dish.

 

Eat as much as you want, because it’s super healthy for you too. 

And because of the Greek Yogurt, it also has a ton of protein. 

MAN OH MAN, THIS IS THE GOOD STUFF!

For best results chill it in an airtight container for up to 2 hours or more before serving.

The longer it chills in the fridge the thicker it becomes and the flavors really set in.

Wild Rice Tuna Casserole

This Wild Rice Tuna Casserole is something different from the average chicken and noodle casserole recipes you will find out there. This dish is very satisfying, both as a side or a main dish. 

You can prepare this dish with chicken, turkey or hamburger as well or make vegetarian, all four ways are amazing. 

However it’s best made with a good quality wild rice  mixture. 

The more natural the better since these types of rice blends contains many nutrients that other processed rice would not.

The panko crumbs and cheese topping give it that nice crunch so do not skip that combination. It makes this recipe divine! 

I like to use my Dutch oven for this recipe, if you do not have a Dutch oven then feel free to use a sauteing pan and then a casserole dish once it ready to go into the oven.  

Some people like to add grated cheese over top before baking, i don’t. And that is because i prefer the earthy taste of the dish, I encourage you to try it this way = delicious.

Best Chicken Stir fry recipe

Here is a recipe for the Best Chicken Stir fry it goes great alongside a warm bowl of Jasmine rice and makes for healthy meal. 

This quick and easy Chinese inspired takeout recipe can be enjoyed in less than 30 minutes. 

The chicken and vegetables are coated in a sweet and savory honey sauce that your family is sure to enjoy!

Vegetables of all kinds go well in this stir fry, you feel free to experiment with what you have on hand.

I like to use a frozen vegetable mixture on those days where I am pressed for time.

So for this recipe, I have used one of my favorite frozen “Asian vegetable mixes” which has broccoli, carrots, green beans, water crescents in it. 

However you can use whatever vegetables you like. Fresh or frozen will work, just make sure that if your using frozen to defrost them prior to cooking.

Air Fryer Sweet Potato Fries

These Air Fryer Sweet Potato Fries are sweet with a hint of spice. I like to serve them alongside a spicy mayo! 

WHAT IS AIR FRYING?

Air frying is a healthy alternative to deep frying food. And most air fryers have been marketed in a way to make you think that this cooking technique is best for those who make a lot of those at home.  

Well I am here to tell you that you do not need to just be a deep fried food lover to want to use this cooking method. RATHER if you love to bake food, then this is also a great alternative. And in most cases is much healthier than traditional baking methods. 

Because air frying mimics deep fried foods but uses little to no oil. And if your cooking something fatty, the fat will drip away and off the food. So you can enjoy all the same deep – fried or baked foods that we have all come to know and love again but in a healthy way.

The air hot air is what cooks the food not the oil. If you have some frozen foods on hand, feel free to throw out any deep fryer you may have because the air fryer can now do the same job. 

But it is not only frozen food that can be cooked this way, pretty much any food you can think of can. 

Such as my Best Air Fryer French Friesthey are so tasty too! 

This is my second AIR FRYER recipe that I have shared on this blog. And I hope you like it!

As you may know I have been on the fence for the past year about buying an air fryer.

Mainly because I do not eat a lot of deep fried foods and also because I could not fathom spending $200 plus for ONE.    

So recently when I came across the Gotham air fryer, that does the exact same thing as an air fryer. I knew that I had to try it! So I’m now starting a Air Fryer collection of recipes on this blog because I have fallen in love with this NEW kitchen tool. 

HOW TO MAKE SWEET POTATO FRIES IN AN AIR FRYER?

  • Start by slicing the yam fries on a cutting board into 1/4 inch slices. 
  • Once the yam is sliced into slim fries, place them into a large bowl and submerge in water.
  • Soak for a minimum of 30 minutes on the counter.
  • Then drain and place the fries in another bowl and season with cornstarch and toss to coat.
  • Drizzle the olive oil over top of the fries and season away! 
  • Place the fries in or on the Air Fryer making sure they are not crowded, then allow it to do the Cooking.
  • Bake at 400 F for 30 minutes! 

HOW TO MAKE SWEET POTATO FRIES ON THE GOTHAM AIR CRISPER TRAY?

  • If your using the Gotham Steel Crisper I would advise to turn your oven to Conventional bake, which will make the fries more crispy.
  • Otherwise, if your oven does not have that setting you can simply place the crisper on the middle rack. 

WHAT MAKES FRIES CRISPY?

The air flow that is create under and around the sweet potato fries. The more dryer they become the more crispy they will become. Also the thinner the fries the easier it is for them to become crispy, I like to cut mine about 1/4 to 1/2 of a inch thick.

Also surprisingly soak them in water beforehand helps to remove the starch as it soaks into the water. The starch is what hinders the moisture from escaping. Which in turn prevents the fries from burning to a crisp and keeps them moist inside and crispy on the out. 

CAN I USE ANY KIND OF AIR FRYER? 

YES!  Air fryers promise that you can get that deep fried texture without all the grease. 

If you have a table top Air Fryer all these recipes will work the same. Because Air Fryers all use the same type of cooking techniques. 

IS AIR FRYER FRIES HEALTHY? 

Yes, very. Since the hot air is doing all the frying, saving you from using oil. But also giving you a deep fried taste without all those trans fats. The food ends up crispy on the outside and moist on the inside.

If you have never used an air fryer, now is the best time to start. Because they are more affordable now than ever before. 

Some people think that an Air Fryer is mostly for people who eat a lot of fried food. I admit I once was apart of that group, however I soon realised that if you like to bake foods too. Like I do, then the air fryer really cuts out a lot of the unnecessary fat.

Think of it, how do you typically eat fries? Deep fried of course. However with the air fryer it elevates the food and allows all that (FAT) to drip away, which creates a fat free crisp that you will love. 

Plus if you use the Gotham Air Fryer it is super simple to clean, I am talking hard sticky food at the bottom of the tray just slides right off. No scrubbing at all is needed, it couldn’t be more simpular that this guys.

Another reason I like the Gotham Air Fryer is because it cooks more food than the typical table top Air Fryers. Because it has a lot of space on that large tray !

Creamy Reuben Soup

This Creamy Reuben Soup is low carb and absolutely delicious. If YOU like Reuben sandwiches, then your going to love this soup! 

I  grew up eating the old classic “Reuben Sandwiches” in my home. My mom used to make then from scratch for me. With spicy mustard, which was my favorite way to eat them.

This soup reminds me so much of my childhood, but only in a soup.

Image a creamy Reuben sandwich? That is this soup, and it is Amazing!

I bought 1 pound of a “pickled corn beef” a few days ago. And was looking to make something unique with it, since I wasn’t really feeling like making the typical beef brisket that you can find just about everywhere.

So I got to thinking and was like “Oh” I can make a Reuben Sandwich.

Wait better yet a Reuben Soup, now doesn’t that sound amazing?

This soup tastes just like the sandwich but it’s warm and satisfying and makes an excellent meal.

Now if you can’t find any pickled corn beef then you can pickle it yourself.

Now of course you don’t have to use a pickled corn beef to enjoy this recipe, however if you decided not to pickle it then I do suggest adding in 1 tsp of cayenne seeds to this soup.

It is mid November here in Canada and this recipe could not come at a better time for me and my partner. Actually it turned out way better than we would have ever imagined.  

Now I don’t know about you, but I do not have all night to be slaving over a stove, so instead I made this whole soup in my pressure cooker.

First I simmered the chopped onion in some butter on the browning setting, then the minced garlic.

Then simply added some flour, beef stock and the remaining ingredients into the pot. Minus the sour cream and swiss cheese and set it to cook for a good while in the pressure cooker.

Once it was cooked, I shredded the brisket in my “food processor to get the meat to be very thin as you see above.

I definitely would not skip that step as it really helps to make this soup come together.

Once the brisket has been shredded you will simply add it back to the pot along with the swiss cheese and sour cream to simmer for another 5 minutes before serving. Serve alongside some toasted “Rye Bread” enjoy! 

We love this soup so much so, that we have made it a couple more times in the past month!

Notes: Feel free to freeze this soup it works great as leftovers too.

Chicken Chickpea Curry

This One Pot Chicken Chickpea Curry has a wonderful depth of flavor that you’re sure to love. 

HOW TO MAKE CHICKEN CHICKPEA CURRY

  • This popular dish is made with boneless chicken breast and simmered in a rich tomato spiced cream sauce that you’re sure to love. 
  • You can prepare this dish all in one pot on the stove or in your slow cooker/pressure cooker.
  • I like to prepare this in my slow cooker on the browning setting, just make sure you are using that lid otherwise you will have a mess for sure.
  • Find cooking instruction below in the recipe card. 

I have experimented with plenty of curries for some time now, so you can trust me when I say this recipe is a sure winner.

Now you will want to go down the ethnic food aisle in your local grocery to pick up some “Madras Curry” which is the right kind of curry powder for this recipe.

Then you will add just a few more traditional Indian spices that will make this dish absolutely amazing.

Also if your not to familiar with dried fenugreek leaves, then I encourage you taking a stroll down your groceries ethnic for those as well.

They are sure to have it there somewhere, however if you cannot find them feel free to use cilantro or parsley instead.

Who said it takes a chef to make real Indian curry? Obviously never was in your kitchen.

Feel free to omit the chickpeas if your not a fan, however I love them and find they work so well in this recipe.

Not to mention add more fiber and helps to spread the meal out so you can have leftovers the next day.

If you prefer a much more spicier curry, I definitely recommend that you use fresh tomatoes versus canned. The canned tomatoes do give it a hint of sweetness that I find contrast well with the spices.

However this is your curry, so do as you please.

Cooking methods:

  • Simmer on a low-medium heat for 1 hour on the stovetop
  • Cook in the pressure cooker around 10 minutes or depending on your instructions
  • Cook in the slow cooker from 8-10 hours.

If you like curry dishes as much as me then you are going to love this simple recipe. Be sure to make some basmati rice to serve alongside or if you really want to make it extra special go ahead and make some homemade Naan Bread.
