Chickpea Avocado Feta Salad

This Chickpea Avocado Feta Salad is the perfect Summer Salad.

Spring has finally arrived and this is a time where my family starts to think about eating more high protein low carb foods to help the body get into shape. 

This stuff tends to go the moment I make it, so you may want to double it up if your having guests over.

Now I am not on any specific diet, I just like to add more protein vs carbs into it around the warmer months.

So if your looking to slim down a bit as well this summer, then you are going to love this salad. 

This salad is packed with good for you fiber, fats and proteinI was never a huge salad fan, that is not to say I don’t eat salad.

I’m just saying I never ordered it much or requested extras while at any type of gathering.

The reason for that is because most salads i’ve tried are not always that healthy and tend to be covered with some kind of unhealthy bottled dressing.

Today, however I love salad and that is because I learned how to make different and filling varieties such as with this Chickpea, Avocado & Feta Salad. 

Which has lead to my love of salad forevermore, and creating different kinds of salad that are not only healthy but also filling feels so good.

By adding proteins and fresh ingredients you can now have a meal in a salad which I love to do often.

This salad is one of those hearty, healthy salads, that is packed with just enough protein and healthy fats to make it a meal or great side if you like. Filling, Healthy and Delicious I hope you enjoy!

Creamy Lemon Cucumber and Tomato Salad

This Creamy Lemon Cucumber and Tomato Salad is my favorite way to make a Cucumber salad, it’s super Fresh and Creamy

Make it ahead of time and store it in the fridge to allow the flavors to develop more. 

What kind of Cucumber Salad have you tried?

The German variety that leans more towards a Vinegary taste?

Or the American Varieties that leans more toward a creamy taste?

Personally, I prefer something in between and this salad is exactly that. 

Summer is right around the corner, can you feel it in your part of the country yet?

This salad is perfect for those hot summer nights and even goes great when chilled to be taken along with any type of outdoor picnic.

This salad will taste much better if you can get your hands on some garden tomatoes, the sweeter the tomatoes the better this salad will taste. 

We sent Bubba out to our local farmers market and he came back with these large sweet and succulent tomatoes and crispy cucumbers that worked so good in the salad.

We then experimented with all few ingredients to come up with this Creamy Lemon Cucumber and Tomato Salad.  

If wanting  your to feed a larger crowd we recommend doubling this recipe with our easy to use recipe adjuster.

Doesn’t this look so fresh and just say SUMMER has arrived or what!

Note: The colder the salad the better it taste, so try to chill it in the fridge for one hour prior to serving.

Pico De Gallo Salsa

I just realised that I have not yet shared my recipe for homemade Pico De Gallo Salsa with you guys yet. This is a must try recipe for those who love salsa dips! 

Made from chopped tomatoes, onion, cilantro, jalapeños peppers, lime juice and seasoned with salt. Traditionally white onions are used, however red go well too.

Pico De Gallo, in Spanish means ‘beak of a rooster’ and is believed to originate from the resemblance of the way a rooster pecks in his food to make it edible.

And the chopping of the ingredients which also prepares a very colorful salsa which resemble the colors of a rooster’s feathers.

You can adjust it to your taste, some people like to load up on Cilantro while others prefer just a little bit of it in the salsa.

My recipe calls for a fair amount, along with 1/2 of a Jalapeno pepper which gives it just the right amount of heat.

This salsa is very fresh and tastes 10x times better than any store bought kind.

So there really is no comparing it to any other type of salsa you may have tried.

I make this allot, I mean allot. Pretty much any time I make a Mexican themed dish, I will whip this up on the side.

Takes less than 10 minutes to prepare and stores great for leftovers the next day!

When making this simple salsa, make sure to drain most of the liquid out of your tomatoes otherwise it will become mushy to fast.

I recommend using roma tomatoes, that way there is no liquid to drain.

You can serve this with your favorite tortilla chips for a healthy snack or use it as a side or filling for your tacos, fajitas, burritos etc.

Cabbage Pico De Gallo (Salsa Fresca)

This is my favorite way to make Cabbage Pico De Gallo. Why? Because it is shredded so fine like you see below. 

What is Pico De Gallo

It is a popular Mexican salsa that is enjoyed in tacos and with tortillas.

Once you try this salsa you won’t ever want to go back to those store bought varieties.

That’s for sure.

I just love this salsa because it’s like nothing else.

And is very fresh tasting not to mention super healthy for you.

Snacking on this just feels good!

So go ahead and serve along with your favorite tortilla chips or use it as a side or filling for your tacos, fajitas, burritos etc.

I like to add finely shredded cabbage to mine, and to do that you will need a food processor.

However you can omit the cabbage for a more traditional Mexican Pico De Gallo if you prefer. 

That recipe is listed below and is also on this blog, however this is my favorite version and really goes a long way and feeds more people when paired with other Mexican dishes.

Classic Creamy Coleslaw Salad

This Classic Creamy Coleslaw Salad goes well along any summer recipe you may be serving.

Some people like their coleslaw thick, creamy and sweet, while others prefer it light and tangy. 

This recipe leans more towards to thick, creamy sweet coleslaw that many grew up with.

If you’re looking for a lighter tangy slaw then check this recipe out for a Light and Tangy Coleslaw.

Both recipes are just as good, so it’s all about personal preference. 

HOW TO MAKE CREAMY COLESLAW 

  1. For the Coleslaw: In a large bowl, combine cabbage and carrots  (or empty your bag of cabbage carrot mixture into the bowl).
  2. For the Dressing: In a smaller bowl, make the dressing by combining your mayonnaise, apple cider vinegar, celery salt, garlic powder, lemon, sugar, salt and pepper to taste.
  3. Slowly add the dressing into cabbage mixture until you have the desired amount.
  4. Allow it to chill in the fridge up to one hour to let the dressing marinate.

You may need less dressing, depending on how much cabbage your using.

Taste for seasoning and adjust as needed. Serve alongside any summer dish and or double the recipe and make for a crowd.

Light and Tangy Coleslaw

This light and creamy coleslaw recipe is easy to make and goes well alongside almost any type of bbq or summer meal. 

If you’re anything like me, you prefer your coleslaw light. Not to say I don’t like those creamy coleslaw at all, cause I do. I just have to make it myself, because I find the store bought variety is way to sweet. 

There are a few ways to make coleslaw as you know, and this is one of my favorite varieties. If your looking for a more sweet and creamy coleslaw, then check out my Creamy Coleslaw Salad recipe. 

This recipe here is very similar to my Creamy coleslaw recipe, however has half the mayo with the addition of a little Horseradish, and Whole Grain Dijon Mustard . 

These extra two ingredients alone give a bit of ‘kick’ to the regular creamy type coleslaw salad. Coleslaw makes the perfect accompaniment to a meal or can be eaten as is.

In summer when I have fresh herbs in the garden, I like to add just a tiny bit of chopped parsley or chives too.

HOW TO MAKE COLESLAW 

  1. For the Coleslaw: In a large bowl, combine cabbage and carrots  (or empty your bag of cabbage carrot mixture into the bowl).
  2. For the Dressing: In a smaller bowl, make the dressing by combining your mayonnaise, horseradish, Dijon mustard, apple cider vinegar, celery salt, sugar, salt and pepper to taste.
  3. Slowly add the dressing into cabbage mixture until you have the desired amount, taste as you go. Let this chill in the fridge up to one hour to let the dressing marinate.

You may need less dressing, depending on how much cabbage your using.

Taste for seasoning and adjust as needed.

The key is to let it marinate in the fridge for a few hours BEFORE serving, this lets the slaw set. Serve along side any summer dish and or double the recipe and make for a crowd.

Bacon & Ranch Potato Salad

Who likes Potato Salad? How about a Creamy Ranch and Bacon Potato salad? Well then this recipe is for you! 

Not to mention is super simple to make.

I like to make this recipe for when I am having company. 

Because it sure goes a long way and typically can feed anywhere from 8 -10 people.

If you are having more people, simply double it up! It’s always sure to be a hit, and doesn’t cost much to make.

We sent our fur friend out to find the freshest potatoes for this recipe and he sure didn’t fail us.

When he came back with a box full of them.

Unfortunately he is allergic to onions. so he had to pass on this recipe.

However he did snack on some of the bacon of course. 

To make the salad you will want to pre- cook the bacon and potatoes, once your bacon and potatoes have cooked and cooled down.

Then you will add in remaining ingredients and allow it to set by chilling in your fridge before serving. We hope you enjoy!

Note: If you are planning to leave the house and want to take you salad with you. You can keep it cold by placing your potato salad into a pre chilled container.

Dill Pickle Potato Salad

This Dill Pickle Potato Salad is made with garlicky dill pickles and it’s juices, egg, russet potatoes, mayonnaise, plain yogurt, dijon mustard and fresh dill. 

Let me tell you, this recipe is a sure WINNER!

This salad can be thrown together in no time at all.

I brought this to a potluck recently and obviously did not make enough to feed the 10 people there.

It was gone in no time at all, so if you’re wanting to prepare this for a group of 10 or more double it up, it’s easy to do so anyway.

Wanting to serve a larger crowd? Simply double up the ingredients! 

To make this vegetarian omit the mayo and eggs and use a vegetarian mayo.

Personally I like using Hellman’s mayo, it’s my favorite!
