Wild Rice Tuna Casserole

This Wild Rice Tuna Casserole is something different from the average chicken and noodle casserole recipes you will find out there. This dish is very satisfying, both as a side or a main dish.

You can prepare this dish with chicken, turkey or hamburger as well or make vegetarian, all four ways are amazing.

However it’s best made with a good quality wild rice  mixture.

The more natural the better since these types of rice blends contains many nutrients that other processed rice would not.

The panko crumbs and cheese topping give it that nice crunch so do not skip that combination. It makes this recipe divine!

I like to use my Dutch oven for this recipe, if you do not have a Dutch oven then feel free to use a sauteing pan and then a casserole dish once it ready to go into the oven.

Some people like to add grated cheese over top before baking, i don’t. And that is because i prefer the earthy taste of the dish, I encourage you to try it this way = delicious.

Our family’s favorite wild rice blend comes from Costco

If you end up giving this a give it a try, I would love to know how you liked it. Bon Appetit!

Note: Instead of green peppers add, celery or peas.

CREAMY GREEN PASTA SAUCE

You can make this more creamy by adding in some whole milk or cream, I would recommend no more than 1/2 a cup.

Jalapeno Poppers in Air fryer

These Jalapeno Poppers in Air fryer are super easy to make and are stuffed with pepperoni and cheese sticks which are topped with some panko bread crumbs for that added crunch.

I used to buy my Jalapeno Poppers from frozen however those days are long gone. They are fresher tasting and cheaper to make from scratch.

And the thing is they take less than 5 mins to prepare and 5 minutes to cook.

Making this a true 10 minutes appetizer. My small air fryer makes 4 pieces, which is just about the right amount for one or 2 people to snack on.

If you want to make a larger batch, simply use a larger air fryer.

HOW LONG TO COOK JALAPENO POPPERS IN AIR FRYER

My 2 quart Air Fryer cooks this appetizer in 5 minutes! Check your air fryer time as each one cooks them a little differently.

HOW TO MAKE JALAPENO POPPERS

You will need 4 simple ingredients

  1. Cheddar Cheese (I used cheese sticks)
  2. Pepperoni ( I used slices and diced them)
  3. Panko Bread Crumbs
  4. Jalapeno Peppers, to stuff

Then slice 2 Jalapeno Peppers in half and cleaned out
Prepare, 2 Cheddar Cheese Sticks
Dice 50 grams of pepperoni finely
Top with 2 tbsp Panko Bread Crumbs

You can use shredded cheddar cheese also, but I much prefer the sticks as they stuff these little peppers perfectly and the cheese does not leave the pepper as much as it would with shredded cheese.

Which tends to fall all over the grills. Also, you can stuff them with shredded chicken, ground beef etc if you prefer.

Just make sure you are either using pre-cooked meat and or if your using raw be sure to cook them longer.

Black Licorice ice cream

Growing up in Canada Black Licorice ice cream was readily available. However over the years it either lost it’s popularity or the suppliers have gone out of business.

How sad for Black Licorice ice cream lovers across the Country!

I like to have this in the freezer during the summer months, I swear my family comes over just to have a bowl there obsessed too.

WHERE TO BUY BLACK LICORICE ICE CREAM

It is very hard to find black licorice ice cream these days, so I cannot tell you. However you can try to find blue licorice ice cream as some stores have that version.

One bowl is hardly enough!

THE MACHINE I USED TO MAKE THIS AND RECOMMEND IS LINKED BELOW

HOW TO MAKE BLACK LICORICE ICE CREAM

  1. With most of my ice cream recipes, I will prepare them by using the coldest of ingredients (never cooking anything first) however with this recipe we are going to be heating up the first few ingredients to infuse the Licorice into the ice cream. This step is necessary and so worth it!
  2. It is important to not skip this step, once you have infused the ice cream base with the licorice flavors you’re going to whisk in your egg yolks and then simply let it all become cold in the fridge for a while.
  3. The final step will be to pour your base into the ice cream machine and then you will be in business.

Keep in mind the Black Licorice needs to be broken up, so once its reaches its highest melting point, start to break it up with a wooden spoon while cooking it down. It will still be in chunks just smaller ones and it will melt and become soft.

This will leave you will nothing but soft licorice pieces that will be blended throughout the ice cream.

WHAT DOES BLACK LICORICE ICE CREAM TASTE LIKE

Black licorice ice cream taste like the candy just in a creamy form with the hint of aniseed.

WHAT TO DO WITH ROTISSERIE CHICKEN LEFTOVER

Make this soup 🙂 This soup utilizes the bones of your leftover Rotisserie chicken to make a chicken bone broth for the most amazing soup.

Whenever I or someone I love gets sick with a cold. The first thing I do is make a large batch of homemade chicken soup.

And the best way and cheapest way to make this soup too, is to use the meat and bones from a leftover rotisserie chicken from the night before.

Two meals in one. IT’S A WIN WIN!

ROTISSERIE CHICKEN SOUP WITHOUT NOODLES

There are a few versions of this kind of of soup out there, this one is a little different as it uses the leftover bones for the chicken broth. And has no noodles in it, of course you can add them if you’d like.

Just make sure your adding more stock or very little noodles to this particular recipe.

And as you may know bone broth is said to be nature’s pharmacy.

And so this soup has everything you need in it to ward off any type of cold or flu.

It defiantly will help your body rests and works to get better.

Blackberry Jam Recipe No Pectin

This Old Fashioned Blackberry Jam Recipe No Pectin is easy to make and stores in the fridge well up to 3 months.

Serve this along some fresh homemade fried Bannock bread to make it a breakfast!

I like to make this Jam at the same time I make my Fried Bannock Recipe. Both recipes can be ready in less than 30 minutes, I kid you not. Talk about a fresh, fast breakfast dish.

Otherwise this Jam goes well over scones, toast you name it.

WHAT DOES PECTIN DO TO JAM

It helps it to hold the ingredients together as it cools and turns into a thicker jam.

WHY DON’T I USE PECTIN IN MY JAM

I do not use pectin, because I do not make large batches of Jam.

Rather I make a small batch that I will use up within a couple of weeks.

Also I like my Jam to be more liquidly vs firm.

WHAT IS IN BLACK BERRY JAM NO PECTIN

3 SIMPLE INGREDIANTS

  • BLACKBERRIES
  • SUGAR
  • LEMON JUICE
