Sweet and Savory Stuffing

This Sweet and Savory Stuffing is one of my favorites, it can be made outside the bird or inside. Made with rye bread, onions, celery, dried cranberries and a ton of savory spices. You are sure to love it just as much as we do. 

This recipe can go hand in hand with making a turkey. So if your making on today, then this recipe can be made alongside very easily.

I like to add a Turkey neck on top of my stuffing, I find it gives it a little extra flavor. Then you can serve it to whoever likes that part of the bird, or you an add it to your homemade turkey stock.

Might as well untalize the whole bird right?

However depending on how you prefer to prepare your stuffing it it will turn out amazing! As you may know, I like to make my “Stuffings” which are really “Dressings” outside the bird.

This let’s the turkey cook better and I find much better.

Now you can let the bread dry out on the counter for a minimum of 24 hours prior to using it.

Otherwise you can pull it apart and place it onto a large cooking pan and bake it at 200 f for 35 minutes till it dries out.

Butter Herb Parmesan Mushrooms

These butter herb parmesan mushrooms are super simple to make and absolutely delicious! 

Made with just a few ingredients of brown mushrooms, fresh Parmesan cheese, garlic, butter and some herbs.

Your sure to make this easy recipe, time and time again in your house. 

I like to serve these mushrooms alongside pork, steak and or chicken.

Whichever way you decide to serve them, Im certain that you and your family are sure to enjoy.

It is such a quick side dish to serve around the table that everyone is sure to love and makes for something different then the average mash potatoes and carrots. 

Think Christmas and thanksgiving too with this side dish.

You can omit the cheese in the mushrooms if desired as they taste amazing without it as well.

However, if your making these for a crowd then adding the fresh Parmesan cheese.

Will give it an extra element of richness to the mushrooms.

I like to use brown mushrooms for this recipe, however you can use white if you choose.

HOW TO MAKE PARMESAN MUSHROOMS

  • The trick to having the best sauteed mushrooms is to saute them on medium heat in ample butter on each side for at least 7 minutes.
  • This allows them to become tender and juicy on the inside.

Sometimes it’s the simplest things such as these herbed mushrooms that can add something extra special to a meal. 

So if you’re looking for a side dish that is simple, quick and a sure winner.

You definitely want to try these!

Easy Pizza Ratatouille

This Easy Pizza Ratatouille with Mozzarella Cheese is so good you won’t believe it’s Vegetarian. 

I just love Ratatouille, it’s fresh, healthy and so good for you.

And is one of those excellent summer time recipes, since it utilizes all those fresh garden vegetables so well.

Not to mention very pretty, just look at the rainbow of colors.

Made with a few simple ingredients.

That being of eggplant, zucchini, tomatoes and mozzarella cheese it doesn’t get any fresher than this. Which is then smothered in a quality can of tomato based pizza sauce.

Your sure to impress anyone when serving this dish!

There are many recipes out there for this famous french dish called “Ratatouille” and plenty different ways to preparing it.

Traditional Ratatouille is made without cheese, however I like to add Mozzarella to mine, because it really enhances the recipe and makes it taste more like a pizza without the added carbs.

Lay upon layer of Tomato, Green Zucchini, Yellow Zucchini, Mozzarella Cheese and Eggplant!

Also be sure to cook it for a minimum of 2 hours as that sure helps to bring out all the vegetables flavors which happens through caramelization.

This recipe is sure to be a family favorite, and is gluten free.  I hope you like my version of this famous dish. “Bone Appetite”!

Comforting Chili Con Carne

This Comforting Chili Con Carne has hamburger, tomatoes, kidney and pinto beans along with onions, garlic, jalapeno peppers, red yellow and green peppers. And many different seasonings that make it true Con Carne that we have all come to know and love. So if your looking for a great chili recipe, you have found it!

It always amazes me how quickly fall comes and turns into winter. One minute it’s t-shirt weather and the next we are pulling out our sweaters, toques and scarves. When the weather starts to change like this, I immediately start to think of heart slow cooker meals. Don’t you? If you like chill then you are sure to like this recipe, colder like this, it makes a BIG pot and will last you for a few days. Good hearty meals that bring warmth to the body and soul make these colder months much better, nothing beats going coming home to a hot bowl of good old chilli con carne.

You can prepare this chili in crock pot or on the stove top, depending on the time you have at hand. Today I am using my crock-pot, because I have errands to run this morning. So this will take me roughly 20 minutes to prep then I will set it in the slow cooker for 6 hours, and return to a meal fit for a queen or king. I hope you enjoy it as much as we do.

 

How to make the Comforting Chili Con Carne:

  1. Start by chopping up your onion, garlic, jalapeno pepper, red, yellow and green peppers.
  2. In a large pot saute your onions in 1 tbsp of oil till translucent, add in your peppers, then garlic and saute another 5 minutes till slightly  tender.
  3. Remove from pot and set aside.
  4. Next add your ground hamburger to the same pot and saute till lightly browned.
  5. Then add in your onions, garlic and peppers.
  6. Pour in a can of kidney beans, pinto beans and tomatoes and simmer on medium low.
  7. Once everything is hot, add in 1/2 a can of your refried pinto beans.
  8. Add in all your spices and season with salt and pepper
  9. Pour in 1/2 cup of water, a splash of red wine vinegar along with 1 chicken stock cube.
  10. Simmer on medium – low stirring often for one hour.
  11. Or in your Crock Pot – on low 6-7 hours
  12. Serve with fresh bread or cornbread, enjoy!

Note: You can always use ground turkey or a vegan meat supplement if you like instead of beef.

Asparagus and Cheddar Omelettes

These Asparagus and Cheddar Omelettes are Amazing! Do do you like your breakfast with a little cheese? How about fresh asparagus? Then you need to try this delicious recipe. 

Not only do we make this breakfast at home quite often, we also  like to make them when we camp too. Whether your hiking, swimming or just going to the office.  It will provide you with a healthy, filling and fueling start to the day. 

This breakfast is sure to satisfy even the hungriest of campers, so why not make it during your next camping trip too! Who said camping food has to be bland? This is fine dining if you ask me, and literally takes less than 10 minutes to make each person’s breakfast to boot. 

So if you do make this for someone while camping they will sure be thanking there lucky stars you came along for this trip. But don’t just take my word for it, try it for yourself. 

Packed with so much fiber and protein, this recipe is sure to satisfy even the pickiest of eaters.

Note: If you’re camping in bear country, take appropriate precautions to keep your campsite as unattractive to bears as possible. To do this simply purchase and properly use a bear-proof garbage container or ensure all your garage is placed in a sealed bin in your vehicle or at a designated dump once your done cooking, this helps keep our wildlife safe and you as well.

Cheesy Egg and Zucchini Scramble

We like to eat good when we are camping, can you tell? But we don’t like to spend the whole time cooking and cleaning up, so we try to make it as simple as possible. 

This whole breakfast can be made in one non stick pan and should take you less than 30 minutes to make give or take. 

Packed with so much fiber and protein this meal will be sure to satisfy any hungry camper.

Who said camping food has to be bland? This is fine dining if you ask me, try it yourself on your next camping trip and you decided if it’s a keeper and don’t forget to serve with some bread.

Garden Tomato Pie

It’s that time of year, where our gardens are bursting with tomatoes. So why not make a tomato pie? I love tomatoes, don’t you? I also have a pre-made pie crust in the freezer, so I thought why not make this delicious pie and share it with my readers. You can make your pie crust of course, or just buy a pre-made one and have this on the dinner table in under 45 minutes. It’s great for breakfasts or dinner and you can add any kind of tomatoes you like. Looking for a more vegetarian type tomato pie, simply omit the eggs and add some sauté asparagus it will be just as good.  I hope you give it a try, I’d love to hear how you liked it in the comments below!!

What you will need:

To make the Garden Tomato Pie:

  1. In a mixing bowl, combine the cheeses, sour cream, eggs, chopped green onion, mayonnaise, and whisk together till blended.
  2. Next, on cutting board slice garden tomatoes, pat dry with a paper towl to remove excess moisture
  3. Season generously with salt, pepper, thyme, basil.
  4. Pre-heat oven to 425F.
  5. Sprinkle a little flour on the pie shell, to ensure the shell.
  6. Then pour your cheese mixture into the pie shell and then top with you garden tomatoes, drizzle a little olive oil on top and season lightly with salt and pepper.
  7. Bake for 30 minutes until crust has completely browned and the tomatoes have roasted.
  8. Serve immediately, enjoy!

Note: You can pre-cook some bacon and crumble it over the pie if desired.
