Sun Dried Tomato Pesto Pasta

This Sun Dried Tomato Pesto Pasta is something I came up with on a lazy Sunday. It is super easy to make and full of some familiar flavors that your going to love!

Grab your favorite pasta, I like to use a large swirly macaroni, a jar of pre made “Classico Basil Pesto”, along with white shredded cheddar cheese and of course some sundried tomatoes.

HOW TO MAKE SUN DRIED TOMATO PESTO PASTA

Your going to want to start by cooking the pasta. Then while that is happening you can chop and sauté the sun dried tomatoes, this helps to tenderize them and give them flavor.

Unless your using some sundried tomatoes from a jar that is packed in oil. In that case you won’t need to add any extra oil and can skip heating them up all the way at first.

  • Then start by boiling a pot of salted water, then cook the pasta according to the packages institutions. Strain and set aside.
  • Next chop the sundried tomatoes and saute them with 1 tbsp of oil till soft and slightly charred. 
  • Add back in the cooked pasta and toss with the sun dried tomatoes, basil pesto, olive oil and cheddar cheese.
  • Once the cheese has melted serve and enjoy!

Couldn’t you just snuggle up to a BIG bowl of this tonight? Go ahead and create few meal preps with it for the week ahead also if you like. I love to do that when making this recipe.

Feel free to use Fettuccine or Spaghetti for this recipe as well, just be sure to chop those sundried tomatoes up small enough according to your pasta choice. 

You can always add some sliced chicken breasts or shrimp to this pasta if desired. All the above would work well and add some protein. 

Looking for a gluten free option? Simply find a pasta that is 100% gluten free and your good to go. Who said those with Gluten allergies could not enjoy a good pasta dish too!

HOW TO MAKE CHICKEN PESTO RAVIOLI PASTA

  • To make this dish all you will need is one large cooking pan.
  • A chicken breast, a can of pesto and parmesan cheese. 
  • Oh and of course a package of pre-made ravioli

What can be easier than that? You can use just about any type of Ravioli as well for this recipe.

For this recipe, I used Olivier Spinach Ravioli however you can use any kind of pre-made ravioli that you like. 

WHAT IS CHICKEN PESTO PASTA

It is cooked chicken breasts and pasta that are seasoned with pesto!

Also, I like to use the Classico Pesto as seen below! 

I hope you can forgive me as I was in a hurry and did not want to make any Ravioli or Pesto from scratch. If you want to though then by all means go ahead.

Their are a ton of great recipes on the web for both of those ingredients.

However if your in a time crunch like me, then follow along.

The pesto gives the dish it’s  fantastic flavor, which has balance of flavors that is not at all overpowering but rather savory.

This type of Ravioli is defiantly for those with a more sophisticate palette and it can be served for just about any special occasion that you can think of. 

Quite simply it’s a dance of wonderfully balanced flavors in your mouth.

This recipe can be served as a romantic dinner for two or double the recipe and then you can serve a family of four or more.

Then I add a some fresh parmigiano reggiano and it’s ready to serve in no time at all.

Fettuccine is a type of pasta that has always been very popular in Italy. In fact it’s typically served in every italian restaurant across the globe.  

You can always add some sliced chicken breasts to this pasta and or mushrooms if you liked.

They both work well with Basil Fettuccine, however it’s not needed. 

I like to make this recipe for those times where I am just craving some good pasta. 

Just make sure your using a good quality Fettuccine as it will make a world of difference in how this plate tastes.

Also you can go ahead and fancy this dish up a bit and serve it alongside a nice caesar salad and a glass of white wine.
