Seafood Boil Butter Sauce

This Seafood Boil Butter Sauce recipe starts with a homemade onion, garlic butter sauce that is served with steamed crab legs, hard boiled eggs, shrimp and potatoes. You can pull this all together in under 3o minutes!

If you love seafood but want to elevate the regular garlic butter sauce to a rich butter dipping sauce then your going to want to try this recipe!

You can also add corn on the cob to this boil if desired or other seafood such as mussels, lobster etc.

Serve with fresh lemon wedges which make the seafood flavors pop!

WHAT IS SEAFOOD BOIL SAUCE MADE OF

Butter and Chicken stock along with fresh onions, garlic and special mix of seasonings 

You can omit the chicken stock if desired, however it will be less healthy as butter does have allot of fats.

But to each there own! Make it as you wish 🙂

HOW TO MAKE SEAFOOD BOIL SAUCE

  • You can use all butter or half it as I like to do with the addition of chicken stock
  • Then you are going to want to slice some fresh onions and chop some garlic and sauté it in butter alone
  • Start with the onions and add the minced garlic in once the onions are soft and cooked well
  • Toss in the spices and chicken stock if desired and simmer for 5 mins to serve

SEAFOOD BOIL SEASONING

  • 1 tbsp Brown sugar
  • 1 tbsp Lemon pepper
  • 1 tbsp Old Bay Seasoning
  • 1 tsp Cayenne pepper
  • 1 tbsp Red pepper flakes
  • 1 tbsp Chili powder
  • 1 tbsp Paprika
  • 1 tbsp Cajun

WET ingredients 

1 tbsp Worcestershire sauce 

2 tbsp lemon juice 

SEAFOOD BOIL SAUCE FOR EGGS

This sauce can be made just for hard boil eggs too!

WHAT DOES SEAFOOD BOIL SAUCE TASTE LIKE

It is buttery, garlicy sauce that can be made more sweet than spicy or spicy than sweet with hints of salt and lemon juice for a rounded flavor.

My recipe here has a balance of all these flavors. If you want it more sweet, simply add more brown sugar or more spicy add more Cajun or Cayenne pepper to the sauce during cooking it.

Grilled Lemongrass Chicken Vermicelli Salad

 

This Authentic Vietnamese Grilled Lemongrass Chicken Vermicelli Salad is super healthy and easy to make. The hardest part is dicing the vegetables the noodle/rice part takes no time and the chicken is simply marinaded prior then grilled and placed over the fresh salad to serve.

Vietnamese lemongrass chicken is a tasty dish made enticingly fragrant with lemongrass and savory spices. And is one of my all time favorite salads, I make this type of salad all summer long and have a few variations of it on this blog. 

It is such a great salad to try if you are looking to add an exotic flavor to your dinner table. 

Traditionally peanuts are added to this dish, I choose not too as I’m not a peanut fan.

What is Lemongrass?

Lemongrass has a citrus and lemon flavor, with a hint of mint. And is very popular in Thai cooking!

Grilled Lemongrass Chicken Vermicelli Salad

Starts by marinating chicken breasts in the fridge the night prior or a min of 1 hour if your short on time.

LEMONGRASS CHICKEN MARINADE

  • 2 large chicken breasts
  • 2 tbsp canola oil
  • 2 tbsp finely chopped lemongrass
  • 2 tbsp lemon juice
  • 2 tbsp soy sauce
  • 2 tbsp light brown sugar
  • 2 tbsp minced garlic
  • 1 tbsp fish sauce

WHAT IS IN A VERMICCILI SALAD

  • Carrots, cucumbers, fresh herbs such as cilantro, shredded iceberg lettuce and a meat protein of your liking.
  • Thai marinade and Vietnamese salad dressing

A SALAD FOR TODDLERS 

My toddler loves, I mean loves this recipe so much he eats it entirely!! 

WHAT IS VIETNAMES SALAD DRESSING

It is a traditional dressing that is used on almost every type of Vietnamese salad dish and the recipe can be found below. It serves very well over cold salads, that are then topped with a marinated then grilled meat protein of your liking.

VIETNAMESE SALAD DRESSING

Also know as “Nuoc Mam” sauce which is a sweet, salty, sour and spicy dressing. And contains the following ingredients 

  1. garlic (minced)
  2. cold water
  3. lime (juiced)
  4. rice vinegar or white vinegar
  5. fish sauce
  6.  sugar
  7. 1 red or green Thai chilies 
 

IS VIETNAMESE SALAD HEALTHY

Yes, it is packed full of fresh vegetables and herbs along with a lean protein such as chicken breasts.

Keep in mind though the soya sauce and fish sauce has a high sodium content so you may want to use a lighter soya sauce or less dressing on your salad.

This Simple Egg Curry Recipe is also know as Dhaba Style Egg Curry which is a style of curry that is prepared on a roadside café or food stall between Pakatan and India. You can have this delicious meal on the table tonight in the comfort of your own home in 30 minutes! 

I love to make this simple egg curry whenever I have a ton of eggs and I do not plan to eat them all before the expiry. 

This recipes is a quick, healthy and and inexpensive way to use eggs.

This dish also serves well with basmati rice, naan bread or chapatis

Each bowl has roughly 795 calories in it if your having 2 eggs per person

Keep in mind an egg is 155 calories so if you have more add them in.

African Red Stew

This dish is also known as Red Tomato Stew or Nigerian Red Soup and it consists of a cooked then broiled protein of your choice which is then stewed fresh fried tomatoes, onions, garlic and red bell peppers. You can also add an array of meats such as beef, chicken or fish. My recipe here uses goat meat.

If your wanting a recipe that includes 3 types of meats your going to want to try this Mixed Meat Nigerian Stew as seen below.

Some people will also add tripe as well to this dish. Personally my favorite way to make it is with boneless goat meat as you see here.

You will notice that I placed this recipe under the “hard” to cook category. The reason for that is because it takes some time and a few steps to make. But besides that it truly is worth the effort.

This stew is so special that it is served as the main dish during the holidays in Nigeria. Yup you heard that right, so instead of our North American Turkey they serve this.

WHAT TO SERVE WITH AFRICAN RED STEW

You can serve with Rice or Pounded Yam. Pounded Yam typically is prepared with a mortar and large pot and is made from scratch, however do to advances in the food industry you can now buy it in a “powdered form” and make the same thing. Find that recipe here > How to make Pounded Yam

Red Goat Stew has been a favorite recipe of mine since I was a little girl. Yup my mom cooked African food for me along with many other cultural dishes and so this is where I developed my love for spicy foods.

Now some people like this stew to be super spicy, I prefer it mild – spicy and so that is what I’m sharing with you today. The intense “Red” color that you see in this recipe is from the blended mixture.

Some people like there red stew to be somewhat running, I prefer my more thick as you can see above. I find it makes it really easy this way to pick up with the pounded yam and tastes better in my opinion.

However if you prefer it more liquidly, as some people do like to make it. Simply add 1/2 cup of extra stock to the cooking process at the end.

Notes: The type of curry powder you use here is important, you don’t want a masala type curry which is to mild. Ideally a Jamaican curry will work best here.

Poulet Yassa Recette

This Senegalese Poulet Yassa Recette is a somewhat spicy French West African recipe that is traditionally made with Chicken that has been marinated in a mixture lemon juice, Dijon mustard, garlic, onions and some spices. And is absolutely delicious and can feed a large crowd inexpensively. 

Senegalese Poulet Yassa Recette can serve a large group of people. My recipe here serves roughly six people, you can double it up easily to serve 12 if desired.

It also makes for excellent leftovers and can even be frozen if desired for some meal preps.

Is Poulet Yassa Spicy

Yes because of the cayenne pepper and Dijon mustard. You can always use more or less of the cayenne pepper and replace it for paprika instead if desired. But do not skimp on the mustard, however feel free to use regular mustard as that works well too.

Is a dish that is typically served to a large group of people on one single plate. Where everyone gathers around in a circle to eat it with there hands. It is best served on top of a large bed of rice! 

WHAT IS CHICKEN YASSA

Yassa is a spicy dish prepared mustard and caramelized onions which is cooked alongside fish or poultry and sometimes lamb.  

How to Make Poulet Yassa Recette

Poulet Yassa Recipe

  • Start by dicing the onions then garlic and place in a large bowl.
  • Add in the squeezed lemon juice, mustard, onions and spices.
  • Add in the chicken drumsticks and mix well to coat.
  • Cover and marinate in the fridge for a min of 1 hour or preferably overnight.
  • Take the chicken out of the marinade and separate the chicken from the onions (save the onion mixture)
  • Next, place 3 tbsp of cooking oil in a large pot and sauté the chicken on all sides till browned.
  • Place the chicken if desired in the oven under the broiler if you want it more dryer or crispy. Otherwise you can omit this step!

  • Remove the chicken from the pot add in 1 tbsp of the remaining cooking oil and sauté the onion mixture over medium heat for 30 minutes turning often to caramelize the onions fully.
  • Add back in the chicken and chicken stock and remaining spices.
  • Add salt and pepper to taste and simmer (not coveted over low medium heat till most of the liquid is gone.

 What is Poulet Yassa Chicken recipe served with

White rice, it is best served overtop so the rice can soak up all the flavors.

And is also best eaten with your hands, no fork or spoon needed.

Old Fashioned Chicken Curry

This Old Fashioned Chicken Curry recipe is ready in under 30 minutes from scratch and can be made mild or spicy. It is somewhat of a fusion dish as you can play around with the spices if desired.

Old Fashion Chicken Curry has elements of Indian and Caribbean flavors. The type of curry powder you use is up to you. If you want a more spicy curry I recommend using Madras curry powder or a Jamaican kind vs a regular Indian curry.

Also, I recommend using a minced scotch bonnet pepper or scotch bonnet sauce to add heat to this dish. However, if your not much into spice you can omit the extra spices all together as curry powder tends to have some heat to it. 

Like spice, then add those spices. You can always use red chili powder or cayenne powder instead and that works too and will make it more of an Indian curry also vs Caribbean. 

How to Make Old Fashioned Chicken Curry

  • Start by dicing the chicken breasts then place them in a large bowl. Squeeze the juice of half a lime over the chicken and mix. Set aside for 10 minutes to allow the juice to tenderize the chicken.
  • Drain the chicken and rinse with cold water.
  • Next in a blender, blend the onion, scotch bonnet pepper, garlic, ginger and spices along with the chicken stock to form a paste.
  • Now in a large pot add some cooking oil and fry the chicken till lighly browned and cooked.
  • Add 1 more tbsp of cooking oil and all the spices, Fry with the chicken till fragrant roughly 5 more mins.
  • Pour over the liquid paste from the blender and stir
  • Season with salt and cover over low-medium heat for 30 minutes till cooked.
  • Serve with Naan bread or basmati rice

Cooking methods:

  • Simmer on a low-medium heat for 1 hour on the stovetop
  • Cook in the pressure cooker around 10 minutes or depending on your instructions
  • Cook in the slow cooker from 8-10 hours.
