Classic Creamy Coleslaw Salad

This Classic Creamy Coleslaw Salad goes well along any summer recipe you may be serving.

Some people like their coleslaw thick, creamy and sweet, while others prefer it light and tangy. 

This recipe leans more towards to thick, creamy sweet coleslaw that many grew up with.

If you’re looking for a lighter tangy slaw then check this recipe out for a Light and Tangy Coleslaw.

Both recipes are just as good, so it’s all about personal preference. 

HOW TO MAKE CREAMY COLESLAW 

  1. For the Coleslaw: In a large bowl, combine cabbage and carrots  (or empty your bag of cabbage carrot mixture into the bowl).
  2. For the Dressing: In a smaller bowl, make the dressing by combining your mayonnaise, apple cider vinegar, celery salt, garlic powder, lemon, sugar, salt and pepper to taste.
  3. Slowly add the dressing into cabbage mixture until you have the desired amount.
  4. Allow it to chill in the fridge up to one hour to let the dressing marinate.

You may need less dressing, depending on how much cabbage your using.

Taste for seasoning and adjust as needed. Serve alongside any summer dish and or double the recipe and make for a crowd.

Cheesy Tuna Casserole

I call this the works tuna casserole, because it has a bunch of healthy stuff in it like fresh parsley, tomatoes and red peppers. Then it’s smothered in cheese, YESSSS Cheese! 

Tuna casserole never tasted so good and your family will not believe this is made with tuna. I like to make this dish with eggless noodles, making this dish ready in under 30 minutes flat. 

Great for a quick and healthy weeknight meal or even excellent casserole to serve at your next family gathering. Just you? Make numerous small portions and freeze it for quick on the go meals. 

You can prepare this dish with chicken, turkey or hamburger meat as well or make vegetarian, all four ways are amazing. 

However I like to make it with tuna, because it’s just another way for me to get fish in my diet.  If you end up giving this a give it a try, I would love to know how you liked it. Bon Appetit!

Oven ready in less than 5 minutes. I encourage you to try it with the tuna it’s = delicious.

White Chocolate Macadamia Nut Cookies

T’was the night before Christmas, when all through the house, not a creature was stirring, not even a mouse. And that’s because the mice know that these cookies are for Santa and his reindeer. 

WHO INVENTED WHITE CHOCOLATE MACADAMIA NUT COOKIES

White chocolate chips were invented by Nestle in the 30’s, but macadamia nuts weren’t available to the public until 1975. Sometime after that these delicious flavors found each other, and history was made. 

I just love Macadamia Nuts and putting them in cookies is Amazing.

Plus these are Santa’s favorite cookies, so make sure save some for him too.

There are various recipes online that claim to be the best, I have tried a few. I have also tried a few from cookbooks and magazines that I have in my library.  I’ve come up with this recipe that makes the best large chewy cookies that everyone is sure to love.

CAN YOU FREEZE WHITE CHOCOLATE MACADAMIA NUT COOKIES

Yes, once you make the dough you can freeze in into small balls in the fridge for up to 3 months. Covered of course, then simply defrost them and smash them down before baking. 

HOW TO MAKE White Chocolate Macadamia Nut Cookies

The key is the ingredient ratio; along with using butter and shortening in the recipe. So be sure to follow this one to a tea and you will be sure to have the best cookies this time of year.

Christmas is just right around the corner, so I am getting my holiday baking done early this time. That way I have plenty of time to do all the other things that are at hand.

These cookies are simple to make and really go well with a cup of milk, rather rumor has it.

These White Chocolate Macadamia Nut Cookies are one of Santa’s favorite cookies.

So if you leave them by the chimney this Christmas he may leave behind something extra special for the baker.

Notes: After cookies are completely cooled, place in airtight container or plastic freezer bag.  Keep the dough refrigerated if you are going to be making these in batches.

Bacon & Ranch Potato Salad

Who likes Potato Salad? How about a Creamy Ranch and Bacon Potato salad? Well then this recipe is for you! 

Not to mention is super simple to make.

I like to make this recipe for when I am having company. 

Because it sure goes a long way and typically can feed anywhere from 8 -10 people.

If you are having more people, simply double it up! It’s always sure to be a hit, and doesn’t cost much to make.

We sent our fur friend out to find the freshest potatoes for this recipe and he sure didn’t fail us.

When he came back with a box full of them.

Unfortunately he is allergic to onions. so he had to pass on this recipe.

However he did snack on some of the bacon of course. 

To make the salad you will want to pre- cook the bacon and potatoes, once your bacon and potatoes have cooked and cooled down.

Then you will add in remaining ingredients and allow it to set by chilling in your fridge before serving. We hope you enjoy!

Note: If you are planning to leave the house and want to take you salad with you. You can keep it cold by placing your potato salad into a pre chilled container.

Creamy Thai Pumpkin Soup

This Creamy Pumpkin soup is healthy and easy to make. If is also sure to fill the air and kitchen with a nice aroma too. 

Just make sure before making this soup that you are using “Pumpkin puree” not “filling” for this one as there is a BIG difference in how this will turn out.

Also you can use any type curry for this kind of soup, however we do recommend this brand of “Thai Red Curry paste” below.

Because it has the flavorful spices of lemongrass, galangal and kaffir leaves in it that puts this soup into the Thai cuisines category.

Red Thai Curry paste can be found in pretty much any asian aisle in your local grocery store. So if you have not cooked with it before, we encourage you to give it a try.

The pumpkin works so well in this recipe, not to mention Looking for a purely vegetarian soup, just omit the chicken stock and use vegetable. Easy eh 🙂 Enjoy

Very Berry Mint Hibiscus Tea

If you’re looking for a refreshing Summer drink then this Very Berry Mint Hibiscus Tea is sure to hit the spot!

My girlfriend introduced me to this tea some years back.

Actually it was around the Christmas holidays, and i received a nice gift package with a tea set and a number of teas. That is when i first tried and fell in love with this tea.

Then i was drinking it hot, but it’s much better brewed and chilled. And definitely one of my go to summer iced teas. So where did these BEAUTIFUL flowers come from anyway? 

Well the ancestors of today’s modern hibiscus hybrids were sprinkled all around the globe, following the Equator from one warm, tropical land to the next.

The eight hibiscus species that are considered to be the ancestors of the modern exotic hibiscus were originally native to Mauritius, Madagascar, Fiji, Hawaii, and either China or India.

You may have seen this beverage as of late coming out of Starbucks but i am telling you forget that over priced version and start make your own at home.

The health benefits of hibiscus tea are UNBELIEVABLE so go find yourself some shade, and allow yourself some time to relax because you deserve it darling!

HOW TO MAKE HIBISCUS TEA

  1. In a large pitcher, place 3/4 cup of dried hibiscus.
  2. Add 8 cups of filtered cold water.
  3. Cover pitcher and let chill in the fridge overnight or up to 24 hours.
  4. Tea will turn a dark red color then you know its ready.
  5. Strain your tea and discard the dried hibiscus (its to bitter to keep)
  6. Add your Agave or Honey and transfer back into your pitcher.
  7. Mix all together and serve immediately over a glass of ice cubes.
  8. Squeeze 1/2 tsp of lime and and enjoy!

To make the tea with tea bags:

  • In a large pitcher, place 8 hibiscus tea bags.
  • Add 8 cups of hot water and add 2 bruised mint leaves.
  • Cover pitcher and let chill in the fridge overnight or up to 24 hours.
  • Tea will turn a dark red color then you know its ready.
  • Strain your tea and discard the dried hibiscus (its to bitter to keep)
  • Add your Agave or Honey and transfer back into your pitcher.
  • Mix all together and serve immediately over a glass of ice cubes.
  • Top with a few fresh mint leaves and and enjoy!

Note: Makes one gallon of tea, double it up if you want more.

Dill Pickle Potato Salad

This Dill Pickle Potato Salad is made with garlicky dill pickles and it’s juices, egg, russet potatoes, mayonnaise, plain yogurt, dijon mustard and fresh dill. 

Let me tell you, this recipe is a sure WINNER!

This salad can be thrown together in no time at all.

I brought this to a potluck recently and obviously did not make enough to feed the 10 people there.

It was gone in no time at all, so if you’re wanting to prepare this for a group of 10 or more double it up, it’s easy to do so anyway.

Wanting to serve a larger crowd? Simply double up the ingredients! 

To make this vegetarian omit the mayo and eggs and use a vegetarian mayo.

Personally I like using Hellman’s mayo, it’s my favorite!

Matcha Green Tea (Latte)

One of my favorite drinks to order during the summer months at Starbucks has to be there Matcha Green Tea latte. At one point I was drinking at least one per day and at near $4 dollars a pop, I was definitely feeling a bit guilty at times. I have now learned to make the same tasting lattes at homes, saving myself nearly $3 dollars each time. 

So guess what that means? I get to have 4 a day now! Just kidding, that would be antioxidant overload. And that would be just CRAZY… or would it? You can make your’s with milk, almond milk whichever you prefer.

I like to melt honey into the hot water because this adds just the right amount if sweetness. Also keep in mind when purchasing your Matcha powder be sure its organic and sustained in a good place, this way you can ensure its made properly.
