Chicken Chickpea Curry

This One Pot Chicken Chickpea Curry has a wonderful depth of flavor that you’re sure to love.

HOW TO MAKE CHICKEN CHICKPEA CURRY

  • This popular dish is made with boneless chicken breast and simmered in a rich tomato spiced cream sauce that you’re sure to love.
  • You can prepare this dish all in one pot on the stove or in your slow cooker/pressure cooker.
  • I like to prepare this in my slow cooker on the browning setting, just make sure you are using that lid otherwise you will have a mess for sure.
  • Find cooking instruction below in the recipe card.

I have experimented with plenty of curries for some time now, so you can trust me when I say this recipe is a sure winner.

Now you will want to go down the ethnic food aisle in your local grocery to pick up some “Madras Curry” which is the right kind of curry powder for this recipe.

Then you will add just a few more traditional Indian spices that will make this dish absolutely amazing.

Also if your not to familiar with dried fenugreek leaves, then I encourage you taking a stroll down your groceries ethnic for those as well.

They are sure to have it there somewhere, however if you cannot find them feel free to use cilantro or parsley instead.

Who said it takes a chef to make real Indian curry? Obviously never was in your kitchen.

Feel free to omit the chickpeas if your not a fan, however I love them and find they work so well in this recipe.

Not to mention add more fiber and helps to spread the meal out so you can have leftovers the next day.

If you prefer a much more spicier curry, I definitely recommend that you use fresh tomatoes versus canned. The canned tomatoes do give it a hint of sweetness that I find contrast well with the spices.

However this is your curry, so do as you please.

Cooking methods:

  • Simmer on a low-medium heat for 1 hour on the stovetop
  • Cook in the pressure cooker around 10 minutes or depending on your instructions
  • Cook in the slow cooker from 8-10 hours.

If you like curry dishes as much as me then you are going to love this simple recipe. Be sure to make some basmati rice to serve alongside or if you really want to make it extra special go ahead and make some homemade Naan Bread.

Easy Chicken Tikka Masala

Craving curry tonight? Well skip the take out and impress your family tonight with this easy to make and authentic tasting curry.

This is my take on a healthier version of Chicken Tikka Masala.

What makes it healthier that we are omitting the cream and replacing it with 2% milk and then adding plain yogurt as well.

What makes it easier is that we are not blending the onions after cooking them rather just allowing them to simmer in the pressure cooker.

Also if you can get your hands on “green cardamom pods” which you can find in your ethnic spice isle, do add a few of those. This really adds a unique taste and is soooo good in here.

Packed with so much flavor this recipe will definitely remind you of some of the best Chicken Tikka Masala dishes that you have tried at your favorite restaurant.

In addition I like to add some mini potatoes to this recipe, however those are not typically used in Tikka Masala.

I think they go so well with this dish, so I will leave that ingredient option up to you. You can also serve this with rice OR naan bread.

If you end up giving it a try, do let me know in the comments below. I would love to know what you think 🙂

Notes: For a spicier curry add 1 tbsp of red chili powder. Also feel free to omit the mini potatoes if you would rather serve this with rice or naan bread.

Chickpea Curry

Today I’m sharing with you one of my newest fusion dishes. What makes this a fusion dish is the combination of the “Thai Green Curry Paste” and “Indian spices”.

I ALWAYS have Indian and Thai ingredients on hand so this dish will be really easy to make if you do to.

This recipe is definitely one of those top vegan/vegetarian recipes that we like to enjoy in our home often.

Made with coconut milk, chickpeas, roma tomatoes, canned tomatoes, onions and an array of spices.

You are sure to enjoy the amazing flavors in this dish!

Actually it’s my partners favorite curry dish right now and he is more of a meat eater, so trust me when I say, it’s that good.

In our home we eat vegetarian at least 3x per week and that is if I am cooking. “Which 95% of the time I am. So I hold all the power in deciding what goes in our meals. Thank God!

Otherwise we probably would be eating takeout every night. Which is fine and dandy when your in your 20’s but we are now in our 30’s and try to watch what we eat.

So what are you waiting for? You can have this absolutely delicious and healthy curry on the table tonight in under 30 minutes.

I am so thrilled you are reading one of my recipes, if you made this recipe i’d love to hear about it! Thank you very much for reading and until next time see ya in the kitchen. Don’t want to miss a recipe? Sign up for our NEWSLETTER delivered right to your inbox every Month!

Bunny Chow

Spicy lamb Bunny Chow originated in South Africa, in Durmas area. And then spread throughout the region from there. Today it is served in many European Restaurants and in many homes of “Afrikaans” as a staple food. And I see why, it is absolutely delicious!

What is Bunny Chow anyway? Well it’s a curry that is traditionally made with Lamb or Mutton or just Vegetables and then it is put inside a loaf of bread for serving.

History tells the tale of some Indian sugar plantation workers that started to take this food to work daily in a loaf of bread with (no plate) and from there it just took off as one of South Africans famous foods.

Today this recipe has become a hit in Europe and beyond. I prefer to make this recipe and then place it into “Crusty Bread” as opposed to the traditional “Bunny Bread” which is a plain soft white bread.

Of course this is my personally preferences, you can choose to prepare it either way! And do not be afraid to eat this one with your hands either, that is how it’s done.

Cheese Butter Masala (Paneer Makhani)

Craving curry but looking for an alternative to the typical “meat curry” options? Why not try the vegetarian alternative to Chicken Tikka Masala with this Cheese Butter Masala aka (Paneer Makhani). Indie’s favorite curry by the way, she just can’t get enough of the creamy, cheesy flavors!

From the research Bubba gathered on this dish, he concluded that this Cheese Butter Masala (Paneer Makhani) is a very popular dish in North India.

And is eaten often by the Hindu communities, who are mostly vegetarians. Bubba, Hunter and Indie wish they could be vegetarians like the Hindus, but insist they’re just not ready yet. But with dishes like this they sure could try to be more often.

This cheese can be found in pretty much any major grocer and is a nice change to meat. We hope you like it as much as we do!

So creamy and cheesy!

Note: You can add 1 tbsp of fried onions to the  butter mixture of desired. And top with dried fenugreek leaves or parsley.

Indie says, when Panner is in the air everyone is sure to want some.

Spicy Coconut Chicken Curry

This Spicy Coconut Chicken Curry is a fusion type dish that I came up with in the past year or so.

This dish is packed with flavors that your sure to enjoy!

As you may know, I love Thai and Indian food. So you will always find all those types of spices in my pantry along with coconut milk.

For this recipe, I have infused spices from both cultures, to come up with this Chicken Potato Curry recipe, that I think is worth sharing. And have made time and time again in my kitchen.

Everything goes so well together to make a creamy, spicy and flavorful curry. Serve over a bed of jasmine rice or alongside some naan bread.

NAAN bread also goes amazingly well with this meal. You can find that recipe at the bottom of this post!

This dish can be made with shrimp too, just add your shrimp during the last 5 minutes of cooking and omit the step  of cooking the chicken.

Cooking Methods:

  • Pressure Cooker: Cook for approx. 10 minutes – after following the initial steps 1-6.
  • Slow Cooker: Place on LOW for 2-3 hours HIGH for 3 hours. – after following the initial steps 1-6.
