Prosciutto and Spicy Capocollo Pizza

This Prosciutto and Spicy Capocollo Pizza is for the meat lovers out there OR those who typically order pepperoni pizza.

If you have tried my other homemade pizza recipes and liked them than I’m certain you will like this one.

This Prosciutto and Spicy Capocollo Pizza is for those who are pepperoni pizza lovers, however this recipe is much much better than a plain old pepperoni pizza.

Since it has intense flavor and that comes from the spicy capicola that is balanced off just right by the prosciutto.

You can always add some veggies if you like, however I like to keep it simple sometimes and this recipe does just that.

The crust is always done the same way, adding just a little bit of sugar which really makes a huge difference to how the pizza turns out, so please don’t leave that step out.

Give it a try, you may never go back to plain old pepperoni ever again.

Once you learn to make homemade pizza yourself you will not want to go back to ordering takeout everytime, or settling for that plain old frozen box stuff either.

This recipe makes a large 14 inch thin crust pizza or a medium 12 inch, wanting to feed more people?

Then just double the recipe up and cut the dough in half to make more pizzas. Serve with Parmesan Cheese and a side salad if desired.

STEP 1 & 2: First make sure you have the DOUGH and SAUCE part figured out. Either make both from scratch (recipes provided below) OR buy them pre-made.

 And there you have it the tasty meat lover pizza, ready to enjoy!

Notes: Do you want some extra heat? Simply sprinkle some hot red chili peppers over the sauce. And cook the pizza on a pan  to ensure even cooking, if you don’t have a cooking pan then cook your pizza on the bottom rack.

Also you can double or triple up the dough ingredients, and freeze the dough for use within the month. Don’t forget the sugar, the yeast feeds off it and that allows it to rise properly.

Easy Pizza Ratatouille

This Easy Pizza Ratatouille with Mozzarella Cheese is so good you won’t believe it’s Vegetarian. 

I just love Ratatouille, it’s fresh, healthy and so good for you.

And is one of those excellent summer time recipes, since it utilizes all those fresh garden vegetables so well.

Not to mention very pretty, just look at the rainbow of colors.

Made with a few simple ingredients.

That being of eggplant, zucchini, tomatoes and mozzarella cheese it doesn’t get any fresher than this. Which is then smothered in a quality can of tomato based pizza sauce.

Your sure to impress anyone when serving this dish!

There are many recipes out there for this famous french dish called “Ratatouille” and plenty different ways to preparing it.

Traditional Ratatouille is made without cheese, however I like to add Mozzarella to mine, because it really enhances the recipe and makes it taste more like a pizza without the added carbs.

Lay upon layer of Tomato, Green Zucchini, Yellow Zucchini, Mozzarella Cheese and Eggplant!

Also be sure to cook it for a minimum of 2 hours as that sure helps to bring out all the vegetables flavors which happens through caramelization.

This recipe is sure to be a family favorite, and is gluten free.  I hope you like my version of this famous dish. “Bone Appetite”!

Traditional Beef and Cheese Lasagna

This Traditional Beef and Cheese Lasagna reminds me of something my Mother use to make me. 

This is more of a traditional recipe for Italian lasagna and is my all time favorite way to make homemade lasagna hands down. 

Good food that lasts until next day was always something my Mother aims for. 

And this recipe is one of those dishes!

HOW TO MAKE LASAGNA RECIPE

  • First you will want to get your hands on some fresh basil for this lasagna, along with the right types of cheeses.
  • All which is very important in making a traditional lasagna.
  • For the cheeses you will want are Ricotta, Fresh Mozzarella and some Edam cheese. 
  • The Edam cheese will give this lasagna it’s nice crust.
  • Also Ricotta cheese for the inside works so good.

CAN LASAGNA BE MADE WITHOUTH RICOTTA CHEESE

Yes, you can substitute for cottage cheese if you like. It is just not as traditional! 

WILL LASAGNA NOODLES COOK IN THE OVEN

Yes, but you must pre cook them on the stove top first in boiling water. 

Then lay place them in layers between the sauce and cheese and hamburger before baking. 

This will in turn leave you will a moist yet firm and perfectly browned lasagna.

That is sure to impress even the pickets of lasagna eaters.

Healthy Eggplant Parmesan

I call this recipe “Healthy Eggplant Parmesan“, because we are baking the eggplant vs deep frying it in oil. 

IS EGGPLANT PARMESAN HEALTHY

Yes, it has lots of vegetables and spices in it.

If you are on a low calorie diet you can use less cheese if desired and omit frying it in oil. 

Now I know many Italians swear by frying the eggplant in olive oil prior to baking.

However that is not very healthy and so I find that baking it just as good. 

WHAT EGGPLANT PARMESAN

This Eggplant Parmesan uses one large eggplant, fresh mozzarella and parmesan cheese, panko bread crumbs, eggs and your favorite tomato sauce of choice along with some Italian spices.

You can also add spinach to this recipe if desired, either way your going to fall in love with this recipe. Guaranteed!

WHY IS MY EGGPLANT PARMESAN TOUGH

Because, you simply need to soak the eggplant prior in water and salt to tenderize it.

That way it will turn out just as delicious as the kind that is fried in oil.

Also this recipe is suitable for those a on keto or low carb diet, since there’s no pasta used in this one.

You will want to start by soaking the eggplant in water and salt before hand to tenderize and remove any of the bitter taste.

Don’t miss this step, it’s important.

Now, if you think you will be missing out on the meat protein here and feeling hungry afterwards.

Then you will be pleasantly surprised to find this meal is just as filling as say Chicken parmesan. 

My family much prefers Eggplant Parmesan now to Chicken Parmesan.

IS EGGPLANT PARMESAN VEGETARIAN

Not this one as it has eggs, however if you want to make it you can skip the eggs. 

I like to make a large casserole dish, which makes about 6 individual large servings.

Typically we will eat this over the next few days and sometimes I will make two batches and freeze a bunch for my meal prep lunches. 

Your family will not believe this is made with eggplant. Just you?

Make numerous small portions and freeze it for quick on the go meals for down the road.

Yes, and you can make it into meal preps for lunch or dinner for another time. 

MEAL PREP IDEA: Make enough to create a few meal preps bowls for the week ahead.

By sectioning each eggplant medallion off into “meal prep” bowls in which I freeze for lunches/dinners for down the road.
