This Chicken Pho Soup is allot like basic chicken noodle soup, in the sense that it has chicken broth and chicken along with noodles in it. However it has a Vietnamese twist that your sure to love.
Anyone can make Vietnamese food and this soup is no different. The difference between this soup and those that come from the street vendors in Vietnam is the stock. In Vietnam they make the stock from scratch which I am not going to lie is delicious, but time consuming.
Making any kind of Pho Soup from scratch can take hours.
My recipe will have this soup on the table for you in under 30 minutes, so I encourage you to use your favorite chicken stock for this recipe. The better the stock the better the soup of course.
I like to spice my soup up by adding chili paste! If you don’t like spice just omit the chili paste.

Because it has all the same elements of any chicken noodle soup, with the addition of coconut milk, red Thai curry paste (see below my favorite kind) and a few other elements.
Packed with immune boosting ingredients this soup will leave you feeling good and craving more.

This Salmon with Cheesy Orzo pasta is really satisfying and is super easy to make. Growing up I loved macaroni and cheese, the box stuff.
I know I know, it’s not good for you. So that is why I now make the grown up version = Cheesy Orzo! Pair that with a healthy salmon fillet and you will be in comfort food heaven.
To pull this dish together, we will start by cooking the orzo in a medium saucepan to tenderize it. Then adding some chopped spinach near the end, along with fresh parmesan and jalapeno cheese cheese.
The two cheese really give it a nice texture and flavor, so be sure to use both. You can always substitute the jalapeno cheese for mozzarella if you prefer a more mellow tasting orzo.
Once the orzo is fully cooked, you will remove it and set aside. To finish pan sear each salmon fillet in a little olive oil and some seasonings before serving!

If your wanting to accompany this dish with orzo pasta. Then make sure you start by cooking that first, and once it’s cooked set aside.
Notes: Squeeze a little bit of fresh lemon juice over top for a little tang if desired.

In our home we like to eat Greek food every so often, it’s such a healthy cuisines and so very tasty.
This dish is made with a few simple seasonings that will bring in the depth of flavor you crave in Greek food.
This is the fastest version of a traditional home cooked Greek meal, there is no BBQ or Kabobs involved here.
Just one baking pan and a few ingredients that you’re sure to have in your spice rack.
I prefer to use a mix of fresh and dry spices, however you can use whatever you have on hand.
Included below is my super delicious recipe for homemade Dill & Mint TZATZIKI sauce which goes excellent with this meal.
