Ho ho ho! Keep calm they say the holidays are near. However with all this planning and preparing to get there it can be less than calm for some.

Would it not be nice to be able to prepare a dessert for 8 or so people in under 1 hour and have them thinking you spent all day? Well look no further, if you are short on time then you are going to love this recipe.

 

Now let me ask you a serious question, do you know anyone that doesn’t like cheesecake? Well I don’t. 

o trust me when I say, that these cheesecake cups are sure to put a smile on everyone’s face this Holiday Season.

These cups are so good that people may just ask for seconds, or thirds.

You serve them chilled, which allows you to skip on the baking part and saves you a whole lot of hassle.

Giving you plenty of time to do whatever else it is that may be on your to do list.

You will be shocked at how easy this recipe truly is and I promise you it does not skimp on flavor at all. People are going to be asking you how you did it? But let’s leave that little secret to us kitchen warriors.

JAMAICAN RICE AND PEAS

This Jamaican Rice and Peas is comfort food for most people who live and love the island life. It is also super simple to make and real tasty! 

Serve with some Jamaican Jerk Chicken and you will have a meal fit for a King & Queen.

Also note that the lime addition is optional. 

WHICH BEANS FOR JAMAICAN RICE AND PEAS

Traditional Jamaican rice and peas calls for dried red kidney beans.

If your in a hurry you can use canned instead.

However like to use the dry, simply soak them in water overnight and they will be ready to go!

HOW TO MAKE JAMAICAN COCONUT RICE AND PEAS

This recipe is a tried and true recipe: I have made it several times in the past year. 

You will want to have on hand:

  1. Kidney beans, the dry variety must be soaked for a min of 8 hours. I prefer to use the canned as it makes for a quicker side dish.
  2. Fresh Coconut Milk, the less liquidly variety is best. 
  3. Scotch Bonnet pepper, I prefer to use the sauce as it saves my hands and eyes from burning. 
  4. Long grain rice
  5. Onions, garlic and spices.

Also, when you are shopping for coconut milk.

Look for a cream vs a milk.

The milks tend to be more liquidly and you can test this by shaking the can. 

Jamaican rice and peas/beans is not only healthy for you it’s very versatile dish.

This recipe is often served alongside other Jamaican main dishes.

Also, go ahead and serve this with an ice cold bottle of “Red Stripe Beer” Jamaica’s most popular beer.

COCONUT RICE AND PEAS INSTANT POT

Yes, you can also prepare this in the instant pot. 

Because traditionally for this recipe calls for the kidney beans to be soaked overnight in water and then boiled up the next day.

But doing this in the instant pot can help to tenderize them faster. 

HOW TO COOK JAMACIAN RICE AND PEAS IN THE INSTANT POT

  • You will simply start by sauteing the onion till soft in oil and then adding in the garlic.
  • Then add in the rinsed and strained rice, coconut milk/cream, water and spices. 
  • Stir till combined then and the beans on-top and do not stir. Rather close the lid and pressure cook the whole pot for 7 minutes. 
  • Once it has cooked, allow the steam to remove safety and serve with lemon wedges.

Creamy Thai Pumpkin Soup

This Creamy Pumpkin soup is healthy and easy to make. If is also sure to fill the air and kitchen with a nice aroma too. 

Just make sure before making this soup that you are using “Pumpkin puree” not “filling” for this one as there is a BIG difference in how this will turn out.

Also you can use any type curry for this kind of soup, however we do recommend this brand of “Thai Red Curry paste” below.

Because it has the flavorful spices of lemongrass, galangal and kaffir leaves in it that puts this soup into the Thai cuisines category.

Red Thai Curry paste can be found in pretty much any asian aisle in your local grocery store. So if you have not cooked with it before, we encourage you to give it a try.

The pumpkin works so well in this recipe, not to mention Looking for a purely vegetarian soup, just omit the chicken stock and use vegetable. Easy eh 🙂 Enjoy

Best Pumpkin Pie Ice Cream

Do you like Pumpkin Pie? Well I do, so much so that I can eat a whole pie to myself. So I decided to recreate the same pie with this Pumpkin Pie Ice Cream.

Have you ever added vanilla ice cream to your Pumpkin Pie? It becomes even more AMAZING, don’t you agree?

That is what this ice cream becomes. 

I grew up eating Pumpkin pie, it was always served as the main dessert around Thanksgiving, Christmas and sometimes on Halloween.

As a kid I never could get enough of it. And so I wanted to recreate this pie and make it into an ice-cream. 

My family loves Pumpkin pie too, so I made this inspired ice-cream, and boy oh boy this stuff is delicious.

Don’t believe me? 

Well then you’re just gonna have to try it yourself!

Maybe you will even skip the actually pie this year and serve this up and your next family gathering. I’m sure your guests won’t mind!
