Lemon Garlic Shrimp Tortellini

This Lemon Garlic Tortellini is super easy to make and can be on the dinner table in less than 30 minutes. It’s comfort food meets healthy food, and yes this is surely possible. 

My mom used to make tortellini often for me as a kid and I typically order Tortellini whenever I go to those Italian restaurants, I just love it.

I’m fancying it up a bit today by adding asparagus and shrimp. This dish has become our all time favorite shrimp pasta recipe.

Super satisfying this is sure to hit the spot if your craving something fancy for dinner tonight and comforting at the same time. You can always add chicken if desired, however I like shrimp best for this recipe.

You can use just about any pasta for this recipe, however I really like the tortellini. You will want to start by cooking the tortellini first in a pot of boiling water.

Then saute the asparagus till slightly tender along with the shrimp beforeing bringing everything back together to merge in the pan. Season with salt and pepper, lemon juice and white cheddar cheese before serving! Bon Appetit!

Sun Dried Tomato Pesto Pasta

This Sun Dried Tomato Pesto Pasta is something I came up with on a lazy Sunday. It is super easy to make and full of some familiar flavors that your going to love!

This dish can be put together in under 30 minutes So what are you waiting for?

Grab your favorite pasta, I like to use a large swirly macaroni, a jar of pre made “Classico Basil Pesto”, along with white shredded cheddar cheese and of course some sundried tomatoes.

HOW TO MAKE SUN DRIED TOMATO PESTO PASTA

Your going to want to start by cooking the pasta. Then while that is happening you can chop and sauté the sun dried tomatoes, this helps to tenderize them and give them flavor.

Unless your using some sundried tomatoes from a jar that is packed in oil. In that case you won’t need to add any extra oil and can skip heating them up all the way at first.

  • Then start by boiling a pot of salted water, then cook the pasta according to the packages institutions. Strain and set aside.
  • Next chop the sundried tomatoes and saute them with 1 tbsp of oil till soft and slightly charred. 
  • Add back in the cooked pasta and toss with the sun dried tomatoes, basil pesto, olive oil and cheddar cheese.
  • Once the cheese has melted serve and enjoy!

Couldn’t you just snuggle up to a BIG bowl of this tonight? Go ahead and create few meal preps with it for the week ahead also if you like. I love to do that when making this recipe.

Your family won’t believe that most of these delicious flavors in a jar, yes I use one simple product to make this pasta special, it is called “Classico Basil Pesto” see below.

Feel free to use Fettuccine or Spaghetti for this recipe as well, just be sure to chop those sundried tomatoes up small enough according to your pasta choice. 

You can always add some sliced chicken breasts or shrimp to this pasta if desired. All the above would work well and add some protein. 

Looking for a gluten free option? Simply find a pasta that is 100% gluten free and your good to go. Who said those with Gluten allergies could not enjoy a good pasta dish too!

Broiled Lasagna Soup

This Broiled Lasagna Soup is absolutely delicious and is one of our new favorite soup recipes! I created this recipe one day while I was making “onion soup” that recipe can be found on this blog as well.

I love soup so I’m always thinking of new ways to recreate the classics. This lasagna soup is similar to many other lasagna soups recipe you will find, however mine has a few other special ingredients such as passata sauce and Worcestershire sauce.

Not to mention it’s broiled at the end which makes it taste allot like real Lasagna.

So if you LOVE lasagna as much as we do then you are going to love this soup!

What I like about this soup is that there really is no effort to making it, well that is compared to actual lasagna.

Where you are to pre -cook the noodles and other ingredients before merging it all together in layers and placing it all into a large baking dish.

With this soup we are simply adding everything into a large pot and cooking it all together, it’s like a lazy lasagna.

And the last step will have you placing the soup into oven safe bowls, the same kind of bowls you would use to make “onion soup” and broiling it with extra cheese on top.

Then it’s like your eating a big bowl of lasagna expect there is some beef broth inside. AMAZING!

Also the time to cook it is cut in half compared to traditional lasagna. So it’s a win win! I really encourage you to get your hands on passata sauce, it’s fresh pureed tomatoes that have been uncooked and it really makes this soup creamy and so delicious!

Passata sauce can be found in almost any mediterranean market or in your local grocery in the canned tomato section. 

Now the trick to making the best “Lasagna soup” is also using the right cheeses. This soup calls for white cheddar cheese, and marble cheese along with a bit of ricotta for serving.

Notes: Feel free to freeze this soup it works great as leftovers, however keep in mind that broiling it from frozen doesn’t so much. Also make sure to break up those whole tomatoes with a wooden spoon while cooking, you do not want bites of whole tomatoes.
