Smoked Salmon Gnocchi

This Smoked Salmon Gnocchi is made with real salmon and smoked salmon cream cheese and hits all the creamy notes.

My Smoked Salmon Gnocchi is made with fresh basil, parsley, lemon juice and whole milk. I prefer to use milk instead of cream because the cream cheese is creamy enough.

SALMON GNOCCHI

Think VALENTINES or DATE night with this one!

Since Valentines is just around the corner, I could not help myself but share this recipe with you all. The first time I had Salmon Gnocchi was actually on Valentines day a few years back.

I was  in the lower mainland and the restaurant my partner took me to was serving it as there special for the evening.

Along with white wine and the most amazing dessert! It was a memorable dinner for me and it was definitely worth the cost.

However, I have found a way to make it at home for a fraction of the cost. Now we can enjoy it whenever and not just on those special occasions!

SMOKED SALMON GNOCCHI 

You can choose to make it without the salmon fillets if desired, however I find they are a nice addition and make this more of a meal. I also love the addition of the “Smoked Salmon Cream Cheese” in this dish.

I was hesitant at first to add it, but I experimented a few times and found that 3 tbsp is the perfect amount that gives this dish the extra flavor it needs.

It really does add an extra element of flavor so be sure not to skip it. Also by adding the cream cheese you can omit the cream and replace it for a lower calorie milk option.  

Serve it in a BOWL or on a PLATE whatever tickles your FANCY!

Spicy Tuscan Salmon

This Spicy Tuscan Salmon is just bursting with so many amazing flavors that you’re sure to love it! 

WHAT IS TUSCAN SALMON

It is salmon fillets smothered in  a creamy sauce with spinach, sun dried tomatoes and parmesan!

So if you’re craving something different and a little fancy for dinner tonight.

Then this one pot dish is sure to impress!

Plus it definitely is one of my favorite way to make Tuscan Salmon, with a hint of spice.

The first time I tried Tuscan Salmon, was early last year.

I followed another bloggers recipe, over at Cafe Delites and immediately fell in love with it.

But I knew it needed a little bit more to really suit my taste.

So I made a few changes and came up with this recipe.

Which is also a lower fat version of the more traditional Tuscan Salmon.

I also like to add a bit more of those delicious sundried tomatoes and spinach, so do not skip on that.

HOW TO MAKE TUSCAN SALMON

My dish brings that extra element of heat and is less cream heavy than other varieties I have tried.

Rather, I like to use whole milk instead of cream and will double the amount of spinach making it  that much more healthier and tastier. 

So simple, yet so impressive that you could serve this to a crowd and call it fine dining. 

I like to serve this dish over a bed of Conchiglie/Shell pasta, it goes really good with this recipe.

However if your on a keto diet feel free to enjoy it as is, trust me it’s amazing either way.

If you are serving this over pasta, just make sure to cook the pasta separately before hand so it’s ready when the fish is. 

This dish is very satisfying, both as a lunch dish or to serve as main meal.

Be sure to sear the Salmon fillets directly in the oil that the sun-dried tomatoes come in. 

As it really adds a nice element to the fish”.

Also you can squeeze a little bit of fresh lemon juice over top for a little tang if desired.

MEAL PREP IDEA: Make enough to create a few meal preps bowls for the week ahead. Or have dinner for one with this recipe, and split the last Salmon fillet in half for two meal prep bowls.

To make the bowls, simply place some Conchiglie/Shell Pasta on the bottom of the bowls and top with the Creamy Salmon, spinach, parmesan sauce.

West Coast Cedar Plank Salmon

I’m finally ready to reveal my family’s favorite recipe for my grilled “West Coast Cedar Plank Salmon”. 

CAN CEDAR PLANK SALMON BE COOKED IN OVEN

Yes, as long as you soak the plank in water for a minute of two hours prior. Just make sure you keep an eye on it!

ARE CEDAR PLANKS FOR SALMON REUSABLE

Yes, if you properly care for them. Then you can get a couple uses out of the planks, which will save you money in the long run. Care for them buy always soaking in water for a minimum of two hours prior to cooking and washing off well at the end. 

This recipe has been a secret in my family for sometime and I had to get a couple people’s approval to reveal it here.

If you have ever tried fresh smoked salmon which tastes like salmon and a candy all in one.

Then you are sure to taste the resemblance here.

One of my favorite cooking shows just started and we are now in Season 5. Can you guess what it is?

It’s MasterChef Canada, where 21 home cooks are completing for title of Canada’s best home chef.

I just love this show because it highlights the home cook and gives them the chance to complete to becomes Canada’s next master chef. 

Proving you do not have to go to school to become a chef! 

The first challenge was for each chef to create a signature dish that represents them.

Some people choose ingredient that represent there home town/province.

While others choose ingredients that represented their roots and then some went beyond their own roots and cooked something totally unexpected.

One lady was from Nova Scotia, Canada used blueberries because Nova Scotia has been named the wild blueberry capital of Canada. 

While another lady made the oh so popular peruvian ceviche, but failed to cook it throughout and was sent home in the first round.

 

The dish that interested me the most was cooked by a man named Jonathan. He made a “Ghost Pepper Stew Chicken” with rice and peas along with a mange apple slaw.

A dish that reminded him of Trinidad where he was from. I definitely want to find the recipe for that, so if anyone knows of one please send it my way 🙂

So this got me thinking if i was in this competition what would I make? Well being from British Columbia, I would definitely use fresh Salmon and make my all time favorite “Cedar Planked Salmon”.

Lucky everyone in my family understands my passion for blogging and cooking. So here it is, my family’s secret recipe for the most mouth watering Cedar Salmon.

Made with just a few simple ingredients of fresh garlic, powdered garlic, pepper, medium soya sauce, worcestershire sauce, olive oil and brown sugar.

Your soon to see why this recipe has been kept a secret this long.

HOW TO CEDAR PLANK SALMON

Truthfully though the secret is in the marinade.

So be sure to marinade this fish in a ziplock bag or in a sealed contactor for a minimum of 30 minutes to lock in maximum flavor.

Once that part is done the rest is a cinch to pull together, simply remove the fish from the marinade and sprinkle it with a pinch of salt “less is best” because the soya sauce has enough.

Then season with pepper and cover generously with brown sugar.

Do not skip any of these steps, the brown sugar is critical to giving it that caramelized candy flavor.

I will throw a few peppers on the grill around the same time and sometime asparagus. Just make sure you brush everything entirely with olive oil to prevent from burning and then flipping once.

Also the veggies will need to be removed before the salmon so keep an eye on them.

Salmon and Butternut Squash

This Creamy  Salmon and Butternut Squash is seasoned with just the right spices and is infused with Parmesan cheese. 

So if you’re looking for a healthy weeknight meal that is paleo and gluten-free? 

Well then you are going to love this Salmon and Butternut Squash.

To pull this dish together, you will simply start by cooking the butternut squash.

I used a pre cut squash, however you can always use a whole one and cut it up yourself.

Once the squash has been baked, you will want to mash it with a potato masher.

Don’t forget to add some butter to the mashed squash along with salt too, this really enhanced the dish.

To finish pan sear each salmon fillet in a little olive oil and some seasonings before serving!

This delicious meal that can be made in under 30 minutes.

Salmon with Orzo

This Salmon with Cheesy Orzo pasta is really satisfying and is super easy to make. Growing up I loved macaroni and cheese, the box stuff. 

I know I know, it’s not good for you. So that is why I now make the grown up version = Cheesy Orzo! Pair that with a healthy salmon fillet and you will be in comfort food heaven.

To pull this dish together, we will start by cooking the orzo in a medium saucepan to tenderize it. Then adding some chopped spinach near the end, along with fresh parmesan and jalapeno cheese cheese.

The two cheese really give it a nice texture and flavor, so be sure to use both. You can always substitute the jalapeno cheese for mozzarella if you prefer a more mellow tasting orzo.

Once the orzo is fully cooked, you will remove it and set aside. To finish pan sear each salmon fillet in a little olive oil and some seasonings before serving!

Crispy Herb Crusted Salmon

I just love these crispy herb crusted salmon fillets, not only are they super delicious there also super healthy for you and easy to make. 

That is why I love home cooking, because you can make healthy home cooked meals from scratch.

Such as this tasty fish and feel satisfied knowing exactly what is going into your meal.

I used to occasional buy those pre boxed fish, you know what I’m talking about?

Those frozen battered kinds in the freezer section at every grocery store. 

Well those days are over.., and i think if you try this recipe. You will feel the same way too!

Even though I am a food blogger, I can admit that their is some recipes that do intimate me. 

And i guess it is because I have never tried to make them. But being a food blogger I get to have a few trial and errors before I share my winning recipe with you all.

And that is how this recipe, came to be. 

Over the years though, I have developed much more confidence to tackle almost any type of recipes. Such as homemade breaded fish!

Doesn’t this look 100% better than any store bought or boxed breaded fish?

And so much healthier too I bet. 

HOW TO BREAD FISH

It’s as simple as emptying 1 package of extra crispy shake and bake into a shallow bowl.

Along with 1 cup of panko bread crumbs, brown sugar and seasonings.

Then coat the salmon fillets before baking at 400 degrees f for 15 minutes then that is it. 

This super flaky and moist salmon dinner is ready to be served with your favorite vegetable such as sauteed kale and a fresh lemon wedge of course.

 

This is the kind of shake n bake that I use for this recipe!

Place onto a non stick pan and your good to GO!

Serve alongside your favorite vegetable and you will will have one healthy and tasty meal!

You can’t go wrong with this simple yet flavorful dish that is sure to make you a salmon lover for life. 

As with any of my recipes, you can adjust the serving size above to reflect the number of people you are cooking for.
