This easy Pork Curry Udon Soup is ready in less than 30 minutes and contains pre-made soup stock, udon noodles, soft boiled egg, green onions and bacon.

My Easy Pork Curry Udon Soup can be pulled together in less than 30 minutes and that is because instead of cooking pork shoulder or bones to get a stock. You will be using a pre-made bone broth, it is best to make this bone broth days, weeks month prior.

And have it stored in batches in your freezer for whenever you are craving some homemade pork udon soup. Or you can simply use any stock you have on hand such as beef or chicken. You can also pre-purchase bone broth at most holistic grocery stores which comes frozen already.

What are Udon Noodles

Udon noodles are a Japanese food that is made from wheat flour and can be served in a stir fry or in a soup

Pork Curry Udon Soup recipe

  • Start by either defrosting some pre-made pork bone broth or whatever broth of soup you have on hand on the counter.
  • Then in a large frying pan, saute some bacon till crispy and set aside. 
  • In the same pan, se the leftover bacon grease to saute the curry power for 2 mins or until fragrant.
  • Meanwhile, bring a small pot of water to a boil and once it has reached a boil carefully add in 1 egg.
  • Simmer the egg on medium heat anywhere from 6-7 mins for a firm yet soft egg.
  • Remove from the hot water and soak in the same pot now in cold water for 3 mins
  • Roll the egg on the counter to crack and peel away the shell, save to serve
  • Bring the stock to a high heat then add in the udon noodles and remove some water and place in the curry pan.
  • Scrape all the curry back into the pot of stock.
  • Cook on medium heat till the noodles have separated 
  • Serve to a bowl, top with chopped bacon, scallions and slice the egg to serve

What Is Passata tomato sauce 

Passata is a tomato purée made from fresh, tomatoes that are bottled for use.

I like to use “Passata Sauce” in this soup because it basically is uncooked tomato puree without seeds or skins and works so well when making this type of soup.

Of course you can always use fresh tomatoes and blend them into a puree in the blender as well.

Totally up to you!

Easy Tomato Tortellini Soup

Is a versatile recipe but what makes it EASY is that we are using pre-made pureed tomatoes.

Passata bottled tomatoes to be exact which are fresh tomatoes that have been uncooked but bottled

HOW TO MAKE Easy Tomato Tortellini Soup

  • Start with a bottle of PASSATA TOMATO PUREE SAUCE 
  • Then to add a bit more of a tomato base, I will use a can of tomato paste which blends out well when added to the vegetable stock. See recipe card below for all the steps!

HOW LONG DOES HOMEMADE TOMATO SOUP LAST?

You can freeze this up to 6 months but will want to eat it within 24 – 48s hours so the tomatoes don’t spoil in your fridge.

Also keep in mind, as with all my recipes. If you want to make more or less of this soup, simple adjust the serving size in the ingredients section above and the servings will automatically adjust for you. This soup can store in the fridge for up to 3 days and or freeze for up to 3 months.

Notes: You can always use chicken stock in replace of vegetable if desired.

HOW TO MAKE BORSCHT SOUP

Borscht can be made several different ways, so it all comes down to personal preferences. But one thing is for certain, you want to use beets. Fresh is always best, however pre frozen can work too. 

Example: Borscht Soup can be made vegetarian or not. Also it can have cabbage, carrots, red beans and potatoes in it or not. Whatever you have on hand USE this soup is very versatile. 

CAN BORSCHT BE FROZEN

This recipe will make a fairly large pot of soup, so if you have any any leftovers “which is highly unlikely” then yes you can freeze it for another time. Think meal prep, make a big pot and store it away in the freezer for some healthy grab and go lunches!

HOW LONG WILL BORSCHT KEEP IN THE FRIDGE

Up to 5 days, the longer it is stored the deeper the flavors that will develop. However if you add meat to your soup, you will want to eat it up in 2 days.

Creamy Ramen Soup Recipe

This Creamy Ramen Soup Recipe is ready in less than 10 minutes and is made with miso paste, chicken stock, seaweed, sesame seeds and instant ramen noodles. Can’t get any quicker and easier than this!

Ramen noodles are one of my favorite things to eat, however I do not use the whole package of the seasoning ever which comes with most instant noodles as it is to salty.

So my recipe calls for just a pinch of the seasoning package. You can use more or less according to your taste. Keep in mind I used Instant Ichiban ramen you may choose whichever you prefer.

Also, there are many other types of ramen noodles to choose from also which would work perfectly for this soup also. From dry to fresh it is limitless what you can try!

WHAT IS MISO RAMEN

It is a soup stock that is mixed with miso paste which is fermented beans which is a popular seasonings in Japan. It gives this soup an Umami taste and texture. There is red or white miso paste, I recommended using white for this soup! Unless you want a stronger tasting miso and if so I highly recommend using no seasoning at all besides this.

TYPES OF RAMEN  NOODLES

  • INSTANT RAMEN  NOODLES
  • FRESH RAMEN NOODLES
  • DRY RAMEN NOODLES – no seasoning

I tend to use ITCHIBAN NOODLES there my favorite!

Ingredients you can add to your Ramen Soup

  • Other vegetables, such as snap peas, green onions, broccoli
  • Meats, such as shredded chicken or diced, shrimp, beef, pork etc

Just make sure y0u add more time to thoroughly cook everything!

I’ve been diving into Asian food allot this past winter. And learning to make homemade Wontons have really surprised me as they are super simple to do.

I’m talking, ready from raw to fresh in 30 minutes simple!

WHERE DOES WONTON SOUP COME FROM

It has Chinese origins, however today it is enjoyed globally. 

WHAT DOES WONTON SOUP TASTE LIKE

It tastes a lot like chicken noodle or pork type soups with the addition of some Asian flavors.

Gone are the days where I order Wonton soup from skip the takeout. I plan to share every recipe here with you in the coming months.

As I have some very good recipes for chicken and pork wontons that I want to share as well.

IS WONTON SOUP HEALTHY

Yes, this soup is healthy and is excellent served on a cold day or even if your feeling under the weather. 

WHY IS WONTON SOUP GOOD FOR YOU

Each wonton is packed with protein as well as the broth along with many nutrience.

HOW TO MAKE WONTON SOUP

You will need 3 key ingredients

  1. Pre-made wonton wrappers
  2. Meat protein of your choice, pork, beef, chicken or shrimp
  3. Soya sauce, oyster sauce and a few seasonings

THE KEY TO MAKING GREAT WONTONS is the in the FILLING

HOW WONTON SOUP IS MADE

I have tried a few varieties and this is my FAVORITE as it produces moist Wontons. This soup is made by handmaking the wontons and typically those wontons shells are pre-made by a machine and can be bought in almost any Asian market.

Then that shell is filled with some simple ingredients before they are stuffed and rolled. Once that process is complete they are added to a pot of boiling water to cook or added to soup stock to cook and serve.

Vegetarian Black Bean Soup

This is a healthy Vegetarian Black Bean Soup is made from scratch and can feed a family of four for less than 10 dollars. You can make it as spicier or milder as you wish. 

Serve this with tortilla, cornbread, avocado and a dab of sour cream or plain yogurt.

Or if you have kids, top it with melted cheese!! Yum.

Another thing about this recipe is that you can make it on your stove-top or in your slow cooker making it versatile for either a weeknight meal or weekday meal.

It’s a super filling soup too because it is packed full of feel good fiber and vegetables.

BLACK BEAN SOUP IS IT HEALTHY

Depends on how you make it I guess. However, this recipe is very healthy

Black beans have tons of nutrience and are packed full of fiber. Add all the vegetables that I have to this soup and it becomes VERY HEALTHY!

BLACK BEAN SOUP WITH CANNED BEANS

Cuts down on the prep and cooking time by half

BLACK BEAN SOUP WITH DRIED BEANS

Be sure to soak the dried beans overnight in water

Then the day of cooking, cover the beans with water and boil on medium low for 35 minutes prior to adding to the soup.

If your serving this to adults, I recommend serving with a fresh sliced avocado as well.

If your serving this to kids, I recommend melting cheese overtop of this soup.

HOW TO MAKE BLACK BEAN SOUP

Start with all your vegetables and dice them finely, fine enough to make a soup

  1. Using a large pot or Dutch oven heat oil on low to medium heat. Add diced zucchini, onion, carrots and salt. Let the vegetables soften for about 15 minutes on low to medium heat. Stir often.
  2. Add the garlic and the spices (cumin and red pepper flakes, cilantro) and cook for another 2-3minutesstirring often.
  3. Add the vegetable broth and black beans and raise the temperature to medium/high heat.
  4. Once simmering reduce heat and continue cooking for another 30 minutes.
  5. Take about half of the finished soup (4 cups) and place in a blender and blend until smooth. Be
  6. careful as the soup is hot and you may want to let it cool down first before blending or take 4 cups out and let that
  7. portion cool down before blending. Add blended soup back to the rest of the pot and mix well.
  8. Serve with a squeeze of lime and your favorite garnish. Enjoy!

SPICES FOR BLACK BEAN SOUP

  1. Cumin
  2. Red pepper flakes (less if you want less heat)
  3. Salt and pepper to taste
