- Start by boiling the diced cauliflower head in 5 cups of vegetable stock till tender
- Cool down the pot before blending
- Place the cooled down cauliflower and broth in a blender and blend till smooth
- Pour back into the pot along with more vegetable stock, cheese and seasonings.
- Simmer stiring often over medium heat for 15 minutes then serve.

Cauliflower Soup without Cream

Ingredients
- 1 head of cauliflower
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1/2 tsp nutmeg
- 2 cups of shredded cheese
- 6 cups of vegetable stock
- 4 tbsp of butter
- 2 tbsp lemon juice to serve
Instructions
- Start by boiling the diced cauliflower head in 5 cups of vegetable stock till tender
- Cool down the pot before blending
- Place the cooled down cauliflower and broth in a blender and blend till smooth
- Pour back into the pot along with more vegetable stock, cheese and seasonings.
- Simmer stirring often over medium heat for 15 minutes then serve with lemon juice mixed in at the last minute.
