This Fluffy Chinese Scrambled Eggs with Shrimp recipe is ready in less than 10 minutes and serve as a whole meal or great alongside white rice or noodles.

You can order this dish from your local Chinese restaurant or make it on your own for a fraction of the cost.
Feel free to omit the shrimp as it is just as good!
The trick to making these eggs fluffy lies in the technique and it is as SIMPLE as using CHOPSTICKS to make the eggs.
HOW TO MAKE CHINESE SCRAMBLED EGGS
- Start by whisking / beating your eggs till smooth in a medium bowl
- Add in your seasoning’s, oyster sauce and scallions
- Then sesame oil
- In a large frying pan, add in 1 tbsp of cooking oil and once it is hot, fry the shrimp till pink, remove and set aside the shrimp
- Next pour in your egg mixture back to the pan
- Cook over medium heat, once you see the egg starts to bubble on the edges
- Take chopsticks and fold inward slowly, from corner to corner.
- Fold over the eggs this is how they remain fluffy
- Toss in the cooked shrimp
- SERVE once fully cooked, roughly 5-7 mins

Fluffy Chinese Scrambled Eggs with Shrimp

- 6 eggs
- 8 Shrimp
- 1 tbsp cooking oil
- 1 tsp oyster sauce
- 2 tbsp sesame oil
- 1 scallion, diced fine
- salt and white pepper

You can add soya sauce instead of oyster if preferred to just salt
