Mushroom Pasta without Cream

This Mushroom Pasta without Cream is a healthy option to making pasta that uses either milk or stock instead of heavy cream. Also it can be made vegan by using a vegan parmesan cheese if desired. Fettucine 

You can also make this dish non vegan simply buy using regular parmesan cheese. 

Made with tender sauteed portobello mushrooms along with fresh vegan parmesan cheese and parsley.

I’m so excited to share this delicious recipe with you guys today.

I made it a point to pick up some vegan parmesan cheese from whole foods yesterday, along with some these amazing Portobello Mushrooms.

Because I really wanted to make another vegan dish for my vegan readers out there. So I hope you give it a try and let me know what you think?

Now I will be honest, I prefer real parmesan cheese.

However for this dish I wanted to try the vegan variety, the kind I picked up is right below… and hats off to all you vegan eaters out there.

I could commit to eating this type of cheese substitute more often myself. It was pretty good and much better than I expected!

Also, I had my partner try this dish with the vegan cheese and he has given it a passing approval. 

And he has even asked me to make it since then again for him so he could test it again! Ha and I know what that means. He loved it! 

And for a meat eater that says a lot about how good this dish actually is.

Because there is no meat in here whatsoever. But don’t be fooled it’s filling and those mushrooms are super healthy for you.

Packed full of B-complex vitamins and riboflavin which are amazing minerals for maintaining healthy red blood cells. I hope you give this recipe a try because it is absolutely delicious! 

You can always double up the recipes and make it into a few meal preps to enjoy throughout the week.

Just simply use my recipe adjuster above if you plan to make more than two dishes and it will calculate the ingredient ratio automatically for you. 

In order to make this dish low fat and vegan, I will simmer this dish in a quality vegetable stock and then simply will season with salt and white pepper to taste.

However you could always add some cream to the stock as well, which will make it non vegan but very creamy. 

Pretty simple one pot dish that is sure to impress!

Don’t have Portabella Mushrooms on hand?

Go ahead and use regular instead and prepare them the same way. Almost any type of mushroom will go well with this dish. Bone Appetit!

Persian Stew (Ghorme Sabzi)

This Persian Stew (Ghorme Sabzi) is a very popular dish that hails from Iran. It is made with either beef or lamb, kidney beans and some other special ingredients

My friend shared a flat with an Iranian man during his University days and during this time the young man’s Mother would often come over and spend the whole day cooking for them (Spoiled)!

It has been many years since then, however Jason had not forgotten how good those meals where. And one of his favorite dishes was for this Persian Herb Stew. 

Recently, I was asked to try and prepare some traditional dishes in exchange for a few nights of fine dining somewhere, so I gladly took the challenge.

I must admit i was like a fish out of water, because i never cooked Iranian food before so i wasn’t sure what recipes or techniques to use.

However with some time a patience i learned the tricks to making this delicious dish. My first attempts failed, I was following the wrong recipes, and to my partner’s disappointment none of the dishes I prepared tasted at all like he remembered.

But I did not give up and set my focus on Ghorme sabzi  which is considered the Iranian national dish, and understandably so, it’s absolutely delicious not to mention very healthy.

I finally prepared this recipe here, and we both were instantly in Ghorme Sabzi Persian Heaven! Knowing we found the right recipe that is sure to please those who know it all to well and those trying it for the first time. Serve with basmati rice and enjoy!

Beef Noodle Casserole with Kale

Looking for an awesome kid friendly hamburger recipe? Well look no further than this delicious Beef Noodle Casserole with Kale dish.

This homemade recipe is very similar to “hamburger helper”. So if you and your family have like boxed hamburger helper in the past, then trust me you will love this.

If your not familiar with hamburger helper than may I ask where have you been the past few decades? Just kidding. 

As that boxed stuff was definitely was and still is a staple food in most North American homes. Now I do not mean to be of insult, because perhaps you have never heard of it or have lived in North America that long.

And so in that case you would not know what im talking about at all. For the rest of you i’m sure memories of the stuff are flooding into your thoughts by now.

Well this recipe is similar to that boxed stuff, however mine is way better and healthier for you. And that is because we are making it from scratch verses a boxed brand which uses way to much salt. Plus we are adding fresh kale and real cheddar cheese, hello!

So believe me when I say that this recipe definitely cannot compare to any of the box stuff I just mentioned. 

This recipe will feed a family of 8 or if there is less of you, feel free to freeze some for the days to come.

Also you can go ahead and bake two batches. Just double the recipe with my easy to use recipe adjuster above and then simply use two baking pans. This recipe does well as leftovers and can be frozen into a few meal preps.

Note: You can use beef stock to replace the milk if desired.

Authentic Tabbouleh Bulgur Recipe

This Authentic Tabbouleh Bulgur Recipe is something you will want to make time and time again. 

The secrets to a good Tabbouleh is using the most freshest of ingredients such as fresh parsley, tomatoes, cucumber, mint, onions and the right type of bulgar.

This tasty salad goes well alongside any type of dish and has been a typical side dish that has been served in the middle east for centuries. 

Tabbouleh salad is something I have come to enjoy immensely over the years.

Actually I tried it for the first time at my local deli a few years back and liked it so much that returned to the market to find all the ingredients that night. 

It took me some time to master the perfect combination and techniques to making the most tastiest of tabbouleh, but I’m sure i’ve done it now.

This salad has an a array of flavors that are sure to please even the pickiest of eaters. And tastes much better than any store bought variety, believe me. 

You will want to start by using a “coarse Bulgur” variety, you can use  “fine coarse” Bulgur if you want, however I find the course works best because it gives more substance to the salad.  

Also, I recommend using both lemons and limes for this recipe, however traditionally lemons are just used. Be sure to chop up all your fresh ingredients finely and mix  well before serving.

Sole Meuniere Julia Child

Sole Meunière is a classic French dish that is super easy and quick to prepare. Julia Child made this dish famous Worldwide, I’m certain you have heard of her before? 

However, in case you have not. Then let me tell you she was an amazing American cook.

Who happened to stumbled upon Le Cordon Bleu, an World renowned French cooking school. She was living aboard at the time with her husband who traveled often for work. 

How do I know? Well I watched the movie of course, no less than a dozen times. Crazy how fast time flies and that blogging now is nothing what it was then.

Now it takes much more work, however I won’t get into all that.

IS SOLE MEUNIERE HEALTHY

Yes, it is healthy. It does have a lot of butter in it. However, everything in moderation is okay. Now for my recipe, I have cut the butter in half. So it makes this dish much healthier than the original recipe calls for from Julia Child. 

This recipe here is inspired by her recipe from her Cookbook “THE WAY TO COOK” and the movie that inspired many. 

Personally, I don’t like to use as much butter as she calls for so this recipe calls for half. But trust me it’s more than enough, but if you insist on following her recipe to the tea.

Just double the butter for the original version. Either way you can’t go wrong with this simple yet flavorful dish that is sure to make you a french food lover. Bone appetite!

WHY IS SOLE MEUNIERE SO EXPENSIVE

Well, if your going out to the Restaurant’s to find this. Then that is why! Have you ever heard of an inexpensive French Restaurant? Nope, neither have I.

WHAT DOES SOLE MEUNIERE MEAN

Sole meunière is a FRENCH recipe, sole is the fish used that is then Meuniere by way of flour, lemon juice and parsley.

HOW TO COOK SOLE MEUNIERE

This recipe is simple and can be made in under 15 minutes. all you will need is some flour, clarified butter, lemon, parsley and salt and pepper. And a hot non stick skillet, for frying.

Oh yes of course the fish too!!

If you don’t have clarified butter on hand regular butter will do the trick. serve with some fresh lemon wedges and a side of your liking and your will have yourself a great meal.

Salmon and Butternut Squash

This Creamy  Salmon and Butternut Squash is seasoned with just the right spices and is infused with Parmesan cheese. 

So if you’re looking for a healthy weeknight meal that is paleo and gluten-free? 

Well then you are going to love this Salmon and Butternut Squash.

To pull this dish together, you will simply start by cooking the butternut squash.

I used a pre cut squash, however you can always use a whole one and cut it up yourself.

Once the squash has been baked, you will want to mash it with a potato masher.

Don’t forget to add some butter to the mashed squash along with salt too, this really enhanced the dish.

To finish pan sear each salmon fillet in a little olive oil and some seasonings before serving!

This delicious meal that can be made in under 30 minutes.

Salmon with Orzo

This Salmon with Cheesy Orzo pasta is really satisfying and is super easy to make. Growing up I loved macaroni and cheese, the box stuff. 

I know I know, it’s not good for you. So that is why I now make the grown up version = Cheesy Orzo! Pair that with a healthy salmon fillet and you will be in comfort food heaven.

To pull this dish together, we will start by cooking the orzo in a medium saucepan to tenderize it. Then adding some chopped spinach near the end, along with fresh parmesan and jalapeno cheese cheese.

The two cheese really give it a nice texture and flavor, so be sure to use both. You can always substitute the jalapeno cheese for mozzarella if you prefer a more mellow tasting orzo.

Once the orzo is fully cooked, you will remove it and set aside. To finish pan sear each salmon fillet in a little olive oil and some seasonings before serving!

These Baked Lemon Chicken Breasts are super simple to make and can be on the dinner table in no time.

The secret to moist oven baked chicken breasts, is making sure you use enough olive oil and lemon juice to moisten the breasts. Then cooking them at the right temperature and for the right amount of time.

I like to season my breasts with one of my favorite chicken seasonings, called “Szeged the world’s best chicken rub” see below with my amazon picks to order.

If you cannot find this seasoning and want to make this right now, some of the ingredients in it are: Garlic, Basil, Paprika, Oregano, salt and spices  you can substitute with those if desired.

Juicy, healthy and full of flavour!

MEAL PREP IDEA: Make enough to create a few meal preps bowls for the week ahead. Simply place your favorite vegetable on the bottom of the meal prep bowls.

I used ” Sauteed Red Cabbage” see here for that recipe: Sauteed Red Cabbage and then top with the baked lemon chicken breasts! Don’t forget to pour the sauce from the pan over top each breasts, the flavor is out of this World!
