Portobello Mushroom Kale Risotto

This Creamy and Cheesy Portobello Mushroom Kale Risotto is quick and easy to make. Not to mention gluten free and vegetarian! 

Made with tender sauteed mushrooms along with kale and fresh parmesan cheese. Then it is simmered in a vegetable stock for extra flavor. 

Valentine’s day is just around the corner and like every other year I like to come up  with some new dishes for those who are looking to feast at home. 

I had some Portobello Mushrooms on hand and then came up with tasty recipe, I hope you give it a try because it is absolutely delicious! 

Orzo also known as Arborio rice is a grain that can be found in the rice isle and is very popular in Italian cuisine. Orzo is basically a short-cut pasta, shaped like a large grain of rice.

Of course this dish can be served just about anytime of the year and is served on the menu often in and around Italy!

You can always double up the recipes and make it into a few meal preps to enjoy throughout the week.

Just simply use my recipe adjuster above if you plan to make more than two dishes and it will calculate the ingredient ratio automatically for you. 

In order to make this dish low fat and more savory, I simmer this dish in a quality vegetable stock and then simply will season with salt and pepper to taste. 

However you could always add some cream to the stock as well, which will make it even more creamy if desired. 

Pretty simple one pot dish that is sure to impress!

Not a fan of Portabella Mushrooms? or have another kind on hand.

Go ahead and slice them up and prepare them the same way. Almost any type of mushroom will go well with this dish.

As for me I like it just like this, however will sometimes use brown mushrooms which work well too.  

Once it has been served, go ahead and sprinkle some fresh parmesan cheese on top and enjoy.. Bone appetit!

Beef Noodle Casserole with Kale

Looking for an awesome kid friendly hamburger recipe? Well look no further than this delicious Beef Noodle Casserole with Kale dish.

This homemade recipe is very similar to “hamburger helper”. So if you and your family have like boxed hamburger helper in the past, then trust me you will love this.

If your not familiar with hamburger helper than may I ask where have you been the past few decades? Just kidding. 

As that boxed stuff was definitely was and still is a staple food in most North American homes. Now I do not mean to be of insult, because perhaps you have never heard of it or have lived in North America that long.

And so in that case you would not know what im talking about at all. For the rest of you i’m sure memories of the stuff are flooding into your thoughts by now.

Well this recipe is similar to that boxed stuff, however mine is way better and healthier for you. And that is because we are making it from scratch verses a boxed brand which uses way to much salt. Plus we are adding fresh kale and real cheddar cheese, hello!

So believe me when I say that this recipe definitely cannot compare to any of the box stuff I just mentioned. 

This recipe will feed a family of 8 or if there is less of you, feel free to freeze some for the days to come.

Also you can go ahead and bake two batches. Just double the recipe with my easy to use recipe adjuster above and then simply use two baking pans. This recipe does well as leftovers and can be frozen into a few meal preps.

Note: You can use beef stock to replace the milk if desired.

African Pepper Goat Soup

This African Pepper Goat Soup is hails from Western Africa, but mostly Nigeria. So if your into spicy foods then you are sure to love this soup recipe.

You can substitute the goat meat for lamb, chicken, fish, tripe and or chicken gizzards if you prefer.

All work well in this type of broth. I have tried all those meat’s and must say goat is my favorite by far, because it’s lean and has a very unique taste that I love.

I have learned to prepare several African dishes in my home over the years and have come to love the flavors from this part of the world.

Now I want you to be forewarned that this is very spicy soup so feel free to add less spice if can’t handle much heat.

WHAT DOES African Pepper Goat Soup TASTE LIKE

Spicy, meaty and soothing! I say soothing because I find it really is so very tasty!

HOW TO MAKE African Pepper Goat Soup

  • Start by brining a large stock pot of water to a boil
  • Then add in the goat meat and reduce the heat to medium heat
  • Add in all your spices and seasonings 
  • Simmer covered on low heat for 1 hour to serve.

Note: You can cook the onions, garlic and ginger fresh if desired. Just be sure to cook it prior to boiling the meat in 1 tsp of oil to ensure it is cooked. 

It is made with a few ingredients that are hard to find here in Canada and so I have made a few substitutes. 

The main differences with my soup recipe versus traditional African pepper soup is the type of pepper used.

Like I will use Kale instead of the bitter leaf in the soup, it’s quite similar and more accessible here in Canada.

Then I’ll add some fresh chopped chives in replace of the onions as well, so good. The main differences with my pepper soup recipe versus traditional African pepper soup is the type of pepper used.

Traditional pepper soups call for aka chili or negro pepper. Which is not always easy to find, so I use “Scotch Bonnet Sauce” since i always have that Jamaican sauce in my fridge at all times and it works so well here.

 

I will make this soup when I’m craving something warm and spicy!

Try to get your hands on the “original “Maggi beef cubes” if you cannot find feel free to use “Maggi Chicken cubes or another brand that you like.

Note: This soup can also be done in a “Slow Cooker” or “Pressure Cooker” just make sure you are using a boneless meat for those processes.

Bok Choy Chicken Garlic (Flu-Fighter) Soup

This Bok Choy Chicken Garlic Soup is my go to soup for whenever I’m feeling run down and that is why I call it a flu fighter soup!

This Bok Choy Chicken Garlic Soup is made with chicken breasts, chicken broth, bok choy, garlic, onions and ginger. Which is sure to help you feel better after slurping a few bowls of this throughout the day! Looking for another healing soup recipe? Try my Healthy Celery Soup

There is two ways to serve this soup!

The first picture is my updated recipe and the one below is my older.

The differences are: 

  • I chopped the chicken into smaller pieces along with the mushrooms, bok choy, garlic and onions.
  • Then served it with a lemon wedge for added vitamin C.

The way you prepare it is completely up to you, both are delicious! 

IS SOUP GOOD FOR THE FLU

Yes, chicken soup is good for soothing both cold and flu symptoms.

The hot chicken broth helps break up the congestion and the salt can sooth a sore throat.  

Then with the addition of garlic, ginger, onions and spices you are going to be consuming a lot of feel good nutrients.

So if you are wanting to fight off an impending cold or flu?

Keep yourself hydrated with a hot pot of soup is good to help cleanse and clear out the gunk from your system naturally.

This is the stuff you are going to want to make, feel free to add more garlic and ginger if you can handle it as well.

Which will amp up the nutrients as the onion, garlic and ginger all have amazing antibacterials properties.

The more you have the better your sure to feel during the dreaded cold and flu season.

Also in combination of this soup, be sure to add a Vitamin D supplement to your daily regime as well.

All these little yet big things can be of much help to getting you on the road to feeling better.

HOW TO MAKE BOK CHOY CHICKEN GARLIC SOUP

I will prepare this on the stove top in a large batch and eat it all day long.

  • You can make this soup with chicken breasts, or you can also pick up a Rotisserie chicken and shred the chicken off the bird and boil the carcass to get the benefits from a bone broth soup.
  • For this soup, I just used the breasts however both methods are good to fight off a cold. 
  • Keep in mind if you are using a whole bird, you won’t need any extra chicken stock since you will be making a bone broth from the bird. 

If you are using chicken breasts then you will definitely want to use chicken stock. I believe this soup can prevent colds and the flu and heal the body, because every time I prepare this soup I feel so much better the next day. See recipe below for all the ingredients and full instructions!! 

Now, I do not know about you but whenever I travel I tend to catch a cold!

Sucks I know, so beforehand I do my best to boost my immune system with supplements and eating healthy.

But sometimes no matter what you do, that pesky cold still comes on.

So a soup like this is sure to help the body to heal and feel better!

Ever since I started to incorporate this soup in my diet right around the time I travel, I manage to minimize or avoid the symptoms of the cold and for me that is great because I would rather be sick 24 hours versus 2 weeks.

Packed with immune boosting ingredients and nutrients, this soup is something you will definitely enjoy even when you’re not under the weather.

Feel free to add some egg noodles to it if you like. I hope you give it a try, and If you are not feeling well I hope this soup makes you feel a whole lot better.

HOW TO MAKE BOK CHOY SOUP

  • Start by slicing your mushrooms and chopping the baby bok choy into bite size pieces.
  • Next chop your onion, crush your garlic and peel and finely chop your your ginger root into tiny pieces. You can use powders if you prefer.
  • If you are using chicken breasts: dice them into bite size pieces and set aside.
  • If you are using a Rotisserie chicken: remove all the meat from your bird and then place the chicken carcass into a large stock pot and add cover with 8 cups of water. Simmer the carcass on low heat for 45 minutes turning a few times to allow the stock to develop.
  • Once the stock has developed, discard the carcass and place the remaining stock aside in a bowl.
  • Next, in your stock pot heat the olive oil and sauteed your onion, garlic and ginger for 2 minutes till fragrant.
  • Now, add in your shredded chicken, chicken stock along with all your bok choy
  • Add in all the spices and simmer on medium – low for 20 minutes.
  • Serve and allow your body to heal itself. Enjoy!

CAN YOU FREEZE BOK CHOY SOUP

Yes, it freezes well. Up to 3 months max though, you do not want a freezer burnt soup.

I have plenty of soup of other soups on this site that would help anyone to feel better. One of which is my Vegetable Egg drop soup. It is absolutely delicious and healthy for you as well.

Note: You can add egg noodles during the last 7 minutes of cooking if desired. And more chicken stock if your wanting more broth to the soup. Add more garlic and onion for more of an antibacterial boost.

Crispy Herb Crusted Salmon

I just love these crispy herb crusted salmon fillets, not only are they super delicious there also super healthy for you and easy to make. 

That is why I love home cooking, because you can make healthy home cooked meals from scratch.

Such as this tasty fish and feel satisfied knowing exactly what is going into your meal.

I used to occasional buy those pre boxed fish, you know what I’m talking about?

Those frozen battered kinds in the freezer section at every grocery store. 

Well those days are over.., and i think if you try this recipe. You will feel the same way too!

Even though I am a food blogger, I can admit that their is some recipes that do intimate me. 

And i guess it is because I have never tried to make them. But being a food blogger I get to have a few trial and errors before I share my winning recipe with you all.

And that is how this recipe, came to be. 

Over the years though, I have developed much more confidence to tackle almost any type of recipes. Such as homemade breaded fish!

Doesn’t this look 100% better than any store bought or boxed breaded fish?

And so much healthier too I bet. 

HOW TO BREAD FISH

It’s as simple as emptying 1 package of extra crispy shake and bake into a shallow bowl.

Along with 1 cup of panko bread crumbs, brown sugar and seasonings.

Then coat the salmon fillets before baking at 400 degrees f for 15 minutes then that is it. 

This super flaky and moist salmon dinner is ready to be served with your favorite vegetable such as sauteed kale and a fresh lemon wedge of course.

 

This is the kind of shake n bake that I use for this recipe!

Place onto a non stick pan and your good to GO!

Serve alongside your favorite vegetable and you will will have one healthy and tasty meal!

You can’t go wrong with this simple yet flavorful dish that is sure to make you a salmon lover for life.
