Roasted Leg of Lamb (Greek Kleftiko)

You have not truly tried traditional Greek food, until you tried a Roasted Leg Of Lamb, also known as Lamb Kleftiko.

And you don’t have to wait till Easter to serve either, this recipe is so good you will be sure to crave it just as often as the Greeks do in Cypress.

If you follow this recipe to a tea, you will have the most juicy and tender leg of lamb you ever tasted. 

The size of your leg you make depends on how many you are cooking for.

A 6 pound leg of lamb will feed about 8 people so you can judge by this what weight you will need.

I am using 3 pound leg which will feed a family of three to four. 

HOW TO MAKE GREEK LAMB KLEFTIKO 

  1. If your lamb leg is frozen, start by defrosting it in the bottom of the fridge anywhere from 24-48 hours (if fresh skipped this step)
  2. Next prepare your marinade. In a bowl, mix your crushed garlic, rosemary, thyme, oregano, olive oil, and lemon juice.
  3. Lay your lamb out on the counter, and season on both sides generously with salt and pepper.
  4. Then take your knife and make slits all over the leg, front and back.
  5. Place the lamb now on a long piece of parchment paper and make a boat around it to hold in the marinade.
  6. Massage the marinade all over the lamb, making sure to get some of the marinade in the slits.
  7. Place the wrapped leg in the bottom of your roasting pan, and allow it to marinade overnight in the fridge.

HOW TO COOK LAMB KLEFTIKO 

  1. The next morning, take your lamb out and allow it to sit on the counter for 30 minutes prior to cooking.
  2. Open up the parchment paper, and pour in your “Chicken Stock” around the leg (try not to pour it all over the leg) rather around. As you don’t want to remove the seasonings.
  3. Now with a little bit of tinfoil cover the ends of the leg to ensure the parchment paper does not fold away.
  4. Preheat your oven to 425 f (convection ovens) or 450 for (standard ovens) for 30 minutes, then lower it to 325 f (conventional ovens) or 350 for (standard ovens) and allow it to bake for 3 1/2 hours.
  5. Once cooked, remove from the oven and open the paper to baste the lamb with the remaining juices.
  6. Place back in the oven for 30 more minutes uncovered till browned. (You may want to add a bit more liquid) totally up to you.
  7. Once done, remove the leg and drain the broth directly into a gravy holder.
  8. Allow it to rest 30 minutes before serving and serve with that delicious broth, adjust to taste.

Note: You can add potatoes into the parchment paper. I like to serve my lamb with pita bread, either are great ways to sop up that delicious gravy. Goes great with my Greek Tzatziki sauce too.

Serve with some warm pitas to mop up that amazing gravy!

You can also serve with mash potatoes and any vegetable of your liking.

Easy Greek Potatoes

Looking for Authentic Greek Potatoes, then look no further because you just found it here with my “Easy Greek Potatoes”.

Greek Potatoes are absolutely delicious on their own or served as a side dish to any Greek meal. 

I’m super excited to share this recipe with you today.

I for one am not a huge potato fan.

And that is probably because I grew up on steak and potatoes and found them to be bland without butter and sour cream.

But once I tried these potatoes, I have forever been changed.

These potatoes are to die for and will have just about anyone saying OPA!

WHAT IS IN GREEK POTATOES 

Greek potatoes are made with olive oil, garlic, chicken stock, and lemon juice.

Then they are spiced with oregano and rosemary.

These potatoes, it can’t get any better or more traditional than this.

They will have you saying, OPA! 

Greek Potatoes go with just about any type of meal and are super delicious on their own as well.

However my favorite thing to serve with them is Greek Chicken and Greek Salad.

Come to think about it, I need to make a Greek Salad for this site soon!

In the meanwhile, this lady makes a good Greek Salad! Go check it out!

You can go ahead and make this recipe as a whole meal by also serving this with Greek Chicken and a side salad if desired. 

WHAT DO GREEK POTATOES TASTE LIKE

These potatoes come out so soft, moist and super tasty!

Hints of chicken stock and garlic and rosemary shine!

Oh yeah that makes for a delicious plate of potatoes!

Serve with my homemade TZATZIKI sauce and you will be in Greek food heaven very soon.

Easy Homemade Pita Bread

This is my favorite recipe for Homemade Pita Bread. It is light, fluffy and simply delicious. Once you learn to make this at home you won’t ever want to buy the pre – packaged stuff again.

Serve with some homemade Beef Koftas and Tzatziki sauce and you will be in Business for a great dinner tonight!

Trust me, this is the good stuff.  I made this pita bread a few years back.

And it still holds true to being an excellent recipe for this Greek bread. 

Not to mention healthy and super easy to make. But don’t tell my family I said that because they think I’m a culinary genius ha!  

You too can be a culinary genius in your family and skip the bakery this week by impressing them with a batch of homemade Greek Pita Bread.

I like to make my Pita bread in batches, so I tend to double this recipe to make either 16 small pitas or 12 large, but that’s up to you.

This recipe will make 6 “thick” pitas or 8 “thinner” pitas, it all depends on how you shape them. The smaller “thick” are best for stuffing and the “thin” are best for dipping.

I encourage you to try both,  for this recipe I made thinner ones, either way it’s just as delicious, so let’s get started.

WILL PITA BREAD MAKE YOU FAT

Unless your eating tons of it.

You should be fine, since Pita Bread is a lighter bread than most.

Also it is low in calories.

IS PITA BREAD HEALTHY

Yes, it contains a rich source of protein and carbohydrate and a good amount of vitamin B, and other vitamins. 

HOW TO MAKE PITA BREAD

  1. In a large bowl dissolve the yeast in your warm water, and then add 1 cup of your flour in. Mix it all together and let it stand for 15 minutes to rise. You will notice a gooier mixture with some bubbling once step 1 is done.
  2. Now add 2 tbsp of olive oil and salt into your pita mixture, and the rest of your flour. Mix again slowly, until the dough is soft and smooth (and slightly sticky) if the dough sticks to the bowl you can then add in more flour slowly but not to much.
  3. Using your hands knead the dough for about 10 minutes in the bowl and then remove it and place on a lightly floured surface, form into a ball and then place back in the bowl and drizzle olive oil over the bread. Before covering with a dry towel and allowing to rise for 2 hours.
  4. Now take the dough out of the bowl and knead a little bit with your hands. Split in -6-8  evenly sized pieces on a floured surface and form into pita bread shapes, either with your hands or use a rolling pin.
  5. Make about 1 cm thick pitas and let them rise for 30 minutes covered with saran wrap before cooking.

To Cook the Pita Bread.

  1. Heat a non-sticking frying skillet to medium-high heat with a (little bit of oil) and fry each pita bread for about 3 minutes on each side and turn over and repeat x2, until lightly browned and air bubbles appear. 

Note: If your placing food inside the pitas, allow them to cool before taking a sharp thin knife and cutting it down the side. Pita Bread can be frozen easily by placing in a ziplock bag. Just place parchment paper in-between each one. This will seal in the freshness and allow you to remove each piece, one at a time as needed.

Greek Chicken and Potatoes

This Greek Chicken and Potato recipe is baked all in one dish. And really takes no effort at all from start to finish. 

Well unless you are the farmer… but i’m guessing not? If you are… from the bottom of my heart. Thank you!

In our home we like to eat Greek food every so often, it’s such a healthy cuisines and so very tasty.

This dish is made with a few simple seasonings that will bring in the depth of flavor you crave in Greek food. 

This is the fastest version of a traditional home cooked Greek meal, there is no BBQ or Kabobs involved here.

Just one baking pan and a few ingredients that you’re sure to have in your spice rack.

I prefer to use a mix of fresh and dry spices, however you can use whatever you have on hand.

Included below is my super delicious recipe for homemade Dill & Mint TZATZIKI sauce which goes excellent with this meal.

I will provide a link at the bottom for that recipe, if anybody is interested.

If you never had this before, I encourage you to give it a go as it’s a super simple meal and yet good enough to serve a crowd!
