WHAT TO DO WITH ROTISSERIE CHICKEN LEFTOVER

Make this soup 🙂 This soup utilizes the bones of your leftover Rotisserie chicken to make a chicken bone broth for the most amazing soup. 

Whenever I or someone I love gets sick with a cold. The first thing I do is make a large batch of homemade chicken soup.

And the best way and cheapest way to make this soup too, is to use the meat and bones from a leftover rotisserie chicken from the night before.

Two meals in one. IT’S A WIN WIN!

ROTISSERIE CHICKEN SOUP WITHOUT NOODLES

There are a few versions of this kind of of soup out there, this one is a little different as it uses the leftover bones for the chicken broth. And has no noodles in it, of course you can add them if you’d like.

Just make sure your adding more stock or very little noodles to this particular recipe.

And as you may know bone broth is said to be nature’s pharmacy.

And so this soup has everything you need in it to ward off any type of cold or flu.

It defiantly will help your body rests and works to get better.

WHAT IS IN ROTISSERIE CHICKEN SOUP

This soup is packed with garlic, ginger, curry, turmeric, cinnamon, cayenne and paprika spices that are sure to make you feel better feel.

The benefits soon after sipping this warm soup will be felt all over.

Serve alongside with a lemon wedges if desired for an extra punch of vitamin C, I hope feel so good after sipping this warm bowl of soup!

This is real soup, not that over processed stuff that comes from a can.

How To Make Rotisserie Chicken Soup

  1. Start by shredding the cooked chicken breasts with two forks and set aside.
  2. Next chop 2 green onions into bite size pieces and set aside
  3. Mince the garlic from 3 garlic and set aside. 
  4. Mince the ginger and set aside. 
  5. Next remove all the meat left on your Rotisserie chicken and then place the chicken carcass into a large stock pot and add 8 cups of water along with your minced garlic and ginger.
  6. Simmer on low heat for 45 minutes turning a few times to allow the stock to develop.
  7. Once the stock has developed, discard the carcass and place the stock aside in a large bowl.
  8. In the same -pot add in all the spices, soya sauce and simmer on medium – low for 15 minutes.
  9. Season with salt and enjoy warm, allowing your body to heal itself.

You can add more vegetables you like, such as: 

  • KALE
  • SPINACH
  • CELERY

ROTISSERIE CHICKEN SOUP WITH RICE

Yes, go ahead and add rice or noodles during the cooking process if you’d like. 

Just make sure that you are following the directions on the package for the cooking times. And do not add more than 1/2 a cup otherwise the liquid will be all gone.

Mexican Pulled Chicken

This Mexican Pulled Chicken is slow-cooked in Mexican green chili sauce and jalapenos, this melt-in-your-mouth smoky chicken is the perfect comfort zone. Pair it with fresh pico de gallo and rice and you’re in for a dinnertime treat!

And is little on the spicy side.

So if you are paring this with homemade pico de gallo (salsa fresca).

I would advise to omit the jalapenos in the salsa since the chicken has enough heat it it already.

But do not worry, it’s not too hot due to the addition of the chile adobo which give it a sweet smoky flavor as well.

Pair this dish with some full fat sour cream and you will have a more mellowed out dish. So if you like Mexican food just as much as me, then I’m more than certain this will become one of your new favorites.

Personally I can handle the extra heat, that is why I made my pico de gallo with jalapenos in it.

As you may know I really love spicy food, however my partner leans more towards sweet stuff and said he would prefer the pico de gallo to have no jalapenos in for this pairing.

This recipe is super easy to make, and packed with full of flavor so follow along.

All we are doing here is simply placing our chicken breasts into the slow cooker, along with 1/2 cup of mexican green chili sauce, a few adobo chilies, some chicken stock and our seasonings.

Then we are allowing it to simmer on medium to low heat all day, only to return to shred the chicken with two forks.

Then placing back into the pot to simmer/brown for a few minutes to allow the sauce to thicken up some. This dish is so tasty and is my new favorite way to eat pulled chicken.

Serve over a bed of jasmine rice, along with homemade pico de gallo and you will be in flavor heaven.

The nice thing about mexican food is that you can make a lot of it in a short period, and you can store any leftovers in the fridge for up to 3 days. I hope you enjoy, ARRIBA MEXICO!

IS PERI PERI CHICKEN SPICY

Yes, so if your not a fan of spicy foods then you probably want to skip this meal because it uses Bird’s eye chilies.

These types of chilies are very similar to the African red chillies that are sometimes also used in this dish.

With the combination of lemon and garlic among some other spices you are sure to have a taste of the best piri piri chicken to serve tonight.

WHAT’S PERI PERI CHICKEN

Well it’s a special marinade used alot in Portuguese and South African cooking, and now of course now Worldwide.

It contains a mixture of hot chili spices that work so well with this chicken.

If you want just a plain chicken with some paprika, lemon and garlic, which is good too, I guess. Then you can omit the bird’s eye chilies, but then it won’t be Peri Peri anymore.

Otherwise you can also buy a pre made peri peri sauce, like the one in the picture below and use that alone to make this recipe. 

Also if you like the thought of having dinner served on the table in under one hour, then you’re going to be a fan of this recipe.

WHERE IS PERI PERI CHICKEN FROM

Originally it comes from Angola and Mozambique when Portuguese settlers arrived with chile peppers (known as piri-piri.

HOW TO MAKE PERI PERI CHICKEN AT HOME

  • You want to start by maranding the whole chicken in a large ziplock bag for 24 hours in advance to help with infusing the flavors more.
  • Peri peri chicken can be made in the oven or on a grill or bbq

Yes, it contains a lot of protein and the heat from the sauce can aide in weight loss. 
 

This chicken is super tasty and takes less than an hour to prepare! 

Note: You can find these chilies at any Asian market or you can use any fresh red serrano chilies as a replacement. Please don’t mistake jalapeños for serrano peppers they are very different. Also you can buy a premade peri peri sauce and marinate your chicken in that.
