Easy Turkey Noodle Soup

This Easy Turkey Noodle Soup is an excellent recipe to have on hand after the holidays, as it utilize your leftover turkey’s carcass and even the gravy if you so desire. 

This Easy Turkey Noodle Soup is a great recipe to make, that utilizes the whole bird.

You can put almost any type of vegetable into this soup.

I used carrots and kale as it was what I had on hand. But really any type of vegetable will work!

EASY TURKEY NOODLES SOUP WITH CARCASS

So you probably know how good homemade chicken noodle soup is, but have you tried homemade turkey noodle soup? Well then you are in for something special. Because it is rich as it uses the whole carcus of the turkey!

If you have leftover gravy as well then you are going to want to add that in this soup too, trust me people will be begging for this recipe. It’s that good 🙂

I will typically make a BIG pot of turkey noodle soup the day after the holidays or the night of. 

This way I am not wasting any food by utilizing the leftover turkey and gravy.

What I will do is fill a stock pot up with water and then I will put the carcass from my leftover Turkey inside.

Then all there is to do is simply boil the bird for a good 30 minutes or more.

Then I will remove the bird and skim away anything that looks less appealing and use the remaining broth as my soup stock.

Now there are plenty of ways to make this kind of soup, so I’m going to give you a few options here and let you decide what works best for you.

Really you cannot go wrong with making this soup, it’s healthy and also an excellent recipe to keep on hand after the holidays when you have leftover turkey.

When I talk options, I mean you can decide what type of noodle to place in the soup and vegetables.

For the noodles there are thick or thin, large and small, options.

So the type you use totally depends on what you prefer, however I do recommend using “egg noodles” because they are much lighter and work so much better in this kind of soup.

If you are feeling under the weather, feel free to add more garlic and onions to the stock as they carry antibacterial properties and have been proven to help people get better much faster.

Note: If you have a leftover turkey, then you can omit the chicken stock and simmer your turkey carcass for one hour in 8 cups of water, covered.

And use the turkey stock in replace if the chicken stock. Also use the leftover white turkey breast instead of buying turkey breasts as that works great too for this soup.

Simple Swedish Meatballs

These Simple Swedish Meatballs are served over a bed of egg noodles in a creamy low fat sauce. A recipe that you and your family are sure to love. 

WHO SELLS SWEDISH MEATBALLS

Costco does but so does President’s Choice. 

So what does that mean? It means you can have creamy Swedish Meatballs on the table in less than 20 minutes! 

That is the reason I call these Simple Swedish Meatballs because really there is no fuss when it comes to making this popular recipe.

You can literally have this whole dinner on the table in less than 30 minutes! 

Making swedish meatballs this way becomes a weeknight meal savor if you ask me. Because instead of making these meatballs from scratch which take a fair bit of time and technique.

Your simply using some pre made meatballs that are fail proof and do not need to be baked. 

Your going to love this really inexpensive dinner option, trust me

This recipe serves a family of four or you can use my easy to use recipe adjuster and make it for more people if you like.

Your family will think you where slaving in the kitchen all day making meatballs when really you were doing other important things 😉

Keep in mind those pre made meatballs come in a package that has 907 grams. I only used 650 grams of those meatballs and that alone feeds four people. So taking that into consideration this recipe is also frugal!

The brand that I like to use is President’s Choice Swedish Meatballs. You can use your favorite pre made meatballs of course and even opt for a chicken or a vegan variety, totally up to you.

Swedish Meatballs are the ultimate comfort food and typically are served overtop a bed of large egg noodles, however you can serve them over mash potatoes as well if  desired. 

I like to saute the meatballs in butter and oil first which helps bring out the flavor more.

Then I will use that same butter and oil to make a roux for the sauce that turns into the most delicious gravy ever.

Also since I typically just cook for me and my partner, I often tend to make dinner for two, three or four people. This recipe will feed four people easily and get this.

Are you cooking for a larger crowd? or perhaps having to provide something for an upcoming potluck?

Then this recipe is sure to be a hit and everyone would be think that you spent a lot of time at it.

If you have a little more time and want to make your meatballs from scratch, I recommend following this recipe for making Classic Baked Swedish Meatballs.

Just be aware that it does take some time and technique, as sometimes they do fall apart while searing them. So cooking them in the oven is best if you are to make them from scratch.

Go ahead and indulge you deserve it!

Note: You can add 1/2 cup of cream to this dish around the time you add in the beef stock if desired.

Beef Noodle Casserole with Kale

Looking for an awesome kid friendly hamburger recipe? Well look no further than this delicious Beef Noodle Casserole with Kale dish.

This homemade recipe is very similar to “hamburger helper”. So if you and your family have like boxed hamburger helper in the past, then trust me you will love this.

If your not familiar with hamburger helper than may I ask where have you been the past few decades? Just kidding. 

As that boxed stuff was definitely was and still is a staple food in most North American homes. Now I do not mean to be of insult, because perhaps you have never heard of it or have lived in North America that long.

And so in that case you would not know what im talking about at all. For the rest of you i’m sure memories of the stuff are flooding into your thoughts by now.

Well this recipe is similar to that boxed stuff, however mine is way better and healthier for you. And that is because we are making it from scratch verses a boxed brand which uses way to much salt. Plus we are adding fresh kale and real cheddar cheese, hello!

So believe me when I say that this recipe definitely cannot compare to any of the box stuff I just mentioned. 

This recipe will feed a family of 8 or if there is less of you, feel free to freeze some for the days to come.

Also you can go ahead and bake two batches. Just double the recipe with my easy to use recipe adjuster above and then simply use two baking pans. This recipe does well as leftovers and can be frozen into a few meal preps.

Note: You can use beef stock to replace the milk if desired.

Garlic Lemon Butter Shrimp

This Quick Garlic Lemon Butter Shrimp recipe is literally easy as 1, 2, 3. If your making something on the side such as a vegetable or pasta. You will want to cook that first, 2 prepare the shrimp and 3 toss it all together. 

Made with very simple ingredients, of shrimp, lemon, butter, garlic, parmesan and lemon pepper you can have this dish done in no time flat. 

You can serve this delicious shrimp with pasta or a vegetable of your choice.

Sometimes I will serve this with some “Baked Brussel Sprouts” or whatever pasta I have on hand. 

If you’re preparing it alongside some pasta, just be sure to cook the pasta first then drain and set aside, before cooking the shrimp.

Toss everything together and you have a fancy little dinner for yourself and whoever else is lucky to join you.

Once you try this shrimp, you will be hooked, just be careful to not overcook it or it will become rubbery. 

You are going to want to cook it on medium low heat till it turns pink in color then you will want to remove it immediately from the heat and set aside.

Over cooked shrimp is not as good as fresh shrimp.

Chicken and Bacon in a Dijon Mustard Sauce

This Chicken and Bacon in a Dijon Mustard Sauce recipe is out of this world, you may think there is a lot of fattening ingredients in this one pan dish, but you would be wrong. 

If you know me, you know that I like to balance my cooking. So if I’m adding an indulging ingredient into my cooking such as bacon,. Then I will make sure not add too many other ingredient that could take away from such flavours.

This dish comes together beautiful in a mustard sauce that is not full of fat but rather flavour. Made with onions, Dijon mustard, lemon, apple cider vinegar and just the right seasonings that only enhance the dish not mask it.

I kid you not this recipe is pretty healthy for you, compared to other similar recipes out there which call for heavy cream, which I find ruins the dish. 

This recipe reminds me of a dish I tried many years ago, called Yassa Chicken (Poulet au Yassa) which is a very popular Senegalese dish.

So in this dish we are basically merging the flavors from that traditional dish with some other amazing dishes that are more popular in Europe to come up with this unique and out of this world recipe. 

So follow along below for the most mouth-watering dinner that you are your family are sure to love, it’s definitely become one of our family favorites.

You must try this dish over a bed of egg-noodles, it gives it that German snitches feel without all the heaviness, and goes so well with the sauce. 

On a gluten free diet?

No worries you can choose gluten free egg- noodles then you will have a completely gluten free meal.

Start by cooking your egg noodles first, because the rest takes less than 20 minutes to prepare and you want to be able to merge the two at the end. 

Next start with chopping the bacon and onions, and sauteing them together till cooked.

Be sure to remove the bacon and onions one cooked and set aside, before placing the chicken breasts back in the pan to saute the chicken.

Saute the chicken on medium heat in the bacon fat till cooked, approx 10 minutes or until they are lightly browned and cooked in the center.

Then remove the cooked chicken from the pan and finished off by making your dijon mustard sauce in the same pan. Merge everything back for one last time in the pan, allowing everything to simmer together before serving.

Cheesy Tuna Casserole

I call this the works tuna casserole, because it has a bunch of healthy stuff in it like fresh parsley, tomatoes and red peppers. Then it’s smothered in cheese, YESSSS Cheese! 

Tuna casserole never tasted so good and your family will not believe this is made with tuna. I like to make this dish with eggless noodles, making this dish ready in under 30 minutes flat. 

Great for a quick and healthy weeknight meal or even excellent casserole to serve at your next family gathering. Just you? Make numerous small portions and freeze it for quick on the go meals. 

You can prepare this dish with chicken, turkey or hamburger meat as well or make vegetarian, all four ways are amazing. 

However I like to make it with tuna, because it’s just another way for me to get fish in my diet.  If you end up giving this a give it a try, I would love to know how you liked it. Bon Appetit!
