African Red Stew

This dish is also known as Red Tomato Stew or Nigerian Red Soup and it consists of a cooked then broiled protein of your choice which is then stewed fresh fried tomatoes, onions, garlic and red bell peppers. You can also add an array of meats such as beef, chicken or fish. My recipe here uses goat meat.

If your wanting a recipe that includes 3 types of meats your going to want to try this Mixed Meat Nigerian Stew as seen below.

Some people will also add tripe as well to this dish. Personally my favorite way to make it is with boneless goat meat as you see here.

You will notice that I placed this recipe under the “hard” to cook category. The reason for that is because it takes some time and a few steps to make. But besides that it truly is worth the effort.

This stew is so special that it is served as the main dish during the holidays in Nigeria. Yup you heard that right, so instead of our North American Turkey they serve this.

WHAT TO SERVE WITH AFRICAN RED STEW

You can serve with Rice or Pounded Yam. Pounded Yam typically is prepared with a mortar and large pot and is made from scratch, however do to advances in the food industry you can now buy it in a “powdered form” and make the same thing. Find that recipe here > How to make Pounded Yam

Red Goat Stew has been a favorite recipe of mine since I was a little girl. Yup my mom cooked African food for me along with many other cultural dishes and so this is where I developed my love for spicy foods.

Now some people like this stew to be super spicy, I prefer it mild – spicy and so that is what I’m sharing with you today. The intense “Red” color that you see in this recipe is from the blended mixture.

Some people like there red stew to be somewhat running, I prefer my more thick as you can see above. I find it makes it really easy this way to pick up with the pounded yam and tastes better in my opinion.

However if you prefer it more liquidly, as some people do like to make it. Simply add 1/2 cup of extra stock to the cooking process at the end.

  • 8 Chicken drumsticks

It is a popular dish that hails from Nigeria in West Africa and tends to be made in large batches that can be served at a party of course!

African Black Eyed Peas Recipe

This African Black Eyed Peas recipe is something that can be made during a busy weeknight and serves as a whole meal. 

This dish is also known as Red African Black Eyed Peas in West Africa. 

The first time I tried this recipes, was when I was a kid. My mom had a few friends from West Africa and they made it for us on several occasions. Along with Beef Stew and Party Jollof Rice

Along with some other popular African dishes, that I have shared with you all on this website before. So you can trust that this recipe is pretty authentic as I have a taste for good African food and refer back to these recipes often.

If you have never tried this recipe before, then you are in for a treat!

As these beans are super creamy with a hint of spice that is balanced so well in a rich tomato sauce. 

HOW TO MAKE AFRICAN BLACK EYED PEAS RECIPE

Plus, it is super simple to make.

  • Start by chopping up a few ingredients and adding in a can of tomatoes, maggi cubes, chopped onions, red peppers and black eyed peas.
  • Then allowing it to all simmer together in one pot for 60 minutes till the dish is ready to be served. 
  • Traditionally it is made with palm oil, however I prefer to use canola oil as it is now known that palm oil extraction is now killing off all the rainforests and causing mass deforestation.

Warm up to a bowl of this West African Traditional Red Stew

I like to use pre soaked black eyed peas for this recipe, however you can always used canned as well.

Just make sure if you are using dry beans, that you are pre soaking them for at least 8 hours before cooking.

This ensures those beans are super tender when serving.

WHAT IS A AFRICAN BLACK EYED PEAS RECIPE

This recipe is most popular in West Africa and is also known as red red African black eyed peas.

It is not only inexpensive to make. It is also very healthy for you since Black Eyed Peas are low in fat and high in fiber and protein.

These beans can be also made in your pressure cooker or slow cooker. Today I made mine on the stove top in my dutch oven. But have made them in my slow cooker before as well. 

Just keep in mind it will take longer, ruffly 4 to 6 hours.

You can also add chunks of beef to this dish, then once it has been cooked. You will want to remove the beef and shred it with two forks on a cutting board. Before adding back to the beans to serve and enjoy!

I do add the beef on occasion as it really does enhance the dish just a bit more.

Nigerian Chicken Stew

This Nigerian Chicken Stew is made with drumsticks fresh fried tomatoes, onions, garlic red bell peppers and a mixture of spices. 

Nigerian Chicken Stew is an inexpensive meal that actually has tons of vegetables in it even if you cannot see them as they are stewed. Which makes for a full round meal to feed the family! Want to try this recipe with Goat and beef tribe Stew.

Nigerian Stew spicy, however you can make it less by adding less of the scotch bonnet peppers if you’d like. However, that is a major no no in African cuisine and for me also. I absolutely love the spice that comes from these amazing peppers.

TOOLS NEEDED TO MAKE CHICKEN STEW

  1. 2 Large Cooking Pots with lids
  2. Blender
  3. Knife
  4. Cutting boards

WHAT IS NIGERIAN CHICKEN STEW

HOW TO MAKE NIGERIAN CHICKEN STEW

  1. You are going to want to start by bringing a large pot of water to a boil. In that pot place your chicken and season with 1 Maggie cube or chicken bouillon cube. 
  2. Reduce to medium heat, cover and allow it to simmer for 30 minutes. 
  3. Once the meat has cooked, make sure to strain the stock and KEEP THE STOCK this STOCK is GOLDEN.
  4. Meanwhile, on a cutting board, dice your onions, tomatoes, garlic , ginger and place in a large stock pot cover with water and bring to a boil.
  5. Boil the vegetables till tender ruffly 20 minutes, before removing the water and placing all the vegetables in a blender & blend till smooth. 
  6. Next in a large stock pot add a good amount of COOKING OIL.
  7. Bring it to high heat then add in the meat and fry the meat till golden brown, remove and set aside. 
  8. In the same pot add more cooking oil then your tomato paste, one sliced red pepper, purred tomatoes, ground crayfish powder etc and fry on medium heat with the lid closed for 35 minutes. Turning often so that it does not burn, be careful as it is hot and you will need to turn the heat down each time you lift the lid to ensure you do not get burned. 
  9. Add back in all the chicken drumsticks and stir, season with more maggi cubes or salt if desired.
  10. Adding in the set aside MEAT STOCK at this time then allow it to cook all together the remaining 15 minutes.
  11. Serve alongside some pounded yam, fufu or rice. 
  12. Enjoy!

Nigerian Fish Pepper Soup

This Nigerian Fish Pepper Soup is made with Tilapia fish and is simmered in a rich stock with traditional pepper spices. 

If you love Nigerian food as much as me and pepper soup, then be sure to try my Nigerian Pepper Soup and my Nigerian Meat Stew as well.

I like to make this fish soup with a goat or beef stock that was made from scratch. Typically when making Nigerian Meat Stew, I will save some stock for this recipe for another time.

However, if you do not want to do that. You can always use a pre-made store bought bone broth stock.

Beef/Chicken or fish will do the trick.

Traditional this soup is made with whole cat fish, they are also much smaller fish than what you will find here in North America. I have tried that recipe and love it, however in North America it is not as easy to find. And so I find any white fish will do.

I used frozen tilapia fillets and they are really the best as they soak up all the pepper flavors and are bone free. Making for a very easy, quick snack in no time at all. 

Also, I highly recommend serving this with Pounded Yam another African staple food.

  • MAGGI CUBES – Try to get your hands on the “original “Maggi beef cubes” if you cannot find feel free to use “Maggi Chicken cubes or another brand that you like.

  • Pre made Pepper Spice or Allspice, Peppercorn, Ginger, Cayenne pepper, Fennel seeds, and Cumin.
  • Water
  • Goat cubed
  • Cray fish
  • Scotch bonnet sauce or peppers or even chili flakes
  • Onion
  • Garlic

IS NIGERIAN PEPPER SOUP SPICY

Yes, the scotch bonnet pepper is spicy and this soup is suppose to be spicy. I love it and I mean love it spicy, however if your not used to spice you can omit it and it will be just as tasty.

WHAT DOES NIGERIAN PEPPER SOUP TASTE LIKE

Rich and spicy!

HOW TO MAKE NIGERIAN FISH PEPPER SOUP

  • Start by bringing the bone broth fish stock or beef/goat whichever you have on hand to a boil
  • Reduce the heat to medium heat
  • Add in all your spices, diced red onion and seasonings 
  • Toss in the tilapia fish 
  • Simmer covered on low heat for 30 mins to serve.

I will make this soup when I’m craving something warm and spicy!

Today, I used a scotch bonnet pepper as I had it on hand. However, you can use “Scotch Bonnet Peppers” sauce instead. See the sauce below that can be used in replace of the pepper if you so choose.

I’m so excited to share this recipe with you today! Red Stew has been a favorite recipe of mine since I was a little girl.

My mom cooked African food for me along with many other cultural dishes as she has a diverse set of friends and so this is where I developed my love for spicy foods from an early age.

IS NIGERIAN STEW HEALTHY

Yes, it is full of natural ingredients and full of vegetables and protein.

WHAT IS NIGERIAN STEW MADE OF?

Yup you heard that right, so instead of our North American Turkey they serve Red Stew. 

I will always serve it with some pounded yam. You can find my recipe on How to make Pounded Yam here . However it can also be served with white rice or another African favorite such Fufu. 

Traditionally Nigerian Stew is meat based, so the meats used are goat, cow, turkey or chicken. It also is know to have smoked catfish in it.

I have tried all the above and can honestly say this combination is my all time favorite then the smoked cat fish version would be next. 

You can really use just about any type of meat protein for this recipe.  It is really up to you how you want your stew to taste. 

This stew is basically a process of completing several steps where the meat is cooked then the stew then it is all added together to make the most delicious recipe that I personally have ever tasted. 

I like to make big pots of this and will freeze it into separate meals to enjoy whenever I have a craving and trust me. That is often! Haven’t I told you already ha! That I love NIGERAIN STEW.

There is many different ways to make this stew, I have tried many different methods myself. This is my favorite method, I hope you give it a try if you are a Nigerian red stew fan and let me know what you think.

There is just something so comforting about this recipe. It does take some time to make also, but let me tell you it is so so so worth it! 

WHAT IS IN NIGERIAN STEW

You can omit the tripe if desired and add chicken or beef instead, personally this is my favorite combo. Goat and Tripe!

I want to make this recipe as simple as possible for the everyday reader and for someone who has never made this stew themselves before. So follow along and I assure you, it is an easy recipe that just takes some pre to complete. 

HOW TO MAKE NIGERIAN STEW

  1. First off you want to start with some cleaned tripe, the whiter the better as it has been bleached. Then place that tripe into a colander and under running water rinse it scrubbing it with your hands all over for several mins. 
  2. Then simply dice it up on a large cutting board, then repeat the cleaning process before placing in a medium stock pot.
  3. Cover the tripe with water and simmer it on medium heat for 15 minutes till softened and remove.
  4. Meanwhile, on a cutting board, dice your onions, tomatoes, garlic and place in a large stock pot cover with water and bring to a boil.
  5. Boil the vegetables till tender ruffly 20 minutes, before removing the water and placing all the vegetables in a blender to blend till smooth.
  6. Next in a large stock pot add your goat meat along with the diced tripe and the fresh purred garlic and ginger.
  7. Season the meat with curry powder, thyme, Maggi powder and salt. 
  8. Steam over medium heat for 10 minutes turning often and then cover with water fully and cover the pot and cook on medium – low heat for 30 mins.
  9. Once the meat has cooked, make sure to strain the stock and KEEP THE STOCK this STOCK is GOLDEN.
  10. Next in a large stock pot add a good amount of COOKING OIL 2 1/2 cups to be exact. 
  11. Bring it to high heat then add in the meat and fry the meat till golden brown, remove and set aside. 
  12. In the same pot with the oil add in your tomato paste, purred tomatoes and onions, ground crayfish powder etc and fry on medium heat with the lid closed for 35 minutes. Turning often so that it does not burn, be careful as it is hot and you will need to turn the heat down each time you lift the lid to ensure you do not get burned. 
  13. Add back in all the meat and stir, season with more maggi cubes or salt.
  14. Adding in the set aside MEAT STOCK at this time then allow it to cook all together the remaining 15 minutes.
  15. Serve alongside some pounded yam, fufu or rice. 
  16. Delicious!! 

I always like making a big batch of this stew, as it keeps in my fridge up to 3 days and in the freezer up to 3 months. 

This stew can easily be made in your pressure cooker or slow cooker, so follow along. It really is not hard to make.

WHY IS MY NIGERIAN STEW BITTER

It just needs a spoon full of sugar if you find it bitter. However the tomato paste should level the bitterness out so be sure to use that.

Nigerian Goat Pepper Soup

This Nigerian Goat Pepper Soup is spicy and full of flavor as it is simmered in a rich broth of goat meat and spices. 

I love Nigerian Pepper Soup and had it just a couple weeks ago from one of our local African restaurants. Along with Nigerian Stew and Egusi Soup which I have on this blog. I’m working on putting more African dishes on this blog now and do have one more for you to try this recipe for some Black Eyed Peas.

Also, I highly recommend serving this with Pounded Yam another African staple food. 

WHAT DOES NIGERIAN PEPPER SOUP TASTE LIKE

Spicy, meaty and soothing! I say soothing because I find it really is so very tasty!

HOW TO MAKE NIGERIAN PEPPER SOUP

  • Start by brining a large stock pot of water to a boil

  • Add in all your spices and seasonings

Note: You can cook the onions, garlic and ginger fresh if desired. Just be sure to cook it prior to boiling the meat in 1 tsp of oil to ensure it is cooked.

Yes, goat meat is a very lean meat and the broth is simmer fully in that and it is also packed full of nutrients. 

IS NIGERIAN PEPPER SOUP GOOD FOR PREGNANT WOMAN

I would say yes but without the spices, so omit the scotch bonnet pepper or chili flakes.
